The easiest way to slice this tasty veggie is with a mandolin. No, not the kind you play, but one like this:
This little dandy is an amazing tool for the kitchen. It slices just about any firm veggie quickly and evenly. From Asian Cucumber Salad to potatoes for just about anything, everything comes out perfect. Dishes like scalloped potatoes or homemade potato chips have half the prep time! Anything that makes my job faster in the kitchen is a must-have for me! This particular one has been in my family for a long time, but new ones have different blades and such for cutting to make waffle fries, crinkle cuts, and more.
Ingredients
- 2 English cucumbers, sliced thinly
- 1 t sea salt
- 1/4 t pepper
- 1/2 C rice vinegar
- 1 T sugar (I use raw sugar)
Instructions
- In a large bowl, place all the ingredients and toss to coat.
- Cover and refrigerate until cold.
- Serve with fresh chives or parsley.
Asian Cucumber Salad is great in the winter when you want a hint of summer to brighten your day, or in the middle of summer with a grilled meal. On really hot days, my family will eat Asian Cucumber Salad as a snack at dinner time and wait until later for a more substantial meal, after the day cools. Asian Cucumber Salad is also amazing on diets. You can replace the sugar with stevia and this makes a great low-calorie snack or salad.
We have a local chinese resturaunt that makes an amazing cucumber salad recipe. It is very similar, You should try it and compare to see which one you like best :). My 5 year old can’t get enough of it!!!!
2 large cucumbers
2 tsp salt
6 TBS sugar
2/3 c. white vinegar
1 tsp lemon extract
pepper to taste
I forgot to add, you want the cucumbers to marinade in the mixture for at least 3 hours before enjoying.
