I am in love with this next recipe…I mean who doesn’t love chocolate and donuts right?!  😉 These delicious and decadent donuts are chocolatey with a chocolate glaze and just the right amount of banana so it’s not overwhelming. Plus, did I mention they are baked? Yep, you get to enjoy these bad boys guilt free (well maybe just a little less guilty).

Baked Chocolate Banana Donuts with Chocolate Glaze

Ingredients

  • Donut Ingredients:
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup cocoa powder
  • 1/3 cup white sugar
  • 1 egg
  • 1/2 cup ripe banana, mashed
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon banana extract (optional)
  • Glaze Ingredients:
  • 1/2 cup unsalted butter
  • 1/4 cup milk
  • 1 tablespoon light corn syrup 2 teaspoons vanilla extract
  • 4 ounces semi-sweet chocolate, chopped 2 cups confectioners' sugar

Instructions

  1. Preheat the oven to 400-degrees. Lightly grease or spray a non-stick doughnut pan.
  2. In a large mixing bowl, whisk together the dry ingredients .
  3. In a small bowl, whisk the sugar, egg, banana, buttermilk and vanilla.
  4. Add the wet ingredients to the dry and stir until just combined.
  5. Fill the pan three-quarters full in each well. Bake for 11-12 minutes, until a toothpick comes out clean.
  6. Let sit for about 5 minutes before turning out onto a cooling rack. Allow the donuts to cool for at least 20 minutes before adding chocolate glaze. Mean while, line a baking sheet with parchment paper and add another cooling rack on top.
  7. To make the glaze, combine butter, milk, corn syrup, and vanilla in medium saucepan. Cook over medium high heat until butter is melted.
  8. Turn the heat down to low and add the chopped chocolate. Whisk the mixture until it is thoroughly melted. Turn off heat, add the powdered sugar, and whisk until smooth.
  9. Working quickly, dunk the tops of the donuts into the glaze and then set on the cooling rack so that the excess chocolate will drip onto the parchment paper. Allow glaze to set for a half hour before serving.

  1. Donut ingredients list milk, but the directions say buttermilk. Can you let us know which is correct? Thanks!
