This banana lime cake is super moist and delicious. I tend to make this all year long and the kid’s love it as a snack when they get home from school. I love frosting it with the cream cheese frosting recipe below too. Enjoy!
Banana Lime Cake
Dry Ingredients:
- 3 cups flour
- 1/2 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
Wet Ingredients:
- 1 cups sugar
- 1 cup oil
- 2 eggs
- 1/2 cup milk
- 1 teaspoon vanilla
- zest of one lime and 1 tablespoon lime juice
- 3 cups mashed bananas
- 1 cup pecans chopped
Directions:
- Pre-heat oven to 350 degrees
- In a large bowl cream the sugar, oil, eggs and milk till well blended.
- Add in the vanilla, lime, bananas and nuts.
- In another bowl combine your dry ingredients, mix them into the wet ingredients one cup at a time.
- Mix for 2 minutes on medium speed.
- Spread batter into a greased sheet pan, bake at 350 for 25-30 minutes till toothpick comes out clean.
- If you bake in a 9×13 dish increase cooking time to 30-35 minutes.
- Allow to cool, then frost.
Frosting Recipe:
- 4 oz cream cheese softened
- 2 cups powdered sugar
- 1/2 tablespoon lime zest
- 2-3 tablespoons milk
- 1 teaspoon vanilla
Directions:
- Cream the cream cheese and sugar, add vanilla and lime. Add milk till desired consistency is achieved.
- Wait for cake to cool and frost.
