The Birth of Blueberry Glazed French Toast
French toast has many incarnations in my house. Every season seems to bring a new flavor or style to the breakfast table, and when I found blueberry swirl bread, I was set for a blueberry incarnation of French toast. Blueberry Glazed French Toast was born in my kitchen. And it was amazing! So much so, that I have been asked for an encore!

In my area, Aunt Millie’s makes a delicious blueberry swirl bread in the spring. Being the blueberry lover that I am, I picked some up for toast, thinking my kids would love it. It ended up that my kids looked at the blueberries I had brought home from a local farmer’s market and asked me if I could make them into syrup and the bread into French toast. The bread was great on its own, but the fresh picked blueberries, bursting with flavor and sweet juiciness, really made the Blueberry Glazed French Toast. Choose berries that are plump and dark blue, with a smooth skin. You’ll have a bright flavor that will compliment not only blueberry swirl bread, but any bread that you want to make French toast from. The more flavor in your blueberries, the more flavor in your final dish. To really bring out the flavor of the berries, here’s a secret: cinnamon and lemon peel. Not things you would expect, but the lemon really brightens the blueberries, and the cinnamon brings out just a bit of the earthiness, making people wonder what you did to make the sauce taste so good! I add both of those to my fresh blueberry pie too!
Ingredients
- 1 pint blueberries
- 1/2 C water
- 1/2 t lemon zest, finely diced
- 1 T flour
- 1/2 t ground cinnamon
- 1 loaf blueberry swirl bread (or other favorite bread)
- 3 eggs
- 2 T milk or half n half
- Pam cooking spray
Instructions
- Rinse the blueberries in cold water and place in a small saucepan. Add the water and lemon zest. Warm to a simmer.
- Add the flour and stir to remove any lumps. Allow the mixture to thicken. Add the cinnamon and remove from the heat.
- While the blueberries are simmering, heat a griddle or pan to medium high heat.
- Whisk the eggs and milk together in a shallow bowl.
- Dip bread in mixture, turning to coat.
- Spray griddle with Pam. Place the wet bread on the griddle and cook until brown. Turn and brown the other side.
- To serve, place slices of French toast on a plate. Ladle some blueberry sauce over the top and serve hot.

French toast is a favorite that many people make and the recipe is almost always the same: eggs, milk, bread. It’s nice to change it up a bit and make something just a little bit different, like Blueberry Glazed French Toast. A fresh flavor with berries that are in season is a wonderful surprise at breakfast and is a great way to start your day.
1 pint blueberries
1/2 C water
