Caramel Brownies with Homemade Frosting

Yum-O! If you’ve been reading my recipes for awhile, you know I just love anything to do with brownies…I put them in everything including my ice cream. 😉 These caramel brownies are perfect for a party or just a snack for the kiddos. The frosting is homemade and tastes delicious. Enjoy…

Caramel Brownies

Ingredients – 

  • ¾ C. flour
  • 2 C. semi-sweet chocolate
  • 2 tbs cocoa powder
  • 4 tbs. butter
  • 3 eggs
  • 1 ½ C. sugar
  • ½ C. packed brown sugar
  • 1 tsp. Vanilla extract
  • 1 tsp. Baking powder
  • ½ tsp. Salt
  • 12 oz. bag of Kraft caramels (located in the candy aisle), unwrapped
  • 8×8 or 9×9 baking pan

Frosting ingredients –

  • ¼ C. butter or margarine, softened
  • 1/3 C. cocoa
  • 2 C. powdered sugar
  • 1 tsp. Vanilla
  • 3 tbs milk

Directions – 

Preheat the oven to 350 degrees. Line your 8×8 or 9×9 baking dish with foil and spray with a non-stick spray.

#1. Combine the flour, cocoa powder, baking powder and salt. Set aside.

#2. In a microwave safe bowl, melt the butter and chocolate in 15-20 second increments, stirring until completely melted. Let cool 2-3 minutes.

#3. In another bowl, combine the eggs, sugar and vanilla. Add in the melted chocolate mixture and then slowly add in the flour and cocoa mixture and mix well.

#4. Pour enough of the batter into the bottom of your baking dish just to cover the bottom. Spread with a spoon or spatula if needed.

#5. Sprinkle the opened caramels on top of the batter (20-24 for the entire pan, more if you love caramel!) Once all the caramels are in place, pour the rest of the batter over the top and bake for 25-30 minutes. Insert a toothpick around 25 minutes to check them. If it comes out ‘clean’ they are done.

Let the brownies cool completely.

Frosting directions – 

#1. Combine the cocoa powder, butter, sugar and vanilla. Slowly add in the milk 1 tbs. at a time. You may want to add in more milk depending on how thick you like your frosting. Using a hand mixture, beat on high for 2-3 minutes.

#2. Once the brownies have cooled completely, lift the foil out of the pan (love the super easy clean-up!) Evenly spread the chocolate frosting over the top of the brownies.

#3. Cut into *12 squares. Cut the rest of your caramel squares into quarters and gently press one into the top of each brownie. **You could double the servings by cutting the the pan into smaller size squares – 24 if desired.

*Makes 12 servings is cut into 12 squares – 1 square = 1 serving. Store in an airtight container up to 1 week.

    I have this in the oven right now.. 45 min and still not done. I was confused on melting the chocolate/butter as well. I used tollhouse chocolate chips and it never truly melted like a syrup consistency which is what I thought it should be.. instead it became a mush and when it wouldn’t melt further I stopped trying and used it in the batter which was very hard to spread on a nonstick spray foiled pan, the batter slid all over as it was so thick. The top is done by toothpick stiil won’t come out clean. Hope this turns out..

    Update.. I tasted it before bed and it was a bit too chewy for my liking but I assume because it was cooked so long. Some caramels sunk to the bottom as I expected they would but overall it’s still edible but the caramels of course make you wonder if you’ll lose a tooth. I made the frosting just now and the recipe, I’m sorry.. is not accurate. First of all, don’t ever tell someone to put that much powdery stuff in a bowl and mix it. I knew it would happen but I followed anyway.. have to clean m y whole kitchen. I make buttercream often and know how to add things in slowly to not have that happen. You need to begin with more liquid and add sugar bit by bit, not the other way around. IN any case it was DOUBLE the amount of milk all said and done. It was very tasty though as my husband licked the bowl and he isn’t normally the type to do so. Some adjustments need to be made to this recipe is all and then it’ll be fine. BTW I used a 9×9 inch pan if that helps sorting o ut why my baking time was so long (about 55 minutes!!!)
