I’ve said it before and I’ll say it again…I love easy meals. Who doesn’t right?! This next recipe is for some delicious Cashew Chicken and Broccoli and one of my favorite things about it is that you only need one pot to make it. Heck yeah! If you like a FAST and easy meals, that can be cooked in one pot then this is the meal for you. Perfect for a busy night that you need a hot meal on the table without a lot of work Check out the super easy recipe below and enjoy!
Cashew Chicken and Broccoli, One Pot Meal
(Print below – Recipe yields 4 servings)
Ingredients:
- 4 cups raw broccoli
- 1 cup cashews
- 1/2 cup sliced yellow onion
- 1-2 cups cooked chicken ( you can even use canned chicken if you’re in a rush)
- 2 cloves garlic minced
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 1/2 cup chicken stock
Add at the end of cooking:
- 1/4 cup water mixed with 2 tablespoons corn starch
Directions:
- In a large skillet add the broccoli, cashews, onion, cooked chicken, garlic, sugar, soy sauce, oil and chicken stock. Turn on high heat, cover with a lid and bring to a boil.Once at a boil turn to medium heat and let boil for 7-8 minutes till broccoli is tender.
- Once broccoli is cooked, stir in the corn starch water blend. This will thicken your sauce, stir till well blended and sauce has formed, take off heat. Serve over rice or noodles. Enjoy!

What do you mean by cooked chicken? Do I just bake it plain first so that is cooked or am I meant to do something else?
Cut up the raw chicken into 1″ or smaller cubes and cook over medium heat in a skillet. Drain out the excess liquid and then add the rest of the ingredients for this recipe

I’m late to the party; but you should definitely roast them before making this. Raw cashews are completely fine; but to get the maximum flavour out of the nuts; it would be best to give them a toast.
Just throw them in a frying pan over medium heat and roll them around until they take on a golden colour. When you can smell them, they’re done.
This is a great base that you can adjust to your likings. I sauteed chicken cubes in sesame oil and oyster sauce. Added red bell pepper and carrots to the broccoli, a bit more soy sauce plus some red pepper flakes/cayenne for more heat and flavor. (If I had chili garlic sauce on hand, I would’ve used that.) Mushka – i toss a 3 lb bag of chicken breasts into the crock pot on Sunday evening and when it is done, shred with a fork. Then, we have cooked chicken to use all week in recipes. Or to make chicken salad for lunch. Can’t wait to try this! Think I’ll toss in some red pepper flakes for a little kick, though.

I just made this for dinner. I cook dinner about 4-5 times a week, and I usually get all of my recipes off Pinterest. This was PHENOMENAL. The only thing different I did was use half the brown sugar, and I used sesame oil instead. I can’t wait for my husband to get home to try it. Oh, I also added water chestnuts. My 5 year-old keeps asking for more, but I’ve had to hold back so he won’t spoil his appetite for tonight!
