This recipe was submitted by Heather! Thank you, I have never had these but the ingredients and picture looks so good!

“Hamballs”

Ingredients:

Main items:

1/2 lbs. ham ground
1 1/2 lbs. ground pork (Best thing to do is go to your local meat market and ask them to grind the ham and pork for you)
1 cup. cracker crumbs… (Ritz crackers and mash them in a bag).
1 cup. Milk
1/4 t. pepper
2 eggs
1 t. worchestire sauce

Sauce:
1 1/2 cup. brown sugar
1 T. dried mustard
1/2 cup. vinegar
1/2 cup. water

Directions:

Keep the sauce items separate, mix all the “main items” together with the meat and form into round balls (as big or little as you want). Set aside.

For the sauce: Bring this mixture to a boil and pour over balls.

Cover with tinfoil and bake for 2 hours at 350 degrees. After 40 minutes of it baking take the tinfoil off and continue checking the hamballs every 15 minutes. Flip them so they don’t burn.

My FUNKY Leek & Rice Recipe…Plus a Special Substitute for “Healthier Sour Cream”!

I told you all I would show you my recipe for the Leek Rice I make….I am warning you though, you PROBABLY won’t like this!! Seriously, unless your weird like me or are pregnant and crave strange things. 😉  But I figured I’d at least let you in on the funky things I crave being pregnant.

“PIN IT” If you like it (by clicking the red button below)…

Here we go….

Ingredients:

1 Leek (chopped) – this is sorta a kind of onion in my opinion and you only use the long stem part of it.

Tahini – found at the health food store, it tastes a lot like peanut butter and is good for ya!

Rice (I use 2-3 cups of uncooked rice)

Plain Greek Yogurt

Directions:

1 – You need to soak the leek stems in a bowl of water because these have a TON of dirt in them and this is the best way to get the dirt out of all the crevices…I was going to post a picture of the dirtiness inside my leek but I didn’t want to gross you all out….this is a recipe for a meal after all.

2 – Finely chop the leek and put in your rice cooker over the rice and water.

3 –  After you cook the rice with the leeks, it will look like the above picture. Add as much Tahini (peanut butter taste) and greek yogurt as you’d like!

*I also LOVE to add a lot of parmesan cheese to this! Just the kind in the bottle.

On a side note – I am having something that you may think sounds better….grilled steak and a sweet potato! Here’s a fun tip though….In my sweet potato I use Plain Greek Yogurt instead of Sour cream and guess what?! It’s healthier for ya and tastes the same!

Won-ton wraps

8 oz Cream Cheese

8 oz Crab

1 tsp Scallion, 1 tsp Red Onion, 1 tsp minced garlic clove

canola oil, medium pot, paper towels, small bowl water

Directions:

1) Combine Cream Cheese and Crab, stir well. Add sauces, scallion, onion and garlic. Stir

3)Lay out won-ton wraps in a diamond shape. Wet the edges then place 1 tsp of crab mix in the center of each.

4)Seal edges by flipping one side to meet the other. Press firmly & run fingers across to ensure it’s closure.

5)Place on plate with dry paper towel on bottom and damp covering the Rangoon.

6)Place 6-7 won-tons in oil for about 1-1 1/2 minutes. *Don’t crowd!* Flip if necessary. Rangoon’s should be golden brown.

7)Put on plate with paper towels so oil can be soaked up. Enjoy after cooled a couple minutes. DELICIOUS!

For Dessert: OoOolala-

*If you have extra wraps try throwing some cut up bananas, cinnamon, nutmeg, cream cheese, brown sugar and caramel in them. Top with ice cream or cool whip for a delicious dessert.

10- burrito size tortillas
8oz-Sour cream
Shredded cheese

Directions:

  • Sprinkle in a little cheese.
  • Then, put the chicken in the tortillas and roll up. You should have enough chicken to make 8-10 enchiladas.

“Easy Hammy Mac ‘n Cheese”

Ingredients:

1 lb. pasta

1-2 lbs. sharp cheddar cheese, shredded –

2 T. margarine, melted

4 T. margarine, softened

1 can evaporated milk

1-2 cups diced or cubed ham

Directions:

  • Preheat oven to 375˚ F.
  • Prepare the pasta according to the package directions; cook according to package directions.
  • Meanwhile, pour the melted margarine into the bottom of a 9×13″ pan (or a larger one, if you use extra cheese and/or 2 c. ham).

  • Layer half of the pasta into the pan, along with half the ham, and then top with half of the cheese.
  • Dot with 2 T. softened margarine. Repeat layers, ending with remaining margarine.

  • In a separate bowl, whisk together the 2 eggs and evaporated milk.
  • Pour evenly over the pasta.
  • Bake for 20 minutes.

(Tammy’s son who can hardly wait to eat this yummy meal!)

You can make this ahead of time and put it in the refrigerator overnight, waiting to add the eggs and milk until right before baking it, and it comes out great! It also tastes good re-heated in the oven or the microwave, but in the oven it does get a little crunchy, on top.

A little message from Colleen:
I got my eggs on sale this week for 99 cents they were on sale for 1.99 and then was that egglands best coupon so I used that as well.. My store also had a deal about 2 weeks ago where you had to buy kelloggs cereal and I got my milk voucher for free this week which I am using today to make my Hot Cross Bun! I also went to the Farmers Market by my house and got a 1lb of oranges for 1.29 cheaper then the stores and I am supporting the local farmers. I hope you have a good Easter and to my fellow couponers A Happy Passover and A Happy Easter !!

Ingredients:

Batter

4 cups of all purpose flour

1/3 cup of sugar

1 packet of active dry yeast

1 ¼ teaspoons of ground cinnamon

½ teaspoon of salt

1 cup of milk

¼ cup of butter

2 eggs

1 egg yoke

¾ cup of raisins

2 tablespoons of cold water

Icing

1 ½ cups of confectionery sugar

¼ teaspoon of grated orange peel

4 teaspoons of orange juice

Directions:

Preheat the oven to 375.

Combine 2 cups of the flour, sugar yeast and cinnamon in a large mixing bowl.

Heat the milk and butter in a saucepan. Make sure the milk does not boil. When the butter is melted you remove from the stove.

Add the milk and butter to your dry ingredients and mix well together.

Now add the 2 eggs and mix until smooth. Add the raisin and the rest of the flour to form soft dough.

Remove dough and on a floured surface and kneed until is it smooth approx 6-8 minutes.

Spray a bowl with non stick cooking spray and put batter back in bowl. Turn the batter in the bowl so it coats the cooking spray. Cover it with a towel and let it rise for about a hour. The dough should double.

After dough has risen. Punch the dough down in the bowl and put on a floured surface.

Divide the dough into 18 pieces. Roll each piece of dough into a ball. Coat two 9inch pie pans. Put the dough into the pie pans. Using a sharp knife cut a cross on each dough ball. Cover with kitchen towel and let it rise again should take 30 minutes. After the rolls have risen. Beat together one egg yoke and two tablespoons of cold water.

Brush the mixture on top of your buns. Bake at 375 for 18-22 minutes or until gold brown. Remove buns from ban and break apart and place them on a cooling rack to cool.

Combine all Icing ingredients together. When the buns are completely cooled put the icing on the top of the buns where you made your cross.

They say if your share your buns with your friends. It will insure your friendship for the comings year :0)

Layer in a slow cooker or crock pot in the order given.  Cover and let cook on low for 8 hours or high for 4 to 6 hours.  Just before serving, stir and break up the meat into bite size servings.  Hint:  make sure your meat and corn and peas are frozen when you put them in the slow cooker.  Otherwise, the meat cooks too fast and dries out.
Makes 6-8 generous servings.

Ingredients (pictured above) Although these may not be the items that have a coupon. These are the items I had on hand.

Directions:

1) Pre-heat oven to 375 degrees. Take 6 – 9 slices of cinnamon bread, crust cut off and cut into cubes.

2) Combine 3 tablespoons of milk and 1 egg beaten. Pour over cubed bread. (if bread doesn’t look “wet” enough feel free to add more milk/egg mixture.) Sit aside.

(*I always put the crust in a zip lock and put it in the freezer to take to the park to feed the ducks instead of throwing it away)

3) Combine milk, butter, egg, maple, & vanilla flavoring in another bowl.

4) Combine 2 cups flour, ¾ cups packed brown sugar, 2 teaspoons baking powder, ½ teaspoon salt & 3 teaspoons cinnamon in another bowl. Pour liquid mixture over flour mixture.

5) Spoon batter into muffin pans

6) Spoon French toast topping evenly over batter; press slightly.

7) Bake at 375 degrees for 20 – 25 mins or until toothpick comes out clean.

Once muffins are finished…

Immediately pour syrup over top muffins. Sprinkle cinnamon sugar over glazed muffins.

Place on plate and serve. I like to add just a little bit more syrup. Yummmmy!!!

Enjoy!!!

Dawns family enjoying them:

“Here are girls and my nephew getting ready to enjoy our HOT French Toast Muffins! As you can see my 2yr old just couldn’t wait! LOL! Nor would she stop eating so I could take another picture!” – Dawn

Belated “Recipe Wednesday” Frugal Chicken Noodle Soup

This recipe was submitted by Michelle at Thrifty101! Thank you, I thought this was a great idea for making a yummy, frugal hearty soup. Below is the way Michelle makes it in her own words (thanks again!)….

“Frugal Chicken Noodle Soup”

I often find veggie trays like this on clearance at my local Smith’s.  This one was $3.49.  I only buy them when I find them on clearance.  My kids and husband eat most of them (notice I didn’t say myself….not a veggie fan).  When it gets to the point that they will not eat anymore of it, I chop up the carrots and celery to use in Chicken Noodle soup.

I make home made noodles for this dish.  They are VERY easy to make and taste SO MUCH better than store bought noodles!   The recipe is easy:

Ingredients for noodles:

2 cups flour
3/4 teaspoon salt
1 egg
1/4 to 1/3 cup of milk

Mix flour, salt egg and milk until you produce a slightly sticky ball of dough.  Flour the counter and roll out dough to 1/8 inch thickness. (they puff up when they are cooked)  Cut noodles (I use a pizza cutter) and place on wax paper.  Let noodles dry out for at least 1 hour.  Add to soup 30 minutes before serving

Toss your diced carrots and celery into a crock pot with diced cooked chicken and some chicken stock.

I used 1/2 this carton in with the veggies and the other 1/2 in with the noodles. I also added a little water so I had enough to cook the noodles in.

I cook the noodles on the stove top until they are done.  Then I dumped the entire pan…noodles and stock…in the crock pot with the rest of the ingredients.  I’ve never tried to cook the noodles in the crock pot, I don’t think they will work….might get all soft and gooey.

I seasoned with a little garlic salt and some Italian seasoning.  To taste, no measurements here. 🙂

YUM!  You know it’s good when my kids eat it!

This recipe was submitted by Tammy! Thank you Tammy, sounds yummy! I LOVE this because you only need 4 simple ingredients that a lot of you may already have and if not don’t worry, there are some frugal coupons to go with some of the items.

“Mexican Crescent Ring”

Ingredients:

3 packages Pillsbury Crescent Rolls Use coupon for $0.50/2 found here!
1 cup grated cheddar cheese Use the $1/2 Kraft Natural Shredded Cheese coupon 1/23 SS OR $1.50 off 1 Sargento Cheese from Publix here OR $1/1 ANY cheese found here
1 pound ground meat
Taco seasoning
Directions:

1. Preheat oven according to directions on crescent roll package.
2. Using a round pizza stone (or a pan, but a stone works best), layer the crescent roll triangles in a circle, with the wider part on the stone and the tips off of it. (I did it in a heart shape this time, for Valentine’s Day!) You should have a few triangles left over to fill in later.

3. Brown meat, drain, and add water and taco seasoning, to taste.
4. Spoon meat onto layered crescent roll.
5. Top meat with cheddar cheese.
6. Roll tips of crescent rolls around meat and cheese, fully encasing it. Use leftover triangles, in pieces, to fill in any gaps. (see first picture up top).
7. Bake according to directions on crescent roll package. Due to overlapping, you may need to leave them in a little longer; wait until it’s golden brown on the outside.
I serve this with diced tomatoes and sour cream and love serving it for guests since it’s so pretty! It’s also just as good warmed up in the microwave the next day!
Thanks again, Tammy!
