Want to make the best cookies ever?! Well, these Coconut Twix Cookies are highly rated around here and I would even say they may be my favorite cookies. These will surely impress your guests because they just melt in your mouth and are just the right amount of sweetness. You can always leave the coconut out and they still turn out delicious. Enjoy!

Coconut “Twix” Cookie

Ingredients:

  • 1 Pkg. Lorna Doone Cookies
  • 1 Pkg. Caramel Bits, 11 oz.
  • 2 Tbsp. Milk
  • 1 Cup Shredded Coconut
  • 1 Pkg. Milk Chocolate Chips, 11 oz. 9

Directions:

  1. Line a 13×9 inch pan with parchment or wax paper.
  2. Arrange the cookies in rows and columns, you should get a 5×7 grid using 35 of the 40 cookies. 3
  3. Melt the Caramel and Milk in a microwave safe bowl. Start at 30 seconds and stir, then in 15 second increments stirring after each until smooth and no lumps. 4
  4. Pour over the cookies and spread to cover evenly. 5
  5. Sprinkle the Coconut evenly over the Caramel. 6
  6. Melt the Chocolate Chips in a microwave safe bowl, again start at 30 seconds and stir, then in 15 second increments stirring after each until smooth and no lumps. 7
  7. Pour over the Coconut and spread to cover evenly. 8
  8. Let set then cut into bite size pieces.
  9. Store in an airtight container in the refrigerator. coconut twix cookies

Copycat Almond Joy

Did you know you can make your own Almond Joy candies at home?! In my opinion, these actually taste better homemade. 😉 I like making these for gifts or just a late night snack or dessert. Enjoy!

Copycat Almond Joy

INGREDIENTS:

  • 2/3 cup Sweetened Condensed Milk
  • 2 cups Powdered Sugar
  • 14 oz Sweetened Flaked Coconut
  • 2/3 cup Whole Almonds
  • 12 oz Semisweet Chocolate 2

DIRECTIONS:

  1. Line a baking sheet with parchment paper.
  2. If almonds are not toasted, place in 300 oven for 5-7 minutes. Allow to cool. 3
  3. Remove almonds from pan and set aside.
  4. Combine condensed milk and vanilla in a bowl and mix well.
  5. Add powdered sugar and stir until blended.
  6. Add coconut and stir until well mixed. 4
  7. Form into 1 1/4″ x 3″ bars and place on prepared sheet.
  8. Place 2 almonds on each bar and place in freezer for at least 1 hour. 5
  9. Melt chocolate by microwaving for 1 minute, stirring and repeating until melted.
  10. Dip the bars into the chocolate to completely cover using a fork.
  11. Tap gently on bowl to shake off excess and return to the prepared sheet.
  12. Refrigerate 30 minutes to set.

I love going to Starbucks but I can’t stand paying the prices so if I have a favorite drink, I learn how to make it at home, With that being said, this new cotton candy and limited time Starbucks drink is delicious and something I had to come up with at home.  You don’t need much to make this Copycat Starbucks Cotton Candy Frappuccino and it comes together easily. Enjoy!

Copycat Starbucks Cotton Candy Frappuccino

INGREDIENTS:

Raspberry Syrup:

  • 1/2 cup Seedless Raspberry All Fruit Spread
  • 1/4 cup Sugar
  • 1/4 cup Water

Drink:

  • 1 cup crushed Ice
  • 1/2 cup Milk
  • 2 scoop Vanilla Bean Ice Cream
  • 3 tbsp Raspberry Syrup
  • 1/4 tsp Vanilla
  • Whipped Cream for topping 3

DIRECTIONS:

  1. Place syrup ingredients in small saucepan and bring to a boil, stirring frequently.
  2. Remove from heat and allow to cool.
  3. Put ice, milk, vanilla and ice cream in blender. 5
  4. Add raspberry syrup (and 1 drop red food coloring for pinker color) and blend for 20 seconds or until you reach proper consistency.

Calling all you Cupcake and Rolo fans out there! This next cupcake recipe is full of that chocolatey, caramel, sweetness we all love. 😉 These cupcakes are fun to make for any occasion and do especially well at bake sales. The recipe below is for homemade cupcakes and not the boxed kind (although, if you’re in a pinch, you can still use the boxed kind and then just use the Rolo frosting recipe). Enjoy!

Rolo Cupcakes

Cupcake Recipe:

Ingredients:

2 C granulated sugar
2 eggs, room temp
2 tsp vanilla extract
1 3/4 C flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
3/4 cup cocoa powder
1 C milk
1/2 C vegetable oil
1 C boiling water
Pack of rolo candies.

Cupcake Directions:

-Preheat oven to 350 degrees.
-Line cupcake tins with paper liners.
– Mix all dry ingredients together on a mixing bowl…  flour, salt, baking soda, baking powder, sugar, and cocoa.
-Mix in the wet ingredients… vanilla, oil, milk, and eggs.
-Beat on medium speed for 2 minutes until all of the ingredients are blended.
-Pour in the boiling water… beat until mixed.
-Place an unwrapped rolo on the bottom and in the center of the lined cupcake tin.
-Scoop the batter into the lined cupcake tins until 2/3 full.
-Bake at 350 degrees for 20-25 minutes or until an inserted toothpick comes out clean.
-Cool for 10-15 minutes.
-Place on wire rack to cool completely.

Frosting Recipe:

1 C unsalted butter, softened
3/4 C cocoa powder
3 C powder sugar
3/4 C heavy cream
Rolo candies
Chocolate  syrup
Caramel  syrup

Frosting Directions:

-Beat the softened butter on its own until smooth.
-Add cocoa and powder sugar alternately with heavy cream  into the creamed butter until it becomes a smooth and thick texture.
-If the frosting is too thick, add more heavy cream, if too thin, add more powder sugar.
-Scoop prepared frosting into a pastry bag with a large frosting tip.
-Twist the open end of the pastry bag pushing the frosting to the tip.
-Frost the cupcakes.
-Drizzle chocolate syrup on the chocolate frosting.
-Drizzle caramel syrup on the chocolate frosting.
-Place a candy rolo in the center of the frosted cupcake. rolo cupcakes

Not only is the S’mores recipe really easy to make, it’s tasty and doesn’t take too many ingredients. I like making this for the kiddos because it’s a lot less messy than a normal s’mores but it tastes the same! Enjoy…

INGREDIENTS:

  • 15 Graham Crackers crushed 4
  • 3 tbsp melted Butter
  • 1 3.4 oz box Chocolate Pudding
  • 2 cups Milk
  • 7 oz Marshmallow Creme
  • Hershey bars for garnish 3

DIRECTIONS:

  1. Make pudding according to box directions. 5
  2. Transfer pudding to piping bag.
  3. Transfer marshmallow creme to piping bag.
  4. Combine crushed grahams and melted butter and create a layer in the bottom of serving containers. 6
  5. Pipe a layer of pudding into each container. 7
  6. Pipe a layer of marshmallow into each container. 8
  7. Repeat with another layer of each in the dishes.

Want to know how to make a Starbucks Strawberries & Crème Frappuccino?! Did you know that it doesn’t actually use coffee? Strawberries and Cream is always one of my favorites so I love getting them at Starbucks. I started doing some experimenting at home and now I make my own Starbucks Strawberries & Creme Frappuccinos! Ingredients:

  • 1/2 cup Milk
  • 1/4 cup Vanilla Ice Cream
  • 1 cup Ice
  • ¼ cup of pureed or smashed Strawberries
  • Whipped Cream 2

Directions:

1  Add Milk, Vanilla Ice Cream, Strawberries, and Ice into a blender.

2  Blend on med to high for 1-2 minutes

3 Pour into a tall glass and top with whip cream

Homemade Pancake Mix

We eat a lot of pancakes around here. In fast, we like to make pancakes for the kids every weekend (at least on Saturday or Sunday). I decided it was most cost effective and tastier to make my own pancake mix at home. It’s very easy to make and taste really good. There are not many ingredients you need and you can whip up a batch and then store it (I like using mason jars or glass jars). To use, combine 1 cup mix with 1 cup milk and 1 egg. Enjoy!

One of my favorite things to order from a bakery is Eclairs! I love chocolate with a cool and creamy filling. This copycat eclair recipe is delicious and has the perfect amount of sweetness. These homemade eclairs taste so much better than any store bought ones. These are perfect for Birthday parties, get-togethers or just a fun dessert night. Enjoy!

Chocolate Eclairs

INGREDIENTS

Filling:

1 cup Sugar
3/4 cup Flour
3/4 tsp Salt
3 cup Milk
3 egg Yolks
2 tsp Vanilla
2 tbsp Butter
1/2 cup Heavy Cream

Pastry Shells:

1/2 cup Butter
1 cup Water
1/4 tsp Salt
1 cup Flour
4 Eggs

Topping:

1 cup Semisweet Chocolate Chips
1 tsp Shortening 3

DIRECTIONS:

  1. Beat egg yolks and set aside.
  2. Whisk together sugar, flour and salt in a saucepan.
  3. Slowly add milk while whisking. Then add egg yolks while whisking.
  4. Bring to a boil over medium heat while whisking constantly.
  5. Cook until mixture reached the consistency of pudding. 7
  6. Remove from heat and add vanilla and butter to pan, whisking until butter is melted and mixture is well blended.
  7. Allow to cool completely.
  8. Whip heavy cream until soft peaks form. 5
  9. Fold whipped cream into custard mixture. and refrigerate until ready to use. 8
  10. Preheat oven to 400.
  11. Line a baking sheet with parchment paper. Set aside.
  12. Combine butter, water and salt in a medium pan and bring to a boil.
  13. Add flour to the pan and stir until it forms a ball. 4
  14. Remove from heat and allow to cool for 5 minutes.
  15. Transfer to mixing bowl and beat in the eggs, one at a time.
  16. Transfer pastry dough to piping bag.
  17. Pipe elongated strips of dough onto prepared sheet. 6
  18. Bake for 40 minutes or until golden.
  19. Remove from the oven and allow to cool completely.
  20. Transfer pastry cream to a piping bag.
  21. Cut pastries halfway through the center with a knife and pipe in the cream.
  22. Melt chocolate by heating chocolate chips and shortening in microwave for 30 seconds, stirring and repeating until melted and smooth.
  23. Place in a shallow flat dish.
  24. Dip tops of eclairs in chocolate and return to parchment lined pan and allow to cool. ecalirs

My hubby loves them and he’s not a huge fan of sweets. We decided to make them from home so we could have them whenever we want, for Birthday parties or just to impress guests! These homemade copycat Swig Cookies are the bomb! Enjoy…

Copycat Swig Cookies

Ingredients
  • 1 cup Butter (room temperature)
  • ¾ cup Vegetable Oil
  • 1¼ cups Sugar
  • ¾ cup Powdered Sugar
  • 2 TBLSP Water
  • 2 Eggs
  • ½ tsp baking soda
  • ½ tsp cream of tarter
  • 1 tsp salt
  • 5½ cups Flour
Frosting
  • 6 TBLSP butter at room temp
  • ½ C Sour Cream
  • 3 cups powdered sugar
  • ½ tsp salt
  • 3-5 TBLSP milk
  • Red Food Coloring

Directions:

  1. Cream together butter, oil, sugars, water and eggs in your mixer. Mix for a few minutes until well combined.
  2. In a separate bowl, combine dry ingredients and slowly add to butter mixture.
  3. Mix all ingredients until they are well combined ( you do not want it to be sticky)
  4. Roll dough into 1.5 inch balls and place on a greased cookie sheet.
  5. For the signature “cracked edges”,  place ¼ cup sugar and a pinch of salt in a separate bowl. Place the bottom of a glass into this mixture and then press it onto your ball of dough.
  6. Press cookies until they are a bit wider than the glass bottom diameter (about 3 inches in diameter) and cook at 350 for 8 minutes.
  7. Let cool in the fridge
  8. For the frosting mix butter, sour cream, powdered sugar, salt, and 1 drop of food coloring. Mix well and add the desired amount of milk you want to get it the thickness you want. I only added a few tablespoons.
  9. Spread frosting on cookies right before serving.

Who doesn’t love Olive Garden’s breadsticks…right?! I love making these at home with my other copycat Olive Garden recipes. These breadsticks taste just like the real thing but what I love the most is that you can cook them a little less to make them softer. I love soft bread but sometimes Olive Garden overcooks them so I like to control that myself. I promise, you will love these if you try them. Enjoy!

Copycat Olive Garden Breadsticks

INGREDIENTS:

  • 1 1/2 cup warm Water
  • 1 tbsp Sugar
  • 1 tbsp Yeast
  • 2 tbsp Vegetable Oil
  • 1 1/2 tsp Salt
  • 4 cup Flour
  • 4 tbsp melted Butter
  • 1 tsp Garlic Powder
  • 2 tsp Kosher Salt  3

DIRECTIONS:

  1. Combine oil, water, sugar, salt and yeast in bowl of mixer. 4
  2. Leave sitting for 10 minutes to allow yeast to bloom.
  3. Gradually add flour while mixing on low until the dough forms a ball.
  4. Spray a bowl with non stick spray and transfer dough to bowl. 5
  5. Cover with plastic wrap or a towel and place in a warm place to allow dough to double (about 1 hour).
  6. Grease baking sheets.
  7. Turn out dough on a floured surface.
  8. Roll out dough into a large rectangle.
  9. Cut in half, and then cut into 1″ thick strips.
  10. Roll and shape each strip into roughly 1′ x 8″ sticks. 6
  11. Place on prepared sheets about 2″ apart.
  12. Cover and place in a warm spot for 45 minutes or until doubled in size.
  13. Preheat oven to 350.
  14. Stir garlic powder into melted butter.

Ingredients:

  • Orange Juice
  • Lemon Iced Tea
  • Sugar 2

Directions:

  1. Fill a glass with ice. Pour enough orange juice to fill the glass ¾ of the way full.
  2. Fill the remaining ¼ of the glass with lemon iced tea. 3
  3. Add one teaspoon of sugar into the drink and mix it well with your spoon. 4

If you’re looking for a sweet, refreshing tea recipe then look no further! This Sonic Copycat recipe tastes just like their Peach Iced Tea. It uses a special peach syrup which really helps to flavor and sweeten it. You will just need fresh peaches and sugar to make it. You can use frozen peaches if it’s easier or what you have on hand but I think it tastes so much better when they are fresh. Enjoy!

Peach Iced Tea (like Sonic)

INGREDIENTS:

Peach Syrup:

  • 1 cup Sugar
  • 1 cup Water
  • 2-3 sliced fresh Peaches

Tea:

  • 3 Tea Bags
  • 6 cups Water 3

DIRECTIONS:

  1. Bring syrup ingredients to boil. Then reduce heat to medium.
  2. Crush peach slices as you stir to dissolve sugar. 4
  3. Turn off heat cover and let sit for 30 minutes. 6
  4. Boil water and brew tea letting steep 5 minutes. 5
  5. Remove tea bags and refrigerate.
  6. Strain syrup through a fine strainer to remove fruit pieces.

We love candy around here but it’s always much tastier (and even a little healthier) when you make it yourself at home. These copycat 3 Musketeers taste just like the real thing and guess what else….they only take 2 ingredients. Yep, you will just need a chocolate dipping tray (or you can melt chocolate) and marshmallow creme. You may want to let the kiddos help out for fun. Enjoy!

2 Ingredient Copycat 3 Musketeers

INGREDIENTS

  • 16 oz Chocolate Dipping Tray
  • 7 oz Marshmallow Creme 2DIRECTIONS:
  1. Line a loaf pan with aluminum foil and grease. Set aside.
  2. Take 8 ounces of chocolate and melt by microwaving for 45 seconds, stirring and repeating until melted and smooth. 4
  3. Heat marshmallow creme in a large bowl by microwaving for 30 seconds. 3
  4. Stir melted chocolate into marshmallow creme and util blended and spread into prepared loaf pan. 5
  5. Place in freezer for 30 minutes. 6
  6. Remove from pan and cut into serving sized bars.  7
  7. Return to freezer for 1 hour.
  8. Line a baking sheet with parchment paper or a silicone mat.
  9. Take remaining chocolate and melt by microwaving for 45 seconds, stirring and repeating until melted and smooth.
  10. Dip each bar in chocolate to cover completely (shaking off excess) and place on prepared sheet.

  1. Whisk together sugar, cocoa, cornstarch and salt in a medium pan. 4
  2. Whisk in milk and bring to a boil over medium heat stirring constantly. Allow to cook for 2 minutes.

It’s that time of the year again to start making delicious S’mores (one of my favorite desserts)! I’ve come up with a creative and easy way to make them without having to buy the chocolate. This makes it so much easier to eat and make and is a lot less messy. These still give the same great taste but are a little easier for the kiddos. These cookie s’mores are made with Keebler fudge cookies. YUMMY!

  • Keebler Fudge Striped Cookies
  • Marshmallows 2

DIRECTIONS:

  1. Microwave each marshmallow for 5 seconds to soften.
  2. Place marshmallow on a skewer and toast over flame to slightly brown.

If you are  a fan of neapolitan, then you will love this next recipe. These brownies are not your typical brownies, they are cheesecakes brownies. These are flavored strawberry, chocolate (from the brownie mix) and cream cheese for the white. You can either make these just look like neapolitan with food coloring or taste like it with the strawberry preserves (I love making them this way). Enjoy!

Neapolitan Look Brownie Cheesecake Bars

INGREDIENTS:

  • 1 box Brownie Mix + Ingredients from box
  • 16 oz Cream Cheese
  • 2 Eggs
  • 1/2 cup Sugar
  • 1/2 cup softened Butter
  • 6 cups Powdered Sugar
  • 1/2 cup Strawberry Preserves (optional)
  • 4-5 drops Red Food Coloring 3

DIRECTIONS:

  1. Preheat oven to 350.
  2. Grease a 9×13 pan and set aside.
  3. Prepare brownie batter according to box directions.
  4. Pour into prepared pan and bake for 20 minutes or until top appears completely set. 4
  5. Remove from oven and allow to cool for 30 minutes.
  6. Cream together cream cheese, sugar and eggs until well blended.
  7. Spread cream cheese mixture evenly over brownie layer. 5
  8. Bake for 35 – 40 minutes or until cheesecake layer is set.
  9. Remove from oven and allow to cool at least 30 minutes until top is no longer warm to the touch.
  10. Beat butter (and strawberry preserves if using) while slowly add in powdered sugar.
  11. Add in food coloring to achieve pink color, then whip to get uniform color.
  12. Frost cheesecake layer by spreading frosting with a spatula to completely cover.

  • 1/2 tablespoonDutch-process cocoa powder
  • 1/2 tablespoonwhite sugar
  • 1/4 cupwhipped cream
  • 1/2 tablespoon graham cracker crumbs 1

Directions: 

Blend ice, milk, marshmallow topping, espresso, cocoa powder, and sugar together in a blender until smooth

I have a super easy Ice Cream Sandwich cake I make myself (you can see the recipe here) and I thought it would taste even better if I made my own ice cream sandwiches for it and that I did! Let me just tell you, this cake tastes a million times better now and is one of my favorite things to make. These ice cream sandwiches as really fun to dress up by adding M&M’s, chocolate chips, marshmallows, etc to the sides.

Ice Cream Sandwiches

INGREDIENTS:

  • 3/4 cup Flour
  • 1/4 cup Cocoa Powder
  • 1/2 tsp Baking Soda
  • 1/2 cup Sugar
  • 1/2 cup softened Butter
  • 1 egg
  • 1 qt vanilla ice cream 3

DIRECTIONS:

  1. Preheat oven to 350.
  2. Whisk together flour, cocoa powder and baking soda. Set aside. 4
  3. Beat together butter, sugar, vanilla and egg until blended and creamy. 5
  4. Add dry ingredients to the butter mixture and mix until combined.
  5. Line cookie sheet with parchment paper.
  6. Spread onto prepared pan. 6
  7. Bake for 8-10 minutes or until top is dry but still soft.
  8. Allow to cool.
  9. Carefully remove from pan.
  10. Use a knife and split sandwich cake in half.
  11. Take frozen ice cream and remove from carton.
  12. Using a knife run under warm water, cut into roughly 3/4″ slices. 7
  13. Arrange ice cream slices on top of half of sandwich cake to cover it completely.
  14. Place other half of sandwich cake on top of ice cream. 8
  15. Wrap in plastic or parchment and place in freezer for at least 2 hours.
  16. One ice cream sandwiches are firm, remove and cut into 8 rectangles with a sharp knife. ice cream sandwiches

Sometimes I crave the Dole Whip or Orange Whip from DisneyWorld so I’ve come up with this recipe to make my own at home. This whip is a flavorful, creamy, sweet ice cream that refreshes you on a hot summer day. The kiddos can help make this and it’s super inexpensive to make. Enjoy!

Orange Whip (like Disney World)

INGREDIENTS:

  • 12 oz frozen Orange Juice Concentrate
  • 8 oz frozen Whipped Topping (like Cool Whip)
  • 2 tbsp Honey or 1 1/2 tbsp Sugar
  • 3 cup crushed Ice 3

DIRECTIONS:

  1. Blend frozen orange juice in strong blender or food processor until whipped. 4
  2. Add ice, honey and whipped topping and process until well mixed.  5
  3. 6
  4. If mixture is too runny, add 1/4 cup ice and process further. 
  5. Too look more like a creamy whip, transfer mixture to piping bag with star tip and pipe into cups.

This is so much more than just a slushie type drink because it’s made with ice cream (not just ice) and lemon juice. It may sound kind of strange but I promise you, it’s totally delicious. The kiddos get so excited when I make this and so do my friends and family. Enjoy!

Copycat Chick-Fil-A Frosted Lemonade

INGREDIENTS:

  • 1 cup Fresh Squeezed Lemon Juice (Sunkist brand is recommended as it is the brand that Chick Fil-A uses) – (I like this Lemon Squeezer)
  • 1/2 cup Sugar
  • 2 1/2 cups Water
  • Edy’s Slow Churn Vanilla Ice Cream 3

DIRECTIONS:

  1. Add lemon juice and sugar to pitcher. 4
  2. If you are using bottled lemon juice, increase amount to 1 1/2 cups.
  3. Stir until sugar is dissolved.
  4. Add water and stir until well mixed. 5
  5. Refrigerate at least 1 hour to chill.
  6. Add 1 cup chilled lemonade and 2 cups (about 4 scoops) ice cream to blender.

  2. Microwave for 45 seconds and stir to create a simple syrup.
  3. Allow to cool, then add food coloring and coconut extract.
  4. Mix well.
  5. Add syrup to cold Sprite and serve over ice.

Something we all love around here is banana bread! I actually like to make mine more like a “cake” so it’s moist and not a dry bread. What I love about the Starbucks Banana Bread is how it is super moist and full of flavor…shall I dare say that this recipe is just as good and maybe even a little better?! 😉 The trick is, make sure your bananas are very ripe….not overdue and completely black but you definitely want black marks covering some of them. See my bananas in the picture below and enjoy this sweet bread! Oh and you could always add chocolate chips to make it even sweeter. YUM!

Copycat Starbucks Banana Nut Bread

INGREDIENTS:

  • 2 cup Flour
  • 1 1/2 tsp baking soda
  • 1/4 tsp Salt
  • 2 tsp Cinnamon
  • 1 tsp Vanilla
  • 1 1/2 cup mashed ripe Banana (3-4 small bananas)
  • 1 cup Sugar
  • 1/2 cup Vegetable Oil
  • 2 tbsp Milk
  • 1 Egg
  • 1/2 cup chopped Walnuts
  • 1/3 cup chopped Pecans 3

DIRECTIONS:

  1. Preheat oven to 325.
  2. Grease a loaf pan and dust with flour.
  3. Whisk the flour, baking soda, cinnamon and salt until combined. 4
  4. In another bowl, mix the egg, sugar, and vegetable oil until combined. 5
  5. Add the dry mixture to the egg mixture and stir until blended.
  6. Add the milk, vanilla, and mashed bananas and mix well. 6
  7. Fold in chopped walnuts and pour batter into prepared loaf pan. 7
  8. Top with remaining pecans.
  9. Bake for 60-80 minutes or until a toothpick inserted in center comes out clean.

INGREDIENTS

Scones:

  • 2 1/2 cup Flour
  • 6 tbsp Sugar
  • 1 tbsp Baking Powder
  • 1/4 tsp Salt

  • 1/2 tsp Nutmeg
  • 1/4 tsp Cloves
  • 1/4 tsp Ginger
  • 1/2 cup cold Butter, cut into cubes
  • 1/2 cup Pumpkin Puree
  • 3 tbsp Heavy Cream
  • 1 Egg
  • 1 tsp Vanilla
  • Plain Glaze:
  • 1 cup Powdered Sugar
  • 2 tbsp Milk

Spiced Glaze:

  • 1 cup Powdered Sugar
  • 2 tbsp Milk
  • 1/4 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • Pinch of Cloves
  • Pinch of Ginger 2

DIRECTIONS

  1. Preheat oven to 400.
  2. Line a baking sheet with parchment paper or a silicone baking mat.

  9. Roll the dough into roughly and 8×10″ rectangle, about 1″ thick.
  10. Cut the rectangle in half lengthwise, then crosswise, making four small rectangles.
  11. Then cut each each of these diagonally, making 8 triangles. 4
  12. Place scones onto prepared baking sheet and bake for 14-18 minutes, or until a toothpick inserted in the center comes out clean.
  13. Allow to cool on wire rack.
  14. Slowly whisk milk into powdered sugar until desired thickness is reached for plain glaze.
  15. Slowly whisk milk into dry ingredients until desired thickness is reached for spiced glaze.
  16. When the scones are cool, spoon the plain glaze on each scone and allow to harden for 10 minutes before drizzling with spiced glaze.

Ingredients

  • Scones:
  • 2 1/2 cup Flour
  • 6 tbsp Sugar
  • 1 tbsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/4 tsp Cloves
  • 1/4 tsp Ginger
  • 1/2 cup cold Butter, cut into cubes
  • 1/2 cup Pumpkin Puree
  • 3 tbsp Heavy Cream
  • 1 Egg
  • 1 tsp Vanilla
  • Plain Glaze:
  • 1 cup Powdered Sugar
  • 2 tbsp Milk
  • Spiced Glaze:
  • 1 cup Powdered Sugar
  • 2 tbsp Milk
  • 1/4 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • Pinch of Cloves
  • Pinch of Ginger

Instructions

  1. Preheat oven to 400.
  2. Line a baking sheet with parchment paper or a silicone baking mat.

Yummy! One of my favorite restaurants to eat at is Olive Garden and I love making some of their dishes at home. It not only saves on money but it usually tastes better. This toasted ravioli is one of  my favorite dishes and it’s actually very easy to make. It’s crispy and full of flavor. Enjoy!

Copycat Olive Garden Toasted Ravioli

INGREDIENTS:

  • 16 oz package thawed Meat Ravioli
  • 2 Eggs
  • 1/4 cup Water
  • 1 tsp Garlic Salt
  • 1 cup Flour
  • 1 cup Breadcrumbs
  • 1/2 tsp Oregano
  • 1 tsp Basil
  • Grated Parmesan (for garnish) 2

DIRECTIONS:

  1. Beat water with eggs together.
  2. In another bowl, combine oregano, basil, garlic salt and bread crumbs.
  3. Place flour in a third bowl. 3
  4. Heat oil to 350 degrees.
  5. Dip each ravioli in flour then in egg wash and finally in bread crumbs and set on plate for 3-5 minutes. 4
  6. Carefully place in oil and fry until golden.
  7. Place on rack or paper towels to drain.
  8. Sprinkle with Parmesan and serve with you marinara sauce.

Copycat Thin Mint Cookies

INGREDIENTS:

  • 1 1/4 cup Flour
  • 1/2 cup Cocoa Powder
  • 1/4 tsp Salt
  • 1/2 cup softened Butter
  • 1 cup Sugar
  • 1 Egg
  • 3/4 tsp Peppermint Extract
  • 8 oz Dipping Chocolate 2

DIRECTIONS:

  1. Preheat oven to 350.
  2. Line baking sheet with parchment paper.
  3. Whisk together flour, cocoa, and salt. 4
  4. Cream together butter and sugar until fluffy. 3
  5. Add in egg and peppermint and mix until blended.
  6. Slowly add flour mixture into creamed mixture.
  7. Shape dough into a 1 1/2″ – 2″ round cylander and wrap in wax or parchment paper.
  8. Place in freezer for 1 hour to firm up. 5
  9. You can cut down the length of an empty paper towel roll and wrap it around cylinder to help it stay more round.
  10. Slice into 1/4″ thick cookies. 6
  11. Place on prepared sheet.
  12. Bake 10 to 12 minutes. 7
  13. Allow to cool.
  14. Line baking sheet with parchment paper.
  15. Melt chocolate by microwaving 45 seconds then stirring and repeating until chocolate is smooth and melted.
  16. Dip cookies in the chocolate and lift out with a fork shaking off excess.
  17. Place the cookies on prepared sheet and allow to set.

I don’t know anyone who doesn’t have their favorite type of Girl Scouts cookies. My favorite are Samoa cookies and I hate that time of year when I can’t get my hands on some. So, I decided to come up with a copycat recipe and this recipe tastes just like the real thing. They are really decadent and delicious. Enjoy!

Copycat Samoa Cookies

INGREDIENTS:

  • 1 cup softened Butter
  • 1/2 cup Sugar
  • 2 cup Flour
  • 1/4 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 tsp Vanilla
  • 1 tbsp Milk
  • 3 cup Flaked Coconut
  • 11 oz Caramels
  • 3 tbsp Milk
  • 8 oz Semisweet Chocolate Chips 2

DIRECTIONS:

  1. Preheat oven to 350.
  2. Line cookie sheet with parchment paper.
  3. Cream together butter, vanilla and sugar.
  4. Slowly add in flour, baking powder and salt.
  5. Add just enough milk until the dough comes together into a ball.
  6. Add in a bit of extra flour if your dough is very sticky. 3
  7. Roll out dough to 1/4″ thick.
  8. Cut out about 2″ cookies and place on a prepared sheet.
  9. Cut out about smaller hole in each cookie and return to dough. 4
  10. Re-roll dough and continue cutting cookies.
  11. Bake cookies for 10 minutes or until bottoms are light brown.
  12. Allow to cool on sheet for 5 minutes before transferring to a cooling rack.
  13. Preheat oven to 300.
  14. Line baking sheet with parchment paper.
  15. Spread coconut on prepared baking sheet. 5
  16. Bake 20 minutes, mixing every 5 minutes, until golden. 6
  17. Cool on baking sheet.
  18. Hold back 8 caramels.
  19. Unwrap caramels and place in a large bowl with milk.
  20. Microwave 60 seconds then stir, repeating until melted and smooth.
  21. Fold in cooled coconut.
  22. Spread topping on cooled cookies. 7
  23. If topping gets to firm in bowl, microwave 30 seconds.
  24. If topping is not adhering to cookie, unwrap and melt remaining caramels with 2 teaspoons of milk.
  25. Drizzle top of each cookie with plain caramel prior to placing topping.
  26. Melt chocolate by microwaving 45 seconds then stirring, and repeating until melted and smooth.
  27. Line cookie sheet with parchment paper.
  28. Dip the bottom of each cookie into chocolate and place on prepared sheet.
  29. Transfer remaining chocolate into the corner of a zippered bag.
  30. Clip off corner and drizzle finished cookies with chocolate.
  31. Refrigerate 15 minutes to set. collage

I remember always buying Taco Bell’s Mexi Pizza. It’s a really cool pizza that is a mix of a taco with a pizza. I have no idea how to explain it but if you haven’t tried it, I highly recommend trying out this version of it. They really are so delicious. Enjoy!

Copycat Taco Bell Mexican Pizza

INGREDIENTS:

  • 1/2 lb Ground Beef
  • 1/2 package Taco Seasoning Mix
  • 2 tbsp Water
  • 8 White Corn Tortillas
  • 16 oz Refried Beans
  • 1/3 cup Enchilada Sauce
  • 1/3 cup Thick and Chunky Salsa
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Monterey Jack Cheese
  • 1/4 cup diced Tomatoes
  • 1/4 cup slice Green Onion (green end)
  • 1/4 cup Sliced Black Olives
  • Vegetable Oil for Frying 3

DIRECTIONS:

  1. Brown ground beef in a skillet.
  2. Drain excess fat.
  3. Add water and taco seasoning. Mix well.
  4. Allow to simmer for 10 minutes on low.
  5. Remove from heat.
  6. Transfer taco meat to food processor and run until it is a fine consistency. 4
  7. Heat Oil to 375 on stovetop.
  8. Fry each tortilla for 30-45 seconds on each side and set on paper towels or paper bag to drain.
  9. Preheat oven to 400.
  10. Spread 1-2 tablespoons of beans on 4 tortillas.
  11. Top beans with the meat mixture. 2
  12. Top each of these with the remaining tortillas.
  13. Top these tortillas with a blend of enchilada sauce and salsa.
  14. Next add a mixture of the cheeses.
  15. Then top with tomatoes and olives.
  16. Optionally add green onion slices.
  17. Bake in oven for 5-10 minutes or until cheese is melted.

I remember growing up and eating Cracker Jacks…now they seem to be hard to find. No fear, you can just make your own! This recipe makes the best cracker jack popcorn and in my opinion actually tastes better than the store bought kind and is definitely a lot fresher. Did I mention that the kiddos love it too?! 😉 Enjoy!

Copycat Cracker Jacks

INGREDIENTS:

  • 10-12 cups of Popped Popcorn (or 3.5 oz bag of Microwave Popcorn)
  • 1 cup Brown Sugar
  • 1/4 cup Corn Syrup
  • 1/2 cup melted Butter
  • 1 tbsp Water
  • 2 tsp Vanilla
  • 1/2 tsp Baking Soda
  • 1 cup Salted Peanuts 2

DIRECTIONS:

  1. Preheat oven to 250.
  2. Line a baking sheet with parchment paper.
  3. Pop the popcorn.
  4. Spray a large bowl with cooking spray add popcorn.
  5. Combine brown sugar, corn syrup, butter, salt and water in a pan. 3
  6. Simmer over medium-high heat stirring frequently until temperature reaches 250 (firm to hard ball stage).
  7. Remove from heat, stir in the vanilla and baking soda.
  8. Pour over the popcorn and use spatula to gently fold the caramel into the popcorn until well coated.
  9. Stir in the peanuts. 4
  10. Pour the mixture onto prepared baking sheet and spread out.
  11. Bake for 1 hour, stirring every 15 minutes.
  12. Remove from the oven, and allow to cool.
  13. Carefully break up and store in an airtight container.

I use Ranch for a lot of recipes and I really like using the powder Hidden Valley mix for many Crock Pot recipes. In this next recipe, I am making copycat Hidden Valley Mix (Ranch) and I like it more than the store bought kind. If you’ve ever read the ingredients in these packets, you might be a little scared as there are a lot of random ingredients. That’s why I like making my own. 😉 When recipe calls for 1 packet of mix, use 2 tbsp of this instead. Enjoy!

INGREDIENTS:

  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp MSG (Accent!) optional
  • 1/2 tsp Salt
  • 1/2 tsp Sugar
  • 1/4 tsp Pepper 2

DIRECTIONS:

  1. Blend in food processor or blender and store in airtight container. 3

I’ve grown up eating chocolate stuffed cherries and whenever November rolls around you start seeing them in the stores! I use to buy a few boxes to tide me over for the rest of the year when they are harder to find but I decided to make my own! These are actually pretty easy to make (hard to believe right?!). Enjoy!

Cherry Cordials

INGREDIENTS:

  • 10 oz Maraschino Cherries
  • 2 tbsp softened Butter
  • 1 tsp Corn Syrup
  • 1 tbsp liquid from Mariaschino Cherry
  • 1/2 tsp Invertase
  • 1 1/2 cup Powdered Sugar
  • 12 oz Semi Sweet Chocolate 2

DIRECTIONS:

  1. Remove cherries from liquid and place on paper towel lined sheet to drain. 4
  2. Line a cookie sheet with parchment paper.
  3. Combine butter, corn syrup, 1 tablespoon of liquid from cherries and invertase.
  4. Stir until blended.
  5. Gradually add powdered sugar. Mixture should come together and not be too sticky.
  6. Form into 1/2″ balls and flatten. Place a drained cherry in the middle and wrap to completely cover cherry. Roll to round out ball. Return to prepared sheet. 3
  7. Place in freezer for at least 30 minutes.
  8. Melt chocolate by microwaving for 45 seconds, stirring and repeating until smooth and melted.
  9. Dip balls in chocolate with a fork, shaking off excess and return to prepared sheet.
  10. Refrigerate for 15 minutes to set chocolate.
  11. Use a knife to carefully trim excess chocolate from candies.
  12. Place in sealed container and allow to sit for a week or so for invertase to liquify sugar.

  • 16 oz Velveeta
  • 3/4 cup Milk
  • 1/2 tsp Cayenne Pepper (optional, if you like it spicy)
  • 15 oz Wolf Chili (No Beans)
  • 2 tsp Chili Powder
  • 2 tsp Lime Juice
  • 1/2 tsp Cumin 2

DIRECTIONS:

  1. Cut the velveeta into cubes.
  2. Heat all ingredients in pan over medium heat stirring frequently. 3

I love Copycat Starbucks drinks! Here is one of my favorite drinks to make at home and especially when it’s cold and snowing outside. If you can’t have caffeine or are trying to limit your intake, you can just omit the coffee or use decaf and it tastes just as good. This is really the type of drink you could make all year long and the great thing is, Starbucks stops making them after the Holidays so you can continue to make them at home with this recipe.

Copycat Pumpkin Spice Latte

INGREDIENTS:

  • 1 1/2 cup Water
  • 1 1/2 cup Sugar
  • 1/3 cup Pumpkin Puree

  • 2 tbsp Pumpkin Spice Syrup

  2. Add spices and the pumpkin and continue to simmer for 10 minutes, stirring often. Remove from heat and strain through cheesecloth or strainer. 3
  3. Allow the syrup to cool, then refrigerate in an air tight container.
  4. Heat milk in microwave for 1 minute.
  5. Froth with blender or whisk.
  6. Put syrup in bottom of cup and top with coffee and frothed milk.
  7. Top with whipped cream and a dusting of pumpkin pie spice.

There’s something about warm, creamy soup that makes a cold day totally worth it! I don’t know about you but I love to eating soup all winter long. My favorite kinds of soups are the creamy, rich soups and that’s why I love this next recipe. Enjoy!

Copycat Panera Autumn Squash Soup

INGREDIENTS

  • 1 Butternut Squash
  • 1 small Onion
  • 2 tbsp Olive Oil
  • 15 oz Pumpkin Puree
  • 2 cup Vegetable Broth
  • 1 1/2 cup Apple Cider
  • 1 1/2 cup Heavy Cream
  • 2 tbsp Honey
  • 1/4 tsp Curry Powder
  • 1/2 tsp Cinnamon
  • 2 tsp Salt
  • 1/2 tsp Black Pepper
  • Pumpkin Seeds (for garnish)  2

DIRECTIONS:

  1. Preheat oven to 450.
  2. Peel and seed squash and cut into chunks.
  3. Peel and quarter onion
  4. Toss squash and onion in olive oil and salt and pepper to taste.
  5. Cook for 20 minutes. 3
  6. Allow to cool at least 10 minutes.
  7. Puree in blender or food processor.
  8. In a large sauce pan, combine squash puree, pumpkin puree, vegetable broth, apple cider and cream. 4
  9. Bring to a low boil over medium heat.
  10. Add honey and spices and simmer for 10 minutes.
  11. Garnish with pumpkin seeds.

Even though we are heading into colder months with chillier temperatures, icy cold drinks are still delicious! One fall favorite that you may have seen at local coffee shops is the festive pumpkin frappuccino. Now, when you purchase a frappuccino at a coffee shop, it usually will cost you a decent amount just for one drink! So the benefit to making them at home is you save money and you can customize it exactly to your liking. Check out the recipe below for instructions on how to make your own DIY pumpkin frappuccino.

Ingredients Needed:

  • 1 Cup Of Milk (Any kind you prefer)
  • 1/2 Cup Of Coffee
  • 3/4 Cup Of Pumpkin
  • 1 Teaspoon Cinnamon (Or for extra flavor pumpkin pie spice)
  • Ice
  • 1 Teaspoon Of Vanilla
  • 1 Tablespoon Of Sugar
  • Whipped Cream and Caramel (Optional for topping)

Instructions:

  1. Layer all ingredients in the blender starting with the ice and pumpkin first. Blend all ingredients together until completely smooth.
  2. Once the frappuccino is smooth, pour into a tall glass and top with whip cream and cinnamon and or pumpkin pie spice for extra flavor! I also like to add a little caramel to mine! 😉

One of my favorite restaurants is Olive Garden. I love everything they have including the soup and salad but it’s not in the budget to go there every day so I had to come up with my own recipe. This Olive Garden recipe is the Copycat version of their Minestrone Soup and it is delicious! I hope you like it too. Enjoy!

Copycat Olive Garden Minestrone Soup

INGREDIENTS:

  • 3 tbsp Olive Oil
  • 1 diced medium Onion
  • 1 chopped small Zucchini 3
  • 14 oz Italian Style Green Beans
  • 1 diced stalk Celery
  • 4 tsp minced Garlic
  • 4 cup Vegetable Broth
  • 30 ounce drained Red Kidney Beans
  • 30 ounce drained Great Northern Beans
  • 14 ounce can Diced Tomatoes with juice
  • 1/2 cup Shredded Carrot
  • 1/2 cup dry Red Wine (optional)
  • 4 oz Tomato Paste
  • 1 tsp Oregano
  • 1 tsp Basil
  • 1/4 tsp Thyme
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 Bay Leaf
  • 3 cup Hot Water
  • 4 cups fresh Spinach
  • 1 1/2 cup Shell Pasta
  • Salt and Pepper to taste 2

  1. Heat olive oil over medium heat in a large stock pot.
  2. Saute onion, celery, zucchini, and carrots until onions are clear.
  3. Add garlic, green beans and tomato paste and stir. 4
  4. Add the broth, red wine and hot water and stir well.
  5. Add tomatoes, beans, and spices.
  6. Bring to a boil, reduce heat cover and simmer for 45 minutes.
  7. Remove bay leaf.
  8. Add spinach and pasta and cook for an additional 30 minutes. 5
