21 Day Fix Garlic Chicken in the Crock Pot
Okay guys….you will thank me for this recipe if you are trying to eat healthy!! I am doing the 21 Day Fix right now and thought I would share this amazing recipe with all of you! Watch the video to see how I make it… This is a super healthy, low fat, low sodium recipe that you will want to make even if you are not on a diet or trying to eat healthy. We were shocked at how good it turned out!
I shred this and use it on romaine lettuce hearts as a healthy taco, or just with some quinoa and brown rice! Enjoy!

Ingredients:
- 4 Chicken Breasts (we use frozen)
- 3-4 Coves of Garlic
- 2-3 cups unsalted chicken broth or chicken stock – just enough to halfway cover chicken
- Mrs. Dash seasoning (we use garlic & herb AND Original blend) – season as much as you want (I recommend a lot since it is salt-free and a “free food”).
Directions:
Combine everything in the crock pot and cook for 10 hours on low! It will shred really, really easily.

Fiesta Chicken in the Crockpot Recipe
Alright guys… you know that one and only recipe that is your “go to” recipe… the on that you just can’t ever get sick of, the one that everyone loves, that one you make when you have to “bring a dish”? Well, this is THAT ONE for us! I have made the for family and friends and they are always begging me for the recipe. When I explain what I did (yes, it’s only 6 ingredients and most are canned), they don’t believe me.
I have to admit, the first time I ever tried this, I was hesitant. I thought it was going to be funky and not taste anything like it actually does. I kept seeing people go crazy over it all over the internet (in fact, I have to thank My Litter as that is where I first saw it!). I promise you, this will quickly become your favorite recipe. I am so excited about it because it’s not only DELICIOUS, but it’s super, super easy, quick and inexpensive. I honestly feel like I’ve hit the jack pot with this meal.
If you have picky eaters or don’t like beans (I personally dislike black beans and never order them) then TRY THIS RECIPE and do NOT leave anything out. I eat the black beans and could not imagine it without them!
Okay, have I rambled enough? Can you tell how much I LOVE this recipe? I may even love it more than my famous and oh so popular Enchiladas with White Cream Sauce (Recipe here). Here’s the fiesta chicken recipe:
Fiesta Chicken (in the crock pot)
Ingredients:
- 4 chicken breast (frozen or raw – we use frozen to make it easier and cheaper)
- 1 packet Fiesta Ranch dip (find this by the salad dressing)
- 1 can corn not drained (use the liquid and all – it adds to the flavoring)
- 1 can black beans (I drain mine)
- 1 can diced tomatoes (if you want it a little spicier, you can use Rotel)
- 1 block cream cheese
Directions:
- Add all ingredients – no need to stir them, just add!
- Cook on high in the slow cooker for 4 hours (or you can do low for 6 hours)
- Shred chicken with forks and put back in the sauce – stir together (it’s a little soupy but we like it this way if you want it thicker, just leave the lid off for about 20 minutes and it will thicken up).
- We eat this with tortillas (I like to cook corn tortillas in oil and make them a little crispy – these are the best!!) or you can serve over rice or with regular tortillas.

My family loves Monkey break and I really like making it in the Crock Pot because it’s so much easier. The kiddos love it and it makes for a great dessert. You could also eat it for breakfast. This is a super quick recipe to whip together after a sleepover party too. It doesn’t take many ingredients and it’s delicious Enjoy!
Crockpot Monkey Bread
INGREDIENTS:
- 2 can Refrigerated Biscuits (8 ct)
- 2 cup Brown Sugar
- 2 tbsp Cinnamon
- 1/2 cup melted Butter
Icing (optional):
- 2 cup Powdered Sugar
- 2 tsp Milk
DIRECTIONS:
- Cut each biscuit into bite size pieces.
- Combine sugar and cinnamon.
- Coat sides and bottom of slow cooker with some of the melted butter.
- Dip each biscuit piece in melted butter and then in the sugar mix.
- Place them in layers in the bottom of the crockpot.
- Cook on High for 2 hours.
- Allow them to cool for a few minutes, then transfer to plate.
- Optionally, you can drizzle with icing by whisking together powdered sugar and milk.

Crock Pot Italian Meatballs
INGREDIENTS:
- 3 lb Ground Beef
- 8 slices White Bread
- 1/3 cup Milk
- 1 tbsp Olive Oil
- 1 medium Onion Finely Diced
- 1 tbsp minced Garlic
- 1/3 cup Grated Parmesan
- 2 tsp Oregano
- 4 tsp Basil
- 1 Egg
- 48 oz Spaghetti Sauce (homemade or jar)
DIRECTIONS:
- Tear bread into small pieces and place in a large bowl.
- Add milk and toss to absorb milk, let soak for 5 minutes.
- Drain any excess milk.
- Whisk egg and add to bread.
- Add onion, garlic, oregano, basil and parmesan and mix well.
- Crumble ground beef into mixture.
- Mix with your hands to endure everything is well blended and form into 2″ meatballs.
- Heat olive oil in a skillet and brown meatballs on all sides 5 at a time.
- Transfer browned meatballs to slow cooker.
- Add sauce and cook on High for 4 hours or low for 8 hours.

I love sweet and salty recipes and that’s exactly what this crock pot recipe is. This Hawaiian BBQ chicken is very easy to make and only requires 3 ingredients to make it. Crock Pot Hawaiian Barbecue Chicken
INGREDIENTS:
- 1 1/2 lb Boneless Chicken Breasts
- 1 bottle Barbecue Sauce
- 1 20 oz. can Pineapple Chunks or Slices, drained
DIRECTIONS:
- Place frozen chicken breasts in the slow cooker.
- Cover with sauce.
- If using slices, cut into chunks.
- Put drained pineapple chunks on top.
- Cook on High for 2-3 hours or Low for 4-6 hours.
- Break up or shred chicken with a fork.
- Serve over rice, noodles or on Hawaiian slider rolls.

I am always trying new crock pot recipes and this coke pulled pork is made in the crock pot. I love sweet and salty recipes and the coke in the recipe makes the pork a little sweet but not too sweet. You can use any cut of roast you want but I like using the pork shoulder roast (it’s also a little less expensive than other cuts and shreds well). These are great to make sandwiches, tacos and more. Enjoy!
Crockpot Coke Pulled Pork
INGREDIENTS:
- Whole Pork Shoulder Roast
- 12 oz Coke
- 1 tbsp Onion Powder
- 1 tbsp Garlic Powder
- 1 tbsp Black Pepper
- 1 tbsp Kosher Salt
- 1 bottle BBQ Sauce
DIRECTIONS:
- Remove any thick slabs of pure fat from outside of roast.
- Whisk spices together and rub over surface of roast.
- Place roast in slow cooker.
- Pour Coke over roast.
- Cover and set on high for 5 hours or low for 10 hours.
- Remove from slow cooker (Meat should basically be falling apart).
- Remove bones and discard.
- Discard all but 1/2 cup of juices from slow cooker.
- Shred meat using 2 forks.
- Return shredded meat to slow cooker
- Add reserved juices and BBQ sauce to slow cooker and mix well.
- Set slow cooker to low and cover for 30 minutes before serving.

INGREDIENTS:
- 3 sliced Onions
- 1/4 cup Butter
- 1 tbsp Worcestershire sauce
- 1 tbsp Sugar

- 64 oz Beef Broth
- 1/2 tsp Thyme
- 1 Bay Leaf
DIRECTIONS:
- Melt butter in skillet over medium heat.
- Add onions and sugar to pan and cook until light brown in color.
- Get a piece of cheesecloth and add thyme and bay leaf and tie up with string to create a bouquet garni.
- Place all ingredients in slow cooker.
- Cook on low for 7-9 hours.

I remember the first time I had chicken tortilla soup, it quickly became one of my favorites. I really like making it at home now since I’ve come up with a delicious way to make it in the crock pot. It’s simple and full of flavor. Enjoy!
Crock Pot Chicken Tortilla Soup
INGREDIENTS:
- 1 lb Chicken Breast
- 4 cup Chicken Broth
- 1 can Whole Kernel Corn
- 1 can Black Beans
- 1 tbsp minced Garlic
- 2 tsp chili powder
- 1 Onion
- 1 Jalapeno diced (seeds removed)
- 1 can Rotel not drained
- 1 tbsp chipotle in adobo
- Salt & Pepper to taste
- 1 tsp Cumin
- 1 Bay leaf
- 1/4 cup chopped Cilantro
- 6 Corn tortilla
- 1/4 cup shredded Cheese
DIRECTIONS:
- Add all ingredients except cheese, tortillas, cilantro and corn.
- Cook on low for 8 hours.
- Chicken should now shred with a spoon or fork. Shred chicken.
- Drain and add corn.
- Cut 2 tortillas into strips and add to pot.
- Finely chop cilantro leaves and add to soup.
- Cook for another hour.
- Cut remaining tortillas into strips place on baking sheet salt and bake at 350 for 10 minutes.
- Put soup in bowls and garnish with tortilla strips and cheese.

- 12 oz frozen Soup Vegetables
- 12 oz frozen Mixed Vegetables
- 1 Onion chopped
- 1 cup Barley

- 4 cup Beef Stock
- 1 Bay Leaf
- Salt to taste

DIRECTIONS:

- 2 cup Heavy Whipping Cream

- Add all ingredients to slow cooker and stir until well mixed and chips are spread around the bottom.

- 1 can Condensed Cream of Celery Soup
- 1 Onion, finely diced

Crock Pot Meat Loaf
Ingredients:
- 1 1/2 lb Ground Beef or Ground Turkey
- 2 Eggs
- 3/4 cup Milk
- 2/3 cup Bread Crumbs
- 1 tsp Salt
- 2 tsp Dried Minced Onions
- 1/2 tsp Sage
- 1/4 cup Ketchup
- 2 tbsp Brown Sugar
- 1 tsp Mustard
- 1 tsp Worcestershire Sauce
- 1 lb Carrots
- 1 1/2 lb Potatoes
Directions:
- Beat eggs in a large bowl.
- Add milk, bread crumbs, onion salt and sage and mix well.
- Crumble ground meat into mixture and mix well.
- Form into a loaf to sit in the middle of your slow cooker.
- Peel potatoes and carrots; cut into 1″ chunks and place around meat loaf.
- Cook on low 5-6 hours.
- Mix together ketchup, brown sugar, mustard and Worcestershire.
- Spread sauce on top of meat loaf and cook for 30 minutes on high.

Copycat Chipotle Barbacoa

Here is a delicious recipe that is super easy to make. This copycat Chipotle Barbacoa is full of flavor and is make in the crock pot which makes your life even easier! I love using this meat on tacos (we usually fry up some white corn tortillas) and add a little sour cream and veggies. Enjoy!
Copycat Chipotle Barbacoa
Ingredients:
- 4 lb Chuck Roast trimmed of excess fat)
- 2 tbsp Vegetable Oil
- 3 Bay Leaves
- º cup Apple Cider Vinegar
- 4 tsp Minced Garlic
- 4 tsp Cumin
- 3 tsp Oregano
- 1 tsp Black Pepper
- 1/2 tsp Ground Cloves
- 1 tsp Kosher Salt
- 4 Chipotle Peppers (from canned Chipotles in Adobo Sauce)
- 1 tbsp Adobo Sauce (from canned Chipotles in Adobo Sauce)
- 1 cup Chicken Broth
- 1/4 cup Lime Juice
Directions:
- To make the sauce combine vinegar, lime juice, chipotles, adobo sauce, garlic, cumin, oregano, black pepper, salt and cloves in a blender or processor on high speed until smooth.
- Insure all excess fat is trimmed off and cut into 6-8 pieces.
- Heat oil in a heavy skillet over medium high heat.
- Sear all sides of the meat to get a nice crust.
- Place meat in slow cooker.
- Cover with with sauce.
- Pour in broth and add bay leaves.
- Cover and cook 5 hours on high (or 8 hours on low).
- Remove the bay leaves.
- While still in the slow cooker, shred the meat with two forks and turn the heat to low and allow to cook for 1 more hour.

Ingredients:
- 1 lb lean ground beef
- 1 lb Bacon
- 1 chopped medium Onion
- 1 chopped Bell Pepper (any color)
- 4 medium can Pork and Beans (approx 60 oz total)
- 3/4 cup Brown Sugar
- 1 tbsp Minced Garlic
- 2 tbsp Mustard
- 2 tbsp Worcestershire Sauce
- 3/4 cup Ketchup
- 1 cup Barbecue Sauce
Directions:
- Brown ground beef with onion and pepper.
- Drain ground beef mixture and add to crock pot.
- Add remaining ingredients except bacon and stir to mix well.
- Cut bacon strips into quarters and fry until fat is rendered out and bacon is slightly browned.
- Add bacon pieces to top of crock pot.
- Cook on low for 3-4 hours.

One of my favorite “fast food” restaurants is Chipotle and if you’ve never been there, I highly recommend it. This copycat recipe is for their Carnitas and guess what else…it’s made in the crock pot! - Place pork in slow cooker and add remaining ingredients on top of pork.
- Cook on low 8-10 hours.
- Remove pork and shred (remove if it was not boneless).
- Remove bay leaves.

Here is a super simple recipe to make some fabulous and tasty Dulce de Leche Sauce which goes well on just about anything. My Mom use to make this when I was little but she would use a pan and boil water which can be a little bit dangerous and definitely not as easy as it is in the crock pot! Enjoy this tasty treat on a spoon by itself or over your favorite dessert. 😉
Crock Pot Dulce de Leche Sauce
Ingredients:
- 2 can Sweetened Condensed Milk
- 3/4 tsp Vanilla (optional)
Directions:
- Transfer condensed milk to three 1/2 pint mason jars and put on lids and rings.
- Place in slow cooker and cover with water.
- Cook on low for about 8 hours.
- Remove from water and allow to cool for 15 minutes.
- Carefully remove rings and lids.
- Add 1/4 tsp vanilla to each jar (optional).
- Stir well until sauce is smooth.
- To store replace, lid and ring and store in refrigerator.

Crock Pot French Dip
Ingredients:
- 4 lb Beef Roast
- 1 tbsp Minced Garlic
- 1 small Onion quartered
- 1 tbsp Rosemary
- 3 Bay Leaves
- 1 cup Soy Sauce
- 6 cup Water
- 8 Sub Rolls
- Bell Peppers (optional)
- Onions (optional)
- Cheese (optional)
Directions:
- Place roast in slow cooker.
- Place rosemary in bay leaves in a piece of cheesecloth and gather it up and tie with twine/string.
- Add remaining ingredients.
- Cook on Low for 8 to 10 hours.
- Remove bay leaves and rosemary and discard.
- Remove and shred beef.
- Strain juices to serve as Au Jus.
- Return everything to crock pot on warm and serve.
- If you like, you can sautee onions and peppers and add cheese to the sandwiches.

Directions:
- Add all items except egg noodles into the slow cooker.

Other than chili, I don’t know if I can think of a soup more popular these days than potato. And like chili, there are a number of different versions of potato soup. This version has quickly become my family’s favorite. It can be thrown together in 2 or 3 minutes and put in your slow cooker, or you can choose to make it in a pot on the stovetop. I have done it both ways. And you can buy all the ingredients needed for this soup at one of my favorite places to shop and save money on my grocery bill: Aldi.
Let me tell you, there is a point when “the magic happens” with this soup. It will start looking like potato soup pretty quickly, but keep cooking. You want to wait until the point when the starch comes out of the potatoes and thickens this all the more into the rich, creamy dish it is meant to be.
And don’t skimp on the salt here. Potatoes need a lot of seasoning, and there are a lot of potatoes in this soup. If it makes you uncomfortable, start with 1 teaspoon and then add more to taste when the soup is almost done cooking.
You can eat this soup just as it is, or dress it up with garnishes such as shredded cheese, crumbled bacon or scallions.
6-Ingredient Cheesy Potato Soup
Ingredients:
- 1 bag frozen hash brown potatoes
- 4 cups chicken broth (I prefer low-sodium)
- 1 8-oz. brick cream cheese
- 1 T. minced onion
- 1 ½ t. salt
- 1 t. pepper
Directions:
- Combine all ingredients in a stock pot on the stove top or in a slow cooker.
- For slow cooker: Cook on high 3-4 hours or low 5-6 hours. This is one dish I do lift the lid and stir to combine after an hour or so of cooking.
- For stovetop: Cook, stirring occasionally, for about an hour.
- Garnish with shredded cheese, bacon bits, scallions or a combination of toppings, if desired.

TOAST:
- 1 loaf French Bread
- 8 Eggs
- 2 cup Milk
- 1 tsp Cinnamon
- 1 tsp Sugar
TOPPING:
- 3/4 cup Brown Sugar
- 1/2 cup softened Butter
- 2 tsp Cinnamon
- 1/2 cup Pecans
Directions:
- Cut bread into roughly 3/4″ thick slices.
- Mix together all topping ingredients in a small bowl and set aside.
- Spray the inside of your 6 qt. crock with non-stick spray.
- In another bowl beat together eggs, milk, cinnamon and sugar and set aside.
- Place a layer of bread into your slow cooker. Then top with a layer of topping. Repeat for remaining layers.
- Pour egg mixture over the bread.
- Cook for 4 hours on low.

Directions:

- 3/4 cup water
- 3 tbsp Vegetable Oil

- 1 quartered onion
- 1 tbsp Worcestershire Sauce

- 2 tsp Black Pepper
- 1 tsp crushed Red Pepper Flakes

- 1 1/2 lb Potatoes cut in quarters
- 2 stalks Celery cut in thirds

- Heat 1 tbsp vegetable oil over high.

- 1/2 bottle Barbecue Sauce
What to do:

- Pour Coke over ribs and cook for 8-10 hours.
- Cover a oven safe pan with aluminum foil.
- The meat will be falling off the bones, so carefully transfer the ribs to the foil lined pan (meaty side up).
- Cover ribs with barbecue sauce and place under broiler until sauce starts to sizzle and caramelize.
- Remove from oven and serve.

What you need:
- 1 bag Frozen Hash Brown Potatoes (32 oz)
- 1 lb Bacon
- 1 Small Onion diced
- 8 oz Shredded Sharp Cheddar Cheese
- 1/2 Red Bell Pepper diced
- 1/2 Green Bell Pepper diced
- 12 Eggs
- 1 cup Milk
Super easy directions:
- Cut bacon in to small pieces, cook and drain (You could use precooked bacon to speed up the process).

Crock Pot Chicken Fajitas are so easy, inexpensive and quite delicious! I love using the crock pot to make fajitas because you never have to guess if the peppers are cooked enough or if the chicken is chewy. The crock pot seems to cook everything to just the perfect bite! You also end up with this really tasty sauce when you slow your crock pot fajitas..
The other thing I love is that you will most likely have everything needed for this recipe on hand. The only thing I had to buy today was the green chilies which are around $1-$2! Cheap, easy, and delicious meal….I think so!
Did I mention that these are healthy? Yes, Crock Pot Fajitas are very low cal (just use less cheese and sour cream to make them even healthier)!

Ingredients

- 3-4 Chicken Breasts (boneless, skinless) cut into slices or chunks
- 1 15 oz can of diced tomatoes
- 1 4 oz can of diced green chilies (we use mild but you can get hot)
- 1-2 teaspoons chili powder
- 2 teaspoons cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon oregano
- 1/2 teaspoon salt
- 1 Onion (sliced or cubed)
- 2 Bell peppers (sliced)
- 2 Tablespoons vegetable oil
- Corn or Flour tortillas
- Toppings (optional: sour cream, cheese, avocado, salsa)

Instructions
- This is my favorite part...Mix all of the ingredients together in the crock pot (I use my hands to mix them all around so all of the seasoning coats everything).
- Cook on high for 4 hours or low for 8 hours
- Enjoy over corn or flour tortillas (warm these in the microwave for a few seconds so they don't crack so much).

These crock pot cheesesteaks are super easy to make and taste delicious! If you’re in need of a quick yet tasty meal then you will definitely want to keep this recipe on hand. The meat is full of flavor and turns out juicy and tender.
Crock Pot Cheesesteaks

INGREDIENTS:
- 2 lb Beef Roast
- 1 1/2 cup beef broth
- 1/4 cup soy sauce
- 1 tbsp minced Garlic
- 2 Onions sliced
- 1 peppers sliced
- Provolone
- Hoagie or Sub Rolls
DIRECTIONS:
- Place beef, broth, soy sauce, garlic, and 1/2 of the peppers and 1/2 the onions in the slow cooker.
- Cook on low about 8 hours.
- Add remaining onions and peppers and cook for another hour.
- Preheat oven to 350.
- Open sub rolls and place provolone on each side and heat until cheese is melted and bread is slightly crunchy.
- Top with meat mixture and serve.

Like I’ve said in the past, anything to do with the crock pot and easy meals. Have you ever had salty yet sweet meat at places like Cafe Rio? They have a special secret…other than using BBQ sauce, they use some kind of a soda like Dr. Pepper or Coke! This makes the meat have a slightly sweeter flavor and keeps it moist and delicious. Crock Pot Dr. Pepper Pulled Pork

INGREDIENTS:
- 3-4 lb Pork Loin Roast
- Pork Rub (see how I make mine here) or your favorite seasonings
- 12 oz Dr Pepper
- Barbecue Sauce (to taste)
DIRECTIONS:
- Season pork with your rub on all sides.
- Place in slow cooker.
- Pour in Dr Pepper.
- Cook on low 10-12 hours.
- Drain most of the liquid.
- Use tongs to shred pork.
- Add barbecue sauce to taste (I use a whole bottle)
- Stir well and reduce temp to warm for serving.
- Serve on buns with cole slaw on the sandwich or on the side (optional).

Yummy! I love anything to do with the crock pot and this next recipe is a perfect comfort food made in the crock pot. Soup is always good throughout the year but especially in the winter. I also love how easy this is to make. You basically just throw everything into the slow cooker and you have a delicious and hearty meal. Enjoy.. (You can print it out at the very bottom).

Ingredients:
- 32 oz Dried Northern Beans
- 1 lb Bacon
- 2 Onions diced
- 1/2 lb Carrots diced
- 4 stalks Celery diced
- 4 cloves Garlic minced
- 4 cup Water
- 4 cup Chicken Broth
- 1 Bay Leaf
- 1/2 tsp Crushed Red Pepper
- Salt & Pepper (to taste)
Directions:
- Sort beans and remove any debris or rocks.
- Rinse beans under cold water.
- Fry bacon in skillet till crispy.
- Add all ingredients to slow cooker.
- Cook on high for 2 hours. Then cook on low for about 6 hours (until beans are tender)
- Remove bay leaf.

During the fall and winter months, I love to make Mulled Caramel Apple Cider. Spicy and sweet, it’s the perfect finish to a long day working in the yard or sitting by the fire. It’s a fantastically easy thing to make, and you can even make it in a slow cooker! For years I made a simple mulled apple cider, but after finding a caramel sauce that I love, I knew I had to add it to my tried and true recipe for a bump in flavor.
Spices Make the Mulled Caramel Apple Cider Perfect
A spice blend of whole and ground spices make Mulled Caramel Apple Cider perfect. I start with fresh cinnamon sticks and whole cloves for a strong, beautiful flavor that infuses into the Mulled Caramel Apple Cider as it simmers. Ground allspice and nutmeg round out the flavor and add a richness that warms you as you sip.
Ingredients
- 1 gallon fresh apple cider
