It’s Football season and you know what that means….a bunch of really good dip is needed! The guys wanted something with a little pop but TONS of flavor… So jalapeno Popper dip it is ! We’ve tested, made adjustments and tested some more and in my opinion (and theirs) this is the BEST Jalapeno Popper dip recipe ever!
You can choose to make it HOT and spicy or just flavorful without a kick depending on if you use the seeds, spicy or mild peppers, etc. Jalapenos of course are spicey , Pasilla chili mild ..read up on the spiciness of peppers and find out which one you want to include in you jalapeno popper dip.
Enjoy…make a lot…it will go fast.
Ingredients
- 2 packages of cream cheese (8 oz each) softened
- 1 cup mayonnaise
- 5 pieces of bacon (optional) cooked and chopped
- 1 small can chopped jalapenos (you can use fresh jalapenos too and keep the seeds if you want it spicier!)
- 3/4 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 1/2 cup crushed ritz crackers
- 1/2 cup parmesan cheese
- 1/2 stick melted butter

Instructions
- Pre-heat oven to 350 degrees F
- Combine all the top ingredients and mix together well
- Pour in 9x13 glass dish (or something similar)
- In a separate bowl combine all of the topping ingredients
- Pour over top jalapeno mixture
- Bake for 20 minutes
- Broil for 2-3 minutes until crackers are browned a little
- Serve with chips or crackers (we love it with pita chips!)

Shakshuka Egg Dish
I just had the BEST dinner! I am really excited because as most of you know, I am eating healthy right now and this recipe is just that…HEALTHY! I promise you, it doesn’t taste healthy… it tastes like a cheat meal. That means you can get in a healthy, low carb, low fat, low calorie meal and it tastes delicious. As an added bonus, it’s a One Pot Meal! Woohoo for less dishes. 😉
It’s called Shakruka and you’re going to love it. It’s FULL of flavor (which I was surprised about because I am not putting much salt in anything right now) but it is still full of yumminess. You can eat this for Breakfast, Lunch and Dinner! It also makes for a perfect brunch dish…I just has mine for dinner and it filled me up. Since I am cutting back on carbs, I chose not to eat bread or toast with it which I thought I’d miss but I didn’t miss it at all. Enjoy!
Shakshuka Egg Dish
Ingredients:
- 2-3 tablespoons olive oil
- 1/2 cup chopped onions
- 1 bell pepper, chopped
- 6 garlic cloves, finely chopped
- (2) 15 oz cans diced or chunk tomatoes
- 6 eggs
- 1 tsp cumin
- 1/2 tsp paprika
- salt and pepper to taste (I used Pink Salt and used only a tiny bit)
- Parsley to taste (I just sprinkle it all over and actually use dried parsley but fresh is great too)
Directions:
- Pour the olive oil into the bottom of a flat large pan (12 inches is great)
- Saute your onions and bell pepper until the turn a little brown but mostly just transparent
- Add the Garlic and saute for another minute or two to get the flavors out
- Add the seasonings and mix until combined
- Add the cans of tomatoes (add the juice and all)
- Simmer this mixture for about 10 minutes until it thickens a little
- Then, use your spoon to make a little pocket in your sauce for your egg, crack and egg into each pocket (6 total)
- Cover and let simmer for another 10 minutes or so but keep an eye an it and turn the heat off once your eggs get close to the consistency you want (they will continue to cook in the sauce when you pull off). I like mine almost cooked but a little runny.
- Enjoy!

21 Day Fix Garlic Chicken in the Crock Pot
Okay guys….you will thank me for this recipe if you are trying to eat healthy!! I am doing the 21 Day Fix right now and thought I would share this amazing recipe with all of you! Fiesta Chicken in the Crockpot Recipe
Alright guys… you know that one and only recipe that is your “go to” recipe… the on that you just can’t ever get sick of, the one that everyone loves, that one you make when you have to “bring a dish”? Well, this is THAT ONE for us! I have made the for family and friends and they are always begging me for the recipe. When I explain what I did (yes, it’s only 6 ingredients and most are canned), they don’t believe me.
I have to admit, the first time I ever tried this, I was hesitant. I thought it was going to be funky and not taste anything like it actually does. I kept seeing people go crazy over it all over the internet (in fact, I have to thank My Litter as that is where I first saw it!). I promise you, this will quickly become your favorite recipe. I am so excited about it because it’s not only DELICIOUS, but it’s super, super easy, quick and inexpensive. I honestly feel like I’ve hit the jack pot with this meal.
If you have picky eaters or don’t like beans (I personally dislike black beans and never order them) then TRY THIS RECIPE and do NOT leave anything out. I eat the black beans and could not imagine it without them!
Okay, have I rambled enough? Can you tell how much I LOVE this recipe? I may even love it more than my famous and oh so popular Enchiladas with White Cream Sauce (Recipe here). Here’s the fiesta chicken recipe:
Fiesta Chicken (in the crock pot)
Ingredients:
- 4 chicken breast (frozen or raw – we use frozen to make it easier and cheaper)
- 1 packet Fiesta Ranch dip (find this by the salad dressing)
- 1 can corn not drained (use the liquid and all – it adds to the flavoring)
- 1 can black beans (I drain mine)
- 1 can diced tomatoes (if you want it a little spicier, you can use Rotel)
- 1 block cream cheese
Directions:
- Add all ingredients – no need to stir them, just add!
- Cook on high in the slow cooker for 4 hours (or you can do low for 6 hours)
- Shred chicken with forks and put back in the sauce – stir together (it’s a little soupy but we like it this way if you want it thicker, just leave the lid off for about 20 minutes and it will thicken up).
- We eat this with tortillas (I like to cook corn tortillas in oil and make them a little crispy – these are the best!!) or you can serve over rice or with regular tortillas.

Crispy Cheddar Cheesy Chicken
If you’re looking for a super easy and delicious meal that the pickiest eater will love, then you will definitely love this next recipe. My kiddos are the pickiest of picky and begged to not eat this (before they tried it of course)! I told them nope, they have to at least try it… “what if we don’t like it?!” they kept asking. I replied with… “you WILL”. Sure enough, about 5 minutes later I hear, “THIS IS YUMMY!!”. Yay! A successful dinner that I’m keeping on the books.

Crispy Cheddar Cheese Chicken
Ingredients
- 4 large chicken breasts
- 1.5 sleeves Ritz crackers
- 1/4 t salt
- 1/8 t pepper
- 1/2 C milk
- 3 C cheddar cheese, grated (we use the Mexican Blend but any kind works)
- 1 1/2 t dried parsley
- 2 10 ounce can cream of chicken soup
- 4 T sour cream
- 4 T butter
Directions:
- Pre-heat oven to 400 degrees. F.
- Put Ritz in a bag and smash them into fine pieces
- Cut the chicken breasts into large chunks (I cut mine into 4 pieces)
- Pour the milk, cheese and cracker crumbs into 3 pans.
- Put the salt and pepper in with the ritz crumbs and stir
- Dip the chicken in the milk and then into the cheese (push the cheese onto it) then into the cracker crumbs (you will also need to push the crumbs onto the cheese chicken).
- Spray your 9×13 pan with cooking spray and place each piece of chicken into it
- Use the remaining cheese and crumbs (if any) and pour them onto the top of the chicken in your pan
- Sprinkle the dried parsley over the chicken
- Cover pan with foil
- Bake in oven for 35 minutes
- Take foil off and bake another 10 minutes (this is when I make the sauce)
- Combine cream of chicken, sour cream and butter in a pan over the stove and whisk until melted.
- Pour over the chicken (we like to eat this with rice and pour the sauce on the rice as well).

Crock pot recipes are a big hit around here….so simple and so delicious with minimal clean up. Betchya didn’t know you could make meatballs in the crock pot! This next recipe is a delicious meatball crock pot recipe that is pretty easy and quick to make. You will have to form the meatballs before cooking in the crock pot but that is pretty easy. Crock Pot Italian Meatballs
INGREDIENTS:
- 3 lb Ground Beef
- 8 slices White Bread
- 1/3 cup Milk
- 1 tbsp Olive Oil
- 1 medium Onion Finely Diced
- 1 tbsp minced Garlic
- 1/3 cup Grated Parmesan
- 2 tsp Oregano
- 4 tsp Basil
- 1 Egg
- 48 oz Spaghetti Sauce (homemade or jar)
DIRECTIONS:
- Tear bread into small pieces and place in a large bowl.
- Add milk and toss to absorb milk, let soak for 5 minutes.
- Drain any excess milk.
- Whisk egg and add to bread.
- Add onion, garlic, oregano, basil and parmesan and mix well.
- Crumble ground beef into mixture.
- Mix with your hands to endure everything is well blended and form into 2″ meatballs.
- Heat olive oil in a skillet and brown meatballs on all sides 5 at a time.
- Transfer browned meatballs to slow cooker.
- Add sauce and cook on High for 4 hours or low for 8 hours.

I have the pickiest eaters on the planet…and then there’s me, the one who will eat and try anything! I have to come up with ways to impress all of our palettes. I don’t care for super plain food and they don’t care for fancy food. With that being said, this recipe is absolutely perfect for my whole family. It’s one of my favorite things to make and is full of flavor (there’s GARLIC in it!) but no weird chunks of anything (that’s what the kiddos dislike).
This cheesy pasta casserole is so delicious and makes really good leftovers. It’s super cheesy, creamy, garlicky and full of flavor. Did I mention that it’s SUPER easy to make too?! Enjoy!

1 cup Milk
1 cup of Ranch Dressing (from the bottle)
3 Tbsp of butter
2 cups Mexican Cheese Blend
DIRECTIONS:

- Cook pasta al dente and set aside

- Place frozen chicken breasts in the slow cooker.
- Cover with sauce.
- If using slices, cut into chunks.
- Put drained pineapple chunks on top.

Bacon Deviled Eggs
INGREDIENTS:
- 6 Boiled Eggs
- 2 slices Bacon fried
- 1/4 cup Mayonnaise
- 1 tbsp Sweet Pickle Relish
- 1 tsp Mustard
- Salt and pepper, for taste
- Paprika to sprinkle as garnish
DIRECTIONS:
- Cut fried bacon into 12 small pieces.
- Cut eggs in half lengthwise.
- Remove yolks and place in a bowl.
- Mash yolks with a fork and stir in mayonnaise, pickle relish, and mustard.
- Salt and pepper, to taste.
- Mix until consistency is smooth.
- Transfer mixture to zippered bag and clip corner for piping.
- Pipe mixture into cooked egg whites evenly.

INGREDIENTS
DRESSING:
- 3/4 cup Olive Oil
- 1/2 lb Strawberries
- 2 tbsp Balsamic Vinegar
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1/4 tsp Tarragon
- 1/4 tsp Sugar
SALAD:
- Fresh Baby Spinach
- Strawberries chopped
- Shaved Parmesan Cheese
- Walnuts
DIRECTIONS:
- Add all dressing ingredients to food processor or blender and blend until smooth.
- Toast walnuts over low heat until slightly brown.
- Place Spinach on plates.
- Top with strawberries and walnuts.
- Add shaved parmesan cheese on top.

Here’s a healthy recipe that is tasty and good for you. This great for a dinner recipe or a perfect recipe for an appetizer or party. I also like making these when I’m having company and need to come up with something unique that most people will love. Even if you’re not a fan of tomatoes, I bet you will still like this because the seasoned pork brings it all together perfectly. Enjoy!
Ground Pork Stuffed Tomatoes
INGREDIENTS:
- 6 medium Tomatoes
- 1 lb Lean Ground Pork
- 1 small Red Onion
- 2 tsp Minced Garlic
- 1/4-1/2 cup chopped Bell Peppers (optional)
- 1/4 tsp Crushed Red Pepper Flakes
- 1/2 tsp Salt
- 1/2 tsp Ground Black Pepper
- 1 cup Bread Crumbs
- 1 beaten Egg
- 2 tsp chopped Parsley
DIRECTIONS:
- Preheat oven to 350.
- Split tomatoes through center and scoop out centers into a bowl.
- Place hollowed tomatoes into a baking pan and set aside.
- Chop tomato centers.
- Peel and finely dice onion.
- Place a little olive oil in a skillet and begin to cook pork.
- Add diced onion, minced garlic, salt, black pepper, and red pepper flakes.
- Cook and stir until meat is no longer pink.
- Add bell peppers and diced tomato centers and cook for 2 more minutes.
- Remove from heat.
- Add beaten egg and bread crumbs mixing well.
- Fill tomatoes with skillet contents.
- Place tomatoes in oven for 40-45 minutes until tomatoes are tender.

If you ever want to make your own biscuits and gravy then I highly recommend this recipe. This homemade biscuit recipe is a staple in our household because I run to it anytime I want a delicious, comforting biscuit. We love eating these with pasta, chicken, crock pot meals….they are even great for Strawberry Shortcake or other dessert recipes. Enjoy!
Buttermilk Biscuits
Recipes:
4 C flour, self rising
1 TBSP baling powder
1 TBSP sugar
3/4 C shortening
2 C buttermilk
Directions:
-Preheat oven to 400 degrees.
-Line a cookie sheet with parchment paper.
-Sift four, baking powder, salt and sugar.
-Make sure all dry ingredients are well blended in a bowl.
-Add the shortening to the dry ingredients.
-Using your fingers work the shortening thoroughly into the dry ingredients.
-Pour the buttermilk into the bowl, stir until all ingredients are well blended.
-Flour a wooden cutting board.
-Roll out the biscuit batter onto the floured board.
-Using a roller pin…roll out the batter to a consistent thickness.
-Using a round cookie cutter, cut out the biscuits.
-Place them on the cookie sheet leaving space between the biscuits.
-Bake at 400 degrees for 12-14 minutes or a light golden brown.
-Cool on a wire rack or EAT them hot.

Who doesn’t love Olive Garden’s breadsticks…right?! I love making these at home with my other copycat Olive Garden recipes. These breadsticks taste just like the real thing but what I love the most is that you can cook them a little less to make them softer. I love soft bread but sometimes Olive Garden overcooks them so I like to control that myself. I promise, you will love these if you try them. Enjoy!
Copycat Olive Garden Breadsticks
INGREDIENTS:
- 1 1/2 cup warm Water
- 1 tbsp Sugar
- 1 tbsp Yeast
- 2 tbsp Vegetable Oil
- 1 1/2 tsp Salt
- 4 cup Flour
- 4 tbsp melted Butter
- 1 tsp Garlic Powder
- 2 tsp Kosher Salt
DIRECTIONS:
- Combine oil, water, sugar, salt and yeast in bowl of mixer.
- Leave sitting for 10 minutes to allow yeast to bloom.
- Gradually add flour while mixing on low until the dough forms a ball.
- Spray a bowl with non stick spray and transfer dough to bowl.
- Cover with plastic wrap or a towel and place in a warm place to allow dough to double (about 1 hour).
- Grease baking sheets.
- Turn out dough on a floured surface.
- Roll out dough into a large rectangle.
- Cut in half, and then cut into 1″ thick strips.
- Roll and shape each strip into roughly 1′ x 8″ sticks.
- Place on prepared sheets about 2″ apart.
- Cover and place in a warm spot for 45 minutes or until doubled in size.
- Preheat oven to 350.
- Stir garlic powder into melted butter.
- Brush breadsticks with butter and sprinkle with kosher salt.
- Bake for 12 to 15 minutes or until golden brown.
- Brush finished breadsticks with remaining butter before serving.

Jalapeno Cheddar Pull Apart Rolls
INGREDIENTS:
- 2 can Pillsbury Grands Biscuits
- Jalapeno Slices
- 1 stick Butter
- 1 tbsp Garlic Powder
- 1 tbsp Oregano
- 8 oz Cheddar Cheese
DIRECTIONS:
- Melt butter in microwave.
- Stir in garlic and oregano.
- Cut each Grand into eight pieces (if using regular biscuits, cut each into 4).
- Dip each piece in butter mixture and place in muffin tin.
- After you put 3-4 pieces in a hole add a jalapeno slice and cheese.
- Then add 3-4 more and add another jalapeno and more cheese.
- Bake 350 for about 20 minutes.

Crockpot Coke Pulled Pork

I am always trying new crock pot recipes and this coke pulled pork is made in the crock pot. I love sweet and salty recipes and the coke in the recipe makes the pork a little sweet but not too sweet. You can use any cut of roast you want but I like using the pork shoulder roast (it’s also a little less expensive than other cuts and shreds well). These are great to make sandwiches, tacos and more. Enjoy!
Crockpot Coke Pulled Pork
INGREDIENTS:
- Whole Pork Shoulder Roast
- 12 oz Coke
- 1 tbsp Onion Powder
- 1 tbsp Garlic Powder
- 1 tbsp Black Pepper
- 1 tbsp Kosher Salt
- 1 bottle BBQ Sauce
DIRECTIONS:
- Remove any thick slabs of pure fat from outside of roast.
- Whisk spices together and rub over surface of roast.
- Place roast in slow cooker.
- Pour Coke over roast.
- Cover and set on high for 5 hours or low for 10 hours.
- Remove from slow cooker (Meat should basically be falling apart).
- Remove bones and discard.
- Discard all but 1/2 cup of juices from slow cooker.
- Shred meat using 2 forks.
- Return shredded meat to slow cooker
- Add reserved juices and BBQ sauce to slow cooker and mix well.
- Set slow cooker to low and cover for 30 minutes before serving.

- 2 cans Refrigerated Crescent Rolls
- 8 oz softened Cream Cheese
- 16 oz Sour Cream
- 1 packet (1/3 cup) dry Ranch Dressing mix (I make my own, see the recipe here)
- 1/2 cup Broccoli florets
- 1/3 cup Cucumber slices (cut in quarters)
- 8 chopped Cherry Tomatoes
- 1/4 cup shredded Carrots
DIRECTIONS:
- Heat oven to 375.
- Unroll both cans and press dough into bottom and sides of ungreased raised edge baking sheet or jelly roll pan.
- Bake 10-15 minutes until lightly browned.
- Cool completely.
- Mix together cream cheese, sour cream and dressing mix until blended.
- Spread mixture over crust.

As most of you know, I love making simple recipes that don’t take many ingredients, much time and definitely the fewer pans the better! This next recipe uses just one pot and doesn’t take much to make it. Even better, the kiddos really like eating it since it’s like a pizza and pasta in one (most kids loves these two things). 😉
I usually make sure I have everything on hand to make this at any time since it’s such an easy, delicious recipe. Enjoy!
One Pot Pepperoni Pizza Pasta Bake
INGREDIENTS:
- 1 lb Ground Beef
- 1 small Onion, diced
- 40 slices Pepperoni
- 24 oz jar Spaghetti Sauce
- 3 cup Penne Pasta
- 2 cup Water
- 1 1/2 cup shredded Mozzarella
DIRECTIONS:
- Brown ground beef and onion in a large, oven proof skillet and drain excess fat.
- Add 25 slices of pepperoni and spaghetti sauce.
- Add pasta and water, stir and bring to a boil.
- Reduce heat, cover and simmer for 15 minutes until the most of the liquid is absorbed and pasta is tender.
- Remove lid and sprinkle top with cheese and remaining pepperoni.
- Broil until the cheese is lightly browned.

This cheese sauce recipe is SO yummy and perfect for a ton of different dishes. I like to make this cheese dip for pretzels, broccoli, dipping veggies, chips and more. It really is a universal recipe that works well with many dishes. The kiddos like this sauce not spicy but you can easily add hot sauce and chili powder (see amounts below) to heat it up as much as you want. Enjoy!
Cheese Dipping Sauce
INGREDIENTS:
- 2 cup Milk
- 1/4 cup Butter
- 1/4 cup Flour
- 2 cup shredded Sharp Cheddar Cheese
- Salt & Pepper to taste
DIRECTIONS:
- Allow milk to warm to room temperature.
- Melt butter in a saucepan over medium heat.
- Sprinkle flour over melted butter while stirring to form a roux. Then cook for several minutes.
- Gradually add milk to roux while whisking to form a well blended mixture.
- Cook about 5 minutes until thickened.
- Gradually add in the cheese while stirring constantly until it is melted and smooth.
- Serve hot.
- If you would like to spice things up add 2 teaspoons hot sauce and 1 teaspoon chili powder.

My hubby loved chicken strips so I came up with a way to spice them up and these buffalo chicken strips have the perfect flavoring to them. They are spicy but you can definitely adjust the heat by how much hot sauce and chili powder you put in. I definitely recommend trying what I have below first because it’s the perfect mix of a little heat but not too spicy. These make great appetizers, dinner, leftover lunch, etc. Enjoy!
Buffalo Chicken Strips
INGREDIENTS:
- 2 1/2 lb Chicken Breasts cut in strips or Chicken Tenderloins
- 2 1/4 cup Flour
- 1/4 cup Cornstarch
- 2 tsp Salt
- 1 tsp Pepper
- 2 tsp Chili Powder
- 2 tsp Paprika
- 1 cup Milk
- 1/2 cup Water
- 1 Egg
- Vegetable Oil (for frying)
- 1 cup Hot Sauce
- 1/2 cup melted Margarine
- 1/4 cup Italian Dressing
DIRECTIONS:
- Combine flour, cornstarch, salt, pepper, chili powder and paprika in a large zippered bag and shake well to mix.
- Whisk together milk, water and egg in another bowl.
- Pour enough oil in a skillet to fill 1″ deep.
- Heat oil over medium heat (about 310).
- Coat chicken pieces by shaking in flour bag.
- Then dip each coated piece in egg wash, shaking off excess.
- Then toss dipped chicken in flour bag again to coat.
- Cook in hot oil until golden brown (about 3 minutes per side).
- Drain on paper towels.
- Combine margarine, hot sauce and dressing in a large bowl.
- Place each piece in sauce and toss to coat.
- Serve with celery and blue cheese or ranch dressing.

We love making our own homemade tortillas because they not only taste much better but they are also much better for you. These are great for dinners, snacks, quesadillas, or even dessert. We like heating them up and adding butter, cinnamon and sugar for a sweet treat. We also use these for fajitas and breakfast burritos. You can use them for anything you’d like but once you start making them yourself, you won’t ever want to buy them again. 😉 Enjoy!
Homemade Flour Tortillas
INGREDIENTS:
- 3 cup Flour
- 1 tsp Salt
- 1 tsp Baking Powder
- 1/2 cup Vegetable Oil
- 1 cup Warm Water
DIRECTIONS:
- Using a stand mixer, whisk dry ingredients until combined.
- Add water and oil and mix, scraping down the sides as needed until ball forms.
- Mix for two more minutes until dough is smooth.
- Turn out onto floured work surface and divide into 16 pieces and roll each into a ball.
- Allow to rest for 10 minutes.
- Preheat skillet over medium heat.
- Roll out each ball into a 6″ circle.
- Cook each tortilla on first side for about a minute, until brown spots form, then flip and cook other side for about 20 seconds.
- Stack cooked tortillas and wrap in a clean towel to cool.
- If not being used immediately, store in a zip lock bag.

INGREDIENTS:
- 3 sliced Onions

- 64 oz Beef Broth
- 1/2 tsp Thyme
- 1 Bay Leaf
DIRECTIONS:

- Add onions and sugar to pan and cook until light brown in color.
- Get a piece of cheesecloth and add thyme and bay leaf and tie up with string to create a bouquet garni.

7-Up Biscuits
INGREDIENTS:
- 4 cups Bisquick
- 1 cup sour cream
- 1 cup 7-up
- 1/2 cup melted butter
DIRECTIONS:
- Pre-heat oven to 425 degrees F.
- Mix Bisquick, sour cream and 7 up. (Dough will be very soft – which is fine)
- Knead and fold dough until coated with your baking mix.
- Pat dough out and cut biscuits using a round biscuit or cookie cutter (mason jars or other kitchen items work great for this too).
- Melt butter in bottom of cookie sheet pan or 9×13 casserole dish.
- Place biscuits on top of melted butter and bake for 12-15 minutes or until brown.

- 1 tbsp Oil
- 1 tsp Minced Garlic
- 1 Onion, diced
- 1 tbsp Worcestershire Sauce
- 1 cup Milk
- 2 tbsp Butter
- 2 tbsp Flour
- 12 oz Frozen Peas and Carrots, thawed
- Salt and Pepper to taste
DIRECTIONS:
- Preheat oven to 375.
- Heat oil in a skillet over medium heat and add ground beef, onion and garlic.
- Cook until browned and drain.
- In another skillet or pan, melt butter and add flour.
- Cook roux for 2 minutes.
- Whisk in worcestershire and milk.
- Cook for 1 minute to thicken.
- Combine beef mixture, gravy and thawed vegetables.
- Place in baking dish.
- Top with mashed potatoes and place in oven for 20-30 minutes until heated through.

We love having a weekly pizza night around here….meaning that once a week we get together as a family and make our own, homemade pizzas! You can have the kiddos make their own (they love doing this and tend to eat more this way) and then make an “adult” pizza. With that being said, making our own, homemade dough is essential and very cost effective. This recipe makes the best pizza dough and is quite easy. Enjoy!
Homemade Pizza Dough
INGREDIENTS:
- 15 oz (3 cups) Flour
- 1 tbsp Yeast
- 1 tbsp Sugar
- 2 tsp Salt
- 1 tbsp Olive Oil
- 9 fl oz Warm Water
Directions:
BY HAND:
- Place flour into a large mixing bowl and make a well in the center.
- Add yeast, sugar, salt, olive oil and water and stir until combined.
- Turn out onto a lightly floured surface and knead for 5ñ10 minutes or until a smooth ball forms.
IN KITCHENAID:
- Place flour into a stand mixers bowl and make a well in the center.
- Use dough hook.
- Add yeast, sugar, salt, olive oil and water and turn on low combined (about 3 minutes).
- Turn to medium and knead for 5-10 minutes or until a smooth ball forms.
BOTH:
- Place dough ball into a lightly oiled bowl, cover with plastic wrap or clean cloth. Set in a warm place for 30 minutes or until dough has doubled.
- Turn dough out on a floured surface and punch the dough to remove excess air, knead lightly.
- Divide dough into 4.
- Makes enough dough for 4 10-12″ thin pizzas.

I have a secret…I love to make all of my potato recipes with yukon potatoes because they have a natural buttery taste. These Garlic Parmesan Bacon Potatoes are made with yukon potatoes and have so much flavor. They have garlic, cheese, butter and bacon! These make a great side dish and everyone always loves them. Enjoy!
Garlic Parmesan Bacon Potatoes
INGREDIENTS:
- 3 lb Yukon Potatoes
- 12 oz Bacon
- 2 tbsp Butter
- 2 tbsp minced Garlic
- 1/4 cup Parmesan Cheese
- 1/4 cup chopped fresh Parsley
- 1/4 cup sliced Green Onion
- Salt & Pepper to taste
DIRECTIONS:
- Slice potatoes in half lengthwise and place in water and boil for 12 minutes.
- Drain potatoes and set aside.
- Slice bacon into 1″ pieces and fry until cooked but not crispy. Allow to drain. Reserve bacon grease.
- Preheat oven to 400.
- In a large pan, add 2 tablespoons bacon grease and butter and heat over medium heat.
- Add garlic, parsley, salt and pepper and mix well.
- Add potatoes and toss to coat well.
- Transfer potatoes to baking sheet cut side down.
- Sprinkle bacon over potatoes.
- Heat 30 minutes or until cut side begins to brown.
- Flip and bake another 15 minutes.
- Garnish with sliced onions.

Mini Chicken Pot Pies
INGREDIENTS:
- 1 lb Chicken Breasts
- 1 tsp Vegetable oil
- 1 pkg Crescent Rolls
- 1 can Cream Chicken Soup
- 6 oz Frozen Peas & Carrots
- Salt to taste
- Pepper to taste
DIRECTIONS:
- In skillet heat oil over medium and sautee chicken until no longer pink.
- Add chicken soup and 5 oz water mix until well blended.
- Add vegetables and cook until soft.
- Spray muffin tin with cooking spray.
- Place each crescent roll in muffin tin.
- Fill each with chicken vegetable mixture.
- Bake at 375 for 12-15 minutes.

Did you know you can make your own Guinness Bread right from your home?! This recipe is actually very easy to make and full of flavor. This is also a perfect St. Patty’s day recipe and great to take to a party. We like to eat this bread with butter but you can always make sandwiches out of it, appetizers, etc. Enjoy!
Guinness Bread
INGREDIENTS:
- 1 cup Rolled Oats
- 2 cup Whole Wheat Flour
- 1/2 cup Brown Sugar
- 2 tsp Baking Soda
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1/4 cup melted Butter
- 2 tsp Vanilla
- 1 cup Milk
- 1 tsp Vinegar
- 12 oz Guinness
DIRECTIONS:
- Preheat oven to 425.
- Grease a loaf pan.
- Combine milk and vinegar and set aside for 10 minutes.
- Mix together 3/4 cup of oats, flour, sugar, baking soda, baking powder, and salt.
- In another bowl, stir together the butter, vanilla, milk mixture and Guinness.
- Add dry mixture into the liquid mixture, and stir until blended.
- Pour batter into the prepared pan.
- Sprinkle top with remaining oats.
- Bake 30 minutes, then reduce temperature to 400 and bake for additional 20 minutes.
- Allow to cool in pan for 30 minutes before moving to a wire rack.

Beef Enchiladas

One of my most popular recipes is my Chicken Enchiladas with Sour Cream White Sauce but we came up with another REALLY yummy enchilada recipe! This is a simple and delicious beef enchiladas recipe. It comes together pretty quickly and doesn’t require many ingredients. You could do this with shredded beef or ground beef. It’s a little easier to make with ground beef though so we tend to that. Enjoy!
Beef Enchiladas
INGREDIENTS:
- 3 cups Enchilada Sauce
- 1 lb Ground Beef
- 1 Onion diced
- 1 tbsp Olive Oil
- 1 tbsp diced Jalapenos
- 1/2 tsp Cayenne Pepper
- 1/2 cup Black Beans, drained and rinsed
- 1 1/2 cup shredded Colby Jack cheese
- 1 1/2 cup shredded Cheddar Cheese
- 10-12 Tortillas
- 2 tbsp chopped Cilantro
- 2 tbsp chopped Green Onions
- 2 tbsp chopped Tomatoes
- Salt and Pepper to taste
DIRECTIONS:
- Preheat oven to 375.
- Pour 1 cup enchilada sauce in bottom of baking dish.
- Heat oil in a skillet over medium heat and add ground beef, jalapenos, cayenne and onion.
- Cook until browned and drain.
- Warm tortillas by heating in microwave for 1 minute.
- Combine ground beef mixture, 3/4 cup colby, 3/4 cup cheddar and beans.
- Place about 1/2 cup of mixture in center of each tortilla and roll.
- Place each, seam side down, in baking dish.
- Top with remaining sauce and cheeses and bake 20 minutes until sauce is bubbling.
- Garnish with cilantro, green onions and tomatoes.

Copycat Olive Garden Toasted Ravioli

Yummy! One of my favorite restaurants to eat at is Olive Garden and I love making some of their dishes at home. It not only saves on money but it usually tastes better. This toasted ravioli is one of my favorite dishes and it’s actually very easy to make. It’s crispy and full of flavor. Enjoy!
Copycat Olive Garden Toasted Ravioli
INGREDIENTS:
- 16 oz package thawed Meat Ravioli
- 2 Eggs
- 1/4 cup Water
- 1 tsp Garlic Salt
- 1 cup Flour
- 1 cup Breadcrumbs
- 1/2 tsp Oregano
- 1 tsp Basil
- Grated Parmesan (for garnish)
DIRECTIONS:
- Beat water with eggs together.
- In another bowl, combine oregano, basil, garlic salt and bread crumbs.
- Place flour in a third bowl.
- Heat oil to 350 degrees.
- Dip each ravioli in flour then in egg wash and finally in bread crumbs and set on plate for 3-5 minutes.
- Carefully place in oil and fry until golden.
- Place on rack or paper towels to drain.
- Sprinkle with Parmesan and serve with you marinara sauce.

Honey Chipotle No Fry Wings
INGREDIENTS:
- 2 1/2 lb Chicken Wings
- 1 tbsp Salt
- 1/2 cup Ketchup
- 1/4 cup Brown Sugar
- 1/4 cup Honey
- 1 1/2 tbsp Chipotle Chiles in Adobo
- 2 tsp Vinegar
- 1 1/2 tsp Worcestershire Sauce
- 1/2 tsp Garlic Powder
- Salt to taste
- Pepper to taste
DIRECTIONS:
- If not already done, cut apart wings and drumettes.
- Add 1 tablespoon salt to large pot of water and bring to a boil.
- Boil chicken in water for 9 minutes.
- Preheat oven to 450.
- Dry chicken with paper towels and place on a rack on a baking sheet.
- Bake in oven for 25 minutes.
- Turn each piece and bake an additional 15 minutes.
- Combine remaining ingredients and run through food processor.
- Take wings from oven and place in sauce and toss to coat.

Fried Macaroni and Cheese Bites
INGREDIENTS:
- 1 lb Macaroni
- 2 (8 oz) Packages of Sharp Cheddar Cheese Chunk
- 1 3/4 cup Milk
- 1/2 cup Flour
- 1/4 cup Butter
- 2 Eggs
- 3 cup Seasoned Bread Crumbs
- Salt & Pepper to taste
- Vegetable Oil (for frying)
DIRECTIONS:
- Boil macaroni until tender, drain and set aside.
- Shred your cheese and set aside.
- In a large pan, melt butter over medium heat.
- Add flour and mix until light brown color (make a roux).
- Add 1 cup milk and whisk until thick.
- Add cheese one hand full at a time.
- Mix until cheese is all melted and smooth.
- Add cooked macaroni to pan and mix until well coated.
- Add salt and pepper.
- Transfer to container that will fit in your refrigerator, and refrigerate for 1 hour or until cold.
- Line a baking sheet with wax or parchment paper.
- Form cold macaroni and cheese into 1″ balls and place on prepared pan.
- Place in freezer for 1 hour.
- Beat eggs and add 1/4 cup milk in a bowl to make egg wash.
- Dip balls into egg wash then roll in bread crumbs to coat completely.
- Heat oil in deep fryer to 320 or fill skillet 1/2-3/4″ deep and heat over medium high to 320.
- Fry for about 3-4 minutes and drain.

I seriously LOVE soup. My favorite kind of soup is a creamy, hearty based soup and that’s exactly what this next recipe is. This cheeseburger soup has meat, cheese, milk, chicken broth and more that make it so addictive and delicious. I highly recommend trying out this recipe if you’re a fan of creamy soup. Cheeseburger Soup
INGREDIENTS:
- 1 lb Ground Beef
- 1 cup chopped Onion
- 1 cup sliced Carrots
- 3/4 cup diced Celery
- 4 cup Potatoes diced
- 1 tsp Basil
- 1 tsp Parsley Flakes
- 4 tbsp Butter
- 3 tsp Chicken Base or 3 cup Chicken Broth
- 1/4 cup Flour
- 8 oz shredded cheddar cheese
- 1 1/2 cup Milk
- 1 tsp Salt
- 1/2 tsp Black Pepper
DIRECTIONS:
- Brown the ground beef and drain.
- In a medium to large pan, melt one tablespoon butter saute onion, carrots, parsley flakes, basil and celery until onion is transparent.
- Add the broth, potatoes and beef and bring to a boil.
- Reduce heat, cover and simmer about 15 minutes or until potatoes are tender.
- In another skillet melt remaining butter and add the flour. Cook and stir for 5 minutes or until roux is bubbling.
- Add roux to soup and bring to a boil and stir for a couple of minutes.
- Reduce heat to low and add cheese, milk, salt and pepper.
- Cook and stir several minutes until cheese melts.
