 Watermelon is a perfect Summer snack and what I love about it is how inexpensive it is! There are many things you can make with it (check out my Watermelon Smoothie Recipe here) but it’s fun to just eat and almost every kid out there loves it.

This is my favorite way to cut up a watermelon and guess what..it’s perfect for kiddos little fingers! They can easily pull out a piece and still get a good amount of fruit with a little part to hold onto!

First cut the watermelon in half.

Then flip it on its side and cut slices into it.

I’ve been working on compiling a bunch of healthy smoothie recipe and below you will find my favorites! These taste delicious and are full of nutrients. I like making these for breakfast, a quick snack or meal on the go AND they are perfect for desserts. Before we get into the recipes, check out the health benefits below:

Spinach Benefits:

The best ratio for a a healthy spinach smoothie is 40% spinach or other leafy green (I also suggest kale) to 60% fruit.

Spinach is a super food as it carries health benefits of  vitamins A (as beta-carotene), C, K, and folate, calcium, dietary fiber,  and iron. Spinach also carries selenium, zinc, phosphorus, potassium, copper, omega-3 fatty acids and vitamins B1, B2, B3, B6 and E.

Spinach also can help the following:

-Protect against certain cancers of the stomach, skin, breast, prostate, ovaries and colon.

-Cardiovascular health

-Prevention of  heart attacks and stroke

– Spinach can help diseases like asthma and rheumatoid arthritis

Blueberry Yogurt Smoothie

  • 1 cups spinach, fresh
  • 3⁄4 cup water
  • 3⁄4 cup orange juice
  • 1 cup blueberries (Frozen)
  • 1 banana
  • 1/2 cup Yogurt (non-fat)

Mix all the ingredients to make your smoothie!

Cantaloupe Smoothie

  • 1 cup orange juice
  • 2 cups cantaloupe chopped in small pieces (frozen)
  • 1 banana

Surfrider Smoothie ( similar to Jamba Juice )

  • Juice of 1 Lemon

21 Day Fix Garlic Chicken in the Crock Pot

21 Day Fix Garlic Chicken in the Crock Pot - This is a super healthy, low fat, low sodium recipe that you will want to make even if you are not on a diet or trying to eat healthy. We were shocked at how good it turned out!

Okay guys….you will thank me for this recipe if you are trying to eat healthy!! I am doing the 21 Day Fix right now and thought I would share this amazing recipe with all of you! Watch the video to see how I make it… This is a super healthy, low fat, low sodium recipe that you will want to make even if you are not on a diet or trying to eat healthy. We were shocked at how good it turned out!

I shred this and use it on romaine lettuce hearts as a healthy taco, or just with some quinoa and brown rice! Enjoy!

Ingredients:

  • 4 Chicken Breasts (we use frozen)
  • 3-4 Coves of Garlic
  • 2-3 cups unsalted chicken broth or chicken stock – just enough to halfway cover chicken
  • Mrs. Dash seasoning (we use garlic & herb AND Original blend) – season as much as you want (I recommend a lot since it is salt-free and a “free food”).

Directions:

Combine everything in the crock pot and cook for 10 hours on low! It will shred really, really easily.

21 day fix Chicken in the Crock Pot

Ingredients

  • 4 Chicken Breasts (we use frozen)
  • 3-4 Coves of Garlic

Instructions

Onion Dip is huge around here! We use is for Birthday parties, get-togethers, holidays, BBQs and more! What I love about this next recipe is it’s a homemade version of Onion Dip which makes the flavors so much tastier and it’s very easy to make. I definitely recommend trying this out if you’re a fan of onion dip. We like to dip chips in it (Lays potato chips are delicious with it) and any kind of veggie is really good too. Enjoy!

Onion Dip from Scratch

INGREDIENTS:

  • 2 tbsp Olive Oil
  • 2 large Onions, diced 2
  • 1 tbsp minced Garlic
  • 16 oz Sour Cream
  • 2 tsp Worcestershire Sauce
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Black Pepper
  • 1/4 tsp Kosher or Sea Salt 5

DIRECTIONS:

  1. Add olive oil to pan over medium heat.
  2. Add onions, garlic and Worcestershire and saute until caramelized (15-20 minutes). 3
  3. Remove from heat and allow to cool.
  4. Combine the remaining ingredients, and add the cooled onion mixture. 4
  5. Refrigerate before serving.

If you’re looking for a Meat Spaghetti Sauce recipe then look no further! The cooked onion and garlic give this sauce a unique flavor. Once you start cooking the garlic and onion, your house will smell really, really good. This is really good with meatballs, spaghetti or course, pasta, lasagna, etc. Enjoy!

Meat Spaghetti Sauce

INGREDIENTS:

  • 1 lb Ground Beef
  • 28 oz crushed Tomatoes
  • 2 tbsp Olive Oil
  • 1/2 Onion finely chopped
  • 3 cloves garlic minced
  • 5-6 oz mushrooms sliced
  • 1/4 Red Bell Pepper
  • 1/4 Yellow Bell Pepper 3
  • 1 tsp Oregano
  • 2 tsp Basil
  • 1/2 tsp crushed Red pepper flakes
  • 1 tsp sugar 2

DIRECTIONS:

  1. Brown ground beef in large pan.
  2. Drain and set aside.
  3. Heat oil in a large pan over medium heat.
  4. Saute onion and garlic until onions are transparent.
  5. Add ground beef and all remaining ingredients. 4
  6. Bring to a boil.
  7. Reduce heat to low and simmer for 20 minutes.

We use our Zoku Popsicle maker all the time! I highly recommend these if you don’t have one (they make popsicles in minutes (literally) and they are VERY easy to clean. I’ve come up with a really yummy watermelon kiwi recipe that turned out delicious. We like to try different combination all the time and this one I really enjoyed. Plus, these turned out really cute! Watermelon Kiwi Pops
(Yield about 6 pops)

INGREDIENTS:

  • 3 cup Watermelon cut in cubes
  • 2 Kiwis peeled and sut in cubes
  • 18-24 Raisins (optional)
  • Zoku Maker (optional but I LOVE mine – you can get one here!) 3

DIRECTIONS:

  1. Puree kiwi in food processor or blender until liquified. 5
  2. Transfer to pouring container
  3. Puree watermelon in food processor or blender until liquified. 4
  4. Transfer to pouring container
  5. You can optionally add sugar or honey if extra sweetness is desired.

If you are using a Zoku Quick Pop Maker:

  1. Place stick in position.
  2. Pour watermelon juice in maker about 2/3 way to fill line.
  3. Add 3 or 4 raisins to simulate seeds (optional).
  4. Wait 6 minutes or until firmed.
  5. Pour kiwi juice in maker up to fill line.
  6. Wait 10 minutes or until frozen.
  7. Use tool to remove pop and place in freezer.

If you are not using a Zoku:

  1. Pour watermelon juice in popsicle molds or small paper cups about 2/3 full.
  2. Add 3 or 4 raisins to simulate seeds (optional).
  3. Place in freezer for 10-15 minutes or until mixture begins to firm.
  4. Insert sticks.
  5. Pour kiwi juice in popsicle molds or small paper cups to fill.
  6. Return to freezer for several hours.

I love making spinach salad but it has to have a good dressing and toppings to take away from the strong spinach taste. That’s why I love making this next recipe because the strawberry dressing is delicious and a perfect combination with the spinach. I also toast my walnuts to enhance the flavor and bring out the natural, delicious oils in them. Enjoy this healthy recipe!

Strawberry Walnut Spinach Salad and Dressing

INGREDIENTS

DRESSING:

  • 3/4 cup Olive Oil
  • 1/2 lb Strawberries
  • 2 tbsp Balsamic Vinegar
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Tarragon
  • 1/4 tsp Sugar 

SALAD:

  • Fresh Baby Spinach
  • Strawberries chopped 3
  • Shaved Parmesan Cheese
  • Walnuts 2

DIRECTIONS:

  1. Add all dressing ingredients to food processor or blender and blend until smooth. 4
  2. Toast walnuts over low heat until slightly brown. 5
  3. Place Spinach on plates.
  4. Top with strawberries and walnuts.
  5. Add shaved parmesan cheese on top.
  6. Serve with dressing.

Looking for a healthy recipe?

Here’s a healthy recipe that is tasty and good for you. This great for a dinner recipe or a perfect recipe for an appetizer or party. I also like making these when I’m having company and need to come up with something unique that most people will love. Even if you’re not a fan of tomatoes, I bet you will still like this because the seasoned pork brings it all together perfectly. Enjoy!

Ground Pork Stuffed Tomatoes

INGREDIENTS:

  • 6 medium Tomatoes
  • 1 lb Lean Ground Pork
  • 1 small Red Onion
  • 2 tsp Minced Garlic
  • 1/4-1/2 cup chopped Bell Peppers (optional)
  • 1/4 tsp Crushed Red Pepper Flakes
  • 1/2 tsp Salt
  • 1/2 tsp Ground Black Pepper
  • 1 cup Bread Crumbs
  • 1 beaten Egg
  • 2 tsp chopped Parsley 3

DIRECTIONS:

  1. Preheat oven to 350.
  2. Split tomatoes through center and scoop out centers into a bowl. 4
  3. Place hollowed tomatoes into a baking pan and set aside.
  4. Chop tomato centers.
  5. Peel and finely dice onion. 5
  6. Place a little olive oil in a skillet and begin to cook pork.
  7. Add diced onion, minced garlic, salt, black pepper, and red pepper flakes.
  8. Cook and stir until meat is no longer pink.
  9. Add bell peppers and diced tomato centers and cook for 2 more minutes. 6
  10. Remove from heat.
  11. Add beaten egg and bread crumbs mixing well.
  12. Fill tomatoes with skillet contents. 7

Want a healthy recipe for the kiddos this Summer?! These yogurt cups are delicious, healthy and very easy to make. You only need 2 ingredients (yogurt and gelatin). The gelatin is what makes it stick together and freeze in the right consistency. I like making it with vanilla flavored yogurt (you could always use greek yogurt to make it a little healthier) but the vanilla and strawberry are a great flavor combination.

  1. Line a muffin pan with paper liners.

If you’re looking for a healthy and delicious recipe then I bet you will love this next one. Sometimes I crave pizza (especially when I am trying to eat healthy) so this recipe has helped with that craving. If you are on a diet or eating healthy, try this veggie pizza next time you get that craving. It really is satisfying and it’s a perfect way to get in some healthy vegetables. Veggie Pizza Bites

INGREDIENTS:

  • 2 cans Refrigerated Crescent Rolls
  • 8 oz softened Cream Cheese
  • 16 oz Sour Cream
  • 1 packet (1/3 cup) dry Ranch Dressing mix (I make my own, see the recipe here)
  • 1/2 cup Broccoli florets
  • 1/3 cup Cucumber slices (cut in quarters)
  • 8 chopped Cherry Tomatoes
  • 1/4 cup shredded Carrots  43

DIRECTIONS:

  1. Heat oven to 375.
  2. Unroll both cans and press dough into bottom and sides of ungreased raised edge baking sheet or jelly roll pan.
  3. Bake 10-15 minutes until lightly browned. 5
  4. Cool completely.
  5. Mix together cream cheese, sour cream and dressing mix until blended.
  6. Spread mixture over crust.
  7. Decorate with vegetables. 7

We love making our own homemade tortillas because they not only taste much better but they are also much better for you. These are great for dinners, snacks, quesadillas, or even dessert. We like heating them up and adding butter, cinnamon and sugar for a sweet treat. We also use these for fajitas and breakfast burritos. You can use them for anything you’d like but once you start making them yourself, you won’t ever want to buy them again. 😉 Enjoy!

Homemade Flour Tortillas

INGREDIENTS:

  • 3 cup Flour
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 1/2 cup Vegetable Oil
  • 1 cup Warm Water 3

DIRECTIONS:

  1. Using a stand mixer, whisk dry ingredients until combined.
  2. Add water and oil and mix, scraping down the sides as needed until ball forms. 4
  3. Mix for two more minutes until dough is smooth.
  4. Turn out onto floured work surface and divide into 16 pieces and roll each into a ball. 5
  5. Allow to rest for 10 minutes.
  6. Preheat skillet over medium heat.
  7. Roll out each ball into a 6″ circle. 6
  8. Cook each tortilla on first side for about a minute, until brown spots form, then flip and cook other side for about 20 seconds. 7
  9. Stack cooked tortillas and wrap in a clean towel to cool.

Bet you didn’t know that you could make french onion soup in the crock pot?! I personally love soup and this french onion soup recipe is full of flavor and actually pretty good for you (especially if you’re sick!). It’s simple to make and doesn’t require many ingredients. If you’re a fan of soup and or onions, then I highly recommend you try this recipe out. Enjoy!

Crock Pot French Onion Soup

INGREDIENTS:

  • 3 sliced Onions
  • 1/4 cup Butter
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Sugar
  • 1 tbsp Brown Sugar
  • 1 tsp minced Garlic
  • 64 oz Beef Broth
  • 1/2 tsp Thyme
  • 1 Bay Leaf 5

DIRECTIONS:

  1. Melt butter in skillet over medium heat. 2
  2. Add onions and sugar to pan and cook until light brown in color. 3
  3. Get a piece of cheesecloth and add thyme and bay leaf and tie up with string to create a bouquet garni. 4
  4. Place all ingredients in slow cooker.
  5. Cook on low for 7-9 hours.

Orange Whip (like Disney World)

Sometimes I crave the Dole Whip or Orange Whip from DisneyWorld so I’ve come up with this recipe to make my own at home. This whip is a flavorful, creamy, sweet ice cream that refreshes you on a hot summer day. The kiddos can help make this and it’s super inexpensive to make. Enjoy!

Orange Whip (like Disney World)

INGREDIENTS:

  • 12 oz frozen Orange Juice Concentrate
  • 8 oz frozen Whipped Topping (like Cool Whip)
  • 2 tbsp Honey or 1 1/2 tbsp Sugar
  • 3 cup crushed Ice 3

DIRECTIONS:

  1. Blend frozen orange juice in strong blender or food processor until whipped. 4
  2. Add ice, honey and whipped topping and process until well mixed.  5
  3. 6
  4. If mixture is too runny, add 1/4 cup ice and process further. 
  5. Too look more like a creamy whip, transfer mixture to piping bag with star tip and pipe into cups.

3-Ingredient Strawberry Banana Ice Cream (Non-Dairy!)

I so love this next ice cream recipe! Not only because it’s extremely easy to make but because it only takes 3 ingredients (you may already have these at home) and it has NO dairy! Sometimes my body doesn’t do well with dairy (and my kiddos are the same way) so we all love this ice cream very much. I know it seems really strange that you can get this consistency with only 3 ingredients but it works. Try it! 😉 Enjoy!

INGREDIENTS:

  • 1 lb Strawberries
  • 4 small Bananas
  • 2 tbsp Sugar 3

DIRECTIONS:

  1. Peel bananas and freeze in freezer.
  2. Hull strawberries and freeze in freezer.
  3. Place frozen ingredients and sugar in food processor and pulse until it reaches ice cream texture. 4
  4. That’s it! Enjoy! 5

All you need are 2 ingredients and that includes banana and oatmeal….seriously, that’s it! Try them out and let me know what you think. 2 Ingredient Oatmeal Banana Cookie

INGREDIENTS:

  • 1 Cup Quick Oats
  • 2 Over Ripe Bananas 2

DIRECTIONS:

  1. Preheat oven to 350.
  2. Spray Cookie Sheet with non-cook spray.
  3. Add both ingredients to a medium sized bowl.
  4. Mash and Mix together until well blended 4
  5. Feel free to toss in nuts, chocolate chips, cinnamon.
  6. Place 1 inch spoons of mixture on to prepared pan. 5
  7. Slightly press down on Cookie.
  8. Bake for 15-25 minutes (oven times will vary). 6

Did you know that you can make peanut butter cookies with just 3 ingredients?! It’s super easy to make these cookies and I love the way they taste…they are actually my favorite kind of peanut butter cookies. You will just need sugar, peanut butter and an egg! 3 Ingredient Peanut Butter Cookies

INGREDIENTS (Yield about 18 cookies):

  • 1 cup Sugar
  • 1 cup Peanut Butter
  • 1 Egg 2

DIRECTIONS:

  1. Preheat the oven to 350.
  2. Stir the ingredients together until blended. 3 4
  3. Roll into 1″ balls with then press down with the back of a fork and then press again from the other side to form the criss cross pattern on top.
  4. Bake for 12 minutes.
  5. Allow them cool on the tray for a couple of minutes before moving to a wire rack to finish cooling.

If you’re looking for an awesome banana bread recipe that is moist like a cake and full of flavor then you’ve come to the right place! I hate dry bread so this recipe is the complete opposite and is the best banana bread ever (in my opinion 😉 ). Feel free to leave out the chocolate chips or add nuts, etc. Enjoy!

The Best Chocolate Chip Banana Bread

Banana Bread

Ingredients:

  • 2 C flour
  • 1/4 C unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 C sugar
  • 1/2 C soften butter
  • 2 eggs, lightly beaten
  • 2-3 medium very ripe bananas, mashed to equal 1 C
  • 1 tsp vanilla extract
  • 1/4 C milk
  • 1/4 C milk chocolate chips 2

Directions:

-Preheat oven to 350 degrees
-Treat a 9″X5″ bread pan with Pam, set aside
-In a large bowl mix together the flour, cocoa powder, baking soda, baking powder, and salt
-In another bowl beat together until creamy the butter and sugar.
-Add in the lightly beaten 2 eggs…mix well.
-Lastly add the mashed bananas, vanilla, and milk mixing well. 4
-Slowly incorporate the wet ingredients with the dry ingredients until they are combined.
-Stir in the chocolate chips throughly.
-Pour into your prepared bread pan. 5
-Bake in oven at 350 degrees for 55-65 minutes. Check at 55 minutes with a toothpick and if the toothpick doesn’t come out clean return to oven for 5-10 minutes or until  your inserted toothpick comes out clean.

-Cool in pan for 30 minutes.
-Remove from pan.

We love having a weekly pizza night around here….meaning that once a week we get together as a family and make our own, homemade pizzas! You can have the kiddos make their own (they love doing this and tend to eat more this way) and then make an “adult” pizza. With that being said, making our own, homemade dough is essential and very cost effective. This recipe makes the best pizza dough and is quite easy. Enjoy!

Homemade Pizza Dough

INGREDIENTS:

  • 15 oz (3 cups) Flour
  • 1 tbsp Yeast
  • 1 tbsp Sugar
  • 2 tsp Salt
  • 1 tbsp Olive Oil
  • 9 fl oz Warm Water 1

Directions:

BY HAND:

  1. Place flour into a large mixing bowl and make a well in the center.
  2. Add yeast, sugar, salt, olive oil and water and stir until combined.
  3. Turn out onto a lightly floured surface and knead for 5ñ10 minutes or until a smooth ball forms.

IN KITCHENAID:

  1. Place flour into a stand mixers bowl and make a well in the center.
  2. Use dough hook.
  3. Add yeast, sugar, salt, olive oil and water and turn on low combined (about 3 minutes). 2
  4. Turn to medium and knead for 5-10 minutes or until a smooth ball forms. 3

BOTH:

  1. Place dough ball into a lightly oiled bowl, cover with plastic wrap or clean cloth. Set in a warm place for 30 minutes or until dough has doubled.4
  2. Turn dough out on a floured surface and punch the dough to remove excess air, knead lightly. 5
  3. Divide dough into 4.
  4. Makes enough dough for 4 10-12″ thin pizzas.

I like coming up with unique and healthy recipes. These Zucchini Parmesan Chips are just that, they are healthy and a much better alternative to a potato chip. You can cut your zucchini thin or thicker depending on how you want it. Sometimes I like them thin and other times I cut them thick. These are also great for the kids because they eat their veggies and have no clue it’s good for them. Enjoy!

INGREDIENTS:

  • 2 Zucchini
  • 1/4 cup grated Parmesan
  • 1/4 cup dry Bread Crumbs
  • 1/4 tsp Salt
  • 2 tbsp Olive Oil

  1. Preheat oven to 450.
  2. Spray baking sheet with non-stick spray.
  3. Cut zucchini into 1/4″ slices.
  4. Combine parmesan, bread crumbs, salt and pepper in a small bowl. 3

Ingredients:

  • 2 Ripe Bananas, Mashed
  • 1/3 C. Reduced Fat Peanut Butter
  • 2/3 C. Unsweetened Applesauce
  • 1 Tsp. Vanilla
  • 1/2 Tsp. Salt
  • 1/2 Tsp. Cinnamon
  • Dash of Ground Nutmeg
  • 1 1/2 C. Quick or Old Fashioned Oats
  • 1/4 C. Semi Sweet Chocolate Chips
  • 1/4 C. Unsweetened Shredded Coconut (Optional) 3Directions:
  1. Preheat the oven to 350 degrees F.
  2. Line a baking sheet with parchment paper and set aside.
  3. Mix together the bananas, peanut butter, applesauce, vanilla, and spices. Add in the oats, chocolate chips, and
    coconut; stir until well combined.
  4. Spoon a rounded two Tbsp. of the cookie mixture onto the lined baking sheet, leaving an inch or two between each and flatten slightly.
  5. Place a few more chocolate chips on top of each cookie.
  6. Bake for 20-30 minutes and allow to cool.

I remember the first time I had chicken tortilla soup, it quickly became one of my favorites. I really like making it at home now since I’ve come up with a delicious way to make it in the crock pot. It’s simple and full of flavor. Enjoy!

Crock Pot Chicken Tortilla Soup

INGREDIENTS:

  • 1 lb Chicken Breast
  • 4 cup Chicken Broth
  • 1 can Whole Kernel Corn
  • 1 can Black Beans
  • 1 tbsp minced Garlic
  • 2 tsp chili powder
  • 1 Onion 3
  • 1 Jalapeno diced (seeds removed)
  • 1 can Rotel not drained
  • 1 tbsp chipotle in adobo
  • Salt & Pepper to taste
  • 1 tsp Cumin
  • 1 Bay leaf
  • 1/4 cup chopped Cilantro
  • 6 Corn tortilla
  • 1/4 cup shredded Cheese 2

DIRECTIONS:

  1. Add all ingredients except cheese, tortillas, cilantro and corn. 4
  2. Cook on low for 8 hours.
  3. Chicken should now shred with a spoon or fork. Shred chicken.
  4. Drain and add corn. 5
  5. Cut 2 tortillas into strips and add to pot.
  6. Finely chop cilantro leaves and add to soup.
  7. Cook for another hour.
  8. Cut remaining tortillas into strips place on baking sheet salt and bake at 350 for 10 minutes.
  9. Put soup in bowls and garnish with tortilla strips and cheese.

This next recipe is pretty dang healthy and looks great too! These Pineapple kabobs are just the perfect mix of sweet and salty and are quick to put together. Plus, most kids love these (maybe just leave out the onions) because they are not only fun to eat but sweet with the pineapple. Enjoy!

Chicken Pineapple Kabobs

INGREDIENTS:

  • 1 cup Ketchup
  • 1/4 cup Soy Sauce
  • 1/4 cup Honey
  • 1 tbsp Mustard
  • 1/2 cup Brown Sugar
  • 1 tsp Minced Garlic
  • 1 tbsp Lemon Juice
  • 2 lb Boneless Skinless Chicken Breasts
  • 1 Pineapple
  • 1 Red Onion
  • 1 Green Bell Pepper
  • Salt and Pepper (to taste) 2

DIRECTIONS:

  1. Add ketchup, soy sauce, honey, mustard, lemon juice, brown sugar and garlic to a small pan and cook for 10 minutes. Remove from heat and allow to cool.
  2. Cut chicken, peppers and onion into 1 1/2 in cubes.
  3. Peel and core pineapple and cut into 1 1/2″ cubes.  3
  4. Place Pineapple, chicken and vegetables onto skewers alternating pieces. 4
  5. Transfer 1/2 of sauce to another dish to use when serving.
  6. Brush skewers with oil then with sauce and place on heated grill. 5
  7. Baste skewers every 3-5 minutes while cooking. Cook for about 15 minutes.

Aren’t these just adorable?! I love making this next snack for the kiddos (and with them) because it’s a great way for them to eat a healthy snack. These Snowmen snacks are made of eggs, carrots and pretzels so like I said, it’s very healthy. Have fun making these with the kiddos and enjoy!

Boiled Egg Snowmen

INGREDIENTS:

  • 6 Boiled Jumbo Eggs
  • 6 Boiled Medium Eggs
  • 2 Carrots
  • Peppercorns
  • Pretzel Sticks
  • Green onion stems 2

DIRECTIONS:

  1. Slice off a small section from top and bottom of each egg to allow them to stand and stack neatly. 3
  2. If you are going to serve soon, you can use pretzel sticks to join each piece and they will be completely edible. If they need to sit for a while, the pretzels will become to soggy, so you will have to use wooden skewers.
  3. Even if you are using pretzels, you will need to pierce the egg and carrot before pushing pretzels through.
  4. Push a pretzel stick down into large egg to make body and place smaller egg on top. 4
  5. Peel carrots.
  6. Slice the thick end of carrot into six 1/8″ slices to use as hat brims.
  7. Slice middle of carrot (or smaller carrot) into six 3/4-1″ slices for top of hat.
  8. Use skewer to “pre-drill” hole in carrots to allow pretzel to connect them with remainder of stick extending below brim.
  9. Push assembled hat down onto head. 5
  10. Take the small end of a carrot (about 1/2″) and cut lengthwise into six sections to use as noses.
  11. Using a toothpick, pierce “face” egg in the middle and insert the nose.
  12. Pierce for the two eyes and four spots to make a mouth and press in peppercorns. 6
  13. Pierce the “body” egg three spots to make buttons and press in peppercorns.
  14. Break a pretzel in half and insert a piece in each side of the body to make arms.
  15. You can optionally use green onion stems to make a hat band and scarf.
  16. Split the green tube and open it up.
  17. Gently scrape the blade along the inside of the opened stem to remove stiffness.
  18. Trim the softened piece to make scarf or hatband and wrap in place.

INGREDIENTS:

  • 2 lb Chuck Roast, cut into small pieces
  • 12 oz frozen Soup Vegetables
  • 12 oz frozen Mixed Vegetables
  • 1 Onion chopped
  • 1 cup Barley
  • 1 tsp Minced Garlic
  • 1 can Diced Tomatoes
  • 4 cup Tomato Juice
  • 4 cup Beef Stock
  • 1 Bay Leaf
  • Salt to taste
  • Pepper to taste 2

DIRECTIONS:

  1. You can brown beef before adding to crock pot, but this is optional. 3
  2. Add all ingredients (except salt and pepper) to slow cooker and cook on low for 8 hours. 5

Honey Glazed Carrots

INGREDIENTS:

  • 1 lb Baby Carrots
  • 3 tbsp Butter
  • 3 tbsp Honey
  • 3 tbsp Brown Sugar
  • 1 tsp fresh Thyme leaves chopped
  • 1 tsp fresh Rosemary leaves chopped 2

DIRECTIONS:

  1. Place all ingredients in a large skillet over medium heat.
  2. Cook for about 10 minutes or until carrots reach desired tenderness. 3

Homemade Pumpkin Puree

As we are in the midst of fall, pumpkin baking is getting more and more common and popular. The one ingredient all those recipes call for is pumpkin puree. Usually, canned pumpkin puree can be purchased from the store and used in baking and cooking recipes. However, to save some money you can make your own pumpkin puree at home with just a pumpkin, salt and your oven! Check out the instructions below for making homemade pumpkin puree:

Ingredients Needed:

  • Whole Pumpkin
  • Salt

Instructions:

  1. Wash the whole pumpkin and remove the stem. Cut the pumpkin in half and scrape out all the pumpkin insides and seeds.
  2. Once the pumpkin is clean on the inside, cut it into cubes. Next, fill a large pot with about 1″ of water and warm over medium heat.
  3. Add the pumpkin cubes and a dash two of salt to the water. Cook the pumpkin until water is simmering and reduce the heat to medium low.
  4. Using a pot lid, place it over top of the pumpkin and let the pumpkin cubes steam under the lid for about 15 minutes or until soft.
  5. Once the texture is soft, remove pumpkin from heat, drain the water and let the cubes cool till workable.
  6. Once the pumpkin cubes have cooled, scrap the meat of the pumpkin from the shell and place in a food processor or blender. Blend till smooth.
  7. Lastly, once your pumpkin has turned to a smooth texture, return it to the pot and cook off any remaining moisture.
  8. Remove from heat, let cool and use in any of your favorite recipes or freeze it to save it for when you need it!

  • 1 Butternut Squash
  • 1 small Onion
  • 2 tbsp Olive Oil
  • 15 oz Pumpkin Puree
  • 2 cup Vegetable Broth
  • 1 1/2 cup Apple Cider
  • 1 1/2 cup Heavy Cream
  • 2 tbsp Honey
  • 1/4 tsp Curry Powder
  • 1/2 tsp Cinnamon
  • 2 tsp Salt
  • 1/2 tsp Black Pepper
  • Pumpkin Seeds (for garnish)  2

DIRECTIONS:

  1. Preheat oven to 450.
  2. Peel and seed squash and cut into chunks.
  3. Peel and quarter onion
  4. Toss squash and onion in olive oil and salt and pepper to taste.
  5. Cook for 20 minutes. 3
  6. Allow to cool at least 10 minutes.
  7. Puree in blender or food processor.
  8. In a large sauce pan, combine squash puree, pumpkin puree, vegetable broth, apple cider and cream. 4
  9. Bring to a low boil over medium heat.
  10. Add honey and spices and simmer for 10 minutes.
  11. Garnish with pumpkin seeds.

  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 Bay Leaf
  • 3 cup Hot Water
  • 4 cups fresh Spinach
  • 1 1/2 cup Shell Pasta

DIRECTIONS:

  1. Heat olive oil over medium heat in a large stock pot.
  2. Saute onion, celery, zucchini, and carrots until onions are clear.

Spider Web Pizza Snacks

INGREDIENTS

  • Pizza Sauce
  • Round Crackers, Sandwich Slim Buns and/or Pita Breads
  • String Mozzarella Cheese
  • Black Olives 1

DIRECTIONS

  1. Preheat oven to 375.
  2. If using slim buns, separate the halves.
  3. Take your pizza bases (cracker, bun or pita) and cover with pizza sauce.
  4. Take string cheese and open and pull into strings.
  5. Take 4 strings and lay across the base like you would cut a pizza.
  6. Cut more strings into smaller pieces to go across each “slice” of the pizza. 2
  7. To make a spider, cut the ends off of 2 olives one slightly large than the other.
  8. These 2 will be the head and body.
  9. Cut 2 slices off of the already cut olive and cut those slices in half to make legs for the spider.
  10. Place on spider on each pizza.
  11. Place on cookie sheet and bake until cheese is melted (about 10 minutes).
  12. You can optionally put eyes on the spider by dipping a toothpick in mustard and touching it to the head.

Well, having eggs in the morning seems to be the best way to get the most protein in.  The only  issue is cooking eggs can be time consuming, but luckily there is an easy way to save some time!

You can make tasty, fluffy scrambled eggs in less then 2 minutes by using the microwave! It will save you the dishes of the pan method and it will save you a ton of time. Simply, take a mug and spray the inside with non stick cooking spray. Then proceed to crack two eggs into the mug and add a tablespoon of milk and whisk. You can also add shredded cheese for a different twist. Once mixed, cook in the microwave for 45 seconds and stop to stir the eggs. Cook for another 45 seconds and stir to ensure doneness. Your scrambled eggs are now ready to eat with hardly any mess or time!

Yummy! I love making this candy corn fudge which is super simple to make and doesn’t take a lot of ingredients. It’s sweet but not too sweet and makes a perfect Halloween treat/gift for neighbors, friends, parties, etc. I actually will grab a bunch on candy corn bags at the store and save them to make them throughout the winter because they are such a good comfort food in the winter. 😉 Enjoy!

INGREDIENTS:

  • 1 1/2 cup Semi Sweet Chocolate Chips
  • 2 cup Orange Melting Candy Chips
  • 1 can Sweetened Condensed Milk
  • 1 tsp Vanilla (optional)
  • 1/3 cup Candy Corn 2

DIRECTIONS:

  1. Line 8×8 pan with foil and spray with nonstick spray.
  2. In medium saucepan, heat semi sweet chips and 1/2 can of sweetened condensed milk over low heat.
  3. Stir constantly until melted and smooth.
  4. Remove from heat and stir in vanilla.
  5. Transfer to prepared pan and spread to cover bottom of pan.
  6. Press 1/2 of candy corn into mixture. 3
  7. Refrigerate for 15 minutes.
  8. In medium saucepan, heat orange chips and 1/2 can of sweetened condensed milk over low heat.
  9. Stir constantly until melted and smooth.
  10. Remove from heat and stir in vanilla.
  11. Transfer to prepared pan and spread over previous layer.
  12. Press remainder of candy corn into mixture making sure to leave some visible on the surface. 4

Potato chips are a super popular snack food around the world. However, it can be extremely hard to find a crunchy, healthy alternative for regular store-bought potato chips. Usually, you can find something that tastes similar but you end up having to sacrifice texture. Well, the good news is there is a healthy, easy to make alternative to regular potato chips and they can be eaten guilt free and made in your own home! Check out the recipe below to make your own crunchy carrot chips:

Ingredients Needed:

  • Carrot(s)
  • Olive Oil
  • Salt

Instructions:

  1. Start by preheating the oven to 425 degrees and prep your baking sheet. Either line the sheet with parchment paper or use a light cooking spray.
  2. Next, slice all your carrots into rounds keeping them relatively the same size. Once sliced combine carrots, salt and just enough olive oil to lightly coat the chips. Toss all ingredients to make sure every piece is evenly coated.
  3. Lay on the baking sheet making sure to leave a little room between each chip. Bake in the oven for 10 minutes or until crispy and brown. Keep a close eye as they can overcook easily.
  4. Once finished cooking, let them slightly cool and serve with your favorite dip or sauce!

Sparkling Blueberry Lemonade

Ingredients:

  • 1 cup Sugar
  • 1 cup Lemon Juice (about 8 lemons)
  • 1 tsp Lemon Zest
  • 6 oz Blueberries
  • 4 cup Club Soda, Seltzer Water, Sparkling Water or Water
  • Ice 3

Directions:

  1. Puree lemon juice, lemon zest, blueberries, and sugar in food processor or blender. 2
  2. Pour mixture (or optionally strain mixture) into large pitcher.
  3. Add water and ice to fill pitcher.
