Need something fun to do with the kiddos? How about a way to make them eat?! If so, you may love this next idea….colored noodles! It’s super easy, inexpensive and quick.

Ingredients

  • 2-3 food coloring colors (Blue and Pink or purple work best....Green kind of turns yellow)
  • 1 package of White pasta (you can use wheat but the color doesn't turn out as bright)

Instructions

  1. Boil the water in separate pans
  2. Add about 15-20 drops of each color in its own pan (or until the water completely changes colors)
  3. Boil pasta in colored water
  4. Strain the pasta (make sure to do EACH color in it's own pan)
  5. That's it!
  6. *You can also do this same recipe a little different....just boil your pasta and strain then add a little bit of pasta to a few different baggies and add 15-20 drops of food coloring in each bag and a little water. Then let sit until pasta has absorbs the color.

It’s Football season and you know what that means….a bunch of really good dip is needed! The guys wanted something with a little pop but TONS of flavor… So jalapeno Popper dip it is ! We’ve tested, made adjustments and tested some more and in my opinion (and theirs) this is the BEST Jalapeno Popper dip recipe ever!

You can choose to make it HOT and spicy or just flavorful without a kick depending on if you use the seeds, spicy or mild peppers, etc. Jalapenos of course are spicey , Pasilla chili mild ..read up on the spiciness of peppers and find out which one you want to include in you jalapeno popper dip.

Enjoy…make a lot…it will go fast.

Jalapeno Popper Dip

Ingredients

    Be sure to Folllow Raining Hot Coupons on Pinterest for more RECIPES!
  • 2 packages of cream cheese (8 oz each) softened
  • 1 cup mayonnaise
  • 5 pieces of bacon (optional) cooked and chopped
  • 1 small can chopped jalapenos (you can use fresh jalapenos too and keep the seeds if you want it spicier!)
  • 3/4 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • TOPPING ingredients:
  • 1 1/2 cup crushed ritz crackers
  • 1/2 cup parmesan cheese
  • 1/2 stick melted butter

Instructions

  1. Pre-heat oven to 350 degrees F
  2. Combine all the top ingredients and mix together well
  3. Pour in 9x13 glass dish (or something similar)
  4. In a separate bowl combine all of the topping ingredients
  5. Pour over top jalapeno mixture
  6. Bake for 20 minutes
  7. Broil for 2-3 minutes until crackers are browned a little
  8. Serve with chips or crackers (we love it with pita chips!)
  9. Enjoy!

Jalapeno Popper Ingredients:

2 packages of cream cheese (8 oz each) softened

Shakshuka Egg Dish

I just had the BEST dinner! I am really excited because as most of you know, I am eating healthy right now and this recipe is just that…HEALTHY! I promise you, it doesn’t taste healthy… it tastes like a cheat meal. That means you can get in a healthy, low carb, low fat, low calorie meal and it tastes delicious. As an added bonus, it’s a One Pot Meal! Woohoo for less dishes. 😉

It’s called Shakruka and you’re going to love it. It’s FULL of flavor (which I was surprised about because I am not putting much salt in anything right now) but it is still full of yumminess. You can eat this for Breakfast, Lunch and Dinner! It also makes for a perfect brunch dish…I just has mine for dinner and it filled me up. Since I am cutting back on carbs, I chose not to eat bread or toast with it which I thought I’d miss but I didn’t miss it at all. Enjoy!

Shakshuka Egg Dish

Shakshuka Egg

Ingredients:

  • 2-3 tablespoons olive oil
  • 1/2 cup chopped onions
  • 1 bell pepper, chopped
  • 6 garlic cloves, finely chopped
  • (2) 15 oz cans diced or chunk tomatoes
  • 6 eggs
  • 1 tsp cumin
  • 1/2 tsp paprika
  • salt and pepper to taste (I used Pink Salt and used only a tiny bit)
  • Parsley to taste (I just sprinkle it all over and actually use dried parsley but fresh is great too)

Directions:

  1. Pour the olive oil into the bottom of a flat large pan (12 inches is great)
  2. Saute your onions and bell pepper until the turn a little brown but mostly just transparent
  3. Add the Garlic and saute for another minute or two to get the flavors out
  4. Add the seasonings and mix until combined
  5. Add the cans of tomatoes (add the juice and all)
  6. Simmer this mixture for about 10 minutes until it thickens a little
  7. Then, use your spoon to make a little pocket in your sauce for your egg, crack and egg into each pocket (6 total) shakshuka dish
  8. Cover and let simmer for another 10 minutes or so but keep an eye an it and turn the heat off once your eggs get close to the consistency you want (they will continue to cook in the sauce when you pull off). I like mine almost cooked but a little runny.
  9. Enjoy!

If you’re looking for a Meat Spaghetti Sauce recipe then look no further! The cooked onion and garlic give this sauce a unique flavor. Once you start cooking the garlic and onion, your house will smell really, really good. This is really good with meatballs, spaghetti or course, pasta, lasagna, etc. Enjoy!

Meat Spaghetti Sauce

INGREDIENTS:

  • 1 lb Ground Beef
  • 28 oz crushed Tomatoes
  • 2 tbsp Olive Oil
  • 1/2 Onion finely chopped
  • 3 cloves garlic minced
  • 5-6 oz mushrooms sliced
  • 1/4 Red Bell Pepper
  • 1/4 Yellow Bell Pepper 3
  • 1 tsp Oregano
  • 2 tsp Basil
  • 1/2 tsp crushed Red pepper flakes
  • 1 tsp sugar 2

DIRECTIONS:

  1. Brown ground beef in large pan.
  2. Drain and set aside.
  3. Heat oil in a large pan over medium heat.
  4. Saute onion and garlic until onions are transparent.
  5. Add ground beef and all remaining ingredients. 4
  6. Bring to a boil.
  7. Reduce heat to low and simmer for 20 minutes.

Bacon Broccoli Mac and Cheese Casserole

If you are looking for a quick and easy dinner recipe then you will definitely want to bookmark this one. This casserole is full of cheese and flavor. I love making casserole dishes because most weeknights we have sports practice, games, etc. Casserole dishes are quick and easy and always taste yummy. Plus, this is an easy way to get your littles to eat their veggies. 😉 Enjoy!

BACON BROCCOLI MAC AND CHEESE CASSEROLE

Ingredients:

  • 3-4 slices of bacon, cooked
  • 5-6 ounces freshly grated cheddar cheese [see below]
  • 3 cups broccoli florets, steamed or blanched
  • 8 oz pasta [measured by weight]
  • ¼ cup [1/2 stick] unsalted butter
  • ¼ cup all purpose flour
  • 2 cups whole milk, room temperature
  • ¼ tsp salt
  • ¼ tsp garlic powder
  • ⅛ tsp black pepper
  • Season with additional salt and pepper to taste, if desired 3

Directions:

  1. Pre-heat oven to 350
  2. Next measure out all your ingredients, chop your broccoli and grate your cheeses.
  3. Boil pasta per package instructions [times will vary a smidge by brand/shape] until al dente. Drain and set aside once done.
  4. While the pasta cooks, start your sauce and your broccoli.
  5. Cook broccoli via your favorite method. I’m a big fan of quickly blanching broccoli in hot water until the florets are bright green and tender.
  6. For the sauce, melt ½ stick of butter [1/4 cup] over medium heat.
  7. Add flour and whisk constantly while the flour cooks off into a roux, approx. 3 minutes..
  8. Next season with ¼ tsp salt and ⅛ tsp black pepper [add extra to taste]
  9. Slowly pour in your milk, whisking constantly until smooth and fully incorporated. Remove from heat. Sauce will thicken as it rests.
  10. Add pasta and broccoli florets to a 9-inch baking dish [or larger]
  11. Sprinkle 5-6 ounces of freshly grated cheese on top of the pasta.
  12. Pour your cream sauce over the noodles and cheese and use a rubber spatula to fold it all together. Feel free to top with a little extra cheese if you’d like, then top with bacon.
  13. Bake on center rack at 350 F for 20 minutes until hot and bubbly.

This next recipe is a delicious meatball crock pot recipe that is pretty easy and quick to make. You will have to form the meatballs before cooking in the crock pot but that is pretty easy. INGREDIENTS:

  • 3 lb Ground Beef

  • 1/3 cup Grated Parmesan
  • 2 tsp Oregano

  • 48 oz Spaghetti Sauce (homemade or jar) 2

DIRECTIONS:

  1. Tear bread into small pieces and place in a large bowl. 3
  2. Add milk and toss to absorb milk, let soak for 5 minutes.
  3. Drain any excess milk.
  4. Whisk egg and add to bread.
  5. Add onion, garlic, oregano, basil and parmesan and mix well. 4

I have the  pickiest eaters on the planet…and then there’s me, the one who will eat and try anything! I have to come up with ways to impress all of our palettes. I don’t care for super plain food and they don’t care for fancy food. With that being said, this recipe is absolutely perfect for my whole family. It’s one of my favorite things to make and is full of flavor (there’s GARLIC in it!) but no weird chunks of anything (that’s what the kiddos dislike).

This cheesy pasta casserole is so delicious and makes really good leftovers. It’s super cheesy, creamy, garlicky and full of flavor. Did I mention that it’s SUPER easy to make too?! Enjoy!

Ranch Bacon Chicken Casserole

INGREDIENTS:

4 chicken breasts (cooked and cubed)
1 small box (10 oz) Rotini noodles – my box was bigger so I cooked less pasta
8-10 thin slices of Bacon cooked and chopped
4 cloves of garlic, minced
2 Tbsp flour
1 cup Milk
1 cup of Ranch Dressing (from the bottle)
3 Tbsp of butter
2 cups Mexican Cheese Blend

DIRECTIONS:

  1. Pre-heat oven to 350 degrees F
  2. Cook your chicken (I boiled mine) and then cut it into cubes
  3. Cook pasta al dente and set aside
  4. Cook bacon and chop up (I love using the microwave kind and using my hands to break it up) 12
  5. Melt butter in pan and add minced garlic (do not brown) and mix for about 1 minute in low to medium heat IMG_0475 IMG_0476
  6. Add flour and chicken to pan and mix for 1 minute 
  7. Add ranch and milk and mix for 2 minutes IMG_0477

  10.  Pour pasta mixture into greased casserole dish (I use a 9×13) and cook in oven for 10-15 minutes until cheese is melted!
  11. Enjoy! (My kids liked adding red marinara sauce to it – I just eat it the way it comes out and LOVE it!)

Crock Pot Hawaiian Barbecue Chicken

INGREDIENTS:

  • 1 1/2 lb Boneless Chicken Breasts
  • 1 bottle Barbecue Sauce
  • 1 20 oz. can Pineapple Chunks or Slices, drained 2

DIRECTIONS:

  1. Place frozen chicken breasts in the slow cooker. 3
  2. Cover with sauce.
  3. If using slices, cut into chunks.
  4. Put drained pineapple chunks on top. 4
  5. Cook on High for 2-3 hours or Low for 4-6 hours.
  6. Break up or shred chicken with a fork.
  7. Serve over rice, noodles or on Hawaiian slider rolls.

Bacon Deviled Eggs

INGREDIENTS:

  • 6 Boiled Eggs 2
  • 2 slices Bacon fried
  • 1/4 cup Mayonnaise
  • 1 tbsp Sweet Pickle Relish
  • 1 tsp Mustard
  • Salt and pepper, for taste
  • Paprika to sprinkle as garnish 3

DIRECTIONS:

  1. Cut fried bacon into 12 small pieces. 4
  2. Cut eggs in half lengthwise.
  3. Remove yolks and place in a bowl.
  4. Mash yolks with a fork and stir in mayonnaise, pickle relish, and mustard. 5
  5. Salt and pepper, to taste.
  6. Mix until consistency is smooth.
  7. Transfer mixture to zippered bag and clip corner for piping.
  8. Pipe mixture into cooked egg whites evenly.
  9. Garnish with paprika and bacon pieces.
  10. Store covered in refrigerator.

Strawberry Walnut Spinach Salad and Dressing

INGREDIENTS

DRESSING:

  • 3/4 cup Olive Oil
  • 1/2 lb Strawberries
  • 2 tbsp Balsamic Vinegar
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Tarragon
  • 1/4 tsp Sugar 

SALAD:

  • Fresh Baby Spinach
  • Strawberries chopped 3
  • Shaved Parmesan Cheese
  • Walnuts 2

DIRECTIONS:

  1. Add all dressing ingredients to food processor or blender and blend until smooth. 4
  2. Toast walnuts over low heat until slightly brown. 5
  3. Place Spinach on plates.
  4. Top with strawberries and walnuts.
  5. Add shaved parmesan cheese on top.

I also like making these when I’m having company and need to come up with something unique that most people will love. Ground Pork Stuffed Tomatoes

INGREDIENTS:

  • 6 medium Tomatoes
  • 1 lb Lean Ground Pork
  • 1 small Red Onion
  • 2 tsp Minced Garlic
  • 1/4-1/2 cup chopped Bell Peppers (optional)
  • 1/4 tsp Crushed Red Pepper Flakes
  • 1/2 tsp Salt
  • 1/2 tsp Ground Black Pepper
  • 1 cup Bread Crumbs
  • 1 beaten Egg
  • 2 tsp chopped Parsley 3

DIRECTIONS:

  1. Preheat oven to 350.
  2. Split tomatoes through center and scoop out centers into a bowl. 4
  3. Place hollowed tomatoes into a baking pan and set aside.
  4. Chop tomato centers.
  5. Peel and finely dice onion. 5
  6. Place a little olive oil in a skillet and begin to cook pork.
  7. Add diced onion, minced garlic, salt, black pepper, and red pepper flakes.
  8. Cook and stir until meat is no longer pink.
  9. Add bell peppers and diced tomato centers and cook for 2 more minutes. 6
  10. Remove from heat.
  11. Add beaten egg and bread crumbs mixing well.
  12. Fill tomatoes with skillet contents. 7

If you ever want to make your own biscuits and gravy then I highly recommend this recipe. This homemade biscuit recipe is a staple in our household because I run to it anytime I want a delicious, comforting biscuit. We love eating these with pasta, chicken, crock pot meals….they are even great for Strawberry Shortcake or other dessert recipes. Enjoy!

Buttermilk Biscuits

Recipes:

4 C  flour, self rising
1 TBSP baling powder
1 TBSP sugar
3/4 C shortening
2 C buttermilk

Directions:

-Preheat oven to 400 degrees.
-Line a cookie sheet with parchment paper.
-Sift four, baking powder, salt and sugar.
-Make sure all dry ingredients are well blended in a bowl.
-Add the shortening to the dry ingredients.
-Using your fingers work the shortening  thoroughly into the dry ingredients.
-Pour the buttermilk into the bowl, stir until all ingredients are well blended.
-Flour a wooden cutting board.
-Roll out the biscuit batter onto the floured board.
-Using a roller pin…roll out the batter to a consistent thickness.
-Using a round cookie cutter, cut out the biscuits.
-Place them on the cookie sheet leaving space between the biscuits.
-Bake at 400 degrees for 12-14 minutes or a light golden brown.
-Cool on a wire rack or EAT them hot.

I am always trying new crock pot recipes and this coke pulled pork is made in the crock pot. I love sweet and salty recipes and the coke in the recipe makes the pork a little sweet but not too sweet. You can use any cut of roast you want but I like using the pork shoulder roast (it’s also a little less expensive than other cuts and shreds well). These are great to make sandwiches, tacos and more. Enjoy!

Crockpot Coke Pulled Pork

INGREDIENTS:

  • Whole Pork Shoulder Roast
  • 12 oz Coke
  • 1 tbsp Onion Powder
  • 1 tbsp Garlic Powder
  • 1 tbsp Black Pepper
  • 1 tbsp Kosher Salt
  • 1 bottle BBQ Sauce 3

DIRECTIONS:

  1. Remove any thick slabs of pure fat from outside of roast.
  2. Whisk spices together and rub over surface of roast.
  3. Place roast in slow cooker.
  4. Pour Coke over roast. 4
  5. Cover and set on high for 5 hours or low for 10 hours.
  6. Remove from slow cooker (Meat should basically be falling apart).
  7. Remove bones and discard. 5
  8. Discard all but 1/2 cup of juices from slow cooker.
  9. Shred meat using 2 forks.
  10. Return shredded meat to slow cooker
  11. Add reserved juices and BBQ sauce to slow cooker and mix well.
  12. Set slow cooker to low and cover for 30 minutes before serving. Crockpot coke pulled pork

  • 2 cans Refrigerated Crescent Rolls
  • 8 oz softened Cream Cheese
  • 16 oz Sour Cream
  • 1 packet (1/3 cup) dry Ranch Dressing mix (I make my own, see the recipe here)
  • 1/2 cup Broccoli florets
  • 1/3 cup Cucumber slices (cut in quarters)
  • 8 chopped Cherry Tomatoes
  • 1/4 cup shredded Carrots  43

DIRECTIONS:

  1. Heat oven to 375.
  2. Unroll both cans and press dough into bottom and sides of ungreased raised edge baking sheet or jelly roll pan.
  3. Bake 10-15 minutes until lightly browned. 5
  4. Cool completely.
  5. Mix together cream cheese, sour cream and dressing mix until blended.
  6. Spread mixture over crust.
  7. Decorate with vegetables. 7

One Pot Pepperoni Pizza Pasta Bake

INGREDIENTS:

  • 1 lb Ground Beef
  • 1 small Onion, diced
  • 40 slices Pepperoni
  • 24 oz jar Spaghetti Sauce
  • 3 cup Penne Pasta
  • 2 cup Water
  • 1 1/2 cup shredded Mozzarella 4

DIRECTIONS:

  1. Brown ground beef and onion in a large, oven proof skillet and drain excess fat. 5
  2. Add 25 slices of pepperoni and spaghetti sauce. 6 7
  3. Add pasta and water, stir and bring to a boil. 8
  4. Reduce heat, cover and simmer for 15 minutes until the most of the liquid is absorbed and pasta is tender.
  5. Remove lid and sprinkle top with cheese and remaining pepperoni. 9

This cheese sauce recipe is SO yummy and perfect for a ton of different dishes. I like to make this cheese dip for pretzels, broccoli, dipping veggies, chips and more. It really is a universal recipe that works well with many dishes. The kiddos like this sauce not spicy but you can easily add hot sauce and chili powder (see amounts below) to heat it up as much as you want. Enjoy!

Cheese Dipping Sauce

INGREDIENTS:

  • 2 cup Milk
  • 1/4 cup Butter
  • 1/4 cup Flour
  • 2 cup shredded Sharp Cheddar Cheese 2
  • Salt & Pepper to taste 1

DIRECTIONS:

  1. Allow milk to warm to room temperature.
  2. Melt butter in a saucepan over medium heat.
  3. Sprinkle flour over melted butter while stirring to form a roux. Then cook for several minutes. 3
  4. Gradually add milk to roux while whisking to form a well blended mixture.
  5. Cook about 5 minutes until thickened. 4
  6. Gradually add in the cheese while stirring constantly until it is melted and smooth. 5
  7. Serve hot.
  8. If you would like to spice things up add 2 teaspoons hot sauce and 1 teaspoon chili powder. cheese sauce

We love making our own homemade tortillas because they not only taste much better but they are also much better for you. These are great for dinners, snacks, quesadillas, or even dessert. We like heating them up and adding butter, cinnamon and sugar for a sweet treat. We also use these for fajitas and breakfast burritos. You can use them for anything you’d like but once you start making them yourself, you won’t ever want to buy them again. 😉 Enjoy!

Homemade Flour Tortillas

INGREDIENTS:

  • 3 cup Flour
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 1/2 cup Vegetable Oil
  • 1 cup Warm Water 3

DIRECTIONS:

  1. Using a stand mixer, whisk dry ingredients until combined.
  2. Add water and oil and mix, scraping down the sides as needed until ball forms. 4
  3. Mix for two more minutes until dough is smooth.
  4. Turn out onto floured work surface and divide into 16 pieces and roll each into a ball. 5
  5. Allow to rest for 10 minutes.
  6. Preheat skillet over medium heat.
  7. Roll out each ball into a 6″ circle. 6
  8. Cook each tortilla on first side for about a minute, until brown spots form, then flip and cook other side for about 20 seconds. 7
  9. Stack cooked tortillas and wrap in a clean towel to cool.

  • 64 oz Beef Broth
  • 1/2 tsp Thyme

  3. Get a piece of cheesecloth and add thyme and bay leaf and tie up with string to create a bouquet garni. 4

Beef Stew is so good any time of the year. We love making it for dinner and then having leftovers for lunch the next day. You can serve this with sandwiches, by itself, with bread, etc. Believe it or not, this recipe is quite easy to make and pretty healthy for you. I make mine in the crock pot to make it even easier. Enjoy!

Rustic Beef Stew

INGREDIENTS:

  • 2 pounds Beef Roast, cubed
  • 1/2 cup Flour
  • 2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Thyme
  • 1 tsp minced Garlic
  • 1 Bay Leaves
  • 1 tsp Paprika
  • 1 tbsp Worcestershire sauce
  • 1 large Onion, chopped
  • 2 cups Beef Broth
  • 1 lb Potatoes cubed
  • 1 lb Baby Carrots 3
  • 2 stalks Celery, chopped
  • 2 tbsp Brown Gravy mix
  • 2 cup Water 2

DIRECTIONS:

  1. Place meat in slow cooker.
  2. In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture.
  3. Stir in remaining ingredients. 4
  4. Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.
  5. Remove bay leaf before serving. 5

We love having a weekly pizza night around here….meaning that once a week we get together as a family and make our own, homemade pizzas! You can have the kiddos make their own (they love doing this and tend to eat more this way) and then make an “adult” pizza. With that being said, making our own, homemade dough is essential and very cost effective. This recipe makes the best pizza dough and is quite easy. Enjoy!

Homemade Pizza Dough

INGREDIENTS:

  • 15 oz (3 cups) Flour
  • 1 tbsp Yeast
  • 1 tbsp Sugar
  • 2 tsp Salt
  • 1 tbsp Olive Oil
  • 9 fl oz Warm Water 1

Directions:

BY HAND:

  1. Place flour into a large mixing bowl and make a well in the center.
  2. Add yeast, sugar, salt, olive oil and water and stir until combined.
  3. Turn out onto a lightly floured surface and knead for 5ñ10 minutes or until a smooth ball forms.

IN KITCHENAID:

  1. Place flour into a stand mixers bowl and make a well in the center.
  2. Use dough hook.
  3. Add yeast, sugar, salt, olive oil and water and turn on low combined (about 3 minutes). 2
  4. Turn to medium and knead for 5-10 minutes or until a smooth ball forms. 3

BOTH:

  1. Place dough ball into a lightly oiled bowl, cover with plastic wrap or clean cloth. Set in a warm place for 30 minutes or until dough has doubled.4
  2. Turn dough out on a floured surface and punch the dough to remove excess air, knead lightly. 5
  3. Divide dough into 4.
  4. Makes enough dough for 4 10-12″ thin pizzas.

Okay…if you’ve never read the back of a Gogurt you may want to (or you may not 😉 ). There are ingredients I can’t pronounce and my kiddos are obsessed with these so I want to make sure what they are eating 24/7 is actually good for them. I decided to make my own Gogurts and these came out even tastier than the real thing. Plus, check out the ingredients below…nothing boot goodness! Enjoy!

(Yield 5 tubes)

INGREDIENTS:

  • 1 cup Plain Yogurt
  • 1 cup chopped Strawberries 3
  • 1 Banana
  • 1 tbsp Gelatin
  • Zipicle – you can buy these here on Amazon

DIRECTIONS:

  1. Put all ingredients in blender or food processor and blend until smooth. 4
  2. Using a funnel, fill each tube and seal.
  3. Place in freezer, until ready to place in lunch boxes.

I have a secret…I love to make all of my potato recipes with yukon potatoes because they have a natural buttery taste. These Garlic Parmesan Bacon Potatoes are made with yukon potatoes and have so much flavor. They have garlic, cheese, butter and bacon! These make a great side dish and everyone always loves them. Enjoy!

Garlic Parmesan Bacon Potatoes

INGREDIENTS:

  • 3 lb Yukon Potatoes
  • 12 oz Bacon
  • 2 tbsp Butter
  • 2 tbsp minced Garlic
  • 1/4 cup Parmesan Cheese
  • 1/4 cup chopped fresh Parsley
  • 1/4 cup sliced Green Onion
  • Salt & Pepper to taste 2

DIRECTIONS:

  1. Slice potatoes in half lengthwise and place in water and boil for 12 minutes.
  2. Drain potatoes and set aside.
  3. Slice bacon into 1″ pieces and fry until cooked but not crispy. Allow to drain. Reserve bacon grease. 3
  4. Preheat oven to 400.
  5. In a large pan, add 2 tablespoons bacon grease and butter and heat over medium heat.
  6. Add garlic, parsley, salt and pepper and mix well.
  7. Add potatoes and toss to coat well. 4
  8. Transfer potatoes to baking sheet cut side down. 5
  9. Sprinkle bacon over potatoes.
  10. Heat 30 minutes or until cut side begins to brown.
  11. Flip and bake another 15 minutes.
  12. Garnish with sliced onions.

Mini Chicken Pot Pies

INGREDIENTS:

  • 1 lb Chicken Breasts
  • 1 tsp Vegetable oil
  • 1 pkg Crescent Rolls
  • 1 can Cream Chicken Soup
  • 6 oz Frozen Peas & Carrots
  • Salt to taste
  • Pepper to taste 2

DIRECTIONS:

  1. In skillet heat oil over medium and sautee chicken until no longer pink.
  2. Add chicken soup and 5 oz water mix until well blended.
  3. Add vegetables and cook until soft. 3
  4. Spray muffin tin with cooking spray.
  5. Place each crescent roll in muffin tin.
  6. Fill each with chicken vegetable mixture. 4
  7. Bake at 375 for 12-15 minutes.

I like coming up with unique and healthy recipes. These Zucchini Parmesan Chips are just that, they are healthy and a much better alternative to a potato chip. You can cut your zucchini thin or thicker depending on how you want it. Sometimes I like them thin and other times I cut them thick. These are also great for the kids because they eat their veggies and have no clue it’s good for them. Enjoy!

Zucchini Parmesan Chips

INGREDIENTS:

  • 2 Zucchini
  • 1/4 cup grated Parmesan
  • 1/4 cup dry Bread Crumbs
  • 1/4 tsp Salt
  • 2 tbsp Olive Oil
  • 1/4 tsp Pepper 2

DIRECTIONS:

  1. Preheat oven to 450.
  2. Spray baking sheet with non-stick spray.
  3. Cut zucchini into 1/4″ slices.
  4. Combine parmesan, bread crumbs, salt and pepper in a small bowl. 3
  5. Dip zucchini into oil then toss in crumb mixture and place on prepared sheet.
  6. Bake 30 minutes or until crisp and brown.

Did you know you can make your own Guinness Bread right from your home?! This recipe is actually very easy to make and full of flavor. This is also a perfect St. Patty’s day recipe and great to take to a party. We like to eat this bread with butter but you can always make sandwiches out of it, appetizers, etc. Enjoy!

Guinness Bread

INGREDIENTS:

  • 1 cup Rolled Oats
  • 2 cup Whole Wheat Flour
  • 1/2 cup Brown Sugar
  • 2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/4 cup melted Butter
  • 2 tsp Vanilla
  • 1 cup Milk
  • 1 tsp Vinegar
  • 12 oz Guinness 2

DIRECTIONS:

  1. Preheat oven to 425.
  2. Grease a loaf pan.
  3. Combine milk and vinegar and set aside for 10 minutes.
  4. Mix together 3/4 cup of oats, flour, sugar, baking soda, baking powder, and salt. 3
  5. In another bowl, stir together the butter, vanilla, milk mixture and Guinness. 4
  6. Add dry mixture into the liquid mixture, and stir until blended.
  7. Pour batter into the prepared pan.
  8. Sprinkle top with remaining oats.
  9. Bake 30 minutes, then reduce temperature to 400 and bake for additional 20 minutes.
  10. Allow to cool in pan for 30 minutes before moving to a wire rack.

One of my most popular recipes is my Chicken Enchiladas with Sour Cream White Sauce but we came up with another REALLY yummy enchilada recipe! This is a simple and delicious beef enchiladas recipe. It comes together pretty quickly and doesn’t require many ingredients. You could do this with shredded beef or ground beef. It’s a little easier to make with ground beef though so we tend to that. Enjoy!

Beef Enchiladas

Beef Enchiladas

INGREDIENTS:

  • 3 cups Enchilada Sauce
  • 1 lb Ground Beef
  • 1 Onion diced
  • 1 tbsp Olive Oil
  • 1 tbsp diced Jalapenos
  • 1/2 tsp Cayenne Pepper
  • 1/2 cup Black Beans, drained and rinsed
  • 1 1/2 cup shredded Colby Jack cheese
  • 1 1/2 cup shredded Cheddar Cheese 4
  • 10-12 Tortillas
  • 2 tbsp chopped Cilantro
  • 2 tbsp chopped Green Onions
  • 2 tbsp chopped Tomatoes
  • Salt and Pepper to taste 2

DIRECTIONS:

  1. Preheat oven to 375.
  2. Pour 1 cup enchilada sauce in bottom of baking dish.
  3. Heat oil in a skillet over medium heat and add ground beef, jalapenos, cayenne and onion. 3
  4. Cook until browned and drain.
  5. Warm tortillas by heating in microwave for 1 minute.
  6. Combine ground beef mixture, 3/4 cup colby, 3/4 cup cheddar and beans.
  7. Place about 1/2 cup of mixture in center of each tortilla and roll.
  8. Place each, seam side down, in baking dish. 5
  9. Top with remaining sauce and cheeses and bake 20 minutes until sauce is bubbling. 6
  10. Garnish with cilantro, green onions and tomatoes.

Honey Chipotle No Fry Wings

INGREDIENTS:

  • 2 1/2 lb Chicken Wings
  • 1 tbsp Salt
  • 1/2 cup Ketchup
  • 1/4 cup Brown Sugar
  • 1/4 cup Honey
  • 1 1/2 tbsp Chipotle Chiles in Adobo
  • 2 tsp Vinegar
  • 1 1/2 tsp Worcestershire Sauce
  • 1/2 tsp Garlic Powder
  • Salt to taste
  • Pepper to taste 2

DIRECTIONS:

  1. If not already done, cut apart wings and drumettes.
  2. Add 1 tablespoon salt to large pot of water and bring to a boil.
  3. Boil chicken in water for 9 minutes.
  4. Preheat oven to 450.
  5. Dry chicken with paper towels and place on a rack on a baking sheet. 4
  6. Bake in oven for 25 minutes.
  7. Turn each piece and bake an additional 15 minutes. 5
  8. Combine remaining ingredients and run through food processor. 3
  9. Take wings from oven and place in sauce and toss to coat. 6

Fried Macaroni and Cheese Bites

INGREDIENTS:

  • 1 lb Macaroni
  • 2 (8 oz) Packages of Sharp Cheddar Cheese Chunk
  • 1 3/4 cup Milk
  • 1/2 cup Flour
  • 1/4 cup Butter
  • 2 Eggs
  • 3 cup Seasoned Bread Crumbs
  • Salt & Pepper to taste
  • Vegetable Oil (for frying) 2

DIRECTIONS:

  1. Boil macaroni until tender, drain and set aside. 3
  2. Shred your cheese and set aside. 4
  3. In a large pan, melt butter over medium heat.
  4. Add flour and mix until light brown color (make a roux).
  5. Add 1 cup milk and whisk until thick.
  6. Add cheese one hand full at a time.
  7. Mix until cheese is all melted and smooth. 5
  8. Add cooked macaroni to pan and mix until well coated.
  9. Add salt and pepper.
  10. Transfer to container that will fit in your refrigerator, and refrigerate for 1 hour or until cold.
  11. Line a baking sheet with wax or parchment paper.
  12. Form cold macaroni and cheese into 1″ balls and place on prepared pan. 6
  13. Place in freezer for 1 hour.
  14. Beat eggs and add 1/4 cup milk in a bowl to make egg wash.
  15. Dip balls into egg wash then roll in bread crumbs to coat completely. 7
  16. Heat oil in deep fryer to 320 or fill skillet 1/2-3/4″ deep and heat over medium high to 320.
  17. Fry for about 3-4 minutes and drain. 8

This cheeseburger soup has meat, cheese, milk, chicken broth and more that make it so addictive and delicious. I highly recommend trying out this recipe if you’re a fan of creamy soup. It’s actually pretty healthy too since there is no cream. Enjoy!

Cheeseburger Soup

INGREDIENTS:

  • 1 lb Ground Beef
  • 1 cup chopped Onion
  • 1 cup sliced Carrots
  • 3/4 cup diced Celery
  • 4 cup Potatoes diced 3
  • 1 tsp Basil
  • 1 tsp Parsley Flakes
  • 4 tbsp Butter
  • 3 tsp Chicken Base or 3 cup Chicken Broth
  • 1/4 cup Flour
  • 8 oz shredded cheddar cheese
  • 1 1/2 cup Milk
  • 1 tsp Salt
  • 1/2 tsp Black Pepper 2

DIRECTIONS:

  1. Brown the ground beef and drain.
  2. In a medium to large pan, melt one tablespoon butter saute onion, carrots, parsley flakes, basil and celery until onion is transparent. 4
  3. Add the broth, potatoes and beef and bring to a boil.
  4. Reduce heat, cover and simmer about 15 minutes or until potatoes are tender.
  5. In another skillet melt remaining butter and add the flour. Cook and stir for 5 minutes or until roux is bubbling.
  6. Add roux to soup and bring to a boil and stir for a couple of minutes.
  7. Reduce heat to low and add cheese, milk, salt and pepper.
  8. Cook and stir several minutes until cheese melts.

I remember the first time I had chicken tortilla soup, it quickly became one of my favorites. I really like making it at home now since I’ve come up with a delicious way to make it in the crock pot. It’s simple and full of flavor. Enjoy!

Crock Pot Chicken Tortilla Soup

INGREDIENTS:

  • 1 lb Chicken Breast
  • 4 cup Chicken Broth
  • 1 can Whole Kernel Corn
  • 1 can Black Beans
  • 1 tbsp minced Garlic
  • 2 tsp chili powder
  • 1 Onion 3
  • 1 Jalapeno diced (seeds removed)
  • 1 can Rotel not drained
  • 1 tbsp chipotle in adobo
  • Salt & Pepper to taste
  • 1 tsp Cumin
  • 1 Bay leaf
  • 1/4 cup chopped Cilantro
  • 6 Corn tortilla
  • 1/4 cup shredded Cheese 2

DIRECTIONS:

  1. Add all ingredients except cheese, tortillas, cilantro and corn. 4
  2. Cook on low for 8 hours.
  3. Chicken should now shred with a spoon or fork. Shred chicken.
  4. Drain and add corn. 5
  5. Cut 2 tortillas into strips and add to pot.
  6. Finely chop cilantro leaves and add to soup.
  7. Cook for another hour.
  8. Cut remaining tortillas into strips place on baking sheet salt and bake at 350 for 10 minutes.
  9. Put soup in bowls and garnish with tortilla strips and cheese.

I remember always buying Taco Bell’s Mexi Pizza. It’s a really cool pizza that is a mix of a taco with a pizza. I have no idea how to explain it but if you haven’t tried it, I highly recommend trying out this version of it. They really are so delicious. Enjoy!

Copycat Taco Bell Mexican Pizza

INGREDIENTS:

  • 1/2 lb Ground Beef
  • 1/2 package Taco Seasoning Mix
  • 2 tbsp Water
  • 8 White Corn Tortillas
  • 16 oz Refried Beans
  • 1/3 cup Enchilada Sauce
  • 1/3 cup Thick and Chunky Salsa
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Monterey Jack Cheese
  • 1/4 cup diced Tomatoes
  • 1/4 cup slice Green Onion (green end)
  • 1/4 cup Sliced Black Olives
  • Vegetable Oil for Frying 3

DIRECTIONS:

  1. Brown ground beef in a skillet.
  2. Drain excess fat.
  3. Add water and taco seasoning. Mix well.
  4. Allow to simmer for 10 minutes on low.
  5. Remove from heat.
  6. Transfer taco meat to food processor and run until it is a fine consistency. 4
  7. Heat Oil to 375 on stovetop.
  8. Fry each tortilla for 30-45 seconds on each side and set on paper towels or paper bag to drain.
  9. Preheat oven to 400.
  10. Spread 1-2 tablespoons of beans on 4 tortillas.
  11. Top beans with the meat mixture. 2
  12. Top each of these with the remaining tortillas.
  13. Top these tortillas with a blend of enchilada sauce and salsa.
  14. Next add a mixture of the cheeses.
  15. Then top with tomatoes and olives.
  16. Optionally add green onion slices.
  17. Bake in oven for 5-10 minutes or until cheese is melted.

  10. Spread 1-2 tablespoons of beans on 4 tortillas.
  11. Top beans with the meat mixture.
  12. Top each of these with the remaining tortillas.
  13. Top these tortillas with a blend of enchilada sauce and salsa.
  14. Next add a mixture of the cheeses.
  15. Then top with tomatoes and olives.
  16. Optionally add green onion slices.
  17. Bake in oven for 5-10 minutes or until cheese is melted.

Chicken Pineapple Kabobs

This next recipe is pretty dang healthy and looks great too! These Pineapple kabobs are just the perfect mix of sweet and salty and are quick to put together. Plus, most kids love these (maybe just leave out the onions) because they are not only fun to eat but sweet with the pineapple. Enjoy!

Chicken Pineapple Kabobs

INGREDIENTS:

  • 1 cup Ketchup
  • 1/4 cup Soy Sauce
  • 1/4 cup Honey
  • 1 tbsp Mustard
  • 1/2 cup Brown Sugar
  • 1 tsp Minced Garlic
  • 1 tbsp Lemon Juice
  • 2 lb Boneless Skinless Chicken Breasts
  • 1 Pineapple
  • 1 Red Onion
  • 1 Green Bell Pepper
  • Salt and Pepper (to taste) 2

DIRECTIONS:

  1. Add ketchup, soy sauce, honey, mustard, lemon juice, brown sugar and garlic to a small pan and cook for 10 minutes. Remove from heat and allow to cool.
  2. Cut chicken, peppers and onion into 1 1/2 in cubes.
  3. Peel and core pineapple and cut into 1 1/2″ cubes.  3
  4. Place Pineapple, chicken and vegetables onto skewers alternating pieces. 4
  5. Transfer 1/2 of sauce to another dish to use when serving.
  6. Brush skewers with oil then with sauce and place on heated grill. 5
  7. Baste skewers every 3-5 minutes while cooking. Cook for about 15 minutes.

Aren’t these just adorable?! I love making this next snack for the kiddos (and with them) because it’s a great way for them to eat a healthy snack. These Snowmen snacks are made of eggs, carrots and pretzels so like I said, it’s very healthy. Have fun making these with the kiddos and enjoy!

Boiled Egg Snowmen

INGREDIENTS:

  • 6 Boiled Jumbo Eggs
  • 6 Boiled Medium Eggs
  • 2 Carrots
  • Peppercorns
  • Pretzel Sticks
  • Green onion stems 2

DIRECTIONS:

  1. Slice off a small section from top and bottom of each egg to allow them to stand and stack neatly. 3
  2. If you are going to serve soon, you can use pretzel sticks to join each piece and they will be completely edible. If they need to sit for a while, the pretzels will become to soggy, so you will have to use wooden skewers.
  3. Even if you are using pretzels, you will need to pierce the egg and carrot before pushing pretzels through.
  4. Push a pretzel stick down into large egg to make body and place smaller egg on top. 4
  5. Peel carrots.
  6. Slice the thick end of carrot into six 1/8″ slices to use as hat brims.
  7. Slice middle of carrot (or smaller carrot) into six 3/4-1″ slices for top of hat.
  8. Use skewer to “pre-drill” hole in carrots to allow pretzel to connect them with remainder of stick extending below brim.
  9. Push assembled hat down onto head. 5
  10. Take the small end of a carrot (about 1/2″) and cut lengthwise into six sections to use as noses.
  11. Using a toothpick, pierce “face” egg in the middle and insert the nose.
  12. Pierce for the two eyes and four spots to make a mouth and press in peppercorns. 6
  13. Pierce the “body” egg three spots to make buttons and press in peppercorns.
  14. Break a pretzel in half and insert a piece in each side of the body to make arms.
  15. You can optionally use green onion stems to make a hat band and scarf.
  16. Split the green tube and open it up.
  17. Gently scrape the blade along the inside of the opened stem to remove stiffness.
  18. Trim the softened piece to make scarf or hatband and wrap in place.

As most of you know, I love making Crock Pot recipes and this stew/soup is super easy since it’s made in the Crock Pot. I love making this on chill, snowy, rainy days. It’s such a good comfort food and is actually pretty good for you. You could make this with our Grilled Cheese Rollups (they pair up perfectly and I love dipping them in the soup).

Crock Pot Vegetable Beef Soup

INGREDIENTS:

  • 2 lb Chuck Roast, cut into small pieces
  • 12 oz frozen Soup Vegetables
  • 12 oz frozen Mixed Vegetables
  • 1 Onion chopped
  • 1 cup Barley
  • 1 tsp Minced Garlic
  • 1 can Diced Tomatoes
  • 4 cup Tomato Juice
  • 4 cup Beef Stock
  • 1 Bay Leaf
  • Salt to taste
  • Pepper to taste 2

DIRECTIONS:

  1. You can brown beef before adding to crock pot, but this is optional. 3
  2. Add all ingredients (except salt and pepper) to slow cooker and cook on low for 8 hours. 5
  3. Remove bay leaf and add salt and pepper before serving. 6
