If you need a quick and easy dinner to throw in the crock pot, then definitely try this Crockpot Chicken and Dumplings recipe. You can also usually buy pre-chopped celery, onions and carrots at Trader Joe’s if you’re in a big hurry. Or sometimes, I will try to chop everything when I buy it (or slice it) so that I don’t have to worry about it when I’m in a hurry in the morning. Enjoy!

Crockpot Chicken and Dumplings

INGREDIENTS:

  • 2 lb Boneless Skinless Chicken Breast
  • 1 can Condensed Cream of Chicken Soup
  • 1 can Condensed Cream of Celery Soup
  • 1 Onion, finely diced
  • 2 ribs of Celery, sliced
  • 3 cup Chicken Broth
  • 6 oz frozen Peas and Carrots
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Poultry Seasoning
  • 16 oz can Refrigerated Biscuit Dough 2

DIRECTIONS:

  1. Place all ingredients, except biscuit dough, in slow cooker and cook on high for 4 hours or low for 8 hours. 4
  2. Remove chicken breasts from slow cooker, shred and then return to cooker.
  3. Roll dough for each biscuit to about 1/4″ thick and cut into strips. drop strips into cooker and cook on high for another hour. 5

I love Chili’s queso dip.. it’s so cheesy and creamy and not overly spicy (although you can make it a little more spicy if you want)! This recipe is perfect for parties and get-togethers and will surely impress you guests.

Copycat Chili’s Queso Dip

INGREDIENTS:

  • 16 oz Velveeta
  • 3/4 cup Milk
  • 1/2 tsp Cayenne Pepper (optional, if you like it spicy)
  • 15 oz Wolf Chili (No Beans)
  • 2 tsp Chili Powder
  • 2 tsp Lime Juice
  • 1/2 tsp Cumin 2

DIRECTIONS:

  1. Cut the velveeta into cubes.
  2. Heat all ingredients in pan over medium heat stirring frequently. 3
  3. Serve with tortilla chips

There’s something about warm, creamy soup that makes a cold day totally worth it! I don’t know about you but I love to eating soup all winter long. My favorite kinds of soups are the creamy, rich soups and that’s why I love this next recipe. Enjoy!

Copycat Panera Autumn Squash Soup

INGREDIENTS

  • 1 Butternut Squash
  • 1 small Onion
  • 2 tbsp Olive Oil
  • 15 oz Pumpkin Puree
  • 2 cup Vegetable Broth
  • 1 1/2 cup Apple Cider
  • 1 1/2 cup Heavy Cream
  • 2 tbsp Honey
  • 1/4 tsp Curry Powder
  • 1/2 tsp Cinnamon
  • 2 tsp Salt
  • 1/2 tsp Black Pepper
  • Pumpkin Seeds (for garnish)  2

DIRECTIONS:

  1. Preheat oven to 450.
  2. Peel and seed squash and cut into chunks.
  3. Peel and quarter onion
  4. Toss squash and onion in olive oil and salt and pepper to taste.
  5. Cook for 20 minutes. 3
  6. Allow to cool at least 10 minutes.
  7. Puree in blender or food processor.
  8. In a large sauce pan, combine squash puree, pumpkin puree, vegetable broth, apple cider and cream. 4
  9. Bring to a low boil over medium heat.
  10. Add honey and spices and simmer for 10 minutes.
  11. Garnish with pumpkin seeds.

One of my favorite restaurants is Olive Garden. I love everything they have including the soup and salad but it’s not in the budget to go there every day so I had to come up with my own recipe. This Olive Garden recipe is the Copycat version of their Minestrone Soup and it is delicious! I hope you like it too. Enjoy!

Copycat Olive Garden Minestrone Soup

INGREDIENTS:

  • 3 tbsp Olive Oil
  • 1 diced medium Onion
  • 1 chopped small Zucchini 3
  • 14 oz Italian Style Green Beans
  • 1 diced stalk Celery
  • 4 tsp minced Garlic
  • 4 cup Vegetable Broth
  • 30 ounce drained Red Kidney Beans
  • 30 ounce drained Great Northern Beans
  • 14 ounce can Diced Tomatoes with juice
  • 1/2 cup Shredded Carrot
  • 1/2 cup dry Red Wine (optional)
  • 4 oz Tomato Paste
  • 1 tsp Oregano
  • 1 tsp Basil
  • 1/4 tsp Thyme
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 Bay Leaf
  • 3 cup Hot Water
  • 4 cups fresh Spinach
  • 1 1/2 cup Shell Pasta
  • Salt and Pepper to taste 2

DIRECTIONS:

  1. Heat olive oil over medium heat in a large stock pot.
  2. Saute onion, celery, zucchini, and carrots until onions are clear.
  3. Add garlic, green beans and tomato paste and stir. 4
  4. Add the broth, red wine and hot water and stir well.
  5. Add tomatoes, beans, and spices.
  6. Bring to a boil, reduce heat cover and simmer for 45 minutes.
  7. Remove bay leaf.
  8. Add spinach and pasta and cook for an additional 30 minutes. 5

Easy Roasted Vegetables

Did you know that roasting vegetables actually enhances the flavors of each vegetable? If you have anyone in the household that doesn’t like the taste of vegetables then you will definitely want to try roasting them. You can also sprinkle some parmesan cheese on them for a little extra added flavor. I always season my veggies before roasting them too. Enjoy!

Here’s how to roast your vegetables:

  • Preheat oven to 425 degrees F.
  • Drizzle olive oil on a baking sheet or coat with nonstick spray.
  • Put your veggies (any type you like) on the pan in a single layer so they are not overlapping each other. I love roasting broccoli, zucchini, squash, bell pepper, mushrooms, butternut squash onions, etc.
  • Depending on how many vegetables are on the baking sheet, add olive oil, balsamic vinegar, garlic, salt and pepper to taste. You can really try any of your favorite seasonings.
  • Mix the veggies so they are covered with your sauces and seasonings.
  • Bake for 15 minutes or until they are tender.

Aren’t these pizzas super cute?! I love making these with the kids for a snack or quick and easy lunch. I bet you probably have most of everything you need in your pantry/fridge right now. You just need some string cheese, crackers, olives and some type of a sauce like pizza sauce or tomato sauce works too. 😉 Enjoy!

Spider Web Pizza Snacks

INGREDIENTS

  • Pizza Sauce
  • Round Crackers, Sandwich Slim Buns and/or Pita Breads
  • String Mozzarella Cheese
  • Black Olives 1

DIRECTIONS

  1. Preheat oven to 375.
  2. If using slim buns, separate the halves.
  3. Take your pizza bases (cracker, bun or pita) and cover with pizza sauce.
  4. Take string cheese and open and pull into strings.
  5. Take 4 strings and lay across the base like you would cut a pizza.
  6. Cut more strings into smaller pieces to go across each “slice” of the pizza. 2
  7. To make a spider, cut the ends off of 2 olives one slightly large than the other.
  8. These 2 will be the head and body.
  9. Cut 2 slices off of the already cut olive and cut those slices in half to make legs for the spider.
  10. Place on spider on each pizza.
  11. Place on cookie sheet and bake until cheese is melted (about 10 minutes).
  12. You can optionally put eyes on the spider by dipping a toothpick in mustard and touching it to the head.

Jack O Lantern Orange Fruit Cups

INGREDIENTS

  • 3 Medium Navel Oranges
  • 1 cup Mixed Fruit 2

DIRECTIONS

  1. Slice off the tops of the oranges.
  2. Using a spoon, scoop out the pulp of the oranges. 3
  3. Cut out faces on each orange to resemble a Jack O Lantern.
  4. Fill each orange with mixed fruit and serve.

Crispy Carrot Chips

Potato chips are a super popular snack food around the world. However, it can be extremely hard to find a crunchy, healthy alternative for regular store-bought potato chips. Usually, you can find something that tastes similar but you end up having to sacrifice texture. Well, the good news is there is a healthy, easy to make alternative to regular potato chips and they can be eaten guilt free and made in your own home! Check out the recipe below to make your own crunchy carrot chips:

Ingredients Needed:

  • Carrot(s)
  • Olive Oil
  • Salt

Instructions:

  1. Start by preheating the oven to 425 degrees and prep your baking sheet. Either line the sheet with parchment paper or use a light cooking spray.
  2. Next, slice all your carrots into rounds keeping them relatively the same size. Once sliced combine carrots, salt and just enough olive oil to lightly coat the chips. Toss all ingredients to make sure every piece is evenly coated.
  3. Lay on the baking sheet making sure to leave a little room between each chip. Bake in the oven for 10 minutes or until crispy and brown. Keep a close eye as they can overcook easily.
  4. Once finished cooking, let them slightly cool and serve with your favorite dip or sauce!

Have you ever seen a Pumpkin shaped cheese ball?! If you’ve been around here long then you know I love cheese balls for most occasions. They can be very simple to make and taste delicious. This recipes calls for Doritos (yum!) or you could use your favorite cheesy chip but I definitely think these are the best. Enjoy…

Pumpkin Shaped Nacho Cheese Ball

Ingredients:

  • 8 oz softened Cream Cheese
  • 2 cup Shredded Cheddar Cheese
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Cayenne Pepper
  • 1/4 cup Salsa
  • 1/2 tsp Cumin
  • 2 cup Nacho Cheese Chips, crushed  4
  • 1

Directions:

  1. Combine cream cheese, cheese, onion powder, garlic powder, cumin and salsa. Mix until smooth and blended. 2
  2. Form into a ball. Wrap in plastic wrap and refrigerate for at least 2 hours. 3
  3. Roll ball in the crushed nacho chips. 5
  4. Optionally, place bell pepper stem on top and score sides to look like pumpkin.

Ingredients:

  • 3 String Cheese Sticks
  • 9 Pretzel Sticks
  • Fresh Chives 2

Directions:

  1. Cut each cheese stick in thirds (about 1 1/2″ each).
  2. Lengthwise, make cuts around the stick to about half way up.
  3. Insert a pretzel stick in the uncut end of the cheese. 3
  4. Wrap and tie with a chive and cut off excess.

  1. Cut each cheese stick in thirds (about 1 1/2" each).
  2. Lengthwise, make cuts around the stick to about half way up.

Cheesy Mummy Hot Dogs

Ingredients:

  • 1 can Crescent Roll Dough
  • 2 American Cheese slices
  • 8 Hot Dogs
  • 16 Candy Eyes
  • Cooking spray 2

Directions:

  1. Preheat oven to 375.
  2. Cut each cheese slice into 4 strips.
  3. Unroll dough and separate into 4 rectangles (crimp diagonal cuts in each one together).
  4. Cut each rectangle lengthwise into 1/2″ strips and join 2 together to form one long “bandage”.
  5. 10 pieces, making a total of 40 pieces of dough. Slice cheese slices into quarters (1/2 slice cheese, cut in half). 3
  6. Wrap “bandage” of dough around each hot dog and 1/4 slice of cheese.
  7. Make sure to leave a gap for face.
  8. Place wrapped hot dogs (cheese side down) on non stick cookie sheet and lightly spray with cooking spray.
  9. Bake 15 minutes or until dough is lightly brown.
  10. Place a small piece of cheese where eyes go and place in oven to melt slightly.
  11. Place 2 eyes on each mummy.

Here is a delicious recipe that is super easy to make. This copycat Chipotle Barbacoa is full of flavor and is make in the crock pot which makes your life even easier! I love using this meat on tacos (we usually fry up some white corn tortillas) and add a little sour cream and veggies. Enjoy!

Copycat Chipotle Barbacoa

Ingredients:

  • 4 lb Chuck Roast trimmed of excess fat)
  • 2 tbsp Vegetable Oil
  • 3 Bay Leaves
  • º cup Apple Cider Vinegar
  • 4 tsp Minced Garlic
  • 4 tsp Cumin
  • 3 tsp Oregano
  • 1 tsp Black Pepper
  • 1/2 tsp Ground Cloves
  • 1 tsp Kosher Salt
  • 4 Chipotle Peppers (from canned Chipotles in Adobo Sauce)
  • 1 tbsp Adobo Sauce (from canned Chipotles in Adobo Sauce)
  • 1 cup Chicken Broth
  • 1/4 cup Lime Juice 1

Directions:

  1. To make the sauce combine vinegar, lime juice, chipotles, adobo sauce, garlic, cumin, oregano, black pepper, salt and cloves in a blender or processor on high speed until smooth. 2
  2. Insure all excess fat is trimmed off and cut into 6-8 pieces.
  3. Heat oil in a heavy skillet over medium high heat. 3
  4. Sear all sides of the meat to get a nice crust.
  5. Place meat in slow cooker.
  6. Cover with with sauce.
  7. Pour in broth and add bay leaves.
  8. Cover and cook 5 hours on high (or 8 hours on low).  5
  9. Remove the bay leaves.
  10. While still in the slow cooker, shred the meat with two forks and turn the heat to low and allow to cook for 1 more hour.

One of my favorite comfort foods is a creamy, hearty soup. This pot pie is a copycat recipe from KFC that seriously tastes very similar and in my opinion, even a little BETTER! This recipe doesn’t require a lot of ingredients and is full of flavor. Seriously, you need to make this, it is SO delicious! Enjoy..

Copycat KFC Chicken Pot Pie

Ingredients:

  • 6 5-6″ Foil Pot Pie Tins
  • 1 Rotisserie Chicken or Fried Chicken
  • 2 sheet Puff Pastry Dough
  • 4-5 Potatoes
  • 4-5 Carrots
  • 2 cup Frozen Peas
  • 2 can Cream of Chicken Soup
  • 15 oz Milk
  • 1 tsp Sugar
  • Salt and Pepper (to taste) 2

Directions:

  1. Pick meat from bones and cut into bite size pieces. 4
  2. Peel and cut potatoes into 1/2″ cubes
  3. Peel and slice carrots into 1/4″ slices. 3
  4. Remove pastry from box and thaw at room temperature.
  5. Boil potatoes and carrots in water until almost tender.
  6. Drain liquid, add frozen peas and set aside.
  7. In a large pot, add soup, milk, and sugar. Mix well and simmer.
  8. Preheat oven to 400.
  9. Add chicken and vegetables to the sauce and simmer until warm, stirring frequently. 5
  10. Spoon mixture into each pie tin, Do not over fill.
  11. Cut pastry into 6″ circles and then roll slightly to make sure crust will overlap rim.
  12. Moisten edges of pastry and cover each tin pressing edges to the rim.
  13. Bake at 400 18 minutes.

Sometimes it’s fun to go out to eat at fast food places like McDonald’s…but, then again, the food isn’t the healthiest for you. That’s why I love this homemade, copycat Big Mac! I know what I’m putting in it and know that it’s healthier for me then the real thing…plus, I think it tastes better. 😉 Enjoy..

Copycat McDonald’s Big Mac

Ingredients:

Special Sauce:

  • 1/4 cup Miracle Whip
  • 1/4 cup Mayonnaise
  • 2 heaping tbsp French salad dressing (like Wishbone Deluxe)
  • 1/2 tbsp Sweet Relish
  • 2 heaping tsp Dill Pickle Relish
  • 1 tsp Sugar
  • 1 tsp Dried Minced Onion
  • 1 tsp White Vinegar
  • 1 tsp Ketchup
  • 1/8 tsp Salt 2

Burgers:

  • 2 thin 2 oz Patties
  • 1 Sesame Seed Buns
  • 1 additional Bun Bottoms
  • 1 slices American Cheese
  • 1 tbsp Special Sauce
  • 1 tsp finely diced Onion
  • 1/2 cup chopped Lettuce
  • 2 Dill Pickle slices
  • dash of Salt
  • dash of Pepper 3

Directions:

  1. Mix special sauce ingredients until well blended in a microwave safe container.
  2. Microwave 25 seconds.
  3. Mix well again.
  4. Cover and refrigerate at least 1 hour before using.
  5. cut browned side of extra bun half away, leaving piece to use as middle. 4
  6. Lightly toast buns on pan or griddle and set aside.
  7. Cook patties in hot pan 1-2 minutes each side lightly salting and peppering.
  8. On bottom bun, add 1/2 tbsp Special Sauce, 1/2 tsp dice onion, 1/4 cup lettuce, slice of American cheese and 1 patty. 5
  9. On the middle bun, add 1/2 tbsp Special Sauce, 1/2 tsp dice onion, pickles, 1/4 cup lettuce and 1 patty.
  10. Place the middle bun section on top of the bottom bun section and top with the top bun.

Mini Meatloaf Cupcakes

Ingredients:

  • 1 lb Ground Beef
  • 1 Egg
  • 3/4 cup Milk
  • 1 cup Shredded Cheddar Cheese
  • 1/2 cup Quick Oats
  • 1 tsp Salt
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 2 tsp Worcestershire Sauce
  • 1/4 cup crushed Club Crackers
  • 2/3 cup Ketchup
  • 1/4 cup Brown Sugar
  • 2 tsp Mustard
  • 2 cup Mashed Potatoes 2

Directions:

  1. Preheat Oven to 350.
  2. Place mashed potatoes in a zipperd bag or piping bag and set aside for later.
  3. Combine Ketchup Mustard and brown sugar and mix well. Set aside. 4
  4. Combine remaining ingredients and mix thoroughly. 3
  5. Press this mixture into muffin pan. 5
  6. Spread top of each with the ketchup mixture. 6
  7. Bake for 30-45 minutes.
  8. Allow to sit for 5 minutes, remove from muffin pan and pipe on a mashed potato “frosting”.

I love trying new things at Panda Express and I always love when they come with veggies like peppers, onions, etc. I fell in love when I tried the sweetfire chicken…seriously, it’s good! If you like sweet chicken but not super sweet, then you will love this recipe. I love the pineapple in it too. Enjoy this yummy dinner…

Copycat Panda Express Sweetfire Chicken

Ingredients:

CHICKEN:

  • 1/2 cup Vegetable Oil
  • 1 lb Boneless Skinless Chicken Breasts
  • 3/4 cup Flour
  • 1 cup Corn Starch
  • 2 Eggs, beaten

SAUCE:

  • 1 tbsp Olive Oil
  • 1 Red Bell Pepper
  • 1/2 Onion
  • 1 1/2 cup Pineapple Chunks
  • 1/2 cup Thai Sweet Chili Sauce
  • 2 Green Onions 2

Directions:

  1. Heat vegetable oil in a large skillet over medium high heat.
  2. Cut chicken into roughly 1″ chunks. 3
  3. Take each piece of chicken and coat in flour (shaking off excess), dip in egg and then coat in corn starch (pressing to coat).
  4. Cook chicken in skillet, several pieces at a time until golden and crispy (about 2 minutes per side).
  5. Drain on paper towels.
  6. Remove top and seeds and cut red pepper into roughly 1″ pieces.
  7. Cut onion into roughly 1″ pieces. 4
  8. Drain pineapple chunks.
  9. Heat olive oil in a skillet over medium high heat.
  10. Cook pepper, onion and pineapple, stirring occasionally, until tender.
  11. Add in chicken and chili sauce until well combined, about 1-2 minutes.
  12. If sauce doesn’t appear thick enough, make a slurry of 2 tablespoons of corn starch and 2 tablespoons of water and add to skillet and continue stirring.
  13. Garnish with sliced green onions.

These dip cups are great for parties! I hate double dipping and can’t stand eating out of a huge dip bowl that’s been double dipped who knows how many times. 😉 With that being said, I love making and dipping out of these homemade 7 layer dip cups. Enjoy!

7 Layer Dip Cups

(Yield about 6 individual cups)

Ingredients:

  • 16 oz Refried Beans
  • 1 package Taco Seasoning
  • 1 cup Guacamole
  • 8 oz Sour Cream
  • 1 cup Chunky Salsa
  • 1 cup Shredded Cheddar Cheese
  • 1/2 cup diced Tomatoes
  • 1/4 cup slice Green Onions
  • 1/4 cup sliced Olives 3

Directions:

  1. Add taco seasoning to refried beans and mix well.
  2. Drain some of the moisture from the salsa so that it doesn’t seep down into lower layers.
  3. Layer ingredients into each cup being careful not to smear on the sides.
  4. Gently push down each ingredient to clean any empty spaces.
  5. Layer about 2 tablespoons of each into the cups: 2
  6. Bean mixture
  7. Guacamole
  8. Sour Cream
  9. Salsa
  10. Cheese
  11. Divide tomatoes evenly across cups.
  12. Top each with green onions and olives.
  13. Serve with Tortilla Chips.

Crock Pot Beans with Ground Beef

Ingredients:

  • 1 lb lean ground beef
  • 1 lb Bacon
  • 1 chopped medium Onion
  • 1 chopped Bell Pepper (any color)
  • 4 medium can Pork and Beans (approx 60 oz total)
  • 3/4 cup Brown Sugar
  • 1 tbsp Minced Garlic
  • 2 tbsp Mustard
  • 2 tbsp Worcestershire Sauce
  • 3/4 cup Ketchup
  • 1 cup Barbecue Sauce 2

Directions:

  1. Brown ground beef with onion and pepper. 3
  2. Drain ground beef mixture and add to crock pot.
  3. Add remaining ingredients except bacon and stir to mix well. 4
  4. Cut bacon strips into quarters and fry until fat is rendered out and bacon is slightly browned.
  5. Add bacon pieces to top of crock pot. 5
  6. Cook on low for 3-4 hours. 6

Ingredients:

  • 3-4 Tomatoes, diced
  • 1/2 Red Onion, diced
  • 1/4 Jalapeno, diced
  • 5-7 stems of Cilantro
  • Juice of 1 Lime

  1. Remove leaves from the cilantro stems and discard stems.
  2. Chop up cilantro leaves.

One of my favorite “fast food” restaurants is Chipotle and if you’ve never been there, I highly recommend it. This copycat recipe is for their Carnitas and guess what else…it’s made in the crock pot! Super easy and tastes delicious. We love to eat this meat with corn tortillas or in burritos with some rice and beans. Enjoy!

Crock Pot Copycat Chipotle Carnitas

Ingredients:

  • Whole Pork Shoulder or Pork Butt
  • 2 tbsp Vegetable Oil
  • 1 Onion chopped
  • 2 cans of Rotel Tomatoes & Chiles
  • 2 tbsp Minced Garlic
  • 1/2 tsp Oregano
  • 1/4 tsp Ground Cloves
  • 2 tsp dried Chipotle Pepper
  • 1 tsp Cumin
  • 1 cup Beef Broth
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 bay leaves 2.jpg

Directions:

  1. Heat oil in large pan and brown pork on all sides.
  2. Place pork in slow cooker and add remaining ingredients on top of pork. 3.jpg
  3. Cook on low 8-10 hours.
  4. Remove pork and shred (remove if it was not boneless).
  5. Remove bay leaves.
  6. Drain about half of the liquid.
  7. Add shredded pork back to juices in the crock pot. 4.jpg

I love this next recipe because it is perfect for parties, appetizers, kid’s lunches or just a fun dinner! You can easily make these mini shepherd’s pie bites in a cupcake pan. Plus, you can have the little ones help out and make their own. 😉 Enjoy..

Mini Shepherd’s Pie

Ingredients

  • 1 can Biscuits (10-12 ct)
  • 1 lb Ground Beef
  • 1/2 Onion, minced
  • 1 tsp Salt
  • 1 tbsp Black Pepper
  • 1 tbsp Minced Garlic
  • 2 tbsp Flour
  • 3/4 cup Beef Stock
  • 1 tbsp Worcestershire Sauce
  • 1 cup frozen Peas and Carrots
  • 1 tsp Dried Parsley Flakes
  • 1 1/2 cups Mashed Potatoes 2.jpg

Directions:

  1. Preheat oven to 425.
  2. Spray a muffin pan with non-stick spray.
  3. Flatten and mold biscuits into each muffin cup.  3.jpg
  4. Bake 6-8 minutes,  until light golden. If biscuits have risen too much to hold meat, press downsides and bottom while still warm.
  5. Brown ground beef in a large skillet and drain.  4.jpg
  6. Stir in the onions, salt, pepper and garlic and allow to cook together for a couple of minutes.
  7. Add flour to the mixture and stir until blended to a paste.
  8. Add beef stock, worcestershire and vegetables. Mix well
  9. Heat mashed potatoes in a microwave for 5 to 6 minutes stirring halfway through.
  10. Spoon about 2-3 tablespoons of meat mixture into each biscuit shell.
  11. Then top with equal amount mashed potatoes.
  12. Sprinkle the top with dried parsly flakes. Place in oven and bake for 12-15 minutes.
  13. Remove from oven and allow to cool slightly before removing individual pies.

Beach Themed Ham & Cheese Bento Kids Lunch

Ingredients:

  • 2 slices Honey Ham
  • 2 slices Cheddar Cheese
  • 1 Pretzel Roll (or Hoagie Roll)
  • 1 Boiled Egg
  • 1 Raisin
  • 1/4 cup Goldfish Crackers
  • Leaf Lettuce
  • 1/2 Orange sliced
  • Blue Jell-O
  • 1 Swedish Fish Candy
  • 1 Lowfat Milk Carton 4.jpg

Directions:

  1. Prepare Jell-O according to directions and pour in serving size containers and allow to nearly set.
  2. Add one swedish fish to each Jell-O container.
  3. Take Roll and notch out each side and the rear to create fish shape. If your bento is small, split roll in half first to make 2 fish. 2.jpg
  4. Notch out mouth and romove a small cirlce to create an eye. 3.jpg
  5. Place raisin in the eye.
  6. Split roll and add ham and cheese.
  7. Place lettuce into box to support fish.
  8. Place remaining ingredients into cups and place in Bento Box.

Talk about a delicious sauce for your burgers…this Picante Mayonnaise is one of my favorite dressing for burgers because it adds a pop of flavor! These burgers are perfect for Summer and BBQing. Enjoy!

Jalapeno Jack Burger with Picante Mayonnaise

Ingredients:

  • 1 1/2 lb Ground Chuck
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Chili Powder
  • 1/4 tsp Kosher Salt
  • 1/4 tsp fresh Ground Pepper
  • Worcestershire Sauce
  • 4 slices Pepper Jack Cheese
  • 4 large Hamburger Buns
  • 1/2 cup Miracle Whip or Mayonnaise
  • 1/4 cup Picante Sauce
  • Jalapeno Slices (to taste)
  • sliced Red Onion (optional)
  • sliced Tomato (optional)
  • Iceberg Lettuce (optional) 2.jpg

Directions:

  1. Divide meat into 4 6 oz burgers patties.
  2. Mix together onion powder, garlic powder, chili powder, salt and pepper.
  3. Sprinkle seasoning mix on both sides of each patty.
  4. Mix mayonnaise and picante sauce in a small bowl until well blended. Set aside. 3.jpg
  5. Place on skillet and heat over medium heat for about 5 minutes (until lightly charred).
  6. Flip and cook other side for about 5 minutes. 4.jpg
  7. Place one slice of cheese on each burger and cover skillet until cheese melts. 5.jpg
  8. Apply a think layer of picante mayonnaise to both sides of bun.
  9. Dress bun with lettuce, tomato and onion (as desired).
  10. Place patty on bottom bun and toppings.
  11. Top patty with jalapeno slices.
  12. Top with bun.

Crock Pot French Dip

Ingredients:

  • 4 lb Beef Roast
  • 1 tbsp Minced Garlic
  • 1 small Onion quartered
  • 1 tbsp Rosemary
  • 3 Bay Leaves
  • 1 cup Soy Sauce
  • 6 cup Water
  • 8 Sub Rolls
  • Bell Peppers (optional)
  • Onions (optional)
  • Cheese (optional) 2.jpg

Directions:

  1. Place roast in slow cooker.
  2. Place rosemary in bay leaves in a piece of cheesecloth and gather it up and tie with twine/string.
  3. Add remaining ingredients. 3.jpg
  4. Cook on Low for 8 to 10 hours.
  5. Remove bay leaves and rosemary and discard.
  6. Remove and shred beef.
  7. Strain juices to serve as Au Jus.
  8. Return everything to crock pot on warm and serve. 4.jpg
  9. If you like, you can sautee onions and peppers and add cheese to the sandwiches.

Ingredients:

  • 2 1/2 lb Chicken cubed

  • 3/4 lb Carrots chopped
  • 6 stalks of Celery chopped
  • 1 tbsp Minced Garlic
  • 1 1/2 quart Chicken Broth
  • 1 1/2 quart Water
  • 1 tsp Salt
  • 1 tbsp Chicken Base (optional)
  • 2 tsp Pepper
  • 1 tsp Crushed Red Pepper
  • 1 Bay Leaf
  • 1 12 oz bag Egg Noodles 2.jpg

Directions:

  1. Add all items except egg noodles into the slow cooker. 4.jpg

  3. Remove bay leaf and add egg noodles.

Copycat Applebee’s Clubhouse Grille Sandwich

Ingredients:

  • 2 slices Texas Toast or thick sliced Bread
  • 1 tbsp softened Butter
  • 2 tsp Mayonnaise
  • 1 slice Cheddar Cheese
  • 1 slice Jack Cheese
  • 3 slices Deli Sliced Ham
  • 3 slices Deli Sliced Turkey Breast
  • 2 slices crispy Thick Applewood Bacon
  • 2 thin slices Tomato
  • 2 tsp Honey Barbecue Sauce
  • Shredded Lettuce 2.jpg

Directions:

  1. Butter 1 side of each slice of bread and place butter sides down in skillet.
  2. Cook until golden brown.
  3. Move to plate.
  4. Stack ham slices, then turkey slices, then cheese slices in skillet over low until cheese melts.3.jpg
  5. Place one piece of bread toasted side down.
  6. Spread barbecue sauce on other side.
  7. Transfer meat and cheeses from skillet on top of barbecue sauce.
  8. Add bacon slices on top.
  9. Top with tomato slices and shredded lettuce.
  10. Take other slice of toast and spread mayonnaise on unbuttered side and place mayonnaise toward lettuce on top.
  11. Slice diagonally and serve.

Homemade Chicken Nuggets

Ingredients:

  • 2 lbs boneless skinless chicken breast
  • 2 cups crushed corn flakes
  • 1 1/2 tablespoons ranch dressing mix (dry)
  • 3 tablespoons parmesan cheese
  • 1 cube butter 2.jpg

Directions:

  1. Cut your chicken into one or one and a half inch cubes.
  2. Melt the cube of butter and put cubed chicken into the butter.
  3. In another bowl combine the crushed corn flakes, ranch dressing mix (dry) and parmesan cheese. 3.jpg
  4. Take the chicken cubes out of the butter and roll them into the corn flake mixture and set them on a baking sheet. Leave a little bit of room between the chicken for even cooking.
  5. Bake in a 350 degree oven for 16-18 minutes till chicken is cooked (cook to 170 degrees).  Enjoy!

I love making Chili and this next recipe is a very healthy, yet tasty Chili recipe. It’s made with quinoa which is a healthy sorta version of pasta or rice. Quinoa Chili

Ingredients:

  • 1 large Onion, chopped
  • 2 tbsp MInced Garlic
  • 28 oz can Diced Tomatoes and Chiles
  • 1 can Tomato Paste
  • 2 cups Chicken Broth (or water for vegetarian)
  • 2 cup Cooked Quinoa
  • 1 1/2 tbsp Olive Oil
  • 2 tbsp Chili Powder
  • 2 tsp Cumin
  • 1 tsp Cocoa Powder
  • 1 tsp Paprika
  • 1 tsp Sugar
  • 1/2 tsp Cayenne Pepper
  • 2 tsp Salt
  • 2 (15 oz) can Kidney Beans drained
  • 1 (15 oz) can Black Beans drained
  • 12 oz Frozen Corn
  • 1/4 cup chopped Cilantro
  • 2 tbsp Lime Juice 2.jpg

Directions:

  1. Heat olive oil in a large pot over medium-high heat.
  2. Saute onion until tender. 4.jpg
  3. Add all remaining ingredients except beans, corn, cilantro and lime juice.
  4. Bring mixture to a boil, reduce heat, cover and simmer for 30 minutes.
  5. Add in remaining ingredients and cook 10 more minutes.  5.jpg
  6. Serve with optional toppings and sides (cheddar, sour cream, green onions, avocados, etc.).

I am so excited to share this next recipe with all of you! One of my favorite restaurants EVER is Taxes Roadhouse….and you want to know why?! Well, the ROLLS and cinnamon butter of course. 😉 With that being said, here is a recipe for these yummy rolls and cinnamon butter and let me just tell you, if you haven’t ever had these, MAKE THEM! Be sure to make a lot too and eat them warm. Enjoy…

Copycat Texas Roadhouse Rolls & Butter
Makes 24 rolls

Ingredients:

Rolls:

  • 2 1/4 tsp Yeast (or 1 packet)
  • 1 1/4 cup Milk
  • 1/4 cup Honey
  • 4 tbsp melted Butter
  • 1 large Egg
  • 1 tsp Kosher Salt
  • 4 cups Flour

Cinnamon Honey Butter:

  • 1 sticks Butter (at room temperature)
  • 1/2 cup Powdered Sugar
  • 1/2 cup Honey
  • 1 tsp Cinnamon 2.jpg

Directions:

  1. Scald milk by boiling and then allow to cool to warm temperature.
  2. Add yeast, honey and milk to bowl and mix. Let it sit for at least 5 minutes (allow yeast to bloom).
  3. Put yeast mixture, 3 tablespoons melted butter, egg and 2 cups of flour into bowl of stand mixer.
  4. Mix on low using the bread hook until smooth.
  5. Keep slowly adding flour until dough comes together.
  6. Add salt and allow to mixer to knead for 8 minutes.
  7. Flour work surface and turn out dough and knead for a few more minutes.
  8. Spray bowl with cooking spray and place dough in bowl.
  9. Cover with a damp cloth or plastic wrap and let rise in a warm place until doubled (about 1 hour). 3.jpg
  10. Spray 2 cookie sheets with cooking spray.
  11. Punch dough down and turn out onto a floured work surface.
  12. Roll dough into a rectangle, about 1/2” thick.
  13. Fold over and gently roll to seal together.
  14. Cut into 24 squares and place on prepared sheets about an inch apart.  4.jpg
  15. Cover and let rise until almost doubled in size (about 40 minutes).
  16. Preheat oven to 350°.
  17. Bake 12-15 minutes or until golden brown.
  18. Brush with remaining melted butter.
  19. Whip all ingredients for honey butter together until smooth.

Yummy! This homemade bacon mac and cheese is one of my favorite dinners! It is seriously full of flavor and quite easy to make considering it’s completely homemade. This is also really good to take to potluck and will surely impress your guests and kiddos. Enjoy….

Bacon Mac and Cheese

Ingredients:

  • 4 cups dry pasta
  • 4 strips bacon
  • 1 cup diced onion
  • 2 gloves garlic, minced
  • 4 tablespoons butter
  • ¼ cup flour
  • 2 cups milk
  • ½ cup heavy cream
  • 2 teaspoons ground mustard
  • 8oz cheddar cheese, grated
  • 8oz gruyere cheese, grated
  • Salt and Pepper to taste 

Topping:

  • 1 cup cracker crumbs
  • ½ cup cheddar cheese, grated
  • 1 tablespoon butter, melted
  • Reserved bacon pieces

Directions:

Bring a pot of water to a boil and salt generously.  Prepare the pasta according to the directions on the package.

In a large skillet, fry the bacon until crisp. Remove to a plate lined with a paper towel and set aside.  Reserve 2 tablespoons of the bacon grease and cook the onions on low until translucent.  Add the garlic and cook for 1 more minute.

In a large saucepan, melt the butter and whisk in the flour over medium heat.  Cook for a couple of minutes, stirring constantly.  Add in the milk and cream and ground mustard and stir until the mixture is very thick.  Reduce the heat to low and season with salt and pepper to taste.

Fold in the pasta until it is all covered with the cheese sauce.

Butter a large baking dish and pour the pasta into the dish.  Sprinkle the remaining ½ cup of cheese over the pasta. Top with the cracker crumbs, then drizzle with the melted butter.  Bake for 20-25 minutes until golden and bubbly.  Chop the reserved bacon and sprinkle over the top before serving.

Copycat Chipotle Lime Rice

Ingredients:

  • 1 cup Basmati Rice
  • 2 cup Water
  • 1 tbsp Vegetable Oil
  • 1 Bay Leaf
  • 2 tsp finely chopped Cilantro
  • 2 tbsp of Lime Juice
  • 1/2 tsp Kosher Salt 2.jpg

Directions:

  1. Rinse rice until water runs clear.
  2. Sautee rice in oil for 3 minutes over medium heat.
  3. Add bay leaf  and water and bring to a boil.
  4. Reduce heat and simmer covered for 20 minutes or until water is absorbed.
  5. Turn off heat and let rice sit covered for 15 minutes.
  6. Mix salt and lime juice until salt is dissolved.
  7. Remove bay leaf from rice.
  8. Spread juice mixture and cilantro over rice and fluff with fork to distribute. 3.jpg
