DIY Mayonnaise

There are a few items you buy from the grocery store that quickly become staples in the home. Items like ketchup, mustard and  mayonnaise are popular items that are almost always found in the fridge. The downside is we tend to use these products on a regular basis and they can run out quick. Not to mention having to buy these staples on a regular basis at the grocery store, so what is the solution? Well, if you are looking to save some money, why not try making your own mayonnaise? It’s simple, doesn’t take much time and will save you money by making it at home! Check out the recipe below for how to make DIY mayonnaise:

Ingredients Needed:

**All ingredients should be room temperature for best results.

  • 1 Large Egg
  • 3 Teaspoon Of Lemon Juice
  • 1 1/3 Cups Of Oil (Olive, Vegetable or Canola)
  • 1 Tablespoon Of Mustard (Dijon works best)

Instructions:

  1. Start by adding the egg and mustard to your food processor. Mix these two until completely combined.
  2. Reduce processor speed to slow and slowly start to add oil until mixture is completely combined and smooth.
  3. Continue to add lemon juice and mix until mixture is completely smooth. Add seasoning to your preference (Salt, pepper, paprika etc.)
  4. Store your homemade mayonnaise in an air tight jar and use as needed!

I have the  pickiest eaters on the planet…and then there’s me, the one who will eat and try anything! I have to come up with ways to impress all of our palettes. I don’t care for super plain food and they don’t care for fancy food. With that being said, this recipe is absolutely perfect for my whole family. It’s one of my favorite things to make and is full of flavor (there’s GARLIC in it!) but no weird chunks of anything (that’s what the kiddos dislike).

This cheesy pasta casserole is so delicious and makes really good leftovers. It’s super cheesy, creamy, garlicky and full of flavor. Did I mention that it’s SUPER easy to make too?! Enjoy!

Ranch Bacon Chicken Casserole

INGREDIENTS:

4 chicken breasts (cooked and cubed)
1 small box (10 oz) Rotini noodles – my box was bigger so I cooked less pasta
8-10 thin slices of Bacon cooked and chopped
4 cloves of garlic, minced
2 Tbsp flour
1 cup Milk
1 cup of Ranch Dressing (from the bottle)
3 Tbsp of butter
2 cups Mexican Cheese Blend

DIRECTIONS:

  1. Pre-heat oven to 350 degrees F
  2. Cook your chicken (I boiled mine) and then cut it into cubes
  3. Cook pasta al dente and set aside
  4. Cook bacon and chop up (I love using the microwave kind and using my hands to break it up) 12
  5. Melt butter in pan and add minced garlic (do not brown) and mix for about 1 minute in low to medium heat IMG_0475 IMG_0476
  6. Add flour and chicken to pan and mix for 1 minute

  8. Then, add bacon and cheese and mix well IMG_0481 IMG_0482 IMG_0483
  9. Pour over pasta and mix together
  10.  Pour pasta mixture into greased casserole dish (I use a 9×13) and cook in oven for 10-15 minutes until cheese is melted!

Here’s a tip –  I like to bake mine in two smaller dishes (reduced cooking time a few minutes) I like the dip best when HOT and cheesy right out of the oven.  If I cook it in two pans at different times I can put one out at the start of the party, and pull the second one out once the first one is gone. Enjoy…

  • 1 8 oz cream cheese
  • 1 cup cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1 tablespoon ranch seasoning mix
  • 2 jalapeno peppers  diced(take the seeds out) if you want it hotter 4 peppers
  • 1/3 cup cooked and crumbled bacon  (save a bit back for garnish)
  • 2 cups sour cream
  • 2 tablespoon chopped onion
  • 1 tablespoon parsley 2.jpg

Directions:

  1. Pre-heat oven to 350 degrees F
  2. Mix all the ingredients together, till well blended.
  3. Spread on the bottom of a 9×9 baking dish
  4. Top with crumbled bacon.
  5. Bake in the oven at 350 for 15-20 minutes till edges are golden brown.

Calling all you steak lovers out there! Here is a fabulous recipe to get some protein in and indulge! These bites are perfect for dinner but are even better for appetizers, parties (hello Super Bowl) or just snacks.  The sauce for these steak bites goes with it perfectly and give them a pop of flavor. Enjoy…

Filet Mignon Bites with Bernaise Sauce

(Print this recipe at the very bottom of this page)

What you need:

  • 1/2 Onion finely diced
  • 6 egg yolks
  • 2 tsp Lemon juice
  • 2 sticks Butter
  • 1 tsp Tarragon
  • 1 tsp Chervil
  • 3 tbsp White Wine
  • 3 lb Beef Tenderloin
  • 1 lb Bacon

What to do:

  1. Finely chop the onion so that it doesn’t overpower the sauce.
  2. Cook the chopped onion for 1 minute in the microwave to soften it.
  3. Place the egg yolks in a saucepan and add the lemon juice and stir until the mixture is blended.
  4. Add the first stick of butter sliced into pats and cook over very low heat stirring constantly until melted in.
  5. Then add the next stick in the same fashion continuing to stir constantly.
  6. This process takes awhile because we want the egg butter mixture to cook together.
  7. If the heat is too high or you don’t stir enough, the eggs will begin to cook on their own and the sauce will “break”. You’ll know if/when this happens because you’ll see lumps or curdles forming in your sauce.
  8. If all goes according to plan, your sauce will begin to thicken and reach the point where it begins to look like a thin pudding. You’ll see the line the spoon left after you drag it across the bottom.
  9. Take the sauce off the heat, add the onions, tarragon and chervil. and mix well.
  10. Add the wine (if you don’t have wine, you can substitute 2 tsp lemon juice and 2 tbsp water) and blend well.
  11. Cut the tenderloin into 1″ cubes.
  12. Take the bacon slices and cut each piece in thirds.
  13. Wrap each filet bite in a piece of bacon and secure with a toothpick.
  14. Heat a heavy skillet on high and sear each bite on all sides.
  15. Transfer seared pieces to broiler pan and place in 350 oven for 15 minutes.
  16. Serve filet bites with bernaise sauce.
