Talk about an easy dip recipe…this Buffalo chicken dip only takes 5 ingredients and you can put it together very quickly. I love making this using a rotisserie chicken or you could even use the cans of chicken if you’re in a big hurry. Serve this with some veggies and crackers and you’ve got a perfect appetizer!

Buffalo Chicken Dip

(Print this recipe at the very bottom of the page)

Ingredients:

  • 1 Package Cream Cheese Softened.
  • 1/2 Cup Hot Sauce, I used FRANK’S Redhot
  • 1/2 Cup Blue Cheese Dressing (you can also use Ranch Dressing)
  • 2 Large Boneless Cooked Chicken Breasts Shredded
  • 1 Cup Shredded Cheese

What to do:

  1. Preheat oven to 350.
  2. In a medium mixing bowl combine all of your ingredients.
  3. Transfer your mixture to a 1 quart baking dish
  4. Bake for 30 minutes
  5. Stir and serve with vegetables or crackers.

What you need:

  • 1 box Funfetti Cake Mix
  • 2 cup Cool Whip Lite (or regular)
  • 2 cup Vanilla Yogurt
  • Sprinkle Decorations (optional)

What to do:

  1. In a large bowl mix cake mix, Cool Whip and yogurt until blended and smooth.
  2. Chill for at least 2 hours.
  3. Transfer to serving bowl and top with additional sprinkles.
  4. Serve with vanilla wafers, graham crackers, animal crackers, etc.

Snickers Dip

What you need…

  • 15 Snickers Fun Size Bars
  • 2 tbsp Butter
  • 8 oz Cream Cheese
  • 1/2 cup Powdered Sugar
  • 1/4 cup Marshmallow Fluff
  • 1/8 Crushed Peanuts
  • 1/8 Semi Sweet Chocolate Chips

How to make this yummy treat…

  1. Beat together cream cheese, powdered sugar and marshmallow fluff in a large bowl until well mixed.
  2. Melt butter, 12 Snickers and semi sweet chips over low heat in a medium sauce pan. Stir until blended.
  3. Add Snickers mixture to cream cheese mixture and stir to combine.
  4. Transfer to serving bowl.
  5. Crush peanuts in food processor and top serving bowl.
  6. Cut remaining Snickers into bite size pieces to use as garnish on top.

Salted Caramel

INGREDIENTS

  • 1/2 cup light Corn syrup
  • 1/2 cup Sugar
  • 3 tbsp Butter
  • 1/2 cup Heavy Cream
  • 1/2 tsp Sea Salt

DIRECTIONS

  1. Place corn syrup in a medium pan and heat over medium heat.
  2. When corn syrup is heated (starting to bubble) add sugar and stir until well mixed.
  3. Let syrup cook without stirring until it turns a golden color.
  4. Remove from heat add butter and stir until blended.
  5. Slowly add cream while stirring constantly to blend.
  6. Add salt and stir until dissolved.

Copycat Montgomery Inn Barbecue Sauce
(Yields 2 pints)

INGREDIENTS:

  • 5 cup ketchup
  • 1 cup Cider Vinegar
  • 1 tsp Tarragon
  • 1 1/2 cup Sugar
  • 5 tsp Worcestershire sauce
  • 7 1/2 tsp Chili Powder
  • 1 1/2 tsp Red Pepper Flakes
  • 1 Head Garlic peeled
  • 7 medium Onions quartered
  • 1/2 cup water

DIRECTIONS:

  1. Combine all ingredients in large pot and bring to boil.
  2. Reduce heat and simmer for 1 hour.
  3. Strain and place in pint jars.
  4. Store in refrigerator.

Lemon Basil Salt

Sprinkle this yummy gourmet salt over a beautiful piece of broiled fish, in your popcorn, or on chicken to add a pop of fresh flavor. Use it in your favorite recipe in place of plain salt-substituting the same amount. Create a couple of flavors and put them in a basket with a couple kitchen utensils for a lovely gift.  In a beautiful glass jar tied off with ribbon or raffia this would make a great gift to take to your hostess at a party.

Ingredients:

  • 1 cup salt
  • 2 lemon’s
  • 6-8 Basil leaves
  • glass, airtight storage  container

 Directions:

  1. Zest both lemons. You do not have to have a fancy lemon zester tool- simply use the fine grate on your regular old cheese grater to zest.
  2. Bruise Basil leaves gently by laying them on a hard surface and tapping gently with a spoon to release their aromatic oils.
  3. In a medium sized bowl combine lemon zest and bruised Basil leaves with coarse ground kosher salt until evenly distributed.
  4. Place in an airtight container and store in a cool dark place. Store for up to 6 months.
  5. Allow salt to absorb flavors for 2-3 weeks before use.

Lemon Flavored Sugar

This is a recipe that can take you through all the seasons- use it to sweeten hot or iced tea, sprinkle on top of Christmas cookies or as a replacement for plain sugar in your favorite recipes. A great, not to mention very inexpensive gift to include in a basket or as a hostess gift. Put a dish of this out on your holiday bar for rimming adult beverages.  Place a pretty jar in a basket with a cookbook and nice tea towel for a cute gift idea too!

Ingredients:

  • 1 cup of granulated sugar
  • 1 lemon
  • Airtight container for storing
  • Zest your whole lemon

Directions:

  1. Spread lemon zest onto a foil lined baking sheet and bake in a 200 oven until completely dry.
  2. Allow your lemon zest to cool and then combine in a medium sized bowl with sugar, stir well to distribute evenly.
  3. Place in an airtight container. Allow lemon to sit in sugar for 2-3 weeks to fully absorb flavors before using.

Cheesy Au Gratin Potatoes for a Perfect Fall Meal

Cheesy Au Gratin Potatoes are the perfect side dish to a family meal. Finely sliced potatoes and onions are blanketed in a creamy cheese sauce then baked to perfection for a dish that the whole family will love.  I can never quite seem to make enough Cheesy Au Gratin Potatoes and the pan is empty in minutes when it gets to the table!

Easy Ingredients for Cheesy Au Gratin Potatoes

Cheesy Au Gratin Potatoes have a few ingredients, and one of the great things about this recipe is that you can make them gluten-free!  With so many people looking for gluten-free recipes, it’s nice to find some comfortable favorites that fit the bill.  I use tapioca flour instead of all purpose flour in Cheesy Au Gratin Potatoes for a smooth cheese sauce.  You can use a variety of cheeses, but I find the best flavor with an extra sharp cheddar or smoked cheddar.  When I don’t have shredded I slice the block thinly and it works just as well as shredded.  I’ve found that round white potatoes work best and have a creamy texture in the finished Cheesy Au Gratin Potatoes.  Plus, they are pretty inexpensive, making this dish even more attractive.

Cheesy Au Gratin Potatoes on a Buffet

Cheesy Au Gratin Potatoes are an easy dish to make for a buffet or gathering, especially with a slow cooker.  Follow the recipe as above, layering in a buttered crock of your slow cooker.  Turn to low and let cook 6-7 hours, until potatoes are tender.  You’ll have a fantastic pot of Cheesy Au Gratin Potatoes that everyone can enjoy.

Ingredients

  • 4 large round potatoes, sliced thin (peeled, if desired)
  • 2 onions, sliced thin
  • ½ lb ham, diced
  • salt
  • pepper
  • 3 T butter
  • 3 T tapioca or all purpose flour
  • ½ t salt
  • 2 C milk
  • 2 C shredded extra sharp cheddar cheese

Instructions

  1. Heat oven to 425 degrees F.
  2. Butter a 2 quart casserole dish. Layer the potatoes, onions, and ham, lightly salting and peppering the potatoes of each layer. Set aside.
  3. in a medium saucepan, melt 3 T butter over medium heat.
  4. When melted, add the tapioca flour and stir until combined. Cook 1 minute.
  5. Add the milk slowly, stirring constantly. Allow to come to a slight simmer.
  6. Add the cheese slowly in small batches, stirring constantly.
  7. When the cheese is completely melted, pour over potatoes and onions in casserole, moving layers slightly to ensure the sauce gets to the bottom of the pan.
  8. Cover and bake in heated oven for an hour, or until potatoes are tender when pierced with a fork.
  9. Serve hot.

I was introduced to Noodles & Company on a vacation.  I always like to try out places that I don’t have near home, to get a different flavor that I might not be able to find.  Noodles & Company was one such place.  They have a wide variety of noodle dishes, from Asian to American, and of course Italian.  One of their stand-out dishes is their Spaghetti and Meatballs.  Tender beef and sausage meatballs simmered in a fresh tomato sauce that is ladled over freshly cooked noodles is a meal fit for a king.  Now you can make Copycat Noodles & Company Spaghetti and Meatballs at home in less than an hour from scratch!

Ingredient Tips for Copycat Noodles & Company Spaghetti and Meatballs

The recipe for Copycat Noodles & Company Spaghetti and Meatballs calls for white wine.  Choose a wine that is dry for best results.  Sweet wines will add an odd sweetness to the resulting sauce as well as fruity flavors that might not be suited to the tomatoes.  Use an Italian sausage that you enjoy, whether it be hot or mild.  If you can only get it in links, simply slice the skin on the links and remove the meat.  I doubled the recipe for meatballs when I made it, as my family loves meatball subs from the leftovers, but the recipe below is written for a single batch.

  • 1/2 teaspoon ground black pepper
  • 2 teaspoons Italian seasoning
  • 1 medium onion, finely diced
  • 1 egg
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons half and half
  • Pasta Sauce:
  • 1/4 cup extra-virgin olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon sugar
  • ¼ cup white wine
  • 1 (32-oz.) can of crushed tomatoes
  • 1 (32-oz.) can of tomato sauce
  • 2 bay leaves
  • 1 teaspoons crushed red pepper

Instructions

  1. To make the meatballs, heat oven on the broiler setting.
  2. In a large bowl, mix all the ingredients well.
  3. Oil a baking sheet with olive oil.
  4. Roll the meat mixture into 1 ½ inch balls and place on the baking sheet.
  5. Broil 8 to 10 minutes, until browned. Turn the meatballs, and broil another 8 to 10 minutes, until all of the meatballs are browned.
  6. Remove and place in sauce.
  7. To make the sauce, place the olive oil in a large saucepan and heat over medium heat.
  8. Saute the onion and garlic until onion is clear, about 3 minutes.
  9. Add the salt, pepper, and sugar, stirring well.
  10. Add the white wine and deglaze the pan.
  11. Stir in the tomatoes (undrained), bay leaves, and red pepper.
  12. Add meatballs.
  13. Simmer 30-40 minutes, until meatballs are thoroughly cooked.
  14. Serve over spaghetti or other pasta.

There are so many things you can do with leftover Copycat Noodles & Company Spaghetti and Meatballs.  Grease a casserole dish, toss in the pasta, top with sauce and meatballs and cover with mozzarella cheese, then bake for a delicious one-dish dinner.  Or, like my family, buy some French bread and make wonderful meatball subs with warmed up meatballs, sauce, and provolone cheese.

Meatballs:

½ lb Italian sausage

1 lb ground beef

1 egg

3 medium cloves garlic, minced

1 teaspoon salt

1/2 teaspoon ground black pepper

2 teaspoons Italian seasoning

1 medium onion, finely diced

1 egg

1/3 cup grated Parmesan cheese

2 tablespoons half and half

 

Pasta Sauce:

1/4 cup extra-virgin olive oil

1 medium onion, finely chopped

Roll the meat mixture into 1 ½ inch balls and place on the baking sheet.

Broil 8 to 10 minutes, until browned.  Turn the meatballs, and broil another 8 to 10 minutes, until all of the meatballs are browned.

Remove and place in sauce.

Three Ingredient Pasta Sauce has Tons of Flavor

Pasta sauce can be as complicated or as simple as you want to make it.  You don’t need a lot of ingredients to make a flavorful, delicious sauce that you’d be proud to serve to company.  I recently needed a sauce for a side dish of pasta, and realized that I had forgotten to purchase some at the store.  I checked my pantry, and sure enough, I had a jar of home canned tomatoes.  Knowing I had garlic and basil in the kitchen, I was all set for a pot of Three Ingredient Pasta Sauce.  My dinner was sure to be flavorful and beautiful!

What Makes Three Ingredient Pasta Sauce Amazing

Fresh ingredients, like basil, give a phenomenal flavor to Three Ingredient Pasta Sauce with very little effort, or cost.  Basil is an easy plant to grow in an herb garden or pot in your home, and it has a great payback: fresh flavor any time you like.  I plant several plants of basil every year, as I love it in pesto, pasta sauce, and on pizza, just to name a few of it’s uses.  Garlic is also a staple in my kitchen.  It’s a fantastic flavoring whether you use it fresh, dried, or pre-minced in a jar.  I keep all three in my kitchen for various uses, and the pre-minced came in really handy in this recipe.  Just measure and you are all set!  The tomatoes I used I canned myself.  I try to can a bushel or two every summer for use later in the year.  I can get about 20 quarts from a bushel, which I pay $10 for.  You can’t get much better than that.  In total, the pasta sauce cost less than $.75, and that was enough to feed 4.  Add in a pound of pasta for $1 and you’ve fed your family of four dinner for $1.75 with Three Ingredient Pasta Sauce.  Not bad!

Three Ingredient Pasta Sauce is a fast meal to make on weeknights when you are rushed for time, but still want to make something special.  It takes about the same amount of time to boil water and cook the pasta as it does to simmer the Three Ingredient Pasta Sauce.  That makes it so much easier to make dinner, when everything is ready at the same time!

 

1 quart (or 1 large can) tomatoes, whole, diced, or crushed

1 handful fresh basil, chopped roughly

2-3 T minced garlic

 

Place all ingredients in a saucepan.

Simmer for 30 minutes, stirring occasionally.

Serve over hot pasta.

  • 2 bars of Hershey's chocolate

Instructions

  1. Mix together chocolate chips and cream cheese frosting
  2. Add peanut butter and mix well (this is optional depending on if you want a peanut butter taste)
  3. Cut Hershey chocolate bar into piece and fold 3/4 of the pieces into frosting
  4. Put dip in fridge for an hour or so until cold
  5. Stick the remaining pieces of the Hershey's bar on the top so sticking out.
  6. Enjoy!

Fresh Basil Pesto is the simplest pasta topping I’ve ever made. With fresh ingredients like crisp green basil, Romano cheese, and extra virgin olive oil, you’ll have a bright flavor in mere minutes. It takes longer to cook the pasta that it does making this delicious Fresh Basil Pesto! The sauce is the main reason I always growing basil in my garden. With a trip to a local farmers market, though, you’ll be ready to make fresh basil pesto too!

  • 2 C fresh basil leaves, washed, dried, and stems removed
  • 1/2 C grated Italian cheese (Romano, Asiago, or Parmesan)

On those rare occasions I have leftover Fresh Basil Pesto, I grab an empty ice cube tray, fill it with pesto, and freeze it. Dress Up Your Simple Salad with Homemade Italian Salad Dressing

I love a simple salad in the summer, something I can make quickly, but that is still delicious and healthy.  There is a restaurant that I love to frequent that has such a salad, and it was time to bring it home to my kitchen.  Their Italian Salad Dressing, the house specialty, is what makes this salad one of the very best I’ve ever had.  Fantastic greens blanket whatever other veggies you love.  For me, it’s fresh tomatoes and cucumbers.  Especially when they are out of my garden!  Whatever your favorite salad, this dressing is amazing on it.  Now that I have a bottle of dressing in the fridge, I need to make a Cobb salad to put it on!

What Goes into Italian Salad Dressing?

Lots of people have their own recipes for Italian Salad Dressing.  My family has one too.  What is common in most of them is olive oil and vinegar.  Quality counts in this recipe, and since you aren’t cooking the oil, a quality extra virgin olive oil is perfect for this Italian Salad Dressing.  I love red wine vinegar in most of my Italian Salad Dressing recipes, but for this particular one, apple cider vinegar works amazingly well.  The flavor in the vinegar adds a lot of depth and a bit of sweetness to this Italian Salad Dressing.  The other thing that makes this a stand out when it comes to Italian Salad Dressing is anchovy paste.  The original recipe called for filets, but I find the paste works great because with a few shakes, it melts right into the dressing.  It doesn’t give a harsh fishy taste either, as you might expect.  It’s just another layer of flavor in a delicious Italian Salad Dressing.

I love making Italian Salad Dressing in a jar that I’ve kept out of the recycle bin, or even canning jars.  As long as it has a lid, it’s fair game.  I pour in all the ingredients, give it a few good shakes, and add a ribbon.  Poof!  The perfect summer gift for anyone on your list!

Simple Times, Simple Chocolate Syrup Recipe

I remember as a young girl getting a sundae with Hershey’s syrup on it from my mom.  Those were easy, wonderful days as a kid.  You can still get the syrup in a can at the grocery store, but I found I love making it myself at home.  This Decadent Chocolate Syrup recipe is easy to make, and makes a great addition to anything that you would add chocolate syrup to, including coffee, milk, angel food cake, or a bowl of strawberries!  Personally, I love Decadent Chocolate Syrup drizzled over fruited muffins, like blueberry streusel.  It makes a fantastic topping for ice cream as well.

I love making things at home that I can revamp with more natural ingredients.  Decadent Chocolate Syrup is one of those things.  Instead of high fructose corn syrup, I use natural raw sugar or sometimes regular white sugar.  A great natural cocoa powder is key to the best flavor.  I’ve always used Hershey’s Cocoa Powder in my Decadent Chocolate Syrup recipe.  It provides a rich flavor that is synonymous with chocolate syrup.

My  mom always made chocolate milk with chocolate syrup from a can she kept in the refrigerator.  I started that with my children, with Decadent Chocolate Syrup that I made from scratch.  They love it, and it’s a great, natural way to get them to drink milk when they really want something a little sweet.  I think it even tastes better than what mom used to make.  But don’t tell her that!

 

1 1/2 C water

1 3/4 C raw sugar (or 1 1/2 C white sugar)

1 C cocoa powder

1 T vanilla

dash of salt

 

Place the water, sugar, and cocoa powder in a heavy saucepan.

Heat over medium heat and simmer until syrup starts to thicken, stirring constantly.

Remove from heat; add salt and vanilla.  Stir well.

Serve warm, or cool and store in a glass container in the refrigerator.

 

Next time you need chocolate syrup for a recipe or to top some ice cream, make some Decadent Chocolate Syrup!

Ingredients

  • 1 lb ground beef
  • 1/2 C butter
  • 1 8oz brick cream cheese
  • 1 t flour
  • 1 pint whipping cream

Instructions

Easy Creamy Hollandaise is Hard to Make!

I grew up with a grandfather that was a gourmet cook.  He made just about everything.  But very rarely did he attempt Hollandaise Sauce.  I always thought it was well beyond my basic abilities.  Until I tried it.  Now, I’m hooked.  The basic skill is simple: constantly whisking.  Even my kids can do that!  Don’t shy away from this Easy Creamy Hollandaise Sauce recipe.  The results are amazing and creamy, and sure to become a favorite sauce.

What is Hollandaise Sauce Anyways?

Hollandaise Sauce is the delicious combination of fresh egg yolks, butter, and lemon juice.  Because egg yolks can be touchy, to keep them from curdling, heating them gently is a must.  I used a glass Pyrex bowl over a pot of simmering water.  A boil is too hot, but simmering is perfect for Hollandaise Sauce.

Once you have your Easy Creamy Hollandaise Sauce made, it’s a perfect addition to compliment vegetables, or in Eggs Benedict, the wonderful combination of a poached egg and Canadian bacon over a lightly toasted English muffin.

Ingredients

  • Cucumber Wasabi Ranch Dip:
  • 1 C Hidden Valley Ranch dressing
  • 1/2 C cucumber, seeded and diced small
  • 2 t wasabi paste
  • 1/4 t salt
  • 2 t prepared horseradish
  • 1 t apple cider vinegar
  • Beans:
  • 1 32 oz box chicken or vegetable stock
  • 12 oz fresh green beans, cleaned and ends snapped
  • 2 C flour
  • 2 eggs
  • 2 C milk
  • 2 C breadcrumbs
  • 1 t salt
  • 1/2 t garlic powder
  • 1 t onion powder
  • peanut oil for frying

Instructions

  1. Place all the ingredients for the dip in a blender and pulse until smooth. Refrigerate.
  2. Heat the chicken stock to boiling and simmer the beans for 10 minutes. Remove to a bowl of ice water to stop the cooking process.
  3. Place the flour in a shallow bowl. In another shallow bowl, whip the eggs and milk together. In a third shallow bowl, mix the breadcrumbs, salt, garlic and onion powders.
  4. Heat the oil in a deep, heavy bottom stock pot over medium high heat.
  5. Shake the water off a handful of beans, leaving them damp. Toss in the flour, turning to coat.
  6. Transfer to the egg and milk mixture, coating well.
  7. Dredge through the breadcrumbs to coat well and gently place into the oil. Fry until golden brown.
  8. Remove with a slotted spoon to a paper towel covered plate to drain.
  9. Continue with the rest of the beans.
  10. Serve with the dipping sauce.

Homemade Shake n Bake is Easy!

I love to remake products that are on the market with healthier options, and Homemade Shake n Bake is no exception.  A few simple ingredients makes for an amazing coating that you can use on everything, from chicken to pork, to even chicken fried steak, if you like.  You can bake it or fry it too! I started making Homemade Shake n Bake when I realized that I didn’t have my main ingredient for dinner: prepackaged Shake n Bake.  There’s nothing as frustrating as wanting to make a nice dinner of “fried” chicken and finding the empty box.  So, I grabbed the box of panko and started to figure out how to make this on my own.

What Makes Homemade Shake n Bake Tasty

Paprika adds a bit of color and smokiness to the finished meat that is delectable.  Celery salt and parsley add and earthiness, while sage gives the flavor a homey, comfortable taste.  Minced onion and garlic powder brighten the undertones in Homemade Shake n Bake and blend everything together into a fantastic concoction that will make your meat crispy and crunchy!  You could even use Homemade Shake n Bake on onion rings for a great addition to your meal! If you like a softer crumb, more “original recipe”, use regular breadcrumbs instead of the panko in Homemade Shake n Bake.

Ingredients

  • 1 box Panko bread crumbs
  • 1 T paprika
  • 1 T celery salt
  • 1 t salt
  • 1 t ground black pepper
  • 1/2 t garlic powder
  • 1 t minced onion
  • 1/2 t ground sage

Instructions

  1. In a gallon sized plastic zippy bag, add all ingredients and shake well to mix.
  2. To use:
  3. Heat oven to 400 degrees F or peanut oil to medium-high in a heavy stockpot.
  4. Coat meat with 1-2 T oil.
  5. Measure 1 C of Homemade Shake n Bake into another zippy bag. Place the meat in with it and close the top. Give it a good shake or two to coat the meat.
  6. Place on a plate or baking sheet and continue until all the meat is coated.
  7. If baking, place on an ungreased baking sheet and bake until the thickest part of the meat is cooked through and no longer pink.
  8. If frying, place enough meat in the hot oil, carefully, to cover the bottom of the pan in a single layer. Let cook until golden brown and cooked through, time will vary depending on the meat and thickness. Remove to a paper towel covered plate or baking sheet. Continue until all the meat is cooked through.

The great thing about this recipe is you can make a HUGE batch of it and store it for later use.  I will double or triple my batch and seal it in a plastic container.  That way I always have some Homemade Shake n Bake on hand for quick and easy meals.  What could be simpler?

Ingredients

  • 2 8 oz blocks cream cheese
  • 2 jars pizza sauce
  • 2 pkgs Hormel turkey pepperoni
  • 8 oz mozzerella
  • 1 C parmesan
  • 1 t oregano
  • 1 t parsley
  • 1 loaf crusty bread, cubed
  • 1 pkg Italian Sausage links

Instructions

  1. Chop 1/2 of one of the packages of turkey pepperoni.
  2. Place the cream cheese, chopped pepperoni, pizza sauce, cheeses, oregano and parsley into a Crock-Pot. Turn on low and let heat, stirring occasionally.
  3. Heat oven to 425 degrees F.
  4. Place Italian sausage on a baking tray and bake for about 20-25 minutes, until cooked through. Cut each link into 8 pieces.
  5. On a separate baking sheet, spread out pepperoni in a single layer. Bake until crisp, about 5 minutes. Remove from sheet into a bowl.
  6. Once the dip is hot and bubbling, serve with the bread, sausage, and pepperoni chips.

I was an adult before I had tried a guacamole recipe.  It always looked weird to me.  After I tried it though, I found I love it.  My kids were eating avocados at 8 months old, and since they have found they enjoy guacamole as a great snack as well.  Here’s our easy recipe for some great guacamole, fantastic as a simple dip or a topping on many dishes.

Ingredients

  • 3 Avocados
  • 1/4 C tomatoes, diced
  • 1 T Prepared horseradish
  • 1 lime, juiced
  • Salt, to taste
  • Garlic powder, to taste

Instructions

  1. Slice open the avocados and scoop out the flesh, discarding the seeds. Mash with a fork.
  2. Add the lime juice and mix well.
  3. Toss in the tomatoes, horseradish, salt and garlic powder. Mix well. Adjust the salt and garlic powder to your taste.
  4. Serve with tortilla chips, pita crisps, or as a topping on your favorite foods.

Have you ever gone to a restaurant and had a fabulous artichoke spinach dip and thought, this can’t be hard to make?  Well, you were right.  This dip is great for a crowd, and I love to bake it in my smaller Crock-Pot to keep it warm.  Serve it with some pita or tortilla chips, or your favorite veggies.

Artichoke Spinach Dip in the Crock-Pot Recipe

Ingredients

  • 2 cans artichoke hearts, cut into small pieces
  • 3 C fresh spinach, chopped
  • 2 8oz pkgs cream cheese, softened
  • 1 C sour cream
  • 1 C parmesan cheese, grated
  • 1/2 t red pepper flakes
  • 1 t garlic, chopped

Instructions

  1. Mix the cream cheese and sour cream until smooth.
  2. Add the parmesan, red pepper, and garlic, mixing well.
  3. Add the artichoke hearts and spinach, mixing until well coated.
  4. Pour into a lightly greased 1.5 qt crockpot. Bake at 375 degrees F until bubbly and hot throughout.
  5. Place in the crockpot warmer on low. Serve and enjoy!

I have to tell all of you….this is the BEST pasta sauce you will ever have (in my opinion 😉 ). It is SO incredibly delicious and I was raised eating it. My Mom was the one who taught me how to create this wonderful sauce and I make it all the time. I don’t know about you but I don’t like canned red sauce….at all. I don’t like pizza sauce that much either. Well, this sauce is much different and I’m telling you, you HAVE to try this at least once.

Your house will smell SO yummy too….it’s AMAZING~

Can you tell this is like my favorite meal to make…..ever. 😛

P.S. – this is also great because it fascinates all taste buds (picky and not picky ones)…anyone will eat it, including the kiddos.

Here ya go:

Best Homemade Garlic Pasta Sauce Ever!

Serves 3-4

Ingredients:

Garlic – about 10-12 cloves

3 (15 oz cans) of Hunts tomato sauce (This is super important….in my opinion, it needs to be Hunts. I have tried other brands, organic included and although it still turns out fantastic, it doesn’t taste the same…so Hunts it is!).

1 bag of pasta (you could do more if your family eats a lot of pasta) we used Whole Wheat organic and this sauce is so yummy it masks the funky taste of the whole wheat. 😉

Olive Oil

Cumin

Oregano

Parsley flakes

Directions:

1 – Add about 1/4 inch olive oil to the bottom of a small to medium pan (sorry, I never measure this but I’d say it’s a little less than 1 cup)

2 – Heat olive oil

2 – Add garlic to olive oil and let simmer for about 5-10 minutes so you get the flavor of the garlic (I usually smash them a little to release the juices)

3 – Do NOT burn the garlic, it will turn a little brown but you don’t want to burn it.

4 – Remove the “cooked” garlic and throw away….don’t worry, the flavor will still be there, in the olive oil

5 – Add the 3 cans of tomato sauce (remember, Hunts!)

6 – Again, I’m sorry I do not measure the seasoning but it’s pretty easy…check out the image below to see about how much. What’s great is you can easily add more about 10 minutes after it’s been cooking…just taste it and see what you think.

7 – Put it on medium to low heat and let simmer.

8 – Cook your pasta now while your sauce is marinating with all the flavors.

9 – When the pasta is done, your sauce should be done as well…taste test and enjoy!
