Homemade Pumpkin Puree

As we are in the midst of fall, pumpkin baking is getting more and more common and popular. The one ingredient all those recipes call for is pumpkin puree. Usually, canned pumpkin puree can be purchased from the store and used in baking and cooking recipes. However, to save some money you can make your own pumpkin puree at home with just a pumpkin, salt and your oven! Check out the instructions below for making homemade pumpkin puree:

Ingredients Needed:

  • Whole Pumpkin
  • Salt

Instructions:

  1. Wash the whole pumpkin and remove the stem. Cut the pumpkin in half and scrape out all the pumpkin insides and seeds.
  2. Once the pumpkin is clean on the inside, cut it into cubes. Next, fill a large pot with about 1″ of water and warm over medium heat.
  3. Add the pumpkin cubes and a dash two of salt to the water. Cook the pumpkin until water is simmering and reduce the heat to medium low.
  4. Using a pot lid, place it over top of the pumpkin and let the pumpkin cubes steam under the lid for about 15 minutes or until soft.
  5. Once the texture is soft, remove pumpkin from heat, drain the water and let the cubes cool till workable.
  6. Once the pumpkin cubes have cooled, scrap the meat of the pumpkin from the shell and place in a food processor or blender. Blend till smooth.
  7. Lastly, once your pumpkin has turned to a smooth texture, return it to the pot and cook off any remaining moisture.
  8. Remove from heat, let cool and use in any of your favorite recipes or freeze it to save it for when you need it!

Calling all you fans of peaches and cream! I love peaches and I love cream so this is the perfect dessert recipe. What I really love about this recipe is how easy it is since it uses peach pie filling, cream cheese to make the cream and just a few other ingredients. Then, you bake it so the peaches and cream melt in your mouth and there is a crispy edge kind of like a peach pie. Yummy! Enjoy…

Peaches and Cream Bars

INGREDIENTS:

  • 1 box White Cake Mix
  • 1 cup softened Butter
  • 2 Eggs
  • 21 oz can Peach Pie filling
  • 8 oz Cream Cheese
  • 1/2 cup Sugar
  • 2 tsp Vanilla 3

DIRECTIONS:

  1. Preheat oven to 350.
  2. Grease a 9×9″ pan and set aside.
  3. Mix together cake mix, 1 egg and butter until it forms a uniform crumbly mixture.
  4. Set aside 1 cup of this mixture to use as a topping later. 4
  5. Press the remaining crumb mixture into prepared pan. 5
  6. Bake for 12 minutes.
  7. Spread peaches on top of the baked crust 6
  8. Cream together cream cheese, remaining egg, sugar and vanilla until creamy.
  9. Spread cream cheese mixture over peaches. 7
  10. Sprinkle the cup of crumbs set aside earlier over the top.8
  11. Bake for 30-34 minutes or until edges of top begin to lightly brown. 9
  12. Allow to cool then refrigerate before serving.

It’s so easy to throw together a pie, or even some apple pie crescent rolls, a quick dessert or a delicious topping to ice cream when you have this pie filling made and ready! Like I said above, we love using this on our ice cream and stuffed into crescent rolls (you could even add some cream cheese to make it more decadent)! Enjoy!

Apple Pie Filling

INGREDIENTS

  • 4 cup sliced, peeled Apples
  • 2 tbsp Lemon Juice
  • 1/2 cup Sugar
  • 3 tbsp Cornstarh
  • 1/4 tsp Nutmeg
  • 1 tsp Cinnamon
  • 1 cup warm Water 3

DIRECTIONS

  1. Place apple slices in bowl. 4
  2. Add water and lemon juice and toss to prevent browning.
  3. In a saucepan, whisk together cornstarch and water until blended. 
  4. Add cinnamon, sugar and nutmeg. Whisk until blended. 5
  5. Add contents of apple slice bowl to saucepan and cook over low heat until apples are tender. 6
  6. Allow to cool before putting in crust.

Onion Dip is huge around here! We use is for Birthday parties, get-togethers, holidays, BBQs and more! What I love about this next recipe is it’s a homemade version of Onion Dip which makes the flavors so much tastier and it’s very easy to make. I definitely recommend trying this out if you’re a fan of onion dip. We like to dip chips in it (Lays potato chips are delicious with it) and any kind of veggie is really good too. Enjoy!

Onion Dip from Scratch

INGREDIENTS:

  • 2 tbsp Olive Oil
  • 2 large Onions, diced 2
  • 1 tbsp minced Garlic
  • 16 oz Sour Cream
  • 2 tsp Worcestershire Sauce
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Black Pepper
  • 1/4 tsp Kosher or Sea Salt 5

DIRECTIONS:

  1. Add olive oil to pan over medium heat.
  2. Add onions, garlic and Worcestershire and saute until caramelized (15-20 minutes). 3
  3. Remove from heat and allow to cool.
  4. Combine the remaining ingredients, and add the cooled onion mixture. 4
  5. Refrigerate before serving.

When I think of Thanksgiving I think of Turkey and sides….by the time I think about dessert I just don’t have the energy. I’m lucky enough to get the entire meal on the table without burning something! Often times after dinner we play Euchre or Yahtzee. This gives our bellies time to digest and then dig into dessert a few hours later!

It’s this time that I enjoy the most with my family. We create memories, celebrate our traditions and are able to put down the electronics and spend some much needed time together. Did you know that you can easily make your own peanut butter from home?! It’s quick, easy and much healthier! If you’ve ever read the back of a peanut butter jar, you will see it’s full of stuff you can’t pronounce. As you see below the only ingredient in this peanut butter in peanuts! Enjoy!

Homemade Peanut Butter

INGREDIENTS:

  • Peanuts
  • Honey (optional)
  • Salt (optional) 2

DIRECTIONS:

  1. Place in food processor and run for about a minute and scrape down sides if necessary. 3
  2. Then process for another 3-4 minutes or until peanut butter has reached desired consistency.  4
  3. If using salted peanuts, you do not need to add any extra salt. 6
  4. You can add honey if you want a little extra sweetness. If so, add about 1 teaspoon per cup of peanuts.
  5. 1 cup of peanuts yields a little over 1/2 cup of peanut butter. 8

Crock pot recipes are a big hit around here….so simple and so delicious with minimal clean up. Betchya didn’t know you could make meatballs in the crock pot! This next recipe is a delicious meatball crock pot recipe that is pretty easy and quick to make. You will have to form the meatballs before cooking in the crock pot but that is pretty easy. These are great as a snack, appetizer or of course with spaghetti! 😉 Enjoy…

Crock Pot Italian Meatballs

INGREDIENTS:

  • 3 lb Ground Beef
  • 8 slices White Bread
  • 1/3 cup Milk
  • 1 tbsp Olive Oil
  • 1 medium Onion Finely Diced
  • 1 tbsp minced Garlic
  • 1/3 cup Grated Parmesan
  • 2 tsp Oregano
  • 4 tsp Basil
  • 1 Egg
  • 48 oz Spaghetti Sauce (homemade or jar) 2

DIRECTIONS:

  1. Tear bread into small pieces and place in a large bowl. 3
  2. Add milk and toss to absorb milk, let soak for 5 minutes.
  3. Drain any excess milk.
  4. Whisk egg and add to bread.
  5. Add onion, garlic, oregano, basil and parmesan and mix well. 4
  6. Crumble ground beef into mixture.
  7. Mix with your hands to endure everything is well blended and form into 2″ meatballs. 5
  8. Heat olive oil in a skillet and brown meatballs on all sides 5 at a time. 6
  9. Transfer browned meatballs to slow cooker.
  10. Add sauce and cook on High for 4 hours or low for 8 hours. 7

These aren’t just deviled eggs with bacon….they are even better than that! This bacon deviled eggs recipe is the perfect way to make the deviled egg mixture (I use sweet pickle relish which I haven’t really seen but trust me, you need to try it)! These are perfect for appetizers, BBQ’s, parties and get-togethers. Enjoy this simple recipe!

Bacon Deviled Eggs

INGREDIENTS:

  • 6 Boiled Eggs 2
  • 2 slices Bacon fried
  • 1/4 cup Mayonnaise
  • 1 tbsp Sweet Pickle Relish
  • 1 tsp Mustard
  • Salt and pepper, for taste
  • Paprika to sprinkle as garnish 3

DIRECTIONS:

  1. Cut fried bacon into 12 small pieces. 4
  2. Cut eggs in half lengthwise.
  3. Remove yolks and place in a bowl.
  4. Mash yolks with a fork and stir in mayonnaise, pickle relish, and mustard. 5
  5. Salt and pepper, to taste.
  6. Mix until consistency is smooth.
  7. Transfer mixture to zippered bag and clip corner for piping.
  8. Pipe mixture into cooked egg whites evenly.
  9. Garnish with paprika and bacon pieces.
  10. Store covered in refrigerator.

  • 1 lb Lean Ground Pork
  • 1 small Red Onion
  • 2 tsp Minced Garlic
  • 1/4-1/2 cup chopped Bell Peppers (optional)
  • 1/4 tsp Crushed Red Pepper Flakes
  • 1/2 tsp Salt
  • 1/2 tsp Ground Black Pepper
  • 1 cup Bread Crumbs
  • 1 beaten Egg
  • 2 tsp chopped Parsley 3

DIRECTIONS:

  1. Preheat oven to 350.
  2. Split tomatoes through center and scoop out centers into a bowl. 4
  3. Place hollowed tomatoes into a baking pan and set aside.
  4. Chop tomato centers.
  5. Peel and finely dice onion. 5
  6. Place a little olive oil in a skillet and begin to cook pork.
  7. Add diced onion, minced garlic, salt, black pepper, and red pepper flakes.
  8. Cook and stir until meat is no longer pink.
  9. Add bell peppers and diced tomato centers and cook for 2 more minutes. 6
  10. Remove from heat.
  11. Add beaten egg and bread crumbs mixing well.
  12. Fill tomatoes with skillet contents. 7

If you ever want to make your own biscuits and gravy then I highly recommend this recipe. This homemade biscuit recipe is a staple in our household because I run to it anytime I want a delicious, comforting biscuit. We love eating these with pasta, chicken, crock pot meals….they are even great for Strawberry Shortcake or other dessert recipes. Enjoy!

Buttermilk Biscuits

2

Recipes:

4 C  flour, self rising
1 TBSP baling powder
1 TBSP sugar
3/4 C shortening
2 C buttermilk

Directions:

-Preheat oven to 400 degrees.
-Line a cookie sheet with parchment paper.
-Sift four, baking powder, salt and sugar.
-Make sure all dry ingredients are well blended in a bowl.
-Add the shortening to the dry ingredients.
-Using your fingers work the shortening  thoroughly into the dry ingredients.
-Pour the buttermilk into the bowl, stir until all ingredients are well blended.
-Flour a wooden cutting board.
-Roll out the biscuit batter onto the floured board.
-Using a roller pin…roll out the batter to a consistent thickness.
-Using a round cookie cutter, cut out the biscuits.
-Place them on the cookie sheet leaving space between the biscuits.
-Bake at 400 degrees for 12-14 minutes or a light golden brown.
-Cool on a wire rack or EAT them hot.

It’s even good on scones, bagels, pancakes…you can really use it for so many things. Plus, this recipe is really easy to make and doesn’t require many ingredients. You will just need butter, honey and blackberries (of course you can change the blackberries to a different fruit if you want). Enjoy!

  • 1/2 lb softened Butter
  • 1/4 cup Honey
  • 1/4 cup Blackberries 3

  1. Whip butter and honey until fluffy.

This is perfect to make and store in a mason jar or container with a lid. That way, next time you go to make chocolate chip cookies, you have everything you need. 😉

Who doesn’t love Olive Garden’s breadsticks…right?! I love making these at home with my other copycat Olive Garden recipes. These breadsticks taste just like the real thing but what I love the most is that you can cook them a little less to make them softer. I love soft bread but sometimes Olive Garden overcooks them so I like to control that myself. I promise, you will love these if you try them. Enjoy!

Copycat Olive Garden Breadsticks

INGREDIENTS:

  • 1 1/2 cup warm Water
  • 1 tbsp Sugar
  • 1 tbsp Yeast
  • 2 tbsp Vegetable Oil
  • 1 1/2 tsp Salt
  • 4 cup Flour
  • 4 tbsp melted Butter
  • 1 tsp Garlic Powder
  • 2 tsp Kosher Salt  3

DIRECTIONS:

  1. Combine oil, water, sugar, salt and yeast in bowl of mixer. 4
  2. Leave sitting for 10 minutes to allow yeast to bloom.
  3. Gradually add flour while mixing on low until the dough forms a ball.
  4. Spray a bowl with non stick spray and transfer dough to bowl. 5
  5. Cover with plastic wrap or a towel and place in a warm place to allow dough to double (about 1 hour).
  6. Grease baking sheets.
  7. Turn out dough on a floured surface.
  8. Roll out dough into a large rectangle.
  9. Cut in half, and then cut into 1″ thick strips.
  10. Roll and shape each strip into roughly 1′ x 8″ sticks. 6
  11. Place on prepared sheets about 2″ apart.
  12. Cover and place in a warm spot for 45 minutes or until doubled in size.
  13. Preheat oven to 350.
  14. Stir garlic powder into melted butter.
  15. Brush breadsticks with butter and sprinkle with kosher salt. 7
  16. Bake for 12 to 15 minutes or until golden brown.

  • 2 can Pillsbury Grands Biscuits
  • Jalapeno Slices
  • 1 stick Butter
  • 1 tbsp Garlic Powder
  • 1 tbsp Oregano
  • 8 oz Cheddar Cheese 2

DIRECTIONS:

  1. Melt butter in microwave.
  2. Stir in garlic and oregano.
  3. Cut each Grand into eight pieces (if using regular biscuits, cut each into 4). 3
  4. Dip each piece in butter mixture and place in muffin tin.
  5. After you put 3-4 pieces in a hole add a jalapeno slice and cheese.
  6. Then add 3-4 more and add another jalapeno and more cheese. 4

Veggie Pizza Bites

INGREDIENTS:

  • 2 cans Refrigerated Crescent Rolls
  • 8 oz softened Cream Cheese
  • 16 oz Sour Cream
  • 1 packet (1/3 cup) dry Ranch Dressing mix (I make my own, see the recipe here)
  • 1/2 cup Broccoli florets
  • 1/3 cup Cucumber slices (cut in quarters)
  • 8 chopped Cherry Tomatoes
  • 1/4 cup shredded Carrots  43

DIRECTIONS:

  1. Heat oven to 375.
  2. Unroll both cans and press dough into bottom and sides of ungreased raised edge baking sheet or jelly roll pan.
  3. Bake 10-15 minutes until lightly browned. 5
  4. Cool completely.
  5. Mix together cream cheese, sour cream and dressing mix until blended.
  6. Spread mixture over crust.
  7. Decorate with vegetables. 7
  8. Refrigerate until ready to serve. 1

This cheese sauce recipe is SO yummy and perfect for a ton of different dishes. I like to make this cheese dip for pretzels, broccoli, dipping veggies, chips and more. It really is a universal recipe that works well with many dishes. The kiddos like this sauce not spicy but you can easily add hot sauce and chili powder (see amounts below) to heat it up as much as you want. Enjoy!

Cheese Dipping Sauce

INGREDIENTS:

  • 2 cup Milk
  • 1/4 cup Butter
  • 1/4 cup Flour
  • 2 cup shredded Sharp Cheddar Cheese 2
  • Salt & Pepper to taste 1

DIRECTIONS:

  1. Allow milk to warm to room temperature.
  2. Melt butter in a saucepan over medium heat.
  3. Sprinkle flour over melted butter while stirring to form a roux. Then cook for several minutes. 3
  4. Gradually add milk to roux while whisking to form a well blended mixture.
  5. Cook about 5 minutes until thickened. 4
  6. Gradually add in the cheese while stirring constantly until it is melted and smooth. 5
  7. Serve hot.
  8. If you would like to spice things up add 2 teaspoons hot sauce and 1 teaspoon chili powder. cheese sauce

My hubby loved chicken strips so I came up with a way to spice them up and these buffalo chicken strips have the perfect flavoring to them. They are spicy but you can definitely adjust the heat by how much hot sauce and chili powder you put in. I definitely recommend trying what I have below first because it’s the perfect mix of a little heat but not too spicy. These make great appetizers, dinner, leftover lunch, etc. Enjoy!

Buffalo Chicken Strips

INGREDIENTS:

  • 2 1/2 lb Chicken Breasts cut in strips or Chicken Tenderloins
  • 2 1/4 cup Flour
  • 1/4 cup Cornstarch
  • 2 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Chili Powder
  • 2 tsp Paprika
  • 1 cup Milk
  • 1/2 cup Water
  • 1 Egg
  • Vegetable Oil (for frying)
  • 1 cup Hot Sauce
  • 1/2 cup melted Margarine
  • 1/4 cup Italian Dressing 3

DIRECTIONS:

  1. Combine flour, cornstarch, salt, pepper, chili powder and paprika in a large zippered bag and shake well to mix. 4
  2. Whisk together milk, water and egg in another bowl. 5
  3. Pour enough oil in a skillet to fill 1″ deep.
  4. Heat oil over medium heat (about 310).
  5. Coat chicken pieces by shaking in flour bag. 7
  6. Then dip each coated piece in egg wash, shaking off excess.
  7. Then toss dipped chicken in flour bag again to coat.
  8. Cook in hot oil until golden brown (about 3 minutes per side). 8
  9. Drain on paper towels.
  10. Combine margarine, hot sauce and dressing in a large bowl. 6
  11. Place each piece in sauce and toss to coat. 9

I am so in love with this super easy biscuits recipe! You probably already have all the ingredients on hand because it only takes a few! These are super easy and quick to make and some of my favorite biscuits ever. Enjoy!

7-Up Biscuits

INGREDIENTS:

  • 4 cups Bisquick
  • 1 cup sour cream
  • 1 cup 7-up
  • 1/2 cup melted butter

DIRECTIONS:

  1. Pre-heat oven to 425 degrees F.
  2. Mix Bisquick, sour cream and 7 up. (Dough will be very soft – which is fine)
  3. Knead and fold dough until coated with your baking mix.
  4. Pat dough out and cut biscuits using a round biscuit or cookie cutter (mason jars or other kitchen items work great for this too).
  5. Melt butter in bottom of cookie sheet pan or 9×13 casserole dish.
  6. Place biscuits on top of melted butter and bake for 12-15 minutes or until brown.

Easy Shepherds Pie

INGREDIENTS:

  • 1 1/2 lb Ground Beef
  • 4 cups Mashed Potatoes
  • 1 tbsp Oil
  • 1 tsp Minced Garlic
  • 1 Onion, diced 4
  • 1 tbsp Worcestershire Sauce
  • 1 cup Milk
  • 2 tbsp Butter
  • 2 tbsp Flour
  • 12 oz Frozen Peas and Carrots, thawed
  • Salt and Pepper to taste 3

DIRECTIONS:

  1. Preheat oven to 375.
  2. Heat oil in a skillet over medium heat and add ground beef, onion and garlic. 5
  3. Cook until browned and drain.
  4. In another skillet or pan, melt butter and add flour.
  5. Cook roux for 2 minutes.
  6. Whisk in worcestershire and milk.
  7. Cook for 1 minute to thicken.
  8. Combine beef mixture, gravy and thawed vegetables.
  9. Place in baking dish. 6
  10. Top with mashed potatoes and place in oven for 20-30 minutes until heated through. 7

Deviled eggs are an Eater tradition in most families and I love making colored ones! These are very easy to make and people love them. Don’t let the food coloring fool you, these are delicious and taste the same. The kiddos love helping make these too. Enjoy!

Easter Deviled Eggs

INGREDIENTS:

  • 12 Eggs
  • 1/2 cup Mayonnaise
  • 2 tbsp Sweet Pickle Relish
  • 4 tsp Mustard
  • Salt and pepper, for taste
  • Food coloring 4

DIRECTIONS:

  1. Place eggs in a pan and cover with cold water.
  2. Bring to a boil, cover and turn off heat.
  3. Allow to sit for 9 minutes.
  4. Fill with cold water to stop cooking.
  5. Remove shells.
  6. Slice eggs in half lengthwise.
  7. Remove yolks and place in a bowl.
  8. Fill bowls with 1 cup cold water and 6 drops of food coloring.
  9. Divide cooked egg white halves evenly between the different colors.
  10. Allow whites to sit for 15 minutes or until desired color is reached. 2
  11. Place Colored egg whites on paper towels to dry.
  12. Mash yolks with a fork and stir in mayonnaise, pickle relish, and mustard.
  13. Salt and pepper, to taste.
  14. Mix until consistency is smooth and creamy. 3
  15. Transfer mixture to zippered bag or piping bag and clip corner for piping.
  16. Pipe mixture into cooked egg whites and refrigerate until ready to serve. 5

I am not a huge fan of plain Jello….so I decided to come up with an even tastier way to use Jello since I love the price of it! This Strawberry Cream Jello dessert if really good all year around but perfect for Summer get-togethers, parties, bbq’s, etc. It’s a perfect kid friendly yet also adult friendly dessert that will leave your dish empty! This would also be good if you add bananas since strawberries and bananas go so well together. Enjoy!

Strawberries & Cream Jello

INGREDIENTS:

  • (4) 3 oz boxes Strawberry Gelatin
  • 14 oz Sweetened Condensed Milk
  • 2 packets Unflavored Gelatin
  • 16 oz Frozen Strawberries
  • 5 cup boiling Water
  • 5 cup Cold Water 2

DIRECTIONS:

  1. Spray 9×13 pan with nonstick spray.
  2. Dissolve 2 boxes of strawberry gelatin in 2 cups of boiling water. 3
  3. Add 2 cups cold water and pour into prepared pan.
  4. Place in refrigerator for 1 hour. 5
  5. Slice strawberries and place in fridge. 4
  6. Dissolve unflavored gelatin in 1 cup boiling water.
  7. Add sweetened condensed milk to gelatin mixture and mix well. 6
  8. Add 1 cup cold water to mixture and allow to set for 30 minutes.
  9. Gently pour onto set strawberry gelatin layer (pour onto back of spoon to avoid disturbing set gelatin). 7
  10. Refrigerate of 30 minutes.
  11. Distribute sliced strawberries evenly over white gelatin.
  12. Dissolve 2 boxes of strawberry gelatin in 2 cups of boiling water.
  13. Add 2 cups cold water and gently pour into prepared pan over strawberries.
  14. Place in refrigerator for several hours until set.

I have a secret…I love to make all of my potato recipes with yukon potatoes because they have a natural buttery taste. These Garlic Parmesan Bacon Potatoes are made with yukon potatoes and have so much flavor. They have garlic, cheese, butter and bacon! These make a great side dish and everyone always loves them. Enjoy!

Garlic Parmesan Bacon Potatoes

INGREDIENTS:

  • 3 lb Yukon Potatoes
  • 12 oz Bacon
  • 2 tbsp Butter
  • 2 tbsp minced Garlic
  • 1/4 cup Parmesan Cheese
  • 1/4 cup chopped fresh Parsley
  • 1/4 cup sliced Green Onion
  • Salt & Pepper to taste 2

DIRECTIONS:

  1. Slice potatoes in half lengthwise and place in water and boil for 12 minutes.
  2. Drain potatoes and set aside.
  3. Slice bacon into 1″ pieces and fry until cooked but not crispy. Allow to drain. Reserve bacon grease. 3
  4. Preheat oven to 400.
  5. In a large pan, add 2 tablespoons bacon grease and butter and heat over medium heat.
  6. Add garlic, parsley, salt and pepper and mix well.
  7. Add potatoes and toss to coat well. 4
  8. Transfer potatoes to baking sheet cut side down. 5
  9. Sprinkle bacon over potatoes.
  10. Heat 30 minutes or until cut side begins to brown.
  11. Flip and bake another 15 minutes.
  12. Garnish with sliced onions.

  3. Add vegetables and cook until soft. 3
  4. Spray muffin tin with cooking spray.
  5. Place each crescent roll in muffin tin.
  6. Fill each with chicken vegetable mixture. 4
  7. Bake at 375 for 12-15 minutes.

I like coming up with unique and healthy recipes. These Zucchini Parmesan Chips are just that, they are healthy and a much better alternative to a potato chip. You can cut your zucchini thin or thicker depending on how you want it. Sometimes I like them thin and other times I cut them thick. Zucchini Parmesan Chips

INGREDIENTS:

  • 2 Zucchini
  • 1/4 cup grated Parmesan
  • 1/4 cup dry Bread Crumbs
  • 1/4 tsp Salt
  • 2 tbsp Olive Oil
  • 1/4 tsp Pepper 2

DIRECTIONS:

  1. Preheat oven to 450.
  2. Spray baking sheet with non-stick spray.
  3. Cut zucchini into 1/4″ slices.
  4. Combine parmesan, bread crumbs, salt and pepper in a small bowl. 3
  5. Dip zucchini into oil then toss in crumb mixture and place on prepared sheet.
  6. Bake 30 minutes or until crisp and brown.

Did you know you can make your own Guinness Bread right from your home?! This recipe is actually very easy to make and full of flavor. This is also a perfect St. Patty’s day recipe and great to take to a party. We like to eat this bread with butter but you can always make sandwiches out of it, appetizers, etc. Enjoy!

Guinness Bread

INGREDIENTS:

  • 1 cup Rolled Oats
  • 2 cup Whole Wheat Flour
  • 1/2 cup Brown Sugar
  • 2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/4 cup melted Butter
  • 2 tsp Vanilla
  • 1 cup Milk
  • 1 tsp Vinegar
  • 12 oz Guinness 2

DIRECTIONS:

  1. Preheat oven to 425.
  2. Grease a loaf pan.
  3. Combine milk and vinegar and set aside for 10 minutes.
  4. Mix together 3/4 cup of oats, flour, sugar, baking soda, baking powder, and salt. 3
  5. In another bowl, stir together the butter, vanilla, milk mixture and Guinness. 4
  6. Add dry mixture into the liquid mixture, and stir until blended.
  7. Pour batter into the prepared pan.
  8. Sprinkle top with remaining oats.
  9. Bake 30 minutes, then reduce temperature to 400 and bake for additional 20 minutes.
  10. Allow to cool in pan for 30 minutes before moving to a wire rack.

Yummy! One of my favorite restaurants to eat at is Olive Garden and I love making some of their dishes at home. It not only saves on money but it usually tastes better. This toasted ravioli is one of  my favorite dishes and it’s actually very easy to make. It’s crispy and full of flavor. Enjoy!

Copycat Olive Garden Toasted Ravioli

INGREDIENTS:

  • 16 oz package thawed Meat Ravioli
  • 2 Eggs
  • 1/4 cup Water
  • 1 tsp Garlic Salt
  • 1 cup Flour
  • 1 cup Breadcrumbs
  • 1/2 tsp Oregano
  • 1 tsp Basil
  • Grated Parmesan (for garnish) 2

DIRECTIONS:

  1. Beat water with eggs together.
  2. In another bowl, combine oregano, basil, garlic salt and bread crumbs.
  3. Place flour in a third bowl. 3
  4. Heat oil to 350 degrees.
  5. Dip each ravioli in flour then in egg wash and finally in bread crumbs and set on plate for 3-5 minutes. 4
  6. Carefully place in oil and fry until golden.
  7. Place on rack or paper towels to drain.
  8. Sprinkle with Parmesan and serve with you marinara sauce.

Honey Chipotle No Fry Wings

INGREDIENTS:

  • 2 1/2 lb Chicken Wings
  • 1 tbsp Salt
  • 1/2 cup Ketchup
  • 1/4 cup Brown Sugar
  • 1/4 cup Honey
  • 1 1/2 tbsp Chipotle Chiles in Adobo
  • 2 tsp Vinegar
  • 1 1/2 tsp Worcestershire Sauce
  • 1/2 tsp Garlic Powder
  • Salt to taste
  • Pepper to taste 2

DIRECTIONS:

  1. If not already done, cut apart wings and drumettes.
  2. Add 1 tablespoon salt to large pot of water and bring to a boil.
  3. Boil chicken in water for 9 minutes.
  4. Preheat oven to 450.
  5. Dry chicken with paper towels and place on a rack on a baking sheet. 4
  6. Bake in oven for 25 minutes.
  7. Turn each piece and bake an additional 15 minutes. 5
  8. Combine remaining ingredients and run through food processor. 3
  9. Take wings from oven and place in sauce and toss to coat. 6

I love coming up with and trying out new dip recipes. These are always good for Sunday football, Birthday parties or just a yummy snack. This bacon cheddar dip is actually very easy to make and comes together quickly. I love using the microwavable bacon because it tastes just as good and is much easier and cleaner to make. Enjoy!

Bacon Cheddar Ranch Dip

INGREDIENTS:

  • 16 oz Sour Cream
  • 1 packet Ranch Dip
  • 6 strips precooked microwavable Bacon
  • 1 cup shredded Cheddar Cheese 2

DIRECTIONS:

  1. Chop bacon strips into 1/4″ squares
  2. Mix together sour cream and ranch mix until well blended.
  3. Add bacon and cheese and mix well. 3
  4. Refrigerate until ready to serve.

Want a super yummy and impressive appetizer dish?! These are also a perfect snack for kiddos or a delicious dinner. We like making these and eating them with mashed potatoes for the ultimate comfort meal. 😉 They take a little bit of work but trust me, they are well worth it. Enjoy!

Fried Macaroni and Cheese Bites

INGREDIENTS:

  • 1 lb Macaroni
  • 2 (8 oz) Packages of Sharp Cheddar Cheese Chunk
  • 1 3/4 cup Milk
  • 1/2 cup Flour
  • 1/4 cup Butter
  • 2 Eggs
  • 3 cup Seasoned Bread Crumbs
  • Salt & Pepper to taste
  • Vegetable Oil (for frying) 2

DIRECTIONS:

  1. Boil macaroni until tender, drain and set aside. 3
  2. Shred your cheese and set aside. 4
  3. In a large pan, melt butter over medium heat.
  4. Add flour and mix until light brown color (make a roux).
  5. Add 1 cup milk and whisk until thick.
  6. Add cheese one hand full at a time.
  7. Mix until cheese is all melted and smooth. 5
  8. Add cooked macaroni to pan and mix until well coated.
  9. Add salt and pepper.
  10. Transfer to container that will fit in your refrigerator, and refrigerate for 1 hour or until cold.
  11. Line a baking sheet with wax or parchment paper.
  12. Form cold macaroni and cheese into 1″ balls and place on prepared pan. 6
  13. Place in freezer for 1 hour.
  14. Beat eggs and add 1/4 cup milk in a bowl to make egg wash.
  15. Dip balls into egg wash then roll in bread crumbs to coat completely. 7
  16. Heat oil in deep fryer to 320 or fill skillet 1/2-3/4″ deep and heat over medium high to 320.
  17. Fry for about 3-4 minutes and drain. 8

I seriously LOVE soup. My favorite kind of soup is a creamy, hearty based soup and that’s exactly what this next recipe is. This cheeseburger soup has meat, cheese, milk, chicken broth and more that make it so addictive and delicious. I highly recommend trying out this recipe if you’re a fan of creamy soup. It’s actually pretty healthy too since there is no cream. Enjoy!

Cheeseburger Soup

INGREDIENTS:

  • 1 lb Ground Beef
  • 1 cup chopped Onion
  • 1 cup sliced Carrots
  • 3/4 cup diced Celery
  • 4 cup Potatoes diced 3
  • 1 tsp Basil
  • 1 tsp Parsley Flakes
  • 4 tbsp Butter
  • 3 tsp Chicken Base or 3 cup Chicken Broth
  • 1/4 cup Flour
  • 8 oz shredded cheddar cheese
  • 1 1/2 cup Milk
  • 1 tsp Salt
  • 1/2 tsp Black Pepper 2

DIRECTIONS:

  1. Brown the ground beef and drain.
  2. In a medium to large pan, melt one tablespoon butter saute onion, carrots, parsley flakes, basil and celery until onion is transparent. 4
  3. Add the broth, potatoes and beef and bring to a boil.
  4. Reduce heat, cover and simmer about 15 minutes or until potatoes are tender.
  5. In another skillet melt remaining butter and add the flour. Cook and stir for 5 minutes or until roux is bubbling.
  6. Add roux to soup and bring to a boil and stir for a couple of minutes.
  7. Reduce heat to low and add cheese, milk, salt and pepper.
  8. Cook and stir several minutes until cheese melts.

I remember the first time I had chicken tortilla soup, it quickly became one of my favorites. I really like making it at home now since I’ve come up with a delicious way to make it in the crock pot. It’s simple and full of flavor. Enjoy!

Crock Pot Chicken Tortilla Soup

INGREDIENTS:

  • 1 lb Chicken Breast
  • 4 cup Chicken Broth
  • 1 can Whole Kernel Corn
  • 1 can Black Beans
  • 1 tbsp minced Garlic
  • 2 tsp chili powder
  • 1 Onion 3
  • 1 Jalapeno diced (seeds removed)
  • 1 can Rotel not drained
  • 1 tbsp chipotle in adobo
  • Salt & Pepper to taste
  • 1 tsp Cumin
  • 1 Bay leaf
  • 1/4 cup chopped Cilantro
  • 6 Corn tortilla
  • 1/4 cup shredded Cheese 2

DIRECTIONS:

  1. Add all ingredients except cheese, tortillas, cilantro and corn. 4
  2. Cook on low for 8 hours.
  3. Chicken should now shred with a spoon or fork. Shred chicken.
  4. Drain and add corn. 5
  5. Cut 2 tortillas into strips and add to pot.
  6. Finely chop cilantro leaves and add to soup.
  7. Cook for another hour.
  8. Cut remaining tortillas into strips place on baking sheet salt and bake at 350 for 10 minutes.
  9. Put soup in bowls and garnish with tortilla strips and cheese.

This next recipe is pretty dang healthy and looks great too! These Pineapple kabobs are just the perfect mix of sweet and salty and are quick to put together. Plus, most kids love these (maybe just leave out the onions) because they are not only fun to eat but sweet with the pineapple. Enjoy!

Chicken Pineapple Kabobs

INGREDIENTS:

  • 1 cup Ketchup
  • 1/4 cup Soy Sauce
  • 1/4 cup Honey
  • 1 tbsp Mustard
  • 1/2 cup Brown Sugar
  • 1 tsp Minced Garlic
  • 1 tbsp Lemon Juice
  • 2 lb Boneless Skinless Chicken Breasts
  • 1 Pineapple
  • 1 Red Onion
  • 1 Green Bell Pepper
  • Salt and Pepper (to taste) 2

DIRECTIONS:

  1. Add ketchup, soy sauce, honey, mustard, lemon juice, brown sugar and garlic to a small pan and cook for 10 minutes. Remove from heat and allow to cool.
  2. Cut chicken, peppers and onion into 1 1/2 in cubes.
  3. Peel and core pineapple and cut into 1 1/2″ cubes.  3
  4. Place Pineapple, chicken and vegetables onto skewers alternating pieces. 4
  5. Transfer 1/2 of sauce to another dish to use when serving.
  6. Brush skewers with oil then with sauce and place on heated grill. 5
  7. Baste skewers every 3-5 minutes while cooking. Cook for about 15 minutes.

I use Ranch for a lot of recipes and I really like using the powder Hidden Valley mix for many Crock Pot recipes. In this next recipe, I am making copycat Hidden Valley Mix (Ranch) and I like it more than the store bought kind. If you’ve ever read the ingredients in these packets, you might be a little scared as there are a lot of random ingredients. That’s why I like making my own. 😉 When recipe calls for 1 packet of mix, use 2 tbsp of this instead. Enjoy!

  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp MSG (Accent!) optional
  • 1/2 tsp Salt
  • 1/2 tsp Sugar
  • 1/4 tsp Pepper 2

DIRECTIONS:

  1. Blend in food processor or blender and store in airtight container. 3
  2. When recipe calls for 1 packet of mix, use 2 tbsp of this instead.

Mac & Cheese Muffins

INGREDIENTS:

  • 8 oz Elbow Macaroni
  • 8 oz Sharp Cheddar Cheese
  • 2 tsp Cornstarch
  • 1 cup Milk
  • 1 Egg
  • 1/2 cup Panko Breadcrumbs
  • 1 tbsp melted Butter 2

DIRECTIONS:

  1. Preheat oven to 400.
  2. Place liners in a muffin pan and spray with cooking spray.
  3. Cook the macaroni according to the package directions.
  4. Drain and return to the pan.
  5. Add the cheese and stir until melted. 4
  6. Whisk together the cornstarch, egg and milk, pour over the macaroni and mix. 3
  7. Fill each cup with macaroni mixture.
  8. Combine the butter and breadcrumbs and mix well.
  9. Divide crumb mixture evenly over each muffin cup. 5
  10. Bake for 20 minutes.

Crock Pot Vegetable Beef Soup

INGREDIENTS:

  • 2 lb Chuck Roast, cut into small pieces
  • 12 oz frozen Soup Vegetables
  • 12 oz frozen Mixed Vegetables
  • 1 Onion chopped
  • 1 cup Barley
  • 1 tsp Minced Garlic
  • 1 can Diced Tomatoes
  • 4 cup Tomato Juice
  • 4 cup Beef Stock
  • 1 Bay Leaf
  • Salt to taste
  • Pepper to taste 2

DIRECTIONS:

  1. You can brown beef before adding to crock pot, but this is optional. 3
  2. Add all ingredients (except salt and pepper) to slow cooker and cook on low for 8 hours. 5
  3. Remove bay leaf and add salt and pepper before serving. 6

INGREDIENTS:

  • 1 lb Bread (I used part Sweet Hawaiian and part Multigrain)
  • 1 cup fresh Cranberries
  • 1 cup dice Apples
  • 1 cup diced Onion
  • 1 cup chopped Celery
  • 2 tsp Poultry Seasoning
  • 2 tsp minced Garlic
  • 1/2 cup Walnut pieces
  • 1/2 cup Butter melted
  • 1 cup Apple Juice 2

DIRECTIONS:

  1. Preheat oven to 350.
  2. Cut bread into cubes and place in 300 oven until lightly brown. 3
  3. Place celery, apples, cranberries, onions and minced garlic in a bowl and microwave for 4 minutes. 4
  4. Grease 13×9″ pan with butter.
  5. Mix all ingredients except apple juice together and transfer to pan.
  6. Pour apple juice evenly over stuffing. 5
  7. Bake 30-45 minutes.

Copycat Chili’s Queso Dip

INGREDIENTS:

  • 16 oz Velveeta
  • 3/4 cup Milk
  • 1/2 tsp Cayenne Pepper (optional, if you like it spicy)
