This is the fastest and easiest dip, but taste like you worked on it for hours. Here’s a tip –  I like to bake mine in two smaller dishes (reduced cooking time a few minutes) I like the dip best when HOT and cheesy right out of the oven.  If I cook it in two pans at different times I can put one out at the start of the party, and pull the second one out once the first one is gone. Jalapeno Bacon Popper Dip

Ingredients:

  • 1 8 oz cream cheese
  • 1 cup cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1 tablespoon ranch seasoning mix
  • 2 jalapeno peppers  diced(take the seeds out) if you want it hotter 4 peppers
  • 1/3 cup cooked and crumbled bacon  (save a bit back for garnish)
  • 2 cups sour cream
  • 2 tablespoon chopped onion
  • 1 tablespoon parsley 2.jpg

Directions:

  1. Pre-heat oven to 350 degrees F
  2. Mix all the ingredients together, till well blended.
  3. Spread on the bottom of a 9×9 baking dish
  4. Top with crumbled bacon.
  5. Bake in the oven at 350 for 15-20 minutes till edges are golden brown.

Ambrosia Salad

Ingredients:

  • 11 oz can Mandarin Oranges drained
  • 20 oz can Pineapple Chunks drained
  • 2 cup Sweetened Flaked Coconut
  • 2 cups Mini Marshmallows

  1. Gently combine all ingredients in a serving dish.

These jalapeno fire bites are perfect for any spicy lover out there but if you don’t like things that are too spicy you can just make sure all the seeds are out and the will be a lot less spicy. Jalapeno Fire Bites

Ingredients:

  • 12 oz Sliced Jalapeno Peppers
  • 1 1/3 cup Cracker Crumbs (about 1/4 lb)
  • 1 cup Flour
  • 2 Eggs
  • 1/4 cup Water
  • Vegetable Oil (for deep frying) 2.jpg

Directions:

  1. Drain  and dry jalapeno peppers.
  2. Mix together cracker crumbs and flour.
  3. In a small bowl, whisk together eggs and water.  3.jpg
  4. Heat oil to 350 – 375.
  5. Dip jalapenos in egg wash and then flour mixture, shaking off any excess.
  6. Place in hot oil (avoiding overcrowding).
  7. Fry until golden brown and peppers are floating on top.
  8. Remove and drain on a paper towel.
  9. Served with Cocktail Sauce.

I’ve said it before and I’ll say it again…I love easy meals. Who doesn’t right?! This next recipe is for some delicious Cashew Chicken and Broccoli and one of my favorite things about it is that you only need one pot to make it. Heck yeah! If you like a FAST and easy meals, that can be cooked in one pot then this is the meal for you.  Perfect for a busy night that you need a hot meal on the table without a lot of work  Check out the super easy recipe below and enjoy!

Cashew Chicken and Broccoli, One Pot Meal

(Print below – Recipe yields 4 servings)

Ingredients:

  • 4 cups raw broccoli
  • 1 cup cashews
  • 1/2 cup sliced yellow onion
  • 1-2 cups cooked chicken ( you can even use canned chicken if you’re in a rush)
  • 2 cloves garlic minced
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 1/2 cup chicken stock

Add at the end of cooking:

  • 1/4 cup water mixed with 2 tablespoons corn starch

Directions:

  1. In a large skillet add the broccoli, cashews, onion, cooked chicken, garlic, sugar, soy sauce, oil and chicken stock.  Turn on high heat, cover with a lid and bring to a boil.Once at a boil turn to medium heat and let boil for 7-8 minutes till broccoli is tender. 2.jpg
  2. Once broccoli is cooked, stir in the corn starch water blend.  This will thicken your sauce, stir till well blended  and sauce has formed, take off heat. Serve over rice or noodles. Enjoy! 3.jpg

2 Ingredient Pineapple Cake

Ingredients:

  • 1 box Angel Food Cake mix
  • 20 oz Crushed Pineapple with Juice 4.jpg

Directions:

  1. Move rack to lowest level in oven.
  2. Preheat oven to 350.
  3. Combine the ingredients in a bowl (do not over mix). 3.jpg
  4. Grease a bundt pan.
  5. Pour into prepared bundt pan. 2.jpg
  6. Bake for 45 minutes.
  7. Allow to cool 10 mins in pan.
  8. You may need to use a spatula to loosen from bundt pan before inverting.
  9. Allow to finish cooling after removing from pan.

Chocolate Dipped Kiwi Bars

Need a refreshing snack for the kiddos that has some health benefits to it (or maybe just yourself 😉 ). These chocolate dipped Kiwi bars are my favorite thing to snack on all Summer long. I love whipping up a batch of these for parties or BBQs too. Enjoy (and let the little ones dip their own, they have a blast doing this).

Chocolate Dipped Kiwi Bars

Ingredients:

  • 4 Kiwi Fruit
  • 1 cup Melting Chocolate
  • 20 Lollipop sticks 3.jpg

Directions:

  1. Peel and slice Kiwi into thick (between 1/4″ and 1/2″) slices.
  2. Insert stick in each slice and place on parchment or wax paper and freeze for several hours. 2.jpg
  3. Heat Chocolate by microwaving for 30 seconds stirring and repeating until melted. Allow to cool for 2-3 minutes.
  4. You will need to work with one pop at a time while they are completely frozen (no moisture). Moisture may cause your chocolate to seize up (clump).
  5. Dip pop in chocolate and use spoon (if necessary) to coat completely. Gently shake off excess. Chocolate will set almost immediately. 4.jpg
  6. Return to parchment and place in freezer to set up.
  7. You can optionally drizzle with white chocolate by heating in microwave as described above, transferring to zipper bag, clipping corner and drizzling a small line back and forth across each pop.

If you love garlic like me then you will absolutely LOVE this next homemade garlic pizza sauce recipe. This is still a red, tomato based sauce but it has the perfect amount of garlic in it to give it tons of flavor but not be too overwhelming. Don’t forget to use this sauce on my Pizza Margherita Recipe! Enjoy..

Homemade Garlic Tomato Pizza Sauce

(Print recipe below)

Ingredients:

  • 2 tbsp Extra Virgin Olive Oil
  • 4 Garlic cloves minced
  • 1 (28-ounce) can San Marzano tomatoes
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Dried Oregano 2.jpg

Directions:

  1. In a medium saucepan heat oil on medium.
  2. Cook garlic in pan for several minutes. 3.jpg
  3. Add crushed tomatoes, juices, salt, and oregano to pan and bring to a boil.
  4. Reduce heat and simmer 30 minutes. 4.jpg
  5. Makes enough sauce for at least 4 pizzas.

If you know me well, you know I absolutely LOVE cheesy, garlic recipes…especially when it’s gooey cheese on bread! This cheddar bacon and garlic bread is full of flavor and the cheese just melts in your mouth. This is great as an appetizer or just with some pasta! Enjoy..

Cheddar Bacon Garlic Bread

(Print Recipe Below)

Ingredients:

  • 1 loaf French Baquette
  • 1 cup Shredded Sharp Cheddar Cheese
  • 1/2 cup softened Butter
  • 1/2 cup chopped Cooked Bacon
  • 1/4 cup chopped Green Onions
  • 2 tsp Dijon Mustard
  • 1/2 tsp Minced Garlic
  • 1 tsp Lemon Juice 2.jpg

Directions:

  1. Preheat oven to 350.
  2. Cut bread into 1″ slices, but DO NOT cut all the way through the bottom. 3.jpg

  5. Wrap loaf in foil and bake 10-15 minutes until cheese is melted.

We all have nights where we just want something quick and easy for dinner but don’t want to spend a lot of time or money.  This Easy Pizza Pasta Bake is ideal for saving money, satisfying a crowd and throwing together in minutes.  My favorite part about this meal is how flexible it is for individual family taste buds.  We use basic ingredients for our kids that prefer fewer veggies and traditional “pizza” taste of cheese and pepperoni but we also split it and make half with just those ingredients and the other half chock full of bell peppers, onions, mushrooms and even zucchini for the adults who want something more substantial.  Using easy to pick up on sale with coupon items it typically becomes a $5 dinner for us that feeds everyone and has leftovers for the next day! Enjoy….

Easy Pizza Casserole

(Print recipe below)

Ingredients:

  • 1 Pound Pasta (we like the veggie spirals)
  • 1 Jar Favorite Pasta Sauce
  • 1 Package Turkey Pepperoni
  • 1 Tablespoon Italian Seasoning Mix (1 Teaspoon Oregano, 1 Teaspoon Marjorim, 1 Teaspoon Basil)
  • 2 Teaspoons Minced Garlic
  • 1 ½ Cups Shredded Low Fat Part Skim Mozzarella Cheese

Optional (for toppings):

  • Bell Pepper
  • Black Olive
  • Onions
  • Diced Tomatoes
  • Diced Zucchini
  • Cooked Italian Sausage
  • Cooked Italian Seasoned Hamburger or Ground Turkey

Directions:

  1. Preheat oven to 350 degrees
  2. Spray casserole dish with nonstick cooking spray
  3. Cook Pasta according to package directions, drain and set aside
  4. If using Italian sausage or ground meat cook, drain and set aside.  Do the same with any vegetables like onions or peppers that need to be cooked to tenderize prior to eating.
  5. In large bowl mix together cooked pasta, pasta sauce turkey pepperoni and half of cheese.
  6. If using other ingredients mix in with pasta until distributed evenly
  7. Pour into casserole and top with remaining cheese
  8. Bake at 350 degrees for 17-20 minutes or until cheese is melted, bubbling and browned slightly on top.
  9. Serve alone or with a side salad.

This Easy Pizza Pasta Bake is a hit with kids because it’s so much like their favorites (spaghetti & pizza) but also a hit with mom and dad since you can easily hide extra veggies in this dish that they won’t even notice. 😉 I’ve even shredded squash, zucchini and carrots and tossed in with the pasta for an extra veggie serving they won’t notice.  Take advantage of those great coupon deals where pasta, sauce and even things like pepperoni and cheese are on sale and stock up your pantry so this can always be a last minute throw together choice for under $5 to feed your entire family in under 30 minutes.

These Stuffed Mini  peppers are perfect for an appetizer, snack or even dinner! They are simple to make and taste delicious. I also love how you can choose to add whatever you want to stuffed mini peppers but below is how I like to make them… Enjoy!

Stuffed Mini Peppers Recipe

Stuffed Mini Peppers Ingredients:

  • 1 lb Mini Peppers
  • 1 lb Ground Chuck
  • 1 cup Cooked Rice
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 1 tbsp Worcestershire Sauce
  • 1/2 cup Ketchup
  • 1/2 cup Shredded Cheddar Cheese

Stuffed Peppers, mini peppers
Directions:

  1. Split peppers lengthwise and remove seeds and pithy material. Stuffed Mini Peppers
  2. Brown ground beef and drain.
  3. Add garlic powder, onion powder, Worcestershire and ketchup to skillet.
  4. Cook until heated through.
  5. Add rice mix well. Peppers stuffed, rice stuffing for peppers
  6. Preheat oven to 350.
  7. Spray baking sheet with non-stick spray.
  8. Place split peppers on baking sheet and fill with meat mixture.
  9. Top each pepper with shredded cheese.
  10. Bake for 20-25 minutes or until cheese is melted.

  1. Roll each slice of bread to flatten.

  4. Heat skillet over medium low and melt butter.
  5. Place rollups in pan seam side down.
  6. Cook until brown turning frequently throughout cooking.

Homemade Garlic Pizza Bagel Bites

printIngredients:

  • 6 Mini Bagels
  • 8 oz Mozzarella Cheese
  • Pepperoni Minis
  • Basil for garnish

PIZZA SAUCE:

  • 6 oz Tomato Paste
  • 3/4 cup Water
  • 1/4 cup Olive Oil
  • 2 tsp Minced Garlic
  • 1 tsp Sugar
  • 1 tsp Basil
  • 1/4 tsp Oregano
  • 1/2 tsp Salt

  1. Combine all pizza sauce ingredients.
  2. Let stand for 2 hours.
  3. Preheat oven to 450.
  4. Split mini bagels place on oven rack at toast for 3 minutes.
  5. Top each with pizza sauce, mozzarella cheese and pepperoni. 3.jpg
  6. Place on cookie sheet and bake until cheese is melted and starting to brown (about 10 – 15 minutes).
  7. Remove and garnish with basil.

Copycat Red Lobster Cheddar Bay Biscuits

printIngredients: (Makes 9 biscuits)

Biscuits:

2 1/2 cup Bisquick baking mix
4 tbsp cold Butter
1 cup Sharp Cheddar Cheese, grated
3/4 cup cold Milk
1/4 tsp Garlic Powder

Topping:

2 tbsp Butter, melted
1/2 tsp Garlic Powder
1/4 tsp Dried Parsley Flakes
pinch Salt

  1. Preheat oven to 400.

Ingredients

  • 2 1/2 cup Bisquick baking mix

Instructions

  1. Preheat oven to 400.

These bites are perfect for dinner but are even better for appetizers, parties (hello Super Bowl) or just snacks.  The sauce for these steak bites goes with it perfectly and give them a pop of flavor. Filet Mignon Bites with Bernaise Sauce

(Print this recipe at the very bottom of this page)

What you need:

  • 1/2 Onion finely diced
  • 6 egg yolks
  • 2 tsp Lemon juice
  • 2 sticks Butter
  • 1 tsp Tarragon
  • 1 tsp Chervil
  • 3 tbsp White Wine
  • 3 lb Beef Tenderloin
  • 1 lb Bacon

What to do:

  1. Finely chop the onion so that it doesn’t overpower the sauce.
  2. Cook the chopped onion for 1 minute in the microwave to soften it.
  3. Place the egg yolks in a saucepan and add the lemon juice and stir until the mixture is blended.
  4. Add the first stick of butter sliced into pats and cook over very low heat stirring constantly until melted in.
  5. Then add the next stick in the same fashion continuing to stir constantly.
  6. This process takes awhile because we want the egg butter mixture to cook together.
  7. If the heat is too high or you don’t stir enough, the eggs will begin to cook on their own and the sauce will “break”. You’ll know if/when this happens because you’ll see lumps or curdles forming in your sauce.
  8. If all goes according to plan, your sauce will begin to thicken and reach the point where it begins to look like a thin pudding. You’ll see the line the spoon left after you drag it across the bottom.
  9. Take the sauce off the heat, add the onions, tarragon and chervil. and mix well.
  10. Add the wine (if you don’t have wine, you can substitute 2 tsp lemon juice and 2 tbsp water) and blend well.
  11. Cut the tenderloin into 1″ cubes.
  12. Take the bacon slices and cut each piece in thirds.
  13. Wrap each filet bite in a piece of bacon and secure with a toothpick.
  14. Heat a heavy skillet on high and sear each bite on all sides.
  15. Transfer seared pieces to broiler pan and place in 350 oven for 15 minutes.
  16. Serve filet bites with bernaise sauce.

These bacon cheeseburger bombs are super easy to make and the kids can help which then makes them want to eat it! These are also great for parties, appetizers, snacks, etc. I love that they use ground beef because for some reason I have an easier time eating ground beef rather than a big thick patty. Ingredients:

  • 8 pack Pillsbury Grands Biscuits
  • 1/2 lb Ground Beef
  • 1/4 cup chopped Onion (optional)
  • 1/2 tsp Garlic Powder (optional)
  • 1 tsp Worcestershire sauce (optional)
  • 4 slices Bacon cut in small pieces
  • 8 slices Cheddar Cheese

  1. Cook bacon pieces and set on paper towel to drain.
  2. Brown ground Beef (and chopped onion, garlic powder and worcestershire if desired) and drain. 2
  3. Preheat the oven to 425.
  4. Flatten out each biscuit dough and top them with cheddar cheese, browned hamburger pieces and bacon pieces. Optionally add Ketchup, mustard and pickle. 3
  5. Take all of the edges stretch and gather up at the top and pinch together. Place onto a greased cookie sheet with the gathered side on the bottom.
  6. Bake at for about 15 minutes or until golden brown.

I know you all will love this next recipe…it’s super fun and really ADORABLE for Easter! Believe it or not, it’s actually pretty simple to make too.  A lot of people make easter bread from scratch this time of year and make it into braids or rabbits, pretty much any Easter shape.  Easter Bread is also sweet, which this recipe for Bunny Bread is not.  In fact Bunny Bread is a perfect appetizer for your Easter Celebration ( sort of like those bread bowls people put out to hold dip at parties) .  Bunny Bread is only partially home made, so it saves time but Totally cute.  It may even help your kiddos to more veggies . 😉

Bunny Bread Recipe

printIngredients:

  • 2 1 lb loaves Bread Dough
  • 2 Raisins
  • 2 Sliced Almonds
  • 1 Egg

Directions:

  1. Spray a baking sheet with non-stick spray.
  2. Cut off 3/4 of first loaf to make body. FOrm into an oval and place about 1 1/2″ from bottom of baking sheet (to leave room for legs).
  3. Take remaining 1/4 of first loaf and form into oval for bunny’s head and place just above and touching body.
  4. Cut off 1/4 of second loaf and then split that piece in half. Form each of these into 12″ long ropes. Double each over to form ears. Put in place and tuck loose ends under head on each side.
  5. Cut about 1″ portion of the end of the remaining loaf and then take 1/5 of that and form a ball for the nose. Split the rest in half and form each into approximately 1″ disk for each cheek. bunny2
  6. Put cheeks and nose in place. Add 2 raisins for eyes and 2 almond slices for teeth.
  7. Take remainder of loaf and but into 4 rectangles. Put in place for arms and legs just touching body. Cut 2 slits at the end of each to make fingers/toes.
  8. Preheat oven to 350.
  9. Cover and let rise for 30 minutes. bunny3
  10. Whisk egg in a small bowl, then brush entire surface of bread.
  11. Bake for 25 minutes or until golden brown.
  12. Cut out a hole in bunny’s body to hold dip if desired.

  • 2 10 oz can Rotel Tomato & Chiles
  • 1 bunch Green Onions (optional)

  2. Drain grease.
  3. Add 1/4 cup water.
  4. Add jalapenos and taco seasoning.
  5. Stir and cook over medium heat for 10 minutes.
  6. Transfer mixture to crock pot.
  7. Cut Velveeta into cubes and add to crock pot. 3
  8. Add Rotel tomatoes to crock pot.
  9. Cook over low heat for 1 hour and reduce to warm. 2
  10. Slice green onions into thin slices for garnish.
  11. Serve with tortilla chips.

Homemade Cheez-Its

Ingredients: 

  • 8 oz Shredded Cheddar Cheese
  • 2 tbsp cold Butter cut into small pieces
  • 2 tbsp Shortening
  • 1 tsp Kosher or Sea Salt
  • 1 cup Flour
  • 2 tbsp Ice Cold Water

What to do:

  1. Blend the cheese, butter, shortening and salt together on medium low speed in a stand mixer or with a hand mixer.
  2. Add the flour and mix on low to incorporate (the dough will be dry).
  3. Slowly add the water just until the dough comes together in a lump. 2
  4. Form into a ball and wrap in plastic wrap and refrigerate for an hour.
  5. Preheat oven to 375.
  6. Line a baking sheet with parchment paper.
  7. Flour your work area and roll out the dough very thin (less than 1/8″).
  8. Use a pastry cutter to cut into 1″ squares and use a skewer or toothpick to put a hole in the center of each. 3
  9. Transfer to prepared baking sheet.
  10. Bake for 12-15 minutes or until light brown at the edges.
  11. Transfer to a cooling rack and allow to cool.

Ever wonder how to make homemade onion rings?! These are my favorite kind because I can add whatever spices I’d like to them…you know, you could even add brown sugar to make kind of a sweet and salty flavor.

I definitely recommend using the sweet yellow onions as these have a really good flavor and not too strong to eat by themselves.

You may even be able to get the little ones to try these because they taste to much better than just plain onions (although I love those too! 😉 ).

Homemade Onion Rings

(Print this recipe at the bottom of the page)

What you need:

  • 1 large or 2 small Sweet Onions
  • 1 1/2 cup Flour
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 1 tsp Cayenne Pepper
  • 1 Egg
  • 1 1/2 cup Buttermilk
  • 1/4 cup Water
  • 3/4 cup Bread Crumbs
  • Salt to taste
  • 1 quart Vegetable Oil for frying

What to do:

  1. Cut onions into 1/4 inch slices and separate into rings. 5
  2. Place onions in a bowl.
  3. Add buttermilk and refrigerate for 15 minutes.
  4. Heat the oil to 365-370.
  5. In a small bowl, stir together the flour, baking powder, salt and cayenne.
  6. Dip the onion slices into the flour mixture until they are all coated; set aside. 4
  7. Pour the buttermilk from the bowl into the flour mixture add the water, the egg and stir until blended using a fork.  3
  8. Dip the floured rings into the batter to coat, then place on a wire rack to drain.
  9. Spread the bread crumbs out on a plate or shallow dish. Dip the onion rings into the crumbs on both sides to coat.
  10. Deep fry a few at a time for 2 to 3 minutes, or until golden brown (turning midway). 2
  11. Place on paper towels to drain.
  12. Salt to taste.

Have you ever looked at the ingredients on corn dogs? Some…well actually most that you buy at the store are not the best things for you so it’s always best to make your own. My kiddos absolutely love these things and this recipe is for mini corn dogs (although you can make bigger ones by just using a larger hot dog) and the kids think the mini ones are so cool! Enjoy…

Mini Homemade Corn Dogs

What you need:

  • 1 package Wieners
  • 1 cup Flour
  • 1 cup Cornmeal
  • 1/4 tsp Salt
  • 1/4 cup Sugar
  • 3 tsp Baking Powder
  • 1 Egg
  • 1 cup Milk
  • 1 quart Vegetable Oil (for frying)
  • 16 Wooden Skewers

4 What to do:

  1. Mix together cornmeal, flour, salt,  sugar and baking powder.
  2. Add in eggs and milk and mix until blended.
  3. Transfer mixture to tall glass or mason jar.
  4. Preheat oil in a saucepan over medium heat.
  5. Cut wieners in half.
  6. Insert skewers into wiener halves and dip in batter until well coated. Rotate to allow excess to drip off. 2
  7. Fry corn dogs one or two at a time until lightly browned.
  8. Drain on paper towels.

Ever notice how most Mexican Restaurants have the best chips and salsa?! Well, that’s because a lot of them make their own chips and their own salsa. The chips are very easy to make and usually a lot healthier than store bought ones. You can control how much salt or seasoning you put on them. I like the chips plain but sometimes I also like to put a little garlic or lemon pepper seasoning on them. Get creative. 😉 Enjoy…

Homemade Salsa and Tortilla Chips

What you need:

FOR SALSA:

  • 1 can Whole Tomatoes (28 oz)
  • 2 cans Rotel Diced Tomatoes And Green Chilies (10 oz)
  • 1/4 cup Chopped Onion
  • 1 clove Garlic, Minced
  • 1 Jalapeno diced
  • 1/4 tsp Sugar
  • 1/4 tsp Salt
  • 1/4 tsp Cumin
  • 1/2 cup Cilantro
  • juice of 1/2 Lime

FOR CHIPS:

  • 12 Corn Tortillas
  • 3/4 cup Corn oil
  • Salt

What to do:

  1. Unless you have a really large food processor, you should prepare this in 2 smaller batches.
  2. Combine all salsa ingredients in a blender or food processor.
  3. Run until you get the consistency salsa you like.
  4. Refrigerate salsa for at least 1 hour before using.
  5. Cut each tortilla into 6 pieces.
  6. Put oil in heavy skillet about 1/4″ depth.
  7. Heat oil in over medium high.
  8. Cook tortilla chips for about 2 minutes until they start to turn brown.
  9. Remove and drain on paper towel covered plate.
  10. Sprinkle with salt.
  11. If you want to reduce oil you can also bake chips on cookie sheet in 350 oven for 12-14 minutes (turning halfway through).

Talk about an easy dip recipe…this Buffalo chicken dip only takes 5 ingredients and you can put it together very quickly. I love making this using a rotisserie chicken or you could even use the cans of chicken if you’re in a big hurry. Serve this with some veggies and crackers and you’ve got a perfect appetizer!

Ingredients:

  • 1 Package Cream Cheese Softened.
  • 1/2 Cup Hot Sauce, I used FRANK’S Redhot
  • 1/2 Cup Blue Cheese Dressing (you can also use Ranch Dressing)
  • 2 Large Boneless Cooked Chicken Breasts Shredded
  • 1 Cup Shredded Cheese

What to do:

  1. Preheat oven to 350.
  2. In a medium mixing bowl combine all of your ingredients.
  3. Transfer your mixture to a 1 quart baking dish
  4. Bake for 30 minutes
  5. Stir and serve with vegetables or crackers.

What you need:

  • 1 lb Ground Beef
  • 2 tbsp Taco Seasoning
  • 1 diced Tomato
  • 6 Jalepeno Slices
  • 12 Corn Tortillas
  • Shredded Cheddar Cheese

  1. Brown ground beef and drain. 4
  2. Dice jalepenos and add to beef.
  3. Add 1/4 cup water and taco seasoning and cook over medium heat until water is absorbed.
  4. Reduce heat to low.
  5. Heat each corn tortilla in microwave for 30 seconds to soften.
  6. Using a 3 inch cutter (like a jar lid) cut 2 circles from each tortilla. 2
  7. Press each circle into the cup of a mini muffin pan, fold ing sides as needed. 3
  8. Place in 350 oven for about 12 minutes (until tortilla is crispy).
  9. Place each shell on cooling rack and fill with taco meat.
  10. Top with cheese and diced tomato and a leaf of cilantro (optional).

Bacon Cheeseburger Totchos

What you need:

  • 32 oz Tater Tots
  • 6 oz Velveeta
  • 1 cup Milk
  • 1 lb Ground Beef
  • 1 tsp Worcestershire Sauce
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/4 cup Ketchup
  • 1/4 cup Mustard
  • Pickles
  • 1/4 cup finely diced Onion
  • 6 slices Bacon

What to do:

  1. Preheat oven to 350.
  2. Bake Tater Tots according to package instructions.
  3. Cook bacon slices and cut into 1″ pieces.
  4. In a skillet cook ground beef, worcestershire, onion powder and garlic powder until brown.
  5. Drain grease and set aside.
  6. Melt Velveeta with milk, mixing well.
  7. Arrange Tater Tots on serving platter.
  8. Pour Velveeta on top.
  9. Spread browned ground beef over cheese.
  10. Top with mustard, ketchup, diced onion, diced pickle and bacon

What you need:

  • 2 lb Sweet Potatoes
  • 2 tbsp Olive Oil
  • 1/8 tsp Salt
  • 1/8 tsp Pepper
  • 1/8 tsp Garlic Powder
  • 1/8 tsp Paprika

What to do:

  1. Preheat oven to 450.
  2. Line baking sheet with parchment paper.
  3. Cut sweet potatoes into 1/4″ fries.
  4. Toss fries in olive oil to coat.
  5. Spread fries out on prepared baking sheet.

Baked Bacon Wrapped Velveeta Jalapeno Poppers

What you need: (Yield 24 poppers)

  • 1 lb Velveeta
  • 12 Jalapeno Peppers
  • 4 oz Panko Bread Crumbs
  • 2 Eggs

  1. Preheat oven to 400.
  2. Mix eggs and 1/4 cup water in bowl to make egg wash.
  3. Cut jalapenos lengthwise, remove seeds and white membranes with a spoon. 3
  4. Cut Velveeta into 24 1/2″ x 1/2″ x 3″ strips.
  5. Dip Jalapeno half and cheese strip in egg wash.
  6. Sprinkle with and roll in panko crumbs.
  7. Wrap in 1/2 strip of bacon and place on baking sheet. 2
  8. Bake for about 30 minutes or until bacon is crispy.

Loaded Sliced Baked Potatoes Recipe

INGREDIENTS:

  • 4 large baking Potatoes
  • 8 oz Cheddar Cheese
  • 3 sliced Green Onions
  • 1-2 tbsp Olive Oil
  • 5 slices Bacon
  • Salt and Pepper to taste

  1. Wash potatoes and pat dry.
  2. Make a series of vertical slices through the width of the potatoes, going about 3/4 way through the potatoes. Do not cut all the way through.
  3. Rub potatoes down with olive oil and place on baking sheet.
  4. Season with salt and pepper and bake at 400 for 45 minutes.
  5. Fry bacon; drain on paper towels ad cut into small pieces. 2
  6. Remove from oven and insert cheese and bacon into slices, being careful not to bust the potatoes. 1
  7. Return to oven for another 10 minutes.
  8. Garnish with green onion slices.

I love using Hawaiian rolls  for these sliders because they are a little sweet and the steak is full of flavor so this combination makes for a perfect lunch, appetizer or even dinner! Cheese Steak Sliders are perfect for parties and with Super Bowl coming up, this makes a perfect game day appetizer. Also, Cheese Steak Sliders are very kid friendly but if you have picky eaters, you can easily pull out the peppers and onions. 😉

Cheese Steak Sliders Recipes

INGREDIENTS:

  • 2 lb Boneless Round Roast (or similar)
  • 1 lb Mini Sweet Peppers (or Colored Bell Peppers)
  • 2 large Onions
  • 2 cloves Garlic
  • 2 tbsp Worcestershire Sauce
  • 12 Hawaiian Dinner Rolls
  • 6 slices Provolone Cheese
  • 1 Stick Butter
  • Salt
  • Pepper

DIRECTIONS:

  1. Slice the roast as thin as possible. 2
  2. Place 2 tbsp butter in a large skillet over medium heat.
  3. Peel and dice garlic and add to skillet.
  4. Peel and slice the onions and put in skillet.
  5. Cut off the tops of peppers, halve and remove any seeds.
  6. Slice lengthwise and add to skillet.
  7. Cover skillet and stir occasionally cooking for about 20 minutes. 5
  8. Take each roll and split in half to make bun. Butter both sides where split.
  9. Place on large skillet over medium heat until toasted. 4
  10. Remove bun from skillet. Take 1/2 slice of Provolone and fold it in half and place on toasted inside of bun and set aside.
  11. Repeat this for remaining rolls.
  12. Place 2 tbsp of butter in large skillet you have been using for toasting.
  13. Add 1 tbsp Worcestershire.
  14. Raise temperature to medium high.
  15. Add meat and stir until no longer pink. 3
  16. Grab a bun and add meat on top of the side with cheese.
  17. Add Onion and pepper mixture on top of meat and top with other half.
  18. Salt and Pepper to taste.
  19. Serve with French Fries or Tater Tots.

  • 12 Hawaiian Dinner Rolls
  • 6 slices Provolone Cheese
  • 1 Stick Butter
  • Salt
  • Pepper

Instructions

  1. Slice the roast as thin as possible.
  2. Place 2 tbsp butter in a large skillet over medium heat.
  3. Peel and dice garlic and add to skillet.
  4. Peel and slice the onions and put in skillet.
  5. Cut off the tops of peppers, halve and remove any seeds.
  6. Slice lengthwise and add to skillet.
  7. Cover skillet and stir occasionally cooking for about 20 minutes.
  8. Take each roll and split in half to make bun. Butter both sides where split.
  9. Place on large skillet over medium heat until toasted.
  10. Remove bun from skillet. Take 1/2 slice of Provolone and fold it in half and place on toasted inside of bun and set aside.
  11. Repeat this for remaining rolls.
  12. Place 2 tbsp of butter in large skillet you have been using for toasting.
  13. Add 1 tbsp Worcestershire.
  14. Raise temperature to medium high.
  15. Add meat and stir until no longer pink.
  16. Take a bun.
  17. Add meat on top of the side with cheese.
  18. Add Onion and pepper mixture on top of meat and top with other half.
  19. Salt and Pepper to taste.
  20. Serve with French Fries or Tater Tots.

If you’re looking for a really good Hot Wings recipe that’s healthier than most wing recipes then I’ve got you covered! With this recipe you boil and bake the wings instead of frying them and believe it or not, they turn out just as good and are way less fattening! These wings for hot but not ridiculously hot where you can’t even taste what you’re eating. 😉 Enjoy..

No Fry Buffalo Wings (Hot but not ridiculous)

INGREDIENTS:

  • 2 1/2 lb Chicken Wings
  • 1 tbsp Salt
  • 1 cup Frank’s Red Hot Sauce
  • 1/2 cup melted Butter
  • 1/4 Wishbone Italian Salad Dressing

  1. If not already done, cut apart wings and drumettes.
  2. Add salt to large pot of water and bring to a boil.
  3. Boil chicken in water for 9 minutes.  7
  4. Preheat oven to 450.
  5. Dry chicken with paper towels and place on a rack on a baking sheet. 5
  6. Bake in oven for 25 minutes.
  7. Turn each piece and bake an additional 15 minutes.
  8. Combine butter, hot sauce and dressing in a large bowl. 4

Cranberry sauce is a staple with Thanksgiving and Christmas dinners so it’s always good to have a yummy recipe on hand. This recipe calls for apples too so it’s kind of like a sweet cranberry apple sauce which is a perfect side for and Turkey or holiday dinner! Plus, this is much tastier than any store bought kind. 😉

Cranberry Apple Sauce

INGREDIENTS:

  • 4 Red Delicious Apples peeled, cored and sliced
  • 12 oz Fresh Cranberries
  • 1/4 cup Sugar
  • 1/4 cup Brown Sugar
  • 2 tbsp Lemon Juice
  • 1 cup Water
  • 1/2 tsp Cinnamon
  • 1/2 tsp Cloves
  • 1/2 tsp Nutmeg

DIRECTIONS:

  1. In a large sauce pan add Water, lemon juice and sugars.
  2. Stir over medium heat until sugar is dissolved.
  3. Add cinnamon, cloves and nutmeg.
  4. Add cranberries and apple slices.
  5. Bring to a boil and then reduce hat and simmer for 30 minutes.

There’s something I absolutely love about Macaroni and Cheese…I’m not sure if it’s the gooey cheese or just the fact that I’ve been eating since I can remember! Baked Macaroni & Cheese

INGREDIENTS:

  • 1 lb Macaroni
  • 2 (8 oz) Packages of Sharp Cheddar Cheese Chunk
  • 2 cups Milk
  • 1/2 Flour
  • 1/4 cup Butter
  • Salt & Pepper to Taste

DIRECTIONS:

  1. In a Large Pot Boil Macaroni until tender.
  2. Shred your Cheese and set aside.
  3. In a small saucepan melt butter over medium heat.
  4. Add flour and mix until brown amber color (Make a roux).
  5. Add Milk and Whisk until thick.
  6. Add Cheese one hand full at a time.
  7. Mix until cheese is all melted and smooth.
  8. Place cooked macaroni in baking pan.
  9. Pour Cheese mixture over macaroni.
  10. Bake for 30 minutes in a 350 degree oven
  11. Salt & Pepper to taste.

Everyone loves a good casserole right?! Well what about the traditional green bean casserole? It’s one of my favorite Holiday side dishes (in fact, I’m not sure why I don’t make it more often, other than November and December!) but I always seem to forget the exact way to make it without reading it somewhere. This recipe will help you remember and make a delicious side dish all throughout the year.

Green Bean Casserole

INGREDIENTS:

  • 1 can Cream of Mushroom Soup
  • 1 lb Green Beans
  • 1/4 cup Milk or Water
  • 4 oz French Fried Onions

DIRECTIONS:

  1. Wash green Bean and remove stems.
  2. In a large pot boil green beans for 20-25 minutes.
  3. Remove from heat and drain.
  4. In a medium sized bowl mix green beans, soup and milk/water.
  5. Pour into a casserole dish.
  6. Add a half of French Fried onions.
  7. Bake in 350 Oven for 30 minutes.
  8. Remove from oven and add remaining French Fried Onions.
  9. Bake for an additional 10 minutes.

Lemon Basil Salt

Sprinkle this yummy gourmet salt over a beautiful piece of broiled fish, in your popcorn, or on chicken to add a pop of fresh flavor. Use it in your favorite recipe in place of plain salt-substituting the same amount. Create a couple of flavors and put them in a basket with a couple kitchen utensils for a lovely gift.  In a beautiful glass jar tied off with ribbon or raffia this would make a great gift to take to your hostess at a party.

Ingredients:

  • 1 cup salt
  • 2 lemon’s
  • 6-8 Basil leaves
  • glass, airtight storage  container

 Directions:

  1. Zest both lemons. You do not have to have a fancy lemon zester tool- simply use the fine grate on your regular old cheese grater to zest.
  2. Bruise Basil leaves gently by laying them on a hard surface and tapping gently with a spoon to release their aromatic oils.
  3. In a medium sized bowl combine lemon zest and bruised Basil leaves with coarse ground kosher salt until evenly distributed.
  4. Place in an airtight container and store in a cool dark place. Store for up to 6 months.
  5. Allow salt to absorb flavors for 2-3 weeks before use.

One of my favorite things..actually, my favorite thing about Thanksgiving dinner is the mashed potatoes! I love potatoes of any kind but these roasted garlic mashed potatoes are delicious…creamy and flavorful! Be sure to make enough because these won’t last long at the dinner table. 😉

Roasted Garlic Mashed Potatoes

INGREDIENTS (Serves 6-7 people)

  • 4 lbs Russet Potatoes
  • 2 sticks (8 oz) room temperature Butter
  • 1 cup room temperature Heavy Cream
  • 1 head Garlic
  • 1 tbsp Virgin Olive Oil
  • Salt (to taste)
  • Fresh Ground Pepper (to taste)

DIRECTIONS

  1. Cut end off end of head of garlic, place in foil and drizzle with olive oil.
  2. Close up foil and bake in 400 degree oven for 30 minutes.
  3. Allow to cool.
  4. Peel and dice potatoes into 1/2″ cubes.
  5. Cover in water in large pan and boil 20 – 30 minutes, until soft.
  6. Drain potatoes.
  7. Add 4 cloves of the roasted garlic by popping out of their skins.
  8. Mash potatoes with a masher until everything is pretty mashed
  9. Add butter.
  10. Use hand mixer to smooth out any remaining lumps.
  11. Slowly add cream until potatoes reach right consistency.
  12. Season with salt and pepper to taste.

If you like butter and soft, warm, flavorful rolls then you will love this next recipe! The butter really helps flavor these rolls as well as the rosemary. Enjoy, but be sure to make enough, they won’t last long!

Rosemary Rolls

Ingredients

  • Frozen unbaked dinner rolls
  • 2 tablespoons butter divided
  • Fresh rosemary, chopped
  • Kosher Salt

Directions:

  1. Melt 1 tablespoon of butter in your cast iron skillet.  Remove from heat and cool for 10 minutes.
  2. Place the frozen rolls in the pan and cover with a cloth.  Place in a warm spot to rise for several hours.  Once the rolls have thawed and risen, melt the remaining butter.  Brush rolls gently with the melted butter, sprinkle on the rosemary and kosher salt.
  3. Bake according to the directions on the package until the rolls are golden brown.  Serve warm and watch them disappear!

What’s better than a nice warm bread bowl filled with comforting cheese soup on a cold winters day (or heck, any day for that matter)?! I love creamy soups and that is exactly what this next recipe is.

Did I mention it has BACON?! 😉

Enjoy…

Ingredients:

  • 1 pkg of bacon
  • 1 bag of fresh broccoli [in microwavable steam bag]
  • 2 cups or chicken stock
  • 1 bag of sharp cheddar cheese [shredded]
  • 1 small white onion
  • 1 spoonful of minced garlic
  • 1 16 fl oz carton of heavy whipping cream
  • 3 TBSP all purpose flour
  • 3 TBSP butter
  • pepper, onion powder, garlic salt, nutmeg, basil & red pepper flakes [I just sprinkled a little of each]

Directions:

1. Place bacon on baking sheet and cook in oven at 400 until crispy [make sure you keep a close eye on it-finely chop in food processor
before adding to soup].
2. While bacon is cooking, chop onions and broccoli in food processor [I chopped half the bag of broccoli, and left the other half as whole
pieces-make sure you steam the broccoli first before chopping].
3. Pour your chicken stock into a saucepan on medium heat then add the garlic, onion, and broccoli bits, cover and let cook on medium heat
until tender, then let simmer on low while still covered.
4. While veggies are cooking in stock, melt butter into a large pot, once butter is melted whisk in your flour until it forms a paste
5. Next you want to slowly whisk in the broth from the saucepan, then slowly add in the veggies
6. Once everything is combined, add your whipping cream, cheese, bacon & seasoning until everything melts together!

NOTE: I used a sourdough bread bowl for this recipe.

Everyone has those favorite restaurants they love in places they used to live. One of mine is a barbecue restaurant that I now live about 1,200 miles away from. My favorite thing to order there wasn’t the ribs or a sandwich, it was an appetizer: nachos with pulled pork on them.

I don’t know if I will ever get to enjoy those nachos again, but I have come up with what I believe to be a pretty good substitute. It’s a great way to turn some barbecue leftovers into a meal for the whole family, or pick up some pork at your famous barbecue restaurant, bring it home and make these. Trust me, they are great eating! They’re a fun meal for a movie or football night.

This is more of a method than a recipe in some ways. You can certainly tailor the amount to the number you need to feed, and top with what your family likes.

The chips are toped with a spice mix similar to a barbecue dry rub to give the dish a barbecue flavor. I top mine with hot pickled okra in place of the jalapenos on traditional nachos. You can find them in a jar near the pickles at your supermarket.
