It never fails. Every summer, someone in my house gets a cold. We’ve tried every remedy, from chicken soup to over the counter medicines, but what works best is Cheap Vegetarian Recipes: Asian Noodle Soup. It has the old standby of broth, but it’s made better with a bit of miso paste. Shitake mushrooms are well known in Asia for their healing properties, and noodles, of course, make everything go down easier. Best of all, it takes 20 minutes from boiling to table for this wonderful soup to start doing it’s job!
Finding Ingredients for Cheap Vegetarian Reicpes: Asian Noodle Soup
Most everything in this soup can be purchased at your regular grocery store. Miso paste is usually found in the refrigerated section of an Asian grocery, and the dried seaweed in the dry goods aisles. The shitake mushrooms, tofu, noodles, and soy sauce can be find in your favorite grocery, or the Asian grocery. I try and do a one stop kind of shopping, but my miso paste and seaweed have lasted for several batches, so I don’t have to go back for those very often.
Ingredients

- 1 gallon water
- ¼ C miso paste (red or white)
- 8 oz Shitake mushrooms, stems removed and discarded, tops sliced
- 6 cloves garlic
- ¼ C dried seaweed
- 1 pkg Chinese noodles
- soy sauce

Instructions
- Heat the water in a large stockpot with the miso.
- When the water starts to steam, add the mushrooms and garlic. Let simmer 15 minutes.
- Add the seaweed and break up the noodles, then add
- Allow to cook another 5 minutes.
- Serve hot with soy sauce.
