If you love chocolate then this recipe is definitely for you! This chocolate creme pie is really creamy and decedent. You can make this for a family or friend get together and it will surely impress them. It does take a little time and work to make it but it is seriously worth it. Enjoy!!
Chocolate Creme Pie
Chocolate Oreo Cookie Crumb Crust:
- 16 Oreo cookies, about 2-1/2 cups
- 2 tbsp unsalted butter, melted and cooled
Chocolate truffle filling:
- ¾ cup heavy cream
- ½ cup whole milk
- 2 tbsp. unsalted butter, cut into small pieces
- 1¼ cups semisweet chocolate chips
- ½ tsp. salt
- 2 egg yolks
Chocolate mousse topping:
- 1½ cups heavy cream
- ½ cup semisweet chocolate chips
- 1/8 tsp. salt
I suggest starting with the mousse topping, as it takes the longest to prepare.
For the crust:
Adjust oven rack to middle position and heat oven to 350 degrees. In a food processor or blender, process cookies until finely ground. Transfer crumbs to a bowl, add butter and use fingers to combine until butter is evenly distributed.
Pour crumbs into 9-inch pie plate. Press crumbs evenly onto bottom and up the sides of pie plate until firmly in place. Refrigerate crust 20 minutes to firm crumbs, then bake until set, about 10 minutes. Let crust cool while preparing filling.
For the filling:
In a small pot, bring cream and milk just to a boil. Put chocolate in a heatproof bowl and pour in cream mixture; whisk until well blended. Add butter, salt, and yolks and whisk until well combined. Pour into pie shell and bake until just slightly wiggly in the center, about 20 minutes. Let cool for about 2 hours.
For chocolate mousse topping:
In a small pot, bring the cream just to a boil. Put chocolate and salt in a large, heatproof bowl and pour in cream; whisk until combined. Cool to room temperature, then cover and chill 8 hours, or overnight.
To finish the mousse, beat with an electric mixer until stiff peaks form. Spoon mousse onto pie and spread evenly. When chilled, sprinkle with chocolate chips and drizzle with Hershey’s syrup if desired.
