Copycat Noodles & Company Spaghetti and Meatballs

I was introduced to Noodles & Company on a vacation.  I always like to try out places that I don’t have near home, to get a different flavor that I might not be able to find.  Noodles & Company was one such place.  They have a wide variety of noodle dishes, from Asian to American, and of course Italian.  One of their stand-out dishes is their Spaghetti and Meatballs.  Tender beef and sausage meatballs simmered in a fresh tomato sauce that is ladled over freshly cooked noodles is a meal fit for a king.  Now you can make Copycat Noodles & Company Spaghetti and Meatballs at home in less than an hour from scratch!

Ingredient Tips for Copycat Noodles & Company Spaghetti and Meatballs

The recipe for Copycat Noodles & Company Spaghetti and Meatballs calls for white wine.  Choose a wine that is dry for best results.  Sweet wines will add an odd sweetness to the resulting sauce as well as fruity flavors that might not be suited to the tomatoes.  Use an Italian sausage that you enjoy, whether it be hot or mild.  If you can only get it in links, simply slice the skin on the links and remove the meat.  I doubled the recipe for meatballs when I made it, as my family loves meatball subs from the leftovers, but the recipe below is written for a single batch.

Copycat Noodle & Company Spaghetti and Meatballs

Ingredients

  • Meatballs:
  • ½ lb Italian sausage
  • 1 lb ground beef
  • 1 egg
  • 3 medium cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 teaspoons Italian seasoning
  • 1 medium onion, finely diced
  • 1 egg
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons half and half
  • Pasta Sauce:
  • 1/4 cup extra-virgin olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon sugar
  • ¼ cup white wine
  • 1 (32-oz.) can of crushed tomatoes
  • 1 (32-oz.) can of tomato sauce
  • 2 bay leaves
  • 1 teaspoons crushed red pepper

Instructions

  1. To make the meatballs, heat oven on the broiler setting.
  2. In a large bowl, mix all the ingredients well.
  3. Oil a baking sheet with olive oil.
  4. Roll the meat mixture into 1 ½ inch balls and place on the baking sheet.
  5. Broil 8 to 10 minutes, until browned. Turn the meatballs, and broil another 8 to 10 minutes, until all of the meatballs are browned.
  6. Remove and place in sauce.
  7. To make the sauce, place the olive oil in a large saucepan and heat over medium heat.
  8. Saute the onion and garlic until onion is clear, about 3 minutes.
  9. Add the salt, pepper, and sugar, stirring well.
  10. Add the white wine and deglaze the pan.
  11. Stir in the tomatoes (undrained), bay leaves, and red pepper.
  12. Add meatballs.
  13. Simmer 30-40 minutes, until meatballs are thoroughly cooked.
  14. Serve over spaghetti or other pasta.

Copycat Noodles & Company Spaghetti and Meatballs Leftover Ideas

There are so many things you can do with leftover Copycat Noodles & Company Spaghetti and Meatballs.  Grease a casserole dish, toss in the pasta, top with sauce and meatballs and cover with mozzarella cheese, then bake for a delicious one-dish dinner.  Or, like my family, buy some French bread and make wonderful meatball subs with warmed up meatballs, sauce, and provolone cheese.

Meatballs:

½ lb Italian sausage

1 lb ground beef

1 egg

3 medium cloves garlic, minced

1 teaspoon salt

1/2 teaspoon ground black pepper

2 teaspoons Italian seasoning

1 medium onion, finely diced

1 egg

1/3 cup grated Parmesan cheese

2 tablespoons half and half

 

Pasta Sauce:

1/4 cup extra-virgin olive oil

1 medium onion, finely chopped

3 garlic cloves, finely chopped

1 teaspoon sea salt

1 teaspoon freshly ground black pepper

1 tablespoon sugar

¼ cup white wine

1 (32-oz.) can of crushed tomatoes

1 (32-oz.) can of tomato sauce

2 bay leaves

1 teaspoons crushed red pepper

 

To make the meatballs, heat oven on the broiler setting.

In a large bowl, mix all the ingredients well.

Oil a baking sheet with olive oil.

    I love to go to your postings. I would like to try the meatball and sauce recipe.. I noticed bread crumbs in your picture, but nothing to say how much breadcrumbs to use. Do I make my own judgement in using it…

    The ingredients for the meatballs says “one egg” twice. Do I use one egg or two??
