If you are a soup lover then I have just the recipe for you! This Copycat Panera Broccoli Cheddar soup is one of my most favorite soups ever and this recipe copies it perfectly! Enjoy this creamy and hearty comfort soup all year long but especially now with the cooler weather. 😉

Copycat Panera Broccoli Cheese Soup –

(Print the recipe at the very bottom of this page)

INGREDIENTS

  • 1/2 chopped Onion
  • 1/4 cup melted Butter
  • 1/4 cup Flour
  • 2 cup Half and Half
  • 2 cup Chicken Stock
  • 2 large bunches Broccoli
  • 2 Carrots
  • 1/4 tsp Nutmeg
  • 8 oz shredded Sharp Cheddar Cheese
  • Salt and Pepper to taste

DIRECTIONS:

  1. Cut carrots into small strips.
  2. Break apart broccoli florets into small pieces.
  3. Saute Onion in 1 tbsp of melted butter until transparent.
  4. Make a roux using remainder of melted butter and flour. Cook about 5 minutes over medium heat.
  5. Add in half and half stirring constantly.
  6. Add in chicken stock and simmer for 20 minutes.
  7. Add vegetables and cook for 25 minutes over low heat.
  8. If you want a smooth soup, at this point puree in a blender and return to heat or use immersion blender.
  9. Add cheese and nutmeg.
  10. Add salt and pepper to taste.

    My favorite soup ever and I don’t even go to Panera to get the soup anymore. My recipe is almost the same, I add minced garlic to mine, just 1-2 cloves. I make this almost all year long.

    The nutmeg in this ruins the soup. I made it the other day and my boyfriend wouldn’t even eat it…. I ended up throwing it out. Leave the nutmeg out and I’m sure it would have been much better. Yuck.

    Just made this delicious soup for dinner! It turned out really well. Next time I might cook the veggies a little longer to soften them, mine were quite firm. I disagree with Justine about the nutmeg, we didn’t taste it at all so I really had no problem. Another tip for next time, more cheese!! Though that’s just my personal preference 🙂

    I absolutely LOVE this soup. It tastes just like panera. We finished it all so I am making more. This time I’m cutting the amount of nutmeg in half. It wasn’t bad, but I tasted the nutmeg a little too much. I’m also adding garlic with the vegetables.

      I also chopped the carrots smaller than in the picture so they cook just enough but are not mushy.

      I’d like to know that, too. I think since it has 4 c. liquid and a lot if broccoli, 6 cups would be a good estimate. I’m going to take a chance and not double it for 6 people on Christmas Eve. Hope it’s not a mistake.
