Crispy Cheddar Cheesy Chicken

If you’re looking for a super easy and delicious meal that the pickiest eater will love, then you will definitely love this next recipe. My kiddos are the pickiest of picky and begged to not eat this (before they tried it of course)! I told them nope, they have to at least try it… “what if we don’t like it?!” they kept asking. I replied with… “you WILL”.  Sure enough, about 5 minutes later I hear, “THIS IS YUMMY!!”. Yay! A successful dinner that I’m keeping on the books.

Enjoy this cheesy chicken recipe…it’s a keeper around here. The recipe is below and you can also watch the video HERE (and below) on how to make it!

Crispy Cheddar Cheese Chicken

Ingredients

  • 4 large chicken breasts
  • 1.5 sleeves Ritz crackers
  • 1/4 t salt
  • 1/8 t pepper
  • 1/2 C milk
  • 3 C cheddar cheese, grated (we use the Mexican Blend but any kind works)
  • 1 1/2 t dried parsley
Sauce:
  • 2 10 ounce can cream of chicken soup
  • 4 T sour cream
  • 4 T butter

Directions:

  1. Pre-heat oven to 400 degrees. F.
  2. Put Ritz in a bag and smash them into fine pieces
  3. Cut the chicken breasts into large chunks (I cut mine into 4 pieces)
  4. Pour the milk, cheese and cracker crumbs into 3 pans.
  5. Put the salt and pepper in with the ritz crumbs and stir
  6. Dip the chicken in the milk and then into the cheese (push the cheese onto it) then into the cracker crumbs (you will also need to push the crumbs onto the cheese chicken).
  7. Spray your 9×13 pan with cooking spray and place each piece of chicken into it
  8. Use the remaining cheese and crumbs (if any) and pour them onto the top of the chicken in your pan
  9. Sprinkle the dried parsley over the chicken
  10. Cover pan with foil
  11. Bake in oven for 35 minutes
  12. Take foil off and bake another 10 minutes (this is when I make the sauce)
Sauce:
  1. Combine cream of chicken, sour cream and butter in a pan over the stove and whisk until melted.
  2. Pour over the chicken (we like to eat this with rice and pour the sauce on the rice as well).

    I do this recipe and used bbq Fritos instead of ritz crackers because it’s all I had but it goes over big!! Everyone loves it!

    trying it tonight. i too have a picky eater who is emerging out of his shell and trying need foods. I think he’ll love this. i just the chicken into bite sizes chunks. cant wait to feed the family tonight. 🙂
