Crock Pot Copycat Chipotle Carnitas

One of my favorite “fast food” restaurants is Chipotle and if you’ve never been there, I highly recommend it. This copycat recipe is for their Carnitas and guess what else…it’s made in the crock pot! Super easy and tastes delicious. We love to eat this meat with corn tortillas or in burritos with some rice and beans. Enjoy!
Crock Pot Copycat Chipotle Carnitas
Ingredients:
- Whole Pork Shoulder or Pork Butt
- 2 tbsp Vegetable Oil
- 1 Onion chopped
- 2 cans of Rotel Tomatoes & Chiles
- 2 tbsp Minced Garlic
- 1/2 tsp Oregano
- 1/4 tsp Ground Cloves
- 2 tsp dried Chipotle Pepper
- 1 tsp Cumin
- 1 cup Beef Broth
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 bay leaves
Directions:
- Heat oil in large pan and brown pork on all sides.
- Place pork in slow cooker and add remaining ingredients on top of pork.
- Cook on low 8-10 hours.
- Remove pork and shred (remove if it was not boneless).
- Remove bay leaves.
- Drain about half of the liquid.
- Add shredded pork back to juices in the crock pot.

1/8/16 – tastes NOTHING LIKE CHIPOTLE’s Carnitas – followed recipe completely – not even a hint of the flavor of Chipotle’s pork
I love it! I’ve made it multiple times . Every time I make it,it’s liked more than chipotle . Even made it for my son’s grad party last year , it was a huge hit !
