This Fruit Spinach Salad Recipe has a couple secret ingredients…
I am a HUGE fan of salads as well as fruits so that’s why I am in love with this next recipe. I mean what’s more refreshing than a juicy, sweet and salty, cold, crisp fruit salad on a hot summer day?! Maybe some homemade lemonade 😉 but we have to eat too!
What makes this spinach salad recipe different than others is that it has 2 secret ingredients….and they are lemon and sugar! Each one has an important job in a good salad recipe. The lemon keeps the fruit from turning brown and also helps keep it crisp. The sugar helps any of the bitter fruit taste delicious. There’s nothing worse than taking a bite of your salad and having a bitter piece of fruit and that’s why you add a little sugar.

Ingredients

- Lots of fruit....here is what I used:
- 1/2 cup Cantaloupe
- 1/2 cup Strawberries
- 1/2 cup Blueberries
- 1/2 cup Pineapple
- 1/2 cup Green Grapes
- 1/2 cup Red Grapes
- 5 cups Spinach
- Your favorite dressing
- 1 tablespoon Lemon juice
- 1-2 tablespoons sugar
- Toppings are optional (I added sliced almonds and roasted walnuts)

Instructions
- First cut and wash fruit
- Combine all fruit and sugar in a bowl and stir then place in fridge for 1 hour so sugar can sweeten the fruit and get their juices flowing
- Wash spinach and cover with your favorite dressing
- Add lemon juice and mix
- Add fruit and fold in (be careful not to stir too much as fruit will be soft)
- Add your toppings
- Enjoy!

The name made me remember juicy fruit gum. This salad sounds wonderful for a summer lunch. I love the lemon and sugar combo for the fruit.
