Garlic Sauteed Spinach and Mushrooms ~ Simple and Earthy
Spinach truly is a wonder food. You can do so much with it, from making it a topping, to a side dish, breakfast to dinner. Not to mention, it’s pretty easy to grow in a backyard garden. If you don’t have space in your yard, it’s also easy to get at the supermarket, and pretty inexpensive. Full of great vitamins and minerals, Garlic Sauteed Spinach and Mushrooms is a great addition to your everyday diet.

One of the interesting quirks about spinach is how much it reduces, just by steaming it. I always make twice the Garlic Sauteed Spinach and Mushrooms than what I think I’m going to need just so I have enough. I’ve been known to make ridiculous amounts of spinach just to make sure I have what I need, plus a little extra for omelettes the next day.

- 1/4 C olive oil

Instructions
- Heat the olive oil in a stockpot over medium heat.
- Sauté the mushrooms and garlic until they are starting to brown slightly.
- Add the spinach to the pot. Stir and cover. Steam for 2-3 minutes, until the spinach is wilted but not mushy.
- Serve with vinegar, parmesan, and crusty bread.
