Ingredients

  • 2 bags spinach, rinsed and shook dry
  • 8 cloves garlic, peeled and sliced
  • 8 oz baby bella mushrooms, cleaned and sliced
  • 1/4 C olive oil

Instructions

  1. Heat the olive oil in a stockpot over medium heat.
  2. Sauté the mushrooms and garlic until they are starting to brown slightly.
  3. Add the spinach to the pot. Stir and cover. Steam for 2-3 minutes, until the spinach is wilted but not mushy.
  4. Serve with vinegar, parmesan, and crusty bread.
