Ice Cream Sandwich Cake

Once again I have another easy recipe which the kiddos love, love, love! What I love about it is it’s super duper easy to make, quick, inexpensive, no baking needed and oh so good!
The kids can even help make it which makes them feel special.
Another thing I love about this Ice Cream cake is that it stays pretty well put together since there are layers of chocolate sandwiches (these sandwiches help keep it from melting and turning to mush).

Ingredients:

- 12 Ice Cream Sandwiches
- 1 8oz Tub of Cool Whip (Defrosted)
- Chocolate or caramel topping
- Your favorite topping (M&M’s, Cookies, Candy, etc)
Directions:
- Start by layering the ice cream sandwiches (I like to do 4 on bottom)
- Then place another 4 the opposite direction and keep doing this until you’ve all of the sandwiches
- Top with cool whip (around sides too)
- Use your toppings (chocolate sauce, candies, etc)
- Some people like to put layers of frosting or cool whip in-between each layer of sandwiches but I personally like to just use the sandwiches).

we made this tonight.. and oh goodness ladies… talk about hitting your sweet tooth just right 😀
I was wondering say I wanted more cake, like baking one square sheet of pink box cake and incorporate that in the middle say after two layers or ice cream then put the cake then an additional two layers of ice cream because as delicious as it looks it’s mainly just ice cream and I would like to even it out a bit.. but my main concern is say I make it Friday but want to use it for sat, is it best if I freezer it, but will that harm the bread of the cake in anyway,? I also wanted to make my own whipped cream. With heavy whipping cream, powdered sugar n vanilla.. I know that if I were to stick that whipping cream into the freezer it would lose it texture.. I like it because its not so sweet its just right .. or is it best just to make it the day of? But that the thing if I do make it the day of it will be in the morning and the time in between it being done and when I’ll use it.. I’d still havt to put it in the refrigerator or freezer .. so what am I to do I don’t want it to melt in my frige. Or become to hard in the freezer

Made this and decorated the top beautifully but when ready to serve the ice cream bars just fell apart when starting to eat a piece of the cake. . Was like eating a plate of ice cream bars. Probably won’t make it again.
