Where did IHOP put the Country Griddle Cakes?!?

When IHOP took Country Griddle Cakes off their menu, I wondered why.  The tasty, crispy crunch of a pancake was enough to surprise you and put a smile on your face.  It’s been a few years, and IHOP doesn’t seem to want to put Country Griddle Cakes back on the menu, but now they don’t need to.  You can make your own Country Griddle Cakes at home, with this easy and simple recipe!

The Secret Behind Country Griddle Cakes

The secret is so simple, yet it’s something most people don’t eat very often: instant cream of wheat!  Since its raw in the Country Griddle Cakes batter, it provides a bit of crisp that gives you a great bite.  The flavor is everything I remember from the IHOP version, making me ecstatic.

Serving Size: Serves 4

Country Griddle Cakes Main IHOP Copy Cat: Country Griddle Cakes Recipe

Ingredients

  • 2 1/2 C flour
  • 2/3 C sugar
  • 2 t baking powder
  • 2 t baking soda
  • 3/4 C buttermilk powder
  • 3 packets instant Cream of Wheat
  • 1 t salt
  • 3 C milk
  • 2 eggs
  • 1/2 C vegetable oil

Instructions

  1. In a large bowl, combine the flour, sugar, baking powder and soda, buttermilk powder, cream of wheat and salt. Mix well.
  2. In a small bowl, mix the milk, eggs, and vegetable oil.
  3. Slowly pour into the dry ingredients, and stir to mix well.
  4. Heat a griddle to 350 degrees F. Spray lightly with cooking spray.
  5. Pour 1/3 to 1/2 cup of batter onto the griddle. When bubbles form and the edges get dry, flip the pancakes.
  6. When browned on the second side, serve!
  7. These go great with maple syrup, fruit, and your favorite breakfast meats!

Country Griddle Cakes Make Awesome Leftovers!

If you don’t eat all the pancakes, cook up the pancakes and cool them on a plate.  Wrap them in plastic wrap and refrigerate them.  Whenever you’re hungry for a pancake, heat them in the microwave for a minute or two.  They’ll be as good as fresh made!  You can even freeze them for later!  Talk about the easiest breakfast!

 

2 1/2 C flour

2/3 C sugar

2 t baking powder

2 t baking soda

3/4 C buttermilk powder

3 packets instant Cream of Wheat

1 t salt

3 C milk

2 eggs

1/2 C vegetable oil

      Most grocery stores carry it in the baking section of the store, with the powdered milks. If you can find it, replace the buttermilk powder and milk with 3 cups of buttermilk. The buttermilk powder will stay fresh for months in your refrigerator, and works perfectly in any recipe requiring buttermilk. Use 4 tablespoons of powder for each cup the recipe asks for, in with the dry ingredients. Use regular milk or water for the moisture, in whatever amount the recipe calls for!
