It’s Recipe Wednesday!

If you’d like more info on what Recipe Wednesday is and how you can win a gift card by being a part of it, you can go here. I need more recipes!! =) Please send me more!

This recipe was submitted by Tammy! Thank you, I love pasta and cheese so this looks so delicious! Lots of coupons for it too, actually there is a coupon for every item!

“Easy Hammy Mac ‘n Cheese”

Ingredients:

1 lb. pasta
– Use $0.55 off Barilla Pasta AND Sauce 5/1 SS (save the sauce for another time)

– Use $1/1 Mueller’s 100% Whole Grain Pasta printable

1-2 lbs. sharp cheddar cheese, shredded –

-Use $1/2 Market Pantry Shredded or Block Cheese Target printable

2 T. margarine, melted
4 T. margarine, softened
– Use $1/2 Land O Lakes Margarine printable

1 can evaporated milk

– Use $0.50/2 Nestle Carnation Evaporated Milk printable

1-2 cups diced or cubed ham
– Use $2/1 Farmland Spiral Sliced Bone-In Ham 4/17 SS

Directions:

  • Preheat oven to 375˚ F.
  • Prepare the pasta according to the package directions; cook according to package directions.
  • Meanwhile, pour the melted margerine into the bottom of a 9×13″ pan (or a larger one, if you use extra cheese and/or 2 c. ham).

  • Layer half of the pasta into the pan, along with half the ham, and then top with half of the cheese.
  • Dot with 2 T. softened margerine. Repeat layers, ending with remaining margerine.

  • In a separate bowl, whisk together the 2 eggs and evaporated milk.
  • Pour evenly over the pasta.
  • Bake for 20 minutes.

(Tammy’s son who can hardly wait to eat this yummy meal!)

You can make this ahead of time and put it in the refrigerator overnight, waiting to add the eggs and milk until right before baking it, and it comes out great! It also tastes good re-heated in the oven or the microwave, but in the oven it does get a little cruncy, on top.

Do you think if I leave out the eggs at the end of the recipe and maybe change the noodles if they have eggs in it that it would drastically change to taste of the dish? Just wondering. My son is allergic to eggs but I think he would really love this dish. I would love to know how to take out the eggs without changing the way the dish is suppose to taste.

Melissa, I just saw your comment. Personally, I would just use more evaporated milk, or an egg substitute. Good luck!
