PBnJ Mock Crepes are a Whimsical Start to the Day
I love making whimsical breakfast goodies, and PBnJ Mock Crepes certainly fit the bill. They are a simple, great breakfast that is so easy to make, your kids can make them! They combine the delicious versatility of crepes with the childhood favorite of PBnJ in a fantastic way. The cool thing about PBnJ Mock Crepes is that the ingredients are basic staples that you might always have in your house. I love recipes that I don’t have to run out and get something special for them.

If you don’t like PBnJ, you can still make PBnJ Mock Crepes! Try softened cream cheese and fruit, just a fruit spread, or even brown sugar and cinnamon. The sky is really the limit when it comes to fillings for PBnJ Mock Crepes. Use your imagination and find fillings that you love for PBnJ Mock Crepes. You’ll love these!
Ingredients
- 8 slices of bread
- peanut butter (or other nut butter)
- jam, jelly, or preserves
- 2 eggs
- 3 T milk or cream
- 2 T butter
- 1/4 C sugar
- 1 T ground cinnamon

Instructions
- Cut the crusts from the bread and discard.
- Flatten the bread with a rolling pin.
- Spread peanut butter thinly on the bread.
- Spread the jam on the peanut butter.
- Roll up along the short end of the bread.
- Whisk the eggs and cream together.
- Heat a saute pan on medium heat. Spray with cooking spray if needed.
- Dip the mock crepes in the egg mixture and place in the pan, seam side down.
- Brown and turn until all sides are golden brown.
- Melt the butter and baste the mock crepes.
- Mix the cinnamon and sugar and roll the buttered mock crepes in it.
- Serve warm.
