Everyone has those favorite restaurants they love in places they used to live. One of mine is a barbecue restaurant that I now live about 1,200 miles away from. My favorite thing to order there wasn’t the ribs or a sandwich, it was an appetizer: nachos with pulled pork on them.
I don’t know if I will ever get to enjoy those nachos again, but I have come up with what I believe to be a pretty good substitute. It’s a great way to turn some barbecue leftovers into a meal for the whole family, or pick up some pork at your famous barbecue restaurant, bring it home and make these. Trust me, they are great eating! They’re a fun meal for a movie or football night.
This is more of a method than a recipe in some ways. You can certainly tailor the amount to the number you need to feed, and top with what your family likes.
The chips are toped with a spice mix similar to a barbecue dry rub to give the dish a barbecue flavor. I top mine with hot pickled okra in place of the jalapenos on traditional nachos. You can find them in a jar near the pickles at your supermarket.
Ingredients
- 1 t. paprika
- 1/2 t. onion powder
- 1/4 t. cumin
- 1/4 t. black pepper
- Tortilla chips
- Pulled pork (1/4 to 1/2 pound)
- Shredded cheddar cheese (2 cups)
- 1 large tomato, diced
- 1 small red onion, diced
- 5-6 pieces hot pickled okra, sliced secret ingredient makes it taste SO good!
- Sour cream
- Cilantro
Instructions
- Preheat oven to 450 degrees.
- Spray a pizza pan or baking sheet with nonstick cooking spray.
- Spread chips in the pan.
- Mix paprika, onion powder, pepper and cumin in small bowl and sprinkle over chips. BBQ Flavor
- Top with pulled pork and cheese.
- Bake 10-12 minutes, until cheese is melted and edges of chips start to brown.
- Top with tomato, onion, okra, sour cream and cilantro.
