I have the pickiest eaters on the planet…and then there’s me, the one who will eat and try anything! I have to come up with ways to impress all of our palettes. I don’t care for super plain food and they don’t care for fancy food. With that being said, this recipe is absolutely perfect for my whole family. It’s one of my favorite things to make and is full of flavor (there’s GARLIC in it!) but no weird chunks of anything (that’s what the kiddos dislike).
This cheesy pasta casserole is so delicious and makes really good leftovers. It’s super cheesy, creamy, garlicky and full of flavor. Did I mention that it’s SUPER easy to make too?! Enjoy!
Ranch Bacon Chicken Casserole
INGREDIENTS:
4 chicken breasts (cooked and cubed)
1 small box (10 oz) Rotini noodles – my box was bigger so I cooked less pasta
8-10 thin slices of Bacon cooked and chopped
4 cloves of garlic, minced
2 Tbsp flour
1 cup Milk
1 cup of Ranch Dressing (from the bottle)
3 Tbsp of butter
2 cups Mexican Cheese Blend
DIRECTIONS:
- Pre-heat oven to 350 degrees F
- Cook your chicken (I boiled mine) and then cut it into cubes
- Cook pasta al dente and set aside
- Cook bacon and chop up (I love using the microwave kind and using my hands to break it up)
- Melt butter in pan and add minced garlic (do not brown) and mix for about 1 minute in low to medium heat
- Add flour and chicken to pan and mix for 1 minute
- Add ranch and milk and mix for 2 minutes
- Then, add bacon and cheese and mix well
- Pour over pasta and mix together
- Pour pasta mixture into greased casserole dish (I use a 9×13) and cook in oven for 10-15 minutes until cheese is melted!
- Enjoy! (My kids liked adding red marinara sauce to it – I just eat it the way it comes out and LOVE it!)
