This recipe was submitted by Heather! Thank you, I have never had these but the ingredients and picture looks so good!

“Hamballs”

Ingredients:

Main items:

1/2 lbs. ham ground
1 1/2 lbs. ground pork (Best thing to do is go to your local meat market and ask them to grind the ham and pork for you)
1 cup. cracker crumbs… (Ritz crackers and mash them in a bag).
1 cup. Milk
1/4 t. pepper
2 eggs
1 t. worchestire sauce

Sauce:
1 1/2 cup. brown sugar
1 T. dried mustard
1/2 cup. vinegar
1/2 cup. water

Directions:

Keep the sauce items separate, mix all the “main items” together with the meat and form into round balls (as big or little as you want). Set aside.

For the sauce: Bring this mixture to a boil and pour over balls.

Cover with tinfoil and bake for 2 hours at 350 degrees. After 40 minutes of it baking take the tinfoil off and continue checking the hamballs every 15 minutes. Flip them so they don’t burn.

Here we go….

Screen shot 2012 02 29 at 7.56.48 PM My FUNKY Leek & Rice Recipe...Plus a Special Substitute for Healthier Sour Cream!Ingredients:

1 Leek (chopped) – this is sorta a kind of onion in my opinion and you only use the long stem part of it.

Tahini – found at the health food store, it tastes a lot like peanut butter and is good for ya!

Rice (I use 2-3 cups of uncooked rice)

Plain Greek Yogurt

Directions:

Screen shot 2012 02 29 at 7.58.46 PM My FUNKY Leek & Rice Recipe...Plus a Special Substitute for Healthier Sour Cream!1 – You need to soak the leek stems in a bowl of water because these have a TON of dirt in them and this is the best way to get the dirt out of all the crevices…I was going to post a picture of the dirtiness inside my leek but I didn’t want to gross you all out….this is a recipe for a meal after all.

Screen shot 2012 02 29 at 7.58.36 PM My FUNKY Leek & Rice Recipe...Plus a Special Substitute for Healthier Sour Cream!2 – Finely chop the leek and put in your rice cooker over the rice and water.

Screen shot 2012 02 29 at 7.58.20 PM My FUNKY Leek & Rice Recipe...Plus a Special Substitute for Healthier Sour Cream!3 -  After you cook the rice with the leeks, it will look like the above picture. Add as much Tahini (peanut butter taste) and greek yogurt as you’d like!

*I also LOVE to add a lot of parmesan cheese to this! Just the kind in the bottle.

Screen shot 2012 02 29 at 8.19.33 PM My FUNKY Leek & Rice Recipe...Plus a Special Substitute for Healthier Sour Cream! On a side note – I am having something that you may think sounds better….grilled steak and a sweet potato! Here’s a fun tip though….In my sweet potato I use Plain Greek Yogurt instead of Sour cream and guess what?! It’s healthier for ya and tastes the same!

This recipe was submitted by Brittany! Thank you! These sounds so yummy and I am loving the idea at the bottom about making them into an easy dessert! Sounds good to me…

*Crab Rangoon*

Ingredients:

Won-ton wraps

8 oz Cream Cheese

8 oz Crab

1 tsp Scallion, 1 tsp Red Onion, 1 tsp minced garlic clove

1/2 tsp soy sauce

1/2 tsp Worcestershire sauce

canola oil, medium pot, paper towels, small bowl water

Directions:

1) Combine Cream Cheese and Crab, stir well. Add sauces, scallion, onion and garlic. Stir

2)Put enough oil in pot to fry 6-7 Rangoon’s. Do not crowd pot, they will stick together. Heat to 375-400 degrees. (Med- high does the trick)

3)Lay out won-ton wraps in a diamond shape. Wet the edges then place 1 tsp of crab mix in the center of each.

4)Seal edges by flipping one side to meet the other. Press firmly & run fingers across to ensure it’s closure.

5)Place on plate with dry paper towel on bottom and damp covering the Rangoon.

6)Place 6-7 won-tons in oil for about 1-1 1/2 minutes. *Don’t crowd!* Flip if necessary. Rangoon’s should be golden brown.

7)Put on plate with paper towels so oil can be soaked up. Enjoy after cooled a couple minutes. DELICIOUS!

For Dessert: OoOolala-

*If you have extra wraps try throwing some cut up bananas, cinnamon, nutmeg, cream cheese, brown sugar and caramel in them. Top with ice cream or cool whip for a delicious dessert.

This recipe was submitted by Tessie! Thank you, I am now craving this YUMMY looking recipe! Mmmmm….

“Chicken Enchiladas”

Ingredients:

1-1 1/2 lbs-chicken, white meat, any cut would work. I use the boneless, skinless chicken breast in the bag and I use 2 or 3 larger pieces. Seems to be cheaper than the meat department packs.
1-onion
1-10 oz can enchilada sauce.
10- burrito size tortillas
8oz-Sour cream
Shredded cheese

Directions:

  • Chop up the onion and add to chicken in a pot of water.
  • Boil the chicken until cooked thoroughly. Then chop up into small pieces, almost string like. You can also use a food processor as I do.
  • In a bowl combine the chicken and sour cream.
  • Sprinkle in a little cheese.
  • Then, put the chicken in the tortillas and roll up. You should have enough chicken to make 8-10 enchiladas.
  • Line the enchiladas up in a cooking dish. (Good idea to line the dish with foil to make for easy clean-up)
  • Then, pour the enchilada sauce over the burritos and top with cheese (lots in our case).
  • Bake about 15 minutes at 350. Just long enough to let the cheese melt and the enchiladas to get good and hot.

Screen shot 2011 05 11 at 12.01.24 PM Its Recipe Wednesday! Easy Hammy Mac n Cheese(Tammy’s son who can hardly wait to eat this yummy meal!)

You can make this ahead of time and put it in the refrigerator overnight, waiting to add the eggs and milk until right before baking it, and it comes out great! It also tastes good re-heated in the oven or the microwave, but in the oven it does get a little crunchy, on top.
