You can make this ahead of time and put it in the refrigerator overnight, waiting to add the eggs and milk until right before baking it, and it comes out great! It also tastes good re-heated in the oven or the microwave, but in the oven it does get a little cruncy, on top.

This recipe was submitted by Tessie! Thank you, I am now craving this YUMMY looking recipe! Mmmmm….

“Chicken Enchiladas”

Ingredients:

1-1 1/2 lbs-chicken, white meat, any cut would work. I use the boneless, skinless chicken breast in the bag and I use 2 or 3 larger pieces. Seems to be cheaper than the meat department packs.
1-onion
1-10 oz can enchilada sauce.
10- burrito size tortillas
8oz-Sour cream
-Use $1/2 Friendship Cottage Cheese or Sour Cream 4/17 SS
Shredded cheese
-Use $1/2 Market Pantry Shredded or Block Cheese Target printable

Directions:

  • Chop up the onion and add to chicken in a pot of water.
  • Boil the chicken until cooked thoroughly. Then chop up into small pieces, almost string like. You can also use a food processor as I do.
  • In a bowl combine the chicken and sour cream.
  • Sprinkle in a little cheese.
  • Then, put the chicken in the tortillas and roll up. You should have enough chicken to make 8-10 enchiladas.
  • Line the enchiladas up in a cooking dish. (Good idea to line the dish with foil to make for easy clean-up)
  • Then, pour the enchilada sauce over the burritos and top with cheese (lots in our case).
  • Bake about 15 minutes at 350. Just long enough to let the cheese melt and the enchiladas to get good and hot.

This recipe was submitted by Colleen! Thank you, I’ve never had these but they look and sound delicious! If you’re willing to put in a little extra time to make these, you may have yourself and family a yummy treat. What perfect timing for Easter too!

“Hot Cross Buns”

A little message from Colleen:
I got my eggs on sale this week for 99 cents they were on sale for 1.99 and then was that egglands best coupon so I used that as well.. My store also had a deal about 2 weeks ago where you had to buy kelloggs cereal and I got my milk voucher for free this week which I am using today to make my Hot Cross Bun! I also went to the Farmers Market by my house and got a 1lb of oranges for 1.29 cheaper then the stores and I am supporting the local farmers. I hope you have a good Easter and to my fellow couponers A Happy Passover and A Happy Easter !!

Ingredients:

Batter

4 cups of all purpose flour

1/3 cup of sugar

1 packet of active dry yeast

1 ¼ teaspoons of ground cinnamon

½ teaspoon of salt

1 cup of milk

¼ cup of butter

2 eggs

1 egg yoke

¾ cup of raisins

2 tablespoons of cold water

Icing

1 ½ cups of confectionery sugar

¼ teaspoon of grated orange peel

4 teaspoons of orange juice

Directions:

Preheat the oven to 375.

Combine 2 cups of the flour, sugar yeast and cinnamon in a large mixing bowl.

Heat the milk and butter in a saucepan. Make sure the milk does not boil. When the butter is melted you remove from the stove.

Add the milk and butter to your dry ingredients and mix well together.

Now add the 2 eggs and mix until smooth. Add the raisin and the rest of the flour to form soft dough.

Remove dough and on a floured surface and kneed until is it smooth approx 6-8 minutes.

Spray a bowl with non stick cooking spray and put batter back in bowl. Turn the batter in the bowl so it coats the cooking spray. Cover it with a towel and let it rise for about a hour. The dough should double.

After dough has risen. Punch the dough down in the bowl and put on a floured surface.

Divide the dough into 18 pieces. Roll each piece of dough into a ball. Coat two 9inch pie pans. Put the dough into the pie pans. Using a sharp knife cut a cross on each dough ball. Cover with kitchen towel and let it rise again should take 30 minutes. After the rolls have risen. Beat together one egg yoke and two tablespoons of cold water.

Brush the mixture on top of your buns. Bake at 375 for 18-22 minutes or until gold brown. Remove buns from ban and break apart and place them on a cooling rack to cool.

Combine all Icing ingredients together. When the buns are completely cooled put the icing on the top of the buns where you made your cross.

They say if your share your buns with your friends. It will insure your friendship for the comings year :0)

This recipe was submitted by Lori! Thank you, another healthy recipe and super easy….I just love the crockpot! In Lori’s words….

“Slow Cooker Stew”

Ingredients:

6 medium potatoes quartered (which I can frequently get for about 99cents for a 5lb bag with a store coupon.)
6 carrots cut into large chunks or the baby carrots equal to 6 carrots.  (which again, I can get frequently for $1 or less at the store)
1 large onion cut in eighths (store coupon!)
1lb (about) boneless skinless meat frozen  (can be chicken breasts, boneless pork chops, loin, cheap cuts of beef, turkey breast….anything.  What ever was on clearance at the store and/or, there’s a pork loin coupon out there somewhere.  Get that pork loin on clearance, use the coupon…..)
1c frozen peas (always seems to be a coupon for some brand)
1c frozen corn
1t oregano
1t salt
1 1/2 c tomato based product.  This could be salsa (Tostitos coupon) Spaghetti Sauce, a can of diced tomatoes, or just plain old tomato sauce. FREE Pasta wyb (3) Hunt’s Tomatoes or Pasta Sauce
2 cups water

Directions:

Layer in a slow cooker or crock pot in the order given.  Cover and let cook on low for 8 hours or high for 4 to 6 hours.  Just before serving, stir and break up the meat into bite size servings.  Hint:  make sure your meat and corn and peas are frozen when you put them in the slow cooker.  Otherwise, the meat cooks too fast and dries out.
Makes 6-8 generous servings.
