Ritz Parmesan Chicken

Ritz Parmesan Chicken is a very easy recipe and very kid friendly! I love that they can help make it too! I find that when my kiddos help make something they actually get excited to eat it.
I posted this recipe awhile back for you guys (remember when there was a REALLY good coupon deal on ritz?). I know a LOT of you loved it so I wanted to post it again for those of you who have not tried it yet.
My hubby is an extremely picky eater and I like to cook simple. So, this recipe fits into both categories, perfect for the pickiest of the picky and simple for those of you that don’t have a lot of time.

Ingredients:

- 5 Chicken breasts (boneless, skinless)
- 1 Stick of butter
- 3/4 Cup Parmesan
- 2 tsp Parsley flakes
- 2 packages of Ritz Crackers
- 1/2 tablespoon Seasoned salt
Directions:
- Preheat your oven to 350 degrees.
- Put all of the ingredients above (except the butter) in a large ziplock bag and take a rolling pin (or your kids hand, they love to do this part) and smash up all the crackers! You want them to be small pieces but don’t turn them into powder.
- Then, you will melt your butter and dip the chicken breast (or any other type of chicken) into the butter and then put it in the bag, shake around until completely covered (I suggest doing 1 at a time).
- Place them in a glass pan and pour any remaining butter and ritz mix over them and all around them (this makes it extra yummy!).
- Bake in oven for 35-45 minutes
- TIP: Remember, you can easily add another package of ritz crackers, more parmesan, salt and parsley to make more mix for more chicken. Sometimes I find myself doing this if the chicken breasts are bigger.

It’s really yummy and they’re always happy when I make it which is great for me because it is super easy to make with ingredients I almost always have in the kitchen! I made these last night and they were both easy and delicious. Since always have Ritz crackers and Parmesan in my pantry and chicken breasts in my freezer, this is now on my list of things I can make at moments notice. I served them with a Ramen Noodle side dish I created years ago and also always have the ingredients for standing by. It seems that no matter how well you plan there always seems to be that day when dinner has to planned, shopped for and prepared pronto, not to mention it has to taste good. I think this chicken fits the bill. It’s has a satisfying yet mild flavor that everyone in my family enjoyed. Thanks
