Strawberry Cheesecake Muffins

Here is a really yummy recipe that is unique with a pop of flavor. I love anything to do with muffins and strawberries and my hubby loves cheesecake so this recipe really is the perfect one for us! Plus, the kiddos love it too…they think it’s a delicious cupcake. 😉 Enjoy..
Strawberry Cheesecake Muffins
What you need:
MUFFIN:
- 2 cup Flour
- 1/2 cup Sugar
- 2 tsp Baking Powder
- 1 Egg
- 1/4 cup Vegetable Oil
- 1 cup Milk
- 1 tsp Vanilla
- 2 cups chopped Strawberries
FILLING:
- 4 oz Cream Cheese
- 1/2 cup Sugar
- 1/2 beaten egg
- 1 tsp Vanilla
- TOPPING:
- 1/4 cup Flour
- 1/4 cup Sugar
- 1 tsp Cinnamon
- 3 tbsp Butter
How to make them:
- Preheat oven to 400.
- Line a 12 cup muffin pan with cupcake liners or spray with non-stick spray.
- Combine 2 cups flour, 2 tsp baking powder and 1/2 tsp salt in a bowl and mix well.
- Beat together 1 cup milk, 1/4 cup oil, egg and 1/2 cup sugar in another bowl.
- Add flour mixture to milk mixture just until well combined. Do not over mix.
- In another bowl, cream together the filling ingredients until smooth,
- In another bowl, mix together the dry topping ingredients, then cut in the butter with a fork until you get a grainy mixture.
- In each liner, put a tablespoon of the muffin batter then a few strawberry pieces, then a half tablespoon of the filling, about a half tablespoon of topping, another layer of batter then fruit and finally remaining topping.
- Bake for 25 minutes or until toothpick inserted in middle comes out clean.
- Let cool in the muffin tin for 5 minutes and then transfer cooling rack.

You mentioned adding the toppings but I can’t seem to find the ingredient list for that.

Topping is listed in the filling section, right after the vanilla. It’s just a typo. The “TOPPING” is not in bold print.
My 9 year old daughter helped me make these. They did come out delicious, but the recepie is very complicated and time consuming for a child. I would love to be able to make them without so many layers and steps. I am wondering if the filling can just be swirled into the batter and the strawberries mixed into the batter in small pieces. The topping would be fine on top, without being mixed in also. Thank you for the recipe.
How many calories does one ofor the muffins have in them? My friend made them and I’m curious for my calorie app.
Recipe is very confusing! It doesn’t tell you to add certain ingredients when and to what, asks for 1/2 an egg…etc and the muffin tins overflowed everywhere! This recipe is a flop indeed!
This recipe is perfectly clear. I just made these muffins today using these instructions word for word, had no problem understanding them, and the muffins came out beautifully.
I was able to follow the recipe, but the construction was weird. I did exactly as the instructions asked and after filling my 12 muffin cups I still had batter, filling, a decent amount of strawberries leftover, but zero toppings. I’m currently waiting for my muffins to cook (“fingers crossed”) and may just have to make more muffins + more topping. If these aren’t amazing though, I won’t be making them again; too chaotic of a recipe.
