Chop Salad is a Great Change to the Average Garden Salad
It will soon be time to harvest veggies from our own home gardens, or farmer’s markets with fresh local produce will be popping up for our shopping pleasures. Chop Salad is a great way to change up how you think of salad, and not get bored with the same old salad every day or week. A few distinctive ingredients, that you might not always think of in your salads, will make Chop Salad outstanding.
What Makes Chop Salad Outstanding?
Chop Salad has a base of romaine lettuce, chopped small, but that’s the boring part. The amazing parts of Chop Salad are rich kalamata olives, with their meaty, briny flavor, as well as smoky roasted red peppers. I purchase mine in olive oil and garlic, for an additional yummy flavor. The last ingredient that makes Chop Salad really distinctive is feta cheese. The creamy, tangy texture is amazing in just about everything you can put it in, and it takes salad from boring to phenomenal with just a few crumbles. When you put these three ingredients in a traditional salad, then change it up by cutting everything fine, the salad is a stand out at any table or carry in.
How Fine is Fine in Chop Salad?
I chop everything about 1/4 to 1/2 inch dice in Chop Salad. It makes things nicely even, which makes it easier to eat, and also gives it a beautiful presentation in your bowl. It takes just a few extra minutes, but with a good chef knife, it’s easy and really worth the effort.
Ingredients
- 2 heads romaine lettuce
- 1/2 hothouse cucumber
- 3 green onions
- 1/2 sweet onion
- 1/2 C pitted kalamata olives
- 4 oz feta cheese
- 1/2 C roasted red peppers
- 1/2 can garbanzo beans
- 1/4 C olive oil
- 1/4 C white wine vinegar
- 1 T dried oregano
- salt
- pepper
Instructions
- Chop all of the vegetables to a fine (1/4 to 1/2 inch) dice. Place in a bowl and toss.
- Sprinkle the oregano, salt, and pepper over the salad.
- Mix the olive oil and vinegar, then pour over the salad and toss.
- Serve chilled.

All of the ingredients in a Chop Salad are available year round at the grocery store, so don’t relegate this beautiful dish to your summer table!
