Summer is in full swing and what is better than a refreshing Summer Vegetarian Recipes: Berry Cous Cous Salad?  Chock full of flavorful in-season berries, this chilled salad is perfect on hot summer nights that just never seem to end.  I hate cooking meals during the summer, as they heat up my kitchen and make everyone miserable.  The cook time on this recipe is a mere 10 minutes, something that doesn’t really heat up anything but the pan.  And after chilling, Summer Vegetarian Recipes: Berry Cous Cous Salad will cool you off for a great evening!

Summer Vegetarian Recipes: Berry Cous Cous Salad Mixes Some Amazing Flavors

I never would have thought that strawberries, blueberries, lime, and garlic would make a good mix.  When I first made this salad, I couldn’t believe that it would taste good.  Boy, was I wrong!  It was AMAZING!  The berries added sweet while the lime brought the sour.  Garlic added a bit of savory which was balanced by adding a little salt.  Summer Vegetarian Recipes: Berry Cous Cous Salad has everything I love to make a perfectly well rounded, flavorful dish.

Summer Vegetarian Recipes: Refreshingly Berry Cous Cous Salad

Ingredients

  • 1 pkg tri-color cous cous
  • 5 large strawberries
  • 1 C blueberries
  • handful of baby spinach
  • ½ C olive oil
  • 1 T minced garlic
  • 1 lime
  • salt
  • pepper

Instructions

  1. Cook the cous cous according to the package directions. Rinse in a strainer under cold water to chill. Place in a medium sized bowl.
  2. Wash the strawberries and blueberries.
  3. Cut of the green of the strawberries and chop roughly.
  4. Add the strawberries, blueberries, and baby spinach to the cous cous.
  5. Add the olive oil and olive oil; stir.
  6. Squeeze the lime into the bowl and stir again.
  7. Season to taste with the salt and pepper.
  8. Chill for at least 3 hours.
  9. Serve cold with your favorite summer meal.

Changing Up Summer Vegetarian Recipes: Berry Cous Cous Salad for the Season

Strawberries and blueberries aren’t always the freshest year round.  Choose berries or other fruits that are in season for optimal flavor.  I can’t wait for my local peach season with Summer Vegetarian Recipes: Berry Cous Cous Salad.  I think it will be a fantastic flavor add, especially with raspberries!

1 pkg tri-color cous cous

5 large strawberries

1 C blueberries

½ C olive oil

1 T minced garlic

1 lime

salt

pepper
