Ingredients

  • 5 lb white potatoes, peeled and diced
  • 1 8z pkg cream cheese, softened
  • 16 oz shredded cheese
  • milk
  • salt
  • pepper

Instructions

  1. Place the potatoes in a stock pot and cover with cold water. Sprinkle with salt and boil until the potatoes are tender when pierced with a fork. Drain.
  2. Place the potatoes in a bowl or mixer. Add the cream cheese, sprinkle with salt and pepper, and beat with a mixer until smooth, adding milk to get the consistency you prefer.
  3. Add the shredded cheese and mix until the cheese is melted.
  4. Serve with your favorite meal.

Super Cheesy Mashed Taters Leftovers

I love to make an extra large batch of Super Cheesy Mashed Taters and have leftovers.  I’m usually not happy with the results of reheating them as mashed potatoes, but if you add an egg to every 3 cups of leftover Super Cheesy Mashed Taters as well as 1/2 C breadcrumbs, you can mix them up and make some very tasty potato cakes by frying them in butter and olive oil.  They are a simple dish that make a big hit with everyone, especially if you have leftover gravy, or some fried onions.

 

5 lb white potatoes, peeled and diced

16 oz shredded cheese
