What is a Perfect Steak?

The Perfect Steak is often elusive for many people, mostly because they take the steak off the tray it came on and toss it on the grill.  Steaks need a little prep work to make them absolutely perfect and all it takes is about 5 minutes of hands on work, and an hour of letting them rest.  You will have the best steak you’ve ever tasted.  The best part?  It work every time.

What it Takes to Make the Perfect Steak

The Perfect Steak starts out with your favorite cut of meat, whatever that may be.  I love New York Strips, mostly because I have a great meat market in my area that sells them in whole flats for $3.29 per pound.  I might have to slice and trim them, but they are amazing and much less than I can find other meats for.  The second most important ingredient in the Perfect Steak is tenderizer.  There are a lot of things people use, from brining the meat in salt water, to beating it with a meat mallet, but I usually use a commercially prepared meat tenderizer.  I’ve been told several explanations as to how it works, but what it comes down to is that it does work.  Even the toughest meat will be tender with a sprinkling of this miracle powder.  The final touch to the Perfect Steak is seasoning.  I love to use a Mrs. Dash blend because it doesn’t add any salt to mix, as the meat tenderizer adds quite a bit.  Garlic and Herb has been a long-time favorite with my family, but all the flavors are amazing.  You can also make up your own seasoning to suit your family’s tastes.

Ingredients

  • Steak
  • meat tenderizer (such as Adolph's)
  • Mrs. Dash seasoning blend

Instructions

  1. Rinse the steaks and place on a platter.
  2. Sprinkle liberally with meat tenderizer. Pierce with a fork to push the tenderizer into the meat. Turn the meat over and repeat on the other side.
  3. Sprinkle the steaks with Mrs. Dash. Again, pierce with a fork to push the seasonings into the meat. Turn and repeat on the other side.
  4. Let rest for an hour.
  5. Heat your grill or broiler to about 500 degrees F.
  6. Place the steaks on the grill and sear. Turn the steaks over and sear the other side.
  7. Grill until the steaks are to done to your liking, 5 to 10 minutes.
  8. Serve hot, with your favorite steak sauce.

Not Just for the Perfect Steak

This method of tenderizing isn’t just for the Perfect Steak.  You can do this with roasts too.  My favorite grilled roast is a London Broil, a notoriously tough piece of meat.  I usually prepare it a day or two before I want to grill it, and wrap it tightly for the fridge.  The London Broil will come out fork tender every time, and is amazing over a crisp salad.

 

Steak

This past weekend was pretty warm in my neck of the woods, and was the perfect time to make up a bottle of Honey Whiskey Barbecue Sauce.  Simple to make, yet complex in flavor, Honey Whiskey Barbecue Sauce is a great addition to anything you want to grill, from chicken, to beef, to even ham or pork chops!  I’ve used this on so many different meats, I can’t even remember them all!  I do remember basting burgers in this savory sauce and my guests saying that they were the best barbecue burgers they had ever had.

I love to make my Honey Whiskey Barbecue Sauce mild, but sometimes, you just need a little more spice on your tongue.  That’s easily accomplished by adding a couple drops of your favorite hot sauce to the barbecue sauce.  You’ll have a delectable sweet and spicy sauce that will delight your taste buds!

  • 1/2 t salt
  • 1/4 C cider vinegar
  • 1 T liquid smoke flavoring
  • 1/2 C dark brown sugar, packed
  • 1/4 C Worcestershire Sauce
  • hot sauce (optional)

Instructions

  1. Whisk all ingredients in a bowl.
  2. Use to base meats on your grill.
  3. Refrigerate unused portion. Discard any sauce that has touched meat.

I save my ketchup bottles to store my Honey Whiskey Barbecue Sauce.  Reusing ketchup bottles keeps them out of the landfills, but also makes a great squeeze bottle for any kind of sauce.  It’s phenomenal for Honey Whiskey Barbecue Sauce because you can squeeze your sauce onto your meat, brush it around, and  you are good to go!  You won’t have a drippy bowl sitting at your grill, or a mess all over your patio!

 

1 T garlic, minced

Meatballs Aren’t Just for Pasta!

Easy Savory Meatballs are something that you don’t think about making yourself, but they are so easy, you’ll wonder why you never did.  I make up large batches of meatballs and then freeze them uncooked, making it easy to put them in pasta sauce, bake and slice on pizzas, or top them with some pizza sauce in a hoagie roll.  It’s amazing what you can do with a bag full of frozen meatballs!

Make The Meatballs What You Want

The basic ingredients for meatballs is easy: ground meat, eggs, breadcrumbs, and seasonings.  Seasonings can change, depending on what you want the meatballs to taste like, or what their purpose is.  I usually make mine Italian style, as in this recipe, but you can change them up to be anything you like.  Add some steak seasoning for a barbecue meatball, or chopped pineapple and a bit of brown sugar for teriyaki style.  Really, you can do anything with them once you know the basics.

Basic Recipe for Meatballs: Multiply It!

We’ll go over what it takes for a single pound of ground meat, but you can multiply it for as many pounds as you want to make!  If you want to make ten pounds of meatballs, multiply everything by 10 and mix away!  Use this as a very basic recipe to make whatever your needs are.  Just realize the higher the fat content of your meat, the more they will shrink and add fat to your dish.

  5. Freeze until solid.
  6. Place in a plastic zippy bag or freezer container and place back in the freezer until use.
  7. To cook, fry in a bit of olive oil or bake on a baking sheet in a 400 degree F oven until baked through.

I keep a bag or two of tasty meatballs in the freezer for those quick meals that need some meat.  Use them every way you can think of for a delicious addition.  Make them small for appetizers in your Crock-Pot.  Bake them up before dropping them in with some sauce and turning it on low for an amazing treat everyone will love!

 

1 lb ground meat (beef, pork, veal)

I love Asian inspired foods.  Veggies, rice, meats, and yummy sauces combine to make something fabulous and tasty.  This recipe is no different.  It takes a little bit more than other recipes to get it into the Crock-Pot, but the slow simmering can make even the toughest cut of meat into something tender and amazing!

Mandarin Orange Beef Crock-Pot Recipe

Ingredients

  • 2 lbs beef roast, sliced thin (check out the note below on how to make this task easy!)
  • 3 T Olive oil
  • 1 onion, sliced thin
  • 1 can water chestnuts, sliced
  • 2 heads baby bok choy, cleaned and sliced
  • 1 t grated fresh ginger
  • 1/2 C soy sauce
  • 1 4 oz pkg Shitake mushrooms, stems removed and caps sliced
  • 2 T corn starch
  • 2 C hot water
  • 2 T beef base
  • 1 can (11 oz) Mandarin oranges
  • 2 C rice
  • 4 C water

Instructions

  1. Freeze the beef roast for about 20 to 30 minutes. Remove from the freezer and slice into thin strips.
  2. Heat a saute pan over medium high heat. Add the olive oil and meat in small batches, cooking until brown on all sides. Place in the Crock-Pot.
  3. To the saute pan, add the onion and cook until softened and clear. Add the water chestnuts, baby bok choy, ginger, soy sauce, and Shitake mushrooms. Saute for about 3 minutes, until the bok choy starts to wilt a bit. Place it over the top of the beef.
  4. In a bowl, mix the water and beef base. When the beef base is dissolved, add the corn starch and drain the juice from the oranges into the bowl, refrigerating the oranges for later.
  5. Cover the Crock-Pot and set to low for 8 to 10 hours.
  6. About 30 minutes before serving, place the rice and water in a large saucepan. Heat on medium high heat until boiling, then turn down to simmer. Let simmer for about 20 minutes or until the water is absorbed. Fluff with a fork.
  7. To serve, top rice with beef mixture and sauce. Sprinkle with a few mandarin oranges and enjoy!

Try out this super easy Corned Beef in the Crock-Pot Recipe! Corned beef is one of those meats that people seem to look at in the grocery store, but never quite know what to do with them.  I’ve heard of some interesting cooking methods, from dropping the bag, still sealed, in a Crock-Pot of water and letting it simmer all day, to boiling the poor hunk of meat until it falls apart (and usually lacks flavor).

There was an older Irish woman in my neighborhood growing up.  This was her favorite way to cook the mysterious dish, which lends itself nicely to our busy lifestyles today.  What a better way to celebrate St. Patrick’s Day than a tasty corned beef brisket?  Pair it with some boiled potatoes and cabbage, and you have a feast fit for the saint!

If you’d like to have leftovers, if you have a very large Crock-Pot, you can add another brisket over top of the first, layering as listed below with seasonings and garlic in between.

Corned Beef in the Crock-Pot

Yield: Serves 4-6

Corned Beef in the Crock-Pot

Ingredients

  • 1 3-5 lb Corned Beef brisket, juice and season packet included
  • 1 Head Garlic, cloves peeled
  • 1/2 C Apple Cider Vinegar

Instructions

  1. Place the corned beef in the bottom of the Crock-Pot, fat side up.
  2. To the packaging, add the apple cider and swirl to dissolve the gel that was coating the meat. Pour over the top of the meat.
  3. Sprinkle the seasoning packet and garlic cloves over the meat.
  4. Cover and cook on low for 8 to 10 hours.
  5. Remove from the Crock-Pot, place on a plate or platter and enjoy!
