 Peachy Berry Ice Cream Pie

1 9 inch Baked Pie Crust

1 Quart Frozen Peach Yogurt, softened

1 Pint Vanilla Ice Cream, softened

1 Tbsp. Sugar

1 Tbsp. Cornstarch

1 10 oz. Package Frozen Raspberries in Syrup, thawed

1 Cup Sliced peaches (for decoration)

Directions:

Prepare the Raspberry topping first by combining the sugar and cornstarch with the raspberry juice that was drained from the frozen raspberries. Bring it to a boil and cook and stir for 2 minutes. Add the raspberries, cover and refrigerate until cool.

Spoon the frozen peach yogurt into the pie crust. Spread the ice cream over that. Cover and freeze until firm.

Ten minutes before serving, bring out of the freezer to soften slightly before adding raspberry topping and peaches as decoration.
