Peach Blueberry Pie in a Jar for a Surprising Dessert

I love to surprise my family with something that they love, served in a different way, especially when it’s creative.  When peaches are fresh and blueberries are freshly frozen, they love homemade Peach Blueberry Pie.  It’s been a family favorite for four generations.  Placing this fabulous combination in 4 ounce Ball canning jars makes it adorable, plus, you can put the lid on and give it as gifts!  Everyone smiles when a Peach Blueberry Pie in a Jar is served.

Choosing Fruit for Peach Blueberry Pie in a Jar

You can easily make Peach Blueberry Pie in a Jar year round with frozen peaches and blueberries, but in the summer, choose peaches that yield to slight pressure.  They will be very juicy and have the perfect flavor to compliment the blueberries.  Blueberries should be plump and dark in color for the best flavor.  Check your area for farms where you can pick your own blueberries not only for Peach Blueberry Pie in a Jar, but for freezing for later.  They are fantastic mid-winter when fruits are blah.

Peach Blueberry Pie in a Jar Recipe

Ingredients

  • 2 peaches, peeled and diced small
  • 2 C fresh or frozen blueberries, rinsed and stems removed
  • ½ C sugar
  • ½ t cinnamon
  • 1 pkg refrigerated pie crust
  • 6-8 4 oz canning jars

Instructions

  1. Heat oven to 425 degrees F.
  2. Place the peaches, blueberries, sugar, and cinnamon in a bowl. Mix to coat. Let sit for 10 minutes.
  3. Unroll the pie crust. Using the jar lid, cut circles out of the pie crust and set aside.
  4. Fill each jar until mounded.
  5. Top with a pie crust circle, pressing slightly at the edges to seal.
  6. Place on a baking sheet.
  7. Bake 20-25 minutes, until the berries are bubbling and the crust is golden brown.
  8. Cool slightly so the jars are warm but not hot.
  9. Serve warm.

Peach Blueberry Pie in a Jar is a perfect dish for a scoop of vanilla ice cream on top.  The creaminess will melt into the Peach Blueberry Pie in a Jar a little, giving it a delicious vanilla kick.  I love to add some ice cream and watch the smiles on my family’s faces!

 Ingredients:

2 peaches, peeled and diced small

2 C fresh or frozen blueberries, rinsed and stems removed

½ C sugar

½ t cinnamon

1 pkg refrigerated pie crust

6-8 4 oz canning jars

Directions:

Bring in the Spring with Fresh Blueberry Pie

Fresh Blueberry Pie is a fantastic spring and early summer dessert that is so simple to make, but tastes like spring itself.  When blueberries are in season, pick up some of the ripest, plumpest berries for this delicious pie.  If you’d like to have pie later in the season, rinse the berries and let them drip dry, then freeze them on a parchment covered baking sheet.  Once frozen, toss them in a plastic zippy bag and put back in the freezer for later use.  I try to freeze mine in 1 pound bags so I know I have them premeasured for recipes.

Cleaning Berries for Fresh Blueberry Pie

Choose berries that are dark purple and plump.  Watch for mold between berries.  I gently shake the package to make sure.  Before making the Fresh Blueberry Pie, rinse the berries in a colander, picking out any that are wrinkled or overripe, as well as any stems.  Let them drip dry for a little bit as the extra water can make for a runny pie.

The “Secret Ingredient” in Fresh Blueberry Pie

  • 2 lbs fresh or frozen blueberries
  • 3/4 C sugar
  • zest from 1/2 lemon
  • 1/4 C flour
  • 4 T butter
  • 1/4 C half and half or milk

Instructions

  1. Heat oven to 400 degrees F.
  2. Place the crust in the bottom of the pie pan.
  3. Mix the cleaned berries, sugar, lemon, and flour in a bowl. Pour into the pie crust.
  4. Dot with butter, cut into pats.
  5. Place the remaining crust on top and seal the edges by folding together and pressing tightly. .
  6. Cut vents in the top of the crust, then baste with the half and half.
  7. Bake in the oven 45 minutes or until the juices start to bubble.
  8. Remove from the oven and cool.
  9. Serve warm or cold.

Fresh Blueberry Pie has Options!

Making a fresh pie doesn’t need to be difficult to be spectacular.  Fresh Blueberry Pie is simple and beautiful.  But you can change it up too!  My favorite childhood pie was blueberry with peaches.  Simply freeze the blueberries until peaches are in season, then use about a cup less than normal.  Slice two or three peaches on top before placing the crust on the pie.  Their sweetness will compliment the berries well and provide another texture in your pie.

If you are asked to bring dessert to a gathering, or maybe you are hankering for an easy dessert, pick up some blueberries at your favorite market.  Fresh Blueberry Pie will fit the bill!
