Blueberry Bread Pudding Makes the Perfect Dessert

Bread pudding is one of those treats often seen when dining out, but you hardly ever hear of anyone making it at home.  It was not a treat made at my home when I was growing up, but after making it once, it became a big hit.  One of the great things about bread pudding is the ability to add seasonal fruit, beyond the traditional raisins.  I love making Blueberry Bread Pudding, and my family loves when I make it.  It’s simple, takes just a few minutes to put together, and when you serve it, it’s elegant and perfect for company.

The Bread Makes a Difference in Blueberry Bread Pudding

The bread really does make a difference in Blueberry Bread Pudding.  Dense breads, such as a boule or Italian make good Blueberry Bread Pudding.  I checked out the breadmaker at a local farmer’s market and found a wonderful brown bread for this recipe.  It adds another level of flavor to the Blueberry Bread Pudding.  Choose a bread that is rich and dense for the best Blueberry Bread Pudding.  Also, cutting the bread and leaving it out overnight to get stale, or toasting it in the oven for a few minutes before mixing it with the wet ingredients makes for a much better, less soggy Blueberry Bread Pudding.

Blueberry Bread Pudding Recipe

Ingredients

  • 5 eggs
  • 2 C raw or granulated sugar
  • 2 C milk
  • 2 t vanilla extract
  • 3 C stale dense bread
  • ½ C dried blueberries
  • ¼ C (1/2 stick) butter, softened
  • ½ C brown sugar
  • ½ t cinnamon
  • 1 C raw or granulated sugar
  • ½ C (1 stick) butter
  • 1 egg, beaten
  • ½ t cinnamon
  • ¼ t nutmeg
  • 2 t vanilla extract
  • ¼ C spiced rum

Instructions

  1. Heat oven to 350 degrees F.
  2. In a large, ovenproof bowl, whisk the eggs, 2 cups sugar, milk, and vanilla until completely incorporated.
  3. Cut the bread into 1/2 inch cubes.
  4. Gently stir the bread into the egg mixture and let soak 10 minutes.
  5. Stir in the blueberries.
  6. In a small bowl, mix ¼ c butter, ½ C brown sugar, and ½ t cinnamon. Sprinkle over bread mixture.
  7. Bake, uncovered, for 35-40 minutes, until mixture is set.
  8. In a sauce pan, mix the 1 C sugar, stick of butter, 1 beaten egg, cinnamon, nutmeg, and vanilla. Cook over medium heat until sugar is melted, stirring occasionally.
  9. Add in brandy, stirring until completely incorporated.
  10. Pour over warm bread pudding.
  11. Serve hot or cold.

Blueberry Bread Pudding is so versatile!  Try peeling and cutting peaches into a small dice, or ripe, juicy apples!  Try strawberry and rhubarb, or bananas for a bananas foster type dessert.  The possibilities are endless with Blueberry Bread Pudding.

 

5 eggs

Irish Soda Bread is a basic quick bread that is hearty and tasty, perfect for a good bowl of stew.  This is an easy bread to make, with just a few ingredients to assemble.  Within an hour, you can have two beautiful loaves, ready for your souping pleasures!

Two Oven Temperatures Make Irish Soda Bread Crispy and Tender

Starting the oven at a higher temperature seals the outside crust of Irish Soda Bread, making it crispy and chewy, while baking at a lower temperature produces a tender crumb inside the bread.  This process makes an olde world style bread that is amazing.

Irish Soda Bread ~ A St. Patrick’s Day Treat!

Ingredients

  • 3 C all-purpose flour
  • 4 C whole wheat flour
  • 2 t sugar
  • 1 t salt
  • 2 t baking soda
  • 2 C buttermilk
  • 1 T olive oil or vegetable oil
  • 1 C milk

Instructions

  1. Heat oven to 400 degrees F.
  2. In a large bowl, mix the dry ingredients.
  3. Add the milks and oil, stirring well until a dough forms.
  4. Cut dough into two pieces. Form into balls and flatten slightly. Place on a lightly greased cookie sheet.
  5. Cut an "X" in the top of the bread, about 1/2 inch deep.
  6. Bake for 15 minutes, then reduce the temperature to 375 degrees F and bake an additional 25 minutes until golden brown and a thump on the crust produces a hollow sound.
  7. Remove to cooling racks and allow to cool for 20 minutes. Serve with your favorite stew or soup.

If you are looking for a delicious treat to pair with your corned beef and cabbage or Irish stew, mix up a couple of loaves of Irish Soda Bread.  They will be a great accompaniment to your meal and add a touch of the Irish to your day.

When I was little, I used to call Banana Bread, Nana Bread, because my Nana (grandmother) was the only one in the family that made it, but she made a lot of it.  Later on, I realized that it was truly banana bread, but I still call it Nana bread and think of her when I make it.  It’s a simple little sweet bread, complete with a fantastic texture and an even better flavor.

Banana Bread from Single Leftover Bananas

I always seem to have one or two bananas left over in a bunch by the time my family tires of eating them for the week.  Instead of wasting them, I freeze them for later batches of Banana Bread.  The skins turn black and sometimes wrinkle, but I assure you that they are just fine for baking!  Simply thaw them, cut off the end of the stem, and squeeze into the flour like a tube of toothpaste.  The banana pulp will slide right out and you’ll be ready to mix incorporate them.

Making Banana Bread Fluffy

Quite by accident, I was making banana bread one day and had mixed the bananas into the flour mixture, and realized that I had no eggs.  I had already mixed the flour into the bananas, and I didn’t want to waste them.  So, I let it sit while I waited to get the eggs.  The banana-flour mixture started to rise like yeast from the baking powder and soda.  I made up the banana bread anyway and the result was amazing.  The resulting bread was fluffy and light.

Banana Bread Freezes Well

I usually make up several loaves of banana bread at once, cool them, and freeze all but one.  They freeze marvelously.  When you’d like to serve one, thaw it and put it, unwrapped, in a 300 degree F oven for about 5 minutes to crisp up the crust.  It will be just like you baked it.
