Bacon Breakfast Casserole for holiday

You can make Bacon Breakfast Casserole up early, baking it about three-quarters of the time so that the center is not quite done. Remove it from the oven, allow it to cool, then wrap it tightly and place it in the refrigerator. About a half an hour before you would like to serve it simply heat it in the oven at 350 degrees F for 15 to 20 minutes or until the center is hot and a knife inserted in the center comes out clean.. You’ll have an easy breakfast without any fuss.

  • 3 slices bacon, diced
  • ¼ C mushrooms, chopped
  • ¼ C onion, chopped
  • 2 eggs
  • ¼ C half n half
  • ¼ C cheese
  • 2 slices bread, torn in pieces

Directions:

Zucchini Hash Browns are Perfect for Brunch

This weekend I found myself in possession of a beautiful, yet large, zucchini . I thought about making zucchini bread, a family favorite, but then I thought we needed to try something a little bit different this time. So out came the box grater.  I shredded it all and made the most delicious Zucchini Hash Browns. I was unsure what my family would think, but in minutes they were gone. Zucchini Hash Browns were hit and we’re on the hunt for another zucchini.

What Makes Zucchini Hash Browns Delicious

Freshly grated zucchini makes recipes phenomenal. When preparing the zucchini, to get a good crisp crust, you need  to get the excess moisture out of the squash.  Simply sprinkle with salt, allow to sit for 10 minutes, then squeeze out zucchini in small batches. By doing this you make the zucchini firmer and less prone to wilt when cooking. This technique works great in things like Zucchini Hash Browns, but would not be useful in something like zucchini bread where you want the moisture. Adding a fresh beaten egg and a bit of flour holds the Zucchini Hash Browns together. I added a little bit of garlic salt for flavor as I found the plain hash browns a little bit flat on the flavor side. I also grated onion with the zucchini to add a little more flavor and texture in the final hash browns.  The result is amazing and a great way to get a little extra veggies in your diet.

Ingredients:

  • 4 C grated zucchini

It’s easy to make The Cheesecake Factory Copycat Huevos Rancheros for a crowd.  Simply make the quesadillas ahead of time, and keep them warm in an oven set to the lowest setting.  Cook all the eggs and assemble on platters for your guests.  It’s an easy way to make a delicious and nutritious breakfast for many.

1 T butter

1 tortillas

½ C shredded cheddar cheese

Stuffed French Toast: The Letdown and The Recovery

I went with some friends to a restaurant for breakfast yesterday, and one of the ladies ordered Stuffed French Toast.  Well, it wasn’t nearly as good as she wanted it to be, as the cook didn’t sweeten or flavor the cream cheese, he just spread it on the French toast and topped it with another slice.  It was a complete letdown from what the description was.  So, I thought about it, and came up with a plan: Stuffed French Toast at home, easily, and the tastiest you’ve ever had.  I called her up this morning and told her to come over for coffee, but I surprised her with a plate of the most delectable Stuffed French Toast.

How Easy Can Stuffed French Toast Really Be?

Super duper easy!  If you have ever made French Toast, this is just as easy.  Whipping cream cheese, sugar, vanilla, and a hint of cinnamon makes a great filling that is good not only for Stuffed French Toast, but also for pancakes, or dipping apple slices in.

Ingredients

  • French Toast
  • 6 slices Texas toast
  • 5 eggs
  • 1/4 C half n half
  • 1 t vanilla extract
  • 1/4 t cinnamon
  • Filling
  • 1 8oz block cream cheese, softened
  • 1 1/2 C powdered sugar
  • 1/2 t vanilla extract
  • 1/2 t cinnamon

Instructions

  1. In a bowl, beat the cream cheese until fluffy. Add in the vanilla and cinnamon, blending until incorporated.
  2. Add in the powdered sugar, a little at a time, and mix well. Set aside.
  3. In a shallow bowl, whisk the eggs, half n half, vanilla, and cinnamon.
  4. Heat a saute pan over medium high heat. Spray with cooking spray.
  5. Dip a slice of bread in the egg mixture. Flip over to coat the other side. Place in the saute pan. Repeat until the pan is comfortably full.
  6. Brown on one side, for 3-4 minutes, then flip. When both sides are brown, remove from the pan.
  7. Place one slice on a plate. Top with a large spoonful of the sweetened cream cheese. Add another slice on top.
  8. Serve warm, with fruit if desired.

  • 1 T butter
  • 2 eggs

  • 1/4 C shredded cheese
  • salt
  • pepper
  • 3 T gluten-free baking mix (or regular baking mix)
  • 1 T milk
  • 1/2 T butter

Instructions

  1. Heat oven to 375 degrees F.
  2. In a saute pan, melt 1 T butter over medium high heat.
  3. Add the mushrooms and onions, saute for 3 minutes. Add in the spinach and stir. Saute for an additional minute.
  4. Spray a 2 cup ramekin or oven-proof bowl with baking spray.
  5. Crack the eggs into the ramekin and scramble with a fork. Add the milk, salt, and pepper, stirring well.
