Stuffed French Toast: The Letdown and The Recovery

I went with some friends to a restaurant for breakfast yesterday, and one of the ladies ordered Stuffed French Toast.  Well, it wasn’t nearly as good as she wanted it to be, as the cook didn’t sweeten or flavor the cream cheese, he just spread it on the French toast and topped it with another slice.  It was a complete letdown from what the description was.  So, I thought about it, and came up with a plan: Stuffed French Toast at home, easily, and the tastiest you’ve ever had.  I called her up this morning and told her to come over for coffee, but I surprised her with a plate of the most delectable Stuffed French Toast.

How Easy Can Stuffed French Toast Really Be?

Super duper easy!  If you have ever made French Toast, this is just as easy.  Whipping cream cheese, sugar, vanilla, and a hint of cinnamon makes a great filling that is good not only for Stuffed French Toast, but also for pancakes, or dipping apple slices in.

The Perfect Brunch: Stuffed French Toast

Ingredients

  • French Toast
  • 6 slices Texas toast
  • 5 eggs
  • 1/4 C half n half
  • 1 t vanilla extract
  • 1/4 t cinnamon
  • Filling
  • 1 8oz block cream cheese, softened
  • 1 1/2 C powdered sugar
  • 1/2 t vanilla extract
  • 1/2 t cinnamon

Instructions

  1. In a bowl, beat the cream cheese until fluffy. Add in the vanilla and cinnamon, blending until incorporated.
  2. Add in the powdered sugar, a little at a time, and mix well. Set aside.
  3. In a shallow bowl, whisk the eggs, half n half, vanilla, and cinnamon.
  4. Heat a saute pan over medium high heat. Spray with cooking spray.
  5. Dip a slice of bread in the egg mixture. Flip over to coat the other side. Place in the saute pan. Repeat until the pan is comfortably full.
  6. Brown on one side, for 3-4 minutes, then flip. When both sides are brown, remove from the pan.
  7. Place one slice on a plate. Top with a large spoonful of the sweetened cream cheese. Add another slice on top.
  8. Serve warm, with fruit if desired.

Sunday Brunch is Better with Stuffed French Toast

With the help of a griddle, making platefuls of Stuffed French Toast is an easy and delicious start to a beautiful Sunday brunch.

 

French Toast

6 slices Texas toast

5 eggs

1/4 C half n half

1 t vanilla extract

1/4 t cinnamon

 

Filling

1 8oz block cream cheese, softened

1 1/2 C powdered sugar

1/2 t vanilla extract

1/2 t cinnamon

 

In a bowl, beat the cream cheese until fluffy.  Add in the vanilla and cinnamon, blending until incorporated.

Add in the powdered sugar, a little at a time, and mix well.  Set aside.

In a shallow bowl, whisk the eggs, half n half, vanilla, and cinnamon.

Heat a saute pan over medium high heat.  Spray with cooking spray.

Dip a slice of bread in the egg mixture.  Flip over to coat the other side.  Place in the saute pan.  Repeat until the pan is comfortably full.

Brown on one side, for 3-4 minutes, then flip.  When both sides are brown, remove from the pan.

Place one slice on a plate.  Top with a large spoonful of the sweetened cream cheese.  Add another slice on top.

Serve warm, with fruit if desired.

 

If you have a family of four, or a whole crew for breakfast, Stuffed French Toast is a great way to start your day.

Breakfast for One Casserole: The Perfect Weekday Indulgence

Once the hustle and bustle of the morning is over, getting everyone off to school and work, I get to sit back for 5 minutes and take a breath.  On the most hectic mornings, I find I can get through the day better if I take a few minutes, make myself something amazing for breakfast, and sit for a few minutes to collect myself before tackling the rest of the day.  Breakfast for One Casserole is the perfect dish for days like that.  Flavorful, with everything that makes a great breakfast, this dish wakes you up and gives you what you need to keep on truckin’.

Make Breakfast for One Casserole with Whatever You Have On Hand!

I like to use mushrooms, spinach, and onions, but you can use anything you have to make Breakfast for One Casserole.  Leftover meat, ends of cheese blocks, and stray veggies  make the best base for Breakfast for One Casserole.  A little leftover taco meat paired with some tomatoes, cilantro, and cheddar cheese would make a great combination, topped with a little bit of sour cream or guacamole.  Change it up every time you make it and you’ll always have a new dish to eat!

Ingredients

  • 1/4 C baby bella mushrooms, diced
  • 1/4 C spinach, chopped coarse
  • 3 T green onion, sliced thin
  • 1 T butter
  • 2 eggs
  • 1 T milk or half n half
  • 1/4 C shredded cheese
  • salt
  • pepper
  • 3 T gluten-free baking mix (or regular baking mix)
  • 1 T milk
  • 1/2 T butter

Instructions

  1. Heat oven to 375 degrees F.
  2. In a saute pan, melt 1 T butter over medium high heat.
  3. Add the mushrooms and onions, saute for 3 minutes. Add in the spinach and stir. Saute for an additional minute.
  4. Spray a 2 cup ramekin or oven-proof bowl with baking spray.
  5. Crack the eggs into the ramekin and scramble with a fork. Add the milk, salt, and pepper, stirring well.
  6. Sprinkle the cheese and veggies over the eggs.
  7. In a bowl, mix the baking mix, 1 T milk, and 1/2 T butter. Form into a biscuit and place on top of the egg mixture.
  8. Bake 15-20 minutes, until eggs are firm and biscuit is golden brown.

With the combination of veggies, protein, and dairy, you get a great start to your day with Breakfast for One Casserole.  You won’t be looking for a snack halfway through your morning and hitting the chips or something equally unhealthy.

A Rustic Ham Frittata Makes a Delicious Breakfast

With a bit of leftover ham, you can make a fantastic, savory breakfast in a pretty short amount of time.  Pair this with a beautiful assortment of fruit and toast, and you have a healthy, well rounded meal that will last you through the morning.  If you don’t have any ham leftover from a previous meal for a Rustic Ham Frittata, grab some ham at the deli, or even in the hot dog case of the grocery store.  You can often find diced ham or ham steaks ready for your cooking.

Rustic Ham Frittata Reheats Well

If you are only feeding one or two for breakfast, you have a couple of choices.  Make a smaller Rustic Ham Frittata, if you have a small nonstick pan, or you can make a regular one and have some of the best breakfast leftovers you could imagine.  Simply place in foil and heat in a 350 degree F oven for about 10 minutes, or place on a microwave safe plate and microwave for 1-2 minutes.

  • 4 oz baby bella mushrooms, cleaned and sliced
  • 1 medium onion, diced
  • 2 T butter, divided
  • 1 sm can chopped black olives
  • 1 C ham, diced
  • 10 eggs
  • 1/4 C half n half or milk
  • salt
  • pepper
  • 1 C cheddar, shredded

Instructions

  1. Heat a nonstick saute pan over medium heat.
  2. Add 1 tablespoon of butter. When melted, add the mushrooms and onions. Saute until the mushrooms start to brown and the onions are clear.
  3. Add the ham and olives, turning to brown and heat them.
  4. Whisk the eggs in a bowl. Add the half n half or milk, salt and pepper. Whisk to completely incorporate.
  5. Add the remaining tablespoon of butter to the pan. When melted, pour in the egg mixture. Turn the heat down to medium low and cover the pan. Let cook for about 4 minutes, or until the top of the frittata is dry.
  6. Cover with cheddar, and place lid back on the pan. When the cheddar is melted, remove from the heat and serve with toast and fruit.

Don’t limit yourself to just ham and cheddar.  Just about any meltable cheese and tasty meat works well in a frittata.  Leftover roasted vegetables work well too.  Use what’s available and adapt this to your tastes.

Tomato, Goat Cheese, and Spinach Omelette Makes the Perfect Breakfast

Omelettes are a simple egg dish that get a bad rap of being difficult to make.  That stigma is overcome easily with a good, nonstick pan, making a Tomato, Goat Cheese, and Spinach Omelette is a great breakfast food.  You can even fill it with whatever you desire if you’re not a fan of the fillings.

An omelette is similar to a crustless quiche, with the ingredients sandwiched between folded layers of egg, instead of mixed into the egg batter.  Tomato, Goat Cheese, and Spinach Omelette combines tart and earthy ingredients to create a taste explosion for your tastebuds!

The Ingredients ~ Tomato, Goat Cheese, and Spinach Omelette

Tomatoes with a good, old fashioned flavor, such as Kumatos or cherry tomatoes will compliment the tartness of the goat cheese well.  You can use any flavor of goat cheese that you like, as it will only enhance the flavor of your omelette.  I prefer to use an organic baby spinach, but again, use what you prefer.  If the stems are tough, be sure to remove them before adding them to your Tomato, Goat Cheese, and Spinach Omelette.

  5. As soon as the top of the omelette is set, sprinkle half of the cheese and tomatoes over the spinach. With a spatula, flip the plain side of the omelette over the fillings.
  6. Sprinkle with the remaining tomatoes and cheese. Serve with fruit, toast, or your favorite breakfast treats.
