Snappy Gingersnap Cheesecake has that twist that takes a great cheesecake and makes it amazing. The luscious creaminess of the cheesecake, paired with the spiciness of the gingersnap crust is a surprise to people expecting the tameness of a traditional graham cracker crust. This is definitely not your average cheesecake!

I came across the recipe for the filling years ago. Ever since, I’ve been pairing it with different crusts, sometimes different flavorings, to make something different but equally as delicious. If you like, substitute vanilla wafers, chocolate, graham crackers, or any other tasty treat you enjoy as the crust. Be creative and let your imagination run wild.
As the cheesecake bakes, it will rise like a soufflé. Don’t be dismayed when it falls, however, when you take it out of the oven. This is completely normal. The golden brown top will sink, making the cheesecake dense and thick. Make this a day in advance for a dense, mouthwatering treat!

Snappy Gingersnap Cheesecake Recipe

Ingredients

  • 1/2 C (1 stick) melted butter
  • 2 C Gingersnap cookies, crushed into crumbs
  • 4 8 oz pkgs cream cheese, softented
  • 1 C white sugar
  • 4 eggs
  • 2 t. vanilla
  • juice of 1 large lemon

Instructions

  1. Preheat oven to 300 degrees F.
  2. Mix gingersnap crumbs and melted butter. Spread over the bottom of 9” springform pan (you can purchase this in the utensil section of your grocery store).
  3. Separate eggs. Blend egg yokes with cream cheese, sugar, lemon juice, and vanilla until creamy.
  4. Whip egg whites until stiff and fold into yolk batter.
  5. Pour over the pressed crust.
  6. Bake in 300 degree F oven for 1 hour and 15 minutes. Cake should be slightly wiggly and golden brown.
  7. Let cool completely. Run a knife around the inside of the springform ring and unlock.
  8. Serve.
  9. Refrigerate any leftovers.

Snappy Gingersnap Cheesecake ~ Top or Not to Top?

While the cheesecake is delicious enough to be served plain, a simple topping of fresh fruit or a raspberry or caramel sauce makes a great accompaniment.  I love berries, especially blackberries.  They tasted awesome and light against the richness of the cheesecake.  What a perfect dessert or brunch buffet item!

It doesn’t take a lot of time to make something that is such an elegant treat for the taste buds.  Next time you have an event you need to take a dessert to, whip this up.  It will be an impressive addition and a crowd favorite.  Try changing it up a bit with other flavors too!  Serve it warm or chilled, whatever your preference.  Either way, it has a complex flavor that you’ll fall in love with and Snappy Gingersnap Cheesecake will become a favorite dessert!
