Ingredients

  • 5 lb white potatoes, peeled and diced
  • 1 8z pkg cream cheese, softened
  • 16 oz shredded cheese
  • milk
  • salt
  • pepper

Instructions

  1. Place the potatoes in a stock pot and cover with cold water. Sprinkle with salt and boil until the potatoes are tender when pierced with a fork. Drain.
  2. Place the potatoes in a bowl or mixer. Add the cream cheese, sprinkle with salt and pepper, and beat with a mixer until smooth, adding milk to get the consistency you prefer.
  3. Add the shredded cheese and mix until the cheese is melted.
  4. Serve with your favorite meal.

Super Cheesy Mashed Taters Leftovers

I love to make an extra large batch of Super Cheesy Mashed Taters and have leftovers.  I’m usually not happy with the results of reheating them as mashed potatoes, but if you add an egg to every 3 cups of leftover Super Cheesy Mashed Taters as well as 1/2 C breadcrumbs, you can mix them up and make some very tasty potato cakes by frying them in butter and olive oil.  They are a simple dish that make a big hit with everyone, especially if you have leftover gravy, or some fried onions.

 

5 lb white potatoes, peeled and diced

1 8z pkg cream cheese, softened

16 oz shredded cheese

milk

salt

pepper

Growing up, scalloped potatoes were a mainstay in our diet.  Paired with all kinds of meat, they were homey, and probably the first comfort food that I remember.  I always thought they were so hard to make.  I mean, something that delicious had to have taken my mother a while to create.  As an adult, I have learned it’s really a simple dish, something that you can put together fairly quickly and embellished with a bit of cheese and make your dinner guests smile.

Here’s my recipe.  You can even make these up and toss them in your Crock-Pot on low all day.

Cheesy Scalloped Potatoes Recipe

Ingredients

  • 4 T butter
  • 6 T all-purpose flour
  • 1 t salt
  • 1/2 t pepper
  • 3 C milk
  • 1 C shredded cheddar
  • 1 large onion, peeled, halved and sliced thin
  • 4 lbs potatoes, peeled and sliced thin

Instructions

  1. Heat oven to 350 degrees F.
  2. Melt the butter in a medium sized saucepan over medium heat. When it bubbles, add flour, salt, and pepper, stirring constantly until smooth.
  3. Add the milk, slowly, until it is completely incorporated. Bring to a boil, allowing the mixture to thicken.
  4. Add the cheese and stir until melted.
  5. Lightly grease a 3 qt baking dish; add half the potatoes and onions. Cover with half the sauce. Add the remainder of the potatoes and onions, then top with the rest of the sauce.
  6. Cover and bake until potatoes are tender, about 1 hour. Uncover and brown, another 10-15 minutes.
  7. Serves 6-8.
