One of my all time favorite meals to make when company is coming over are these Easy Chicken Cordon Bleu Roll Ups.  Not only do they offer the great classic flavor combination you expect, they are simple to make and present beautifully.  This is a great meal to make ahead and freeze for easy to reheat entrees alongside some rice and steamed vegetables that will be perfect to impress the last minute guests.  I especially love making these when I happen to get a great deal on chicken on sale and want to prep it before freezing.  Make ahead and cook to only have to pop in the oven to reheat or roll them up before freezing raw to cook at the last minute for a tasty meal.

Chicken Cordon Bleu Roll Up

Ingredients:

  • 3 Boneless Skinless Chicken Breasts (cut in half and pounded to 1/4” thick)
  • 6 Slices Ham
  • 6 Swiss Cheese Slices
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Black Pepper
  • ½ Teaspoon Paprika
  • ½ Teaspoon Garlic Powder
  • ¼ Cup All Purpose Flour
  • ¼ Cup Italian Seasoned Bread Crumbs
  • 2 Tablespoons Olive Oil

Sauce:

  • 1 Stick Unsalted Butter
  • 1 Tablespoon Cornstarch
  • 2 Chicken Bouillon Cubes
  • ¼ Teaspoon Garlic Powder
  • ½ Cup White Wine
  • 1 Cup Heavy Whipping Cream

Directions:

  1. Preheat oven to 350 degrees
  2. Spray small casserole dish with nonstick spray and set aside.
  3. Lightly season each chicken breast half with salt, pepper, paprika and garlic powder on both sides.
  4. Place 1 slice cheese and ham on each chicken breast half 1.png
  5. Roll and insert toothpicks to hold in place
  6. Mix flour and bread crumbs together in small bowl
  7. Roll each chicken roll up into bread crumb mixture coating all sides lightly
  8. Heat olive oil in medium skillet
  9. Cook each roll up in oil for 2-3 minutes on each side turning to brown evenly
  10. Place roll up in pre-sprayed casserole dish and place in oven at 350 degrees for 15 minutes to complete cooking.  Set skillet aside to make sauce in.
  11. Remove from oven and allow to rest while you make sauce.

Sauce:

  1. In skillet that chicken was browned in, heat butter and cornstarch together with remaining oil from cooking chicken.  This mixture should form a loose paste.
  2. Add in bouillon cubes, garlic powder and white wine
  3. Cook for 4-5 minutes stirring constantly scraping pan to provide ultimate flavor to sauce
  4. Stir in heavy cream and cook for additional 6-7 minutes on low heat.
  5. Drizzle sauce over sliced chicken roll ups.

To reheat from freezer: 

If you choose to make these Chicken Cordon Bleu Roll Ups to freeze ahead, the sauce can be made prior to serving, I do not recommend freezing the sauce for reheating.  The extra flavor from using the skillet the chicken was cooked in is nice to have but not necessary for a wonderful creamy white wine sauce.

If making ahead and freezing you can easily assemble and freeze to be cooked stopping before rolling in bread crumb mixture or cook through and freeze once cooled after removing from oven.  Regardless of which method you choose, you will find this to be one of those meals that leaves your family satisfied and praising what a great cook you are.

Ritz Parmesan Chicken is a very easy recipe and very kid friendly! I love that they can help make it too! I find that when my kiddos help make something they actually get excited to eat it.

I posted this recipe awhile back for you guys (remember when there was a REALLY good coupon deal on ritz?). I know a LOT of you loved it so I wanted to post it again for those of you who have not tried it yet.

My hubby is an extremely picky eater and I like to cook simple. So, this recipe fits into both categories, perfect for the pickiest of the picky and simple for those of you that don’t have a lot of time.

Ingredients:

  • Be sure to Folllow Raining Hot Coupons on Pinterest for more RECIPES!
  • 5 Chicken breasts (boneless, skinless)
  • 1 Stick of butter
  • 3/4 Cup Parmesan
  • 2 tsp Parsley flakes
  • 2 packages of Ritz Crackers
  • 1/2 tablespoon Seasoned salt

Directions:

  1. Preheat your oven to 350 degrees. chicken 3
  2. Put all of the ingredients above (except the butter) in a large ziplock bag and take a rolling pin (or your kids hand, they love to do this part) and smash up all the crackers! You want them to be small pieces but don’t turn them into powder. chicken 2
  3. Then, you will melt your butter and dip the chicken breast (or any other type of chicken) into the butter and then put it in the bag, shake around until completely covered (I suggest doing 1 at a time). chicken
  4. Place them in a glass pan and pour any remaining butter and ritz mix over them and all around them (this makes it extra yummy!). chicken 5
  5. Bake in oven for 35-45 minutes
  6. TIP: Remember, you can easily add another package of ritz crackers, more parmesan, salt and parsley to make more mix for more chicken. Sometimes I find myself doing this if the chicken breasts are bigger.
  7. Enjoy!

Spring Roasted Chicken Is an Everyday Celebration

My mom used to make Spring Roasted Chicken for Sunday dinner and special occasions.  But why save this simple to make dish for special days?  Break out the chicken and lemons, folks, because this is a dish for every day!  Common seasonings make this dish divine!

Whole or Pieces for Spring Roasted Chicken?

It just depends on what you have or what’s on sale as to what type of chicken you want to use.  I’ve made Spring Roasted Chicken with whole chickens, and I’ve used chicken pieces before, and they all turn out amazingly juicy and tender.

The Spices Make Spring Roasted Chicken Fresh and Bright

The lemon adds a tangy taste that is refreshing and reminds you of a beautiful sunny spring day.  Paired with a nicely peppered skin, you’ll have an explosion of flavor on your taste buds that can’t be beat.  Sea salt brightens the lemon flavor, bringing out the sweetness of the fruit.  Oregano brings the balance between salty, sweet, and savory, adding a complex earthy note that is unparalleled.  Add them all together and you have a delicious chicken dish that is simply called Spring Roasted Chicken.

Spring Roasted Chicken Recipe ~ Make Every Day a Celebration!

Ingredients

  • 2 lbs chicken, whole or pieces
  • 2 lemons, sliced
  • salt
  • pepper
  • oregano

Instructions

  1. Heat oven to 350 degrees F.
  2. Place the chicken in a baking dish, skin side up.
  3. Sprinkle with salt, pepper, and oregano liberally.
  4. Place the lemon slices over the chicken.
  5. Cover with aluminum foil and wrap tightly.
  6. Bake for 2 hours, until juices run clear and a cut to the thickest piece shows no pink.
  7. Remove foil and increase heat to 425 degrees F. Brown the skin for about 10 minutes.
  8. Serve hot with lemon slices.

Spring Roasted Chicken Works in the Crock-Pot Too!

If you are short for time in the afternoon, toss all the ingredients in the Crock-Pot with a splash of white wine and set your pot to low in the morning.  Spring Roasted Chicken will be ready for you by the time dinner rolls around and you will have a delicious dinner waiting for you!

 

2 lbs chicken, whole or pieces

Crock-Pot Chicken Cacciatore Recipe

Come home to a succulent, elegant meal, straight from your Crock-Pot with this Crock-Pot Chicken Cacciatore Recipe.  This dish takes very little prep time, especially if you purchase precut mushrooms and garlic.  Just drop it all in your Crock-Pot, set it in low, and spend your day carefree, knowing you have a fabulous meal waiting for you!  I make this extra tasty by using some purchased solid chicken base, about a tablespoon, in a cup of dry white wine.

Crock-Pot Chicken Cacciatore

Ingredients

  • 3 large chicken breasts, boneless and skinless
  • 1 large onion, sliced
  • 16 oz mushrooms, sliced thick (or purchase steak-cut)
  • 2 t minced garlic
  • 1 14.5 oz can diced tomatoes (Italian style works great)
  • 1/4 c all-purpose flour
  • 1 C chicken broth or dry white wine with 1 T chicken base stirred in
  • 3 T tomato paste
  • Pasta, cooked, any variety/shape
  • Parmesan, grated, for garnish

Instructions

  1. Place the chicken in the bottom of the Crock-Pot.
  2. Add the onions, mushrooms, garlic, and tomatoes.
  3. In a small bowl, mix the broth or wine with the flour and tomato paste. Pour over the top.
  4. Cover and set to low. Cook for at least 8 hours.
  5. Serve over pasta and garnish with Parmesan. Enjoy!
