Make Olive Garden Soup at Home

I love going to Olive Garden for two things: a fabulously crisp and simple salad, and the Olive Garden Chicken and Gnocchi Soup.  I love them both, but the Chicken and Gnocchi Soup is unique to Olive Garden and I just had to be able to make it at home.  Otherwise, I would live there!

Chicken and  Gnocchi Soup is Fast and Simple to make

With a bit of leftover chicken, it’s easy to make this Olive Garden Copycat soup.  When I don’t have leftover chicken, I roast a couple of pieces in the oven for about an hour.  The roasted flavor adds a subtle earthy flavor to the soup that is just amazing.

Chicken and Gnocchi Soup Chicken

What is a Gnocchi

Gnocchi is an Italian dumpling that is made from potatoes or sometimes ricotta cheese. If you have eaten Chicken Dumplings than you have had a version of a gnocchi ( it just looked a little different) You can find them at your grocer’s, usually with the premium pastas.  They are fantastic in soups, but also as a pasta dish.  Gnocchi lend a bit of starch to your broth, so they will thicken soup just a little.  In Chicken and Gnocchi Soup, it provides a bit of a chewy bite, in contrast with tender vegetables and savory broth.  Gnocchi pasta is the type that when it floats, it’s cooked.

Homemade Shake n Bake is Easy!

I love to remake products that are on the market with healthier options, and Homemade Shake n Bake is no exception.  A few simple ingredients makes for an amazing coating that you can use on everything, from chicken to pork, to even chicken fried steak, if you like.  You can bake it or fry it too! I started making Homemade Shake n Bake when I realized that I didn’t have my main ingredient for dinner: prepackaged Shake n Bake.  There’s nothing as frustrating as wanting to make a nice dinner of “fried” chicken and finding the empty box.  So, I grabbed the box of panko and started to figure out how to make this on my own.

What Makes Homemade Shake n Bake Tasty

Paprika adds a bit of color and smokiness to the finished meat that is delectable.  Celery salt and parsley add and earthiness, while sage gives the flavor a homey, comfortable taste.  Minced onion and garlic powder brighten the undertones in Homemade Shake n Bake and blend everything together into a fantastic concoction that will make your meat crispy and crunchy!  You could even use Homemade Shake n Bake on onion rings for a great addition to your meal! If you like a softer crumb, more “original recipe”, use regular breadcrumbs instead of the panko in Homemade Shake n Bake.

Homemade Shake n Bake Recipe ~ Keep this on hand!!!

Ingredients

  • 1 box Panko bread crumbs
  • 1 T paprika
  • 1 T celery salt
  • 1 t salt
  • 1 t ground black pepper
  • 1/2 t garlic powder
  • 1 t minced onion
  • 1/2 t ground sage

Instructions

  1. In a gallon sized plastic zippy bag, add all ingredients and shake well to mix.
  2. To use:
  3. Heat oven to 400 degrees F or peanut oil to medium-high in a heavy stockpot.
  4. Coat meat with 1-2 T oil.
  5. Measure 1 C of Homemade Shake n Bake into another zippy bag. Place the meat in with it and close the top. Give it a good shake or two to coat the meat.
  6. Place on a plate or baking sheet and continue until all the meat is coated.
  7. If baking, place on an ungreased baking sheet and bake until the thickest part of the meat is cooked through and no longer pink.
  8. If frying, place enough meat in the hot oil, carefully, to cover the bottom of the pan in a single layer. Let cook until golden brown and cooked through, time will vary depending on the meat and thickness. Remove to a paper towel covered plate or baking sheet. Continue until all the meat is cooked through.

Storing your Homemade Shake n Bake

The great thing about this recipe is you can make a HUGE batch of it and store it for later use.  I will double or triple my batch and seal it in a plastic container.  That way I always have some Homemade Shake n Bake on hand for quick and easy meals.  What could be simpler?

It’s Recipe Wednesday: “Chicken Enchiladas”

This Raining Hot Coupons deal was posted on February 15, 2012 at 12:45 pm MST Leave a Comment

It’s Recipe Wednesday!

This recipe was submitted by Tessie! Thank you, I am now craving this YUMMY looking recipe! Mmmmm….

“Chicken Enchiladas”

Ingredients:

1-1 1/2 lbs-chicken, white meat, any cut would work. I use the boneless, skinless chicken breast in the bag and I use 2 or 3 larger pieces. Seems to be cheaper than the meat department packs.
1-onion
1-10 oz can enchilada sauce.
10- burrito size tortillas
8oz-Sour cream
Shredded cheese

Directions:

  • Chop up the onion and add to chicken in a pot of water.
  • Boil the chicken until cooked thoroughly. Then chop up into small pieces, almost string like. You can also use a food processor as I do.
  • In a bowl combine the chicken and sour cream.
  • Sprinkle in a little cheese.
  • Then, put the chicken in the tortillas and roll up. You should have enough chicken to make 8-10 enchiladas.
  • Line the enchiladas up in a cooking dish. (Good idea to line the dish with foil to make for easy clean-up)
  • Then, pour the enchilada sauce over the burritos and top with cheese (lots in our case).
  • Bake about 15 minutes at 350. Just long enough to let the cheese melt and the enchiladas to get good and hot.
