*Biscuit Topped Chick and Cheese Casserole*

Ingredients:

2 cups cut-up cooked chicken

1 can (11 oz) Green Giant Mexicorn whole kernel corn with red and green peppers, drained

1 can (10 3/4 oz) condensed cream of chicken soup

2 cups shredded Monterey Jack cheese (8 oz)

1 2/3 cups Original Bisquick mix

2/3 cup milk

Directions:

  • Heat oven to 375°F. In 8-inch square (2-quart) glass baking dish, mix chicken, corn, soup and cheese.

  • In medium bowl, stir Bisquick mix and milk with fork or wire whisk until soft dough forms.
  • Place dough on surface dusted with Bisquick mix.
  • Knead 10 times. Roll into 7 1/2-inch round, 1/2 inch thick. With 2 1/2-inch round cutter, cut 6 biscuits.
  • Place on chicken mixture.

  • Bake 20 to 25 minutes or until biscuits are golden brown.

This recipe was submitted by Brittany! Thank you! Shall we just call this Casserole month?? Another casserole, but like I said before….I love casserole dishes and they can all taste so different.

    *Chicken Divan Casserole*

Ingredients:

  • (2) 10 oz Pkg of Brocolli or 3-4 Bunches of fresh steamed Brocolli
  • 3-4 Cooked Chicken Breast (Boneless, Skinless)

Use $1/1 Gold ‘n Plump Seasoned Boneless Skinless Breast Fillets 6/12 SS -regional
Use $1/1 Gold’N Plump All Natural Chicken printable

  • 1 Can Condensed cream of chicken soup

Use $0.40/4 Campbell’s Condensed Soup 2/13 SS

  • ½ cup Mayonnaise

Use $0.75/1 Kraft Mayo or Miracle Whip coupon 6/19 SS

  • ¼ tsp. Curry Powder
  • 1 tsp. Lemon Juice
  • 1 Cup Shredded Cheese

Use $1 off ANY Brand cheese coupon here under zip code 84637

  • 1 Cup Soft Bread Crumbs (any flavor)
  • 4 tbsp. Margarine or Butter

Directions:

1 – Cook Brocolli and cut up and place on bottom of 9 x 13ā€ baking dish. Place (cooked & sliced) chicken on top of broccoli.

2 – Mix Condensensed cream of chicken soup, mayonnaise, curry & lemon juice together in small bowl. Than proceed to pour soup mixture over chicken.

3 – Place grated cheese on top of soup mixture.

4 – In small pan, melt 4 tbsp. of butter than mix in bread crumbs, once combined remove from fire and spread over cheese.

5 – Bake @ 350 degrees for 30-35 Minutes.

This recipe was submitted by Jessica! Thank you, I know I posted a casserole dish not too long ago but it’s always nice to have different recipes for this dish since it’s so good and easy!

*Chicken Casserole*

Ingredients:

2 cups of cooked chicken (white meat or dark meat cooked however you wish)

Use- $1/1 Earth Fare Organic Fresh Chicken printable
Use – $0.55/1 Pilgrim’s Pride Chicken printable
Use – $0.75/1 Perdue Boneless Chicken Breasts, exp. 6/5/11 (RP 04/10/11)

12 pieces of sliced bread

Use – $0.55/1 Aunt Millie’s 100% Natural Bread printable

3 eggs

Use – $0.35/1 Eggland’s Best Eggs, exp. 9/30/11 (SS 03/27/11)

1 can of cream of chicken soup

Use – $0.40/4 Campbell’s Condensed Soup (SS 02/13/11)

1 can of chicken noodle soup

1 can of cream of mushroom soup (or for those of you who do not like mushrooms, substitute another can of cream of chicken)

Use $1/4 Campbell’s Chunky Soup, exp. 6/12/11 (SS 05/01/11)

1 stick of butter

Directions:

  • Heat oven to 375
  • In a large bowlĀ  you will mix all items except for the butter. Tear up the bread (this is a perfect job for a child since there is no wrong or right way to do this) and tear up the chicken (another job kids can help with).

  • Pour into a baking dish and dollop with butter!
  • Bake for 30 minutes!
  • I always double up on this because my family LOVES it.. I enjoy making it because I am only in the kitchen for a short time and everything gets mixed together in one dish so I have less dishes as well!!

This recipe was submitted by Donna! Thank you Donna, can’t wait to try it! This is also a simple recipe with ingredients you may already have and if not don’t worry, there are some frugal coupons to go with some of the items.

“Creamy Baked Chicken Fettucine w/ Alfredo Sauce”


Ingredients:

2- 1lb boxes of Mueller’s Fettuccine noodles – Cost $1 each Use 2 of the $1/1 coupons that were previously available (no longer available) posted here – hopefully a lot of you printed these since they were unlimited prints! = FREE
3- 16 0z bags of Tyson’s chicken breast strips – Cost $2.50 each Use 3 of the $1/1 Tyson Bagged Breaded Chicken Strips, 1/30 SS or 1/23 SS
3- 16oz jars of Great Value classic Alfredo sauce – Cost $1.33 each
1-16 oz bag ofĀ  kraft shredded Italian Cheese– Cost $2.50 Use 1 of the $1/2 Kraft Natural Shredded Cheese 1/23 SS (Expires 2/28!)
Directions:

Cook Fettuccine noodles according to directions on the box
Drain noodles and add to large glass baking dish
Add Tyson fully cooked grilled chicken strips
Add Alfredo sauce and mix together well
Top mixture with shredded cheese
Bake at 350 degrees unil cheese is melted about 15-20 minutes

“Serve with aĀ toss salad and bread sticks for a great quick and inexpensive meal your family will love. I always bake enough for leftovers for lunch the next day or to give to my daughter and her roomie’s at college.”

You Asked For It…Parmesan Ritz Chicken Recipe!!

So, I’ve had some requests to share my Chicken Ritz recipe from the Ritz deal here on Amazon so here ya go! By the way, the picture above isn’t my picture but it looks very similar to that when done. My hubby is a very picky eater but this is one he just LOVES! Mind you, I’m not a chef by any means so please excuse my recipe verbage LOL!

Parmesan Ritz Chicken

4-5 Chicken breasts

1 Stick of butter

3/4 Cup Parmesan

2 tsp Parsley flakes

1 package of Ritz Crackers – see my great deal HERE!

Seasoned salt (sorry not sure how much, just whatever you think is enough to help season that chicken!)

Instructions:

  1. Preheat your oven to 350 degrees.
  2. Put all of the ingredients above (except the butter) in a large ziplock bag and take a rolling pin (or your kids hand, they love to do this part) and smash up all the crackers! You want them to be small pieces but don’t turn them into powder. šŸ˜‰
  3. Then, you will melt your butter and dip you chicken breast (or any other type of chicken) into the butter and then put it in the bag, shake around until completely covered (I suggest doing 1 at a time). Place them in a glass pan and pour any remaining butter and ritz mix over them and all around them (this makes it extra yummy!). Cook for 35-45 minutes (at least that’s how long I cook them for)…and VOILA a yummy dinner!!

TIP: Remember, you can easily add another package of ritz crackers, more parmesan, salt and parsley to make more mix for more chicken. Sometimes I find myself doing this if the chicken breasts are bigger.

I’m not sure who to give the credit to because I can’t remember where I found this recipe but thank you to whoever came up with this delicious concoction!
