Not many fast food restaurants serve the classic western dish of chili, but Wendy’s does, and they serve a lot of it!  Every time I go to my local Wendy’s, about every third person has some on their tray.  And why shouldn’t they?  It’s an amazing blend of beef, beans, tomatoes, and spices that come together and make a satisfying meal, from a fast food restaurant.  Now you can make Copycat Wendy’s Chili at home, in your crock pot, for a great meal during the week or on the weekend and feed a crowd.

Making Wendy’s Chili

Chili always seems to start with a few common ingredients.  Ground beef, beans, and tomatoes make the basis of just about every chili recipe I’ve ever read or made.  What sets Copycat Wendy’s Chili apart is the other ingredients.  Onion and green pepper, raw instead of sauteed with the beef, goes right in the crock pot to simmer the flavor into the mix.  The seasoning is easy.  A single packet of McCormick original chili spices gets stirred in before turning on the crock pot.  Simple ingredients, but it makes an amazing chili that is just like Wendy’s Chili.

Ingredients

  • 2 lbs ground beef
  • 2 onions, diced
  • 1 green pepper, diced
  • 1 15 oz can stewed tomatoes
  • 1 29 oz can tomato sauce
  • 1 15 oz can dark red kidney beans

  • 1 15 oz can pinto beans

Instructions

  1. Brown the ground beef until no pink remains.

Copycat Wendy’s Chili works amazing if you want a meal you can freeze and eat later.  Freeze it in individual servings for easy lunches, or in a large container for a whole meal.  Either way, you will love the flavor just as much when you thaw it as when you originally made it.

 

2 lbs ground beef

2 onions, diced

1 green pepper, diced

1 15 oz can stewed tomatoes

1 29 oz can tomato sauce

1 15 oz can dark red kidney beans

1 15 oz can light red kidney beans

1 15 oz can pinto beans

1 pkg McCormick Original Chili Seasoning

 

Brown the ground beef until no pink remains.

What Makes Crock Pot Chili Amazing

I love my chili just a little bit spicy, and with a lot of flavor.  Adding chipotle peppers in adobo sauce adds a rich smokey flavor that is beyond words.  You can find them in the international section of your favorite grocery, with the Mexican foods.  The peppers come in large sections, so you might want to cut them up.  I usually leave them whole because I love them so much.  People ask me what my secret is, and that’s it!

  5. Let simmer 6-8 hours.

The Best thing about Cheap Slow Cooker Recipes

The absolute best thing about Crock Pot Chili is the price.  I can feed 8 hungry adults with a pot of Crock Pot Chili with cornbread as a side.  Even without most of the ingredients on sale (the beef was $1.99/lb), the whole pot cost me $11.91.  That makes a big bowl of Crock Pot Chili $1.49!  If you get the beans and tomatoes on sale, it will be even less!  It makes Crock Pot Chili a fantastic addition to your cheap slow cooker recipes.

Cheesy bacon cornbread waffles.  Yes, waffles just got better.  With some shredded sharp cheddar, crispy bacon, and cornmeal, waffles have gone from a nice breakfast food to amazing savory disk of goodness!

It started out with, I wanted a waffle iron.  I never had homemade waffles as a kid, and I wanted to experiment.  Then, there was a sale.  A pretty little Cuisinart waffle iron became a staple in my kitchen.  I became a mom that kept waffle batter in the fridge so I could make fresh waffles for my kids before school.  But they were always basic waffles, maybe with a little food coloring or bananas in them.

But now, chili night will never be the same.  With the addition of some cornmeal, and cheddar and bacon tossed in for good measure, Cheesy Bacon Cornbread Waffles are the favorite of kids and adults alike in my house.  Really…what doesn’t bacon make better?

While waffles are usually a breakfast food, but these are so savory and delicious,  you can’t confine them to just one meal.  (Although they are very tasty with syrup!)  Add them as a great snack with some nuts, or an accompaniment to a salad for lunch.  They are awesome with some chili or hearty soup at dinner too!  Who knew waffles could be so versatile?

Cheesy Bacon Cornbread Waffles Recipe

Ingredients

  • 1 lb bacon
  • 1 1/4 C flour
  • 1 C cornmeal
  • 1 T sugar
  • 1/2 t baking soda
  • 1T baking powder
  • 1/4 t salt
  • 1 3/4 C milk
  • 6 T vegetable oil
  • 2 eggs
  • 1 C cheddar

Instructions

  1. Fry the bacon as you like. Drain, cool, and crumble it. Set it aside.
  2. Mix the flour, cornmeal, sugar, baking soda, baking powder, and salt in a large bowl.
  3. Add the milk, oil, and eggs. Mix well. Batter will be slightly lumpy.
  4. Sprinkle in the crumbled bacon and cheddar; mix well
  5. Heat your waffle iron, according to the manufacture's instructions. Add the appropriate amount of batter, lower the lid, and cook until the waffle is golden brown and crispy.
  6. Serve with butter and syrup, or any other favored accompaniments. Enjoy!

Making Cheesy Bacon Cornbread Waffles in Advance

If you’d like to make these ahead, they are very easy to reheat on a cookie sheet in the oven.  Just cook them as you normally would, letting them cool and wrapping them in plastic wrap.  Refrigerate until you about 15 minutes before you’d like to serve them.  Lay them flat in a single layer on a cookie sheet.  Bake them in a preheated 425 degree F oven for about 7-10  minutes, until they are heated and crispy.

Next time your family wants waffles, try something a little bit different.  Cheesy Bacon Cornbread waffles will fill them up and put a smile on their face!
